Chemical Composition and Fermentation Characteristics of the Corn Silage During Feedout at Yonchon of Gyeonggi-do (연천지역에 있어서 옥수수 사일리지의 개봉 후 경과기간에 따른 시료성분 및 발효품질)

  • The purpose of this study is to discuss the ways to consistently feed high quality corn silage(CS). This study evaluated the effect of the corn silage, after a certain time has elapsed, on the chemical composition and fermentation characteristics after feedout during the winter feeding period of the CS. Six samples of CS from four dairy farms(E1, E2, E3, and L1 ) were taken in order to feed the milking cows over a winter feeding Period from November of 2002 until February of the following year, 2003(six samples were taken at the fellowing dates in the following order: sample one was taken on the 23rd Nov. 2002, sample two on the 5th of Dec. 2002, 3rd sample on the 23rd of Dec. 2002, 4th sample on the 7th of Jan. 2003, 5th sample on the 22nd of Jan. 2003, and the 6th sampling was carried out on the 6th of Feb. 2003) at the three sampling sites after the opening of the trench silos at intervals of 15 days. In the dry matter contents of CS, there wasn't any specific tendency according to the elapsed time in the range of 21.3~$27.3\%$ at all low dairy farm(E1, E2, E3, and L1). And the average dry matter contents were 24.1, 25.9, 23.6, and $20.4\%$. Considering the Proper amount of the dry matter of CS during the ripen yellow stage, the appropriate moisture content was $33\%$ (NRC, 1989), and these dry matter contents were all low. A consistent tendency was not found in the contents of CS. The average of CP contents were 10.2, 8.0, 8.5, and $9.8\%$ at the E1, E2, E3, and L1 farms, and there were significant differences. The TDN contents of CS were not different among forms according to the time elapsed. The pH, according to the time elapsed after opening of the CS, there were no differences at each of E1, E2, E3, md L1 farms. Average pH were 3.5, 3.9, 3.6, and 4.1, md all of them were in normal range. In the lactic acid contents of CS, a consistent tendency was not found among four farms. But according to the time elapsed. there was a goat difference from 1.13~$7.8\%$ The acetate, propionate, and butyrate contents of CS were very low. In this study, there was no significant difference in the CS's chemical composition and fermentation characteristics according to the elapsed time at all four dairy farms. Considering the proper dry matter contents of CS during the ripen yellow stage, the appropriate dry matter content was $33\%$, and dry matter contents of few farms were all low. To enhance the quality of corn silage should be ensiled com at proper dry matter content range from 28 to $35\%$ Therefore, content of the corn plant should be always be closely monitored prior to beginning harvest.

On Chemical Characteristics of Sour Doenjang (Fermented Soybean Paste) (저장 유통중 시어진 된장의 화학적 성분 연구)

  • Doenjang (fermented soybean paste) is one of the korean traditional fermented soybean product which is consumed with cooked rice as a soup or paste. During the fermentation, soybean protein hydrolyzed into amino acids and various peptide, and various organic acids by mirobes related and enzymes produced by meju fermentation. Some commercial products locationally samples give more sour taste than normal due to abnormal fermentation which the reasons are not clear. Three samples that gave sour taste organoleptically were collected and analyzed their characteristics such as pH, moisture content, acidity and microbial counts. The pH of the sour sample were lower than the normal with higher acidity as pH 5.39 (normal) to pH 4.36 (S2) and 15.80 ml of(0.lN NaOH consumed) to 21.80 ml (S1) respectively. Salt and moisture contents were different with sour and normal Doenjang as 16.38% (normal) to 8.92% (S3) in salt and 55.94% (normal) to 49.34% (S1) in moisture content. Total viable counts were $4.1{\times}10^8$ (normal) to $8.0{\times}10^5$ (S2), and $3.4{\times}10^8$ (normal) to $8.0{\times}10^5$ (S2) in acid producing microbes at BCP plate. Yeast and mold were not detected. The composition of acids as mainly lactic acid and acetic acid of sour Doenjang. Total free amino acids content were lower the sour Doenjang than the normal.

Fortification of dextran and mannitol in sweet pumpkin by fermentation with Leuconostoc mesenteroides SM (Leuconostoc mesenteroides SM 젖산균 발효를 통한 dextran과 mannitol 강화 단호박 발효물 생산)

  • Sweet pumpkin paste (SPP) was fermented by Leuconostoc mesenteroides SM at $25^{\circ}C$ for 3 days for enhancing its physicochemical properties. SPPs with 5%, 10%, and 15% solid contents (SC) were fortified with 20% sucrose and 0.5% yeast extract. The unfermented SPP with 15% SC indicated L, a, and b color values of 25.02, 4.66, and 13.35, respectively, and a consistency index of $48.6Pa{\cdot}s^n$. During the 3 days of fermentation, both the a and b color values decreased slightly, whereas the consistency index increased to $188.8Pa{\cdot}s^n$, giving the fermented product a pudding-like consistency. This fermented SPP (15% SC) showed the highest acid production and viable cell counts among samples, indicating pH 3.85, 1.30% acidity and $9.2{\times}10^8CFU/mL$ respectively. The added sucrose was completely utilized after 1 day of fermentation. After 3 days, the insoluble and soluble dextran contents were 8.9% and 4.5%, respectively. Furthermore, the contents of mannitol and fructose were 3.11% and 1.76%, respectively. Regarding the sensory evaluation, this fermented sample also indicated the highest color, taste and texture scores, and was the overall preferred sample. In conclusion, the fermented SPP with 15% SC was carotinoid-rich a wholesome pumpkin-based product that is rich in probiotics and lactic bacteria-produced mannitol and dextran, which gave the product an acceptable viscous pudding-like consistency and good organoleptic properties.

Quality Characteristics of Yulmoo Mul-kimchi Containing Saltwort (Salicornia herbacea L.) (함초 분말 첨가 열무 물김치의 품질특성)

  • Saltwort (Salicornia herbacea L.), as a natural additive for regulating Mul-kimchi fermentation, was assessed for physicochemical and sensory characteristics of Yulmoo Mul-kimchi during storage. Saltwort in the form powder was directly added to the Yulmoo Mul-kimchi preparation at 0 (control), 1, 3, 5, and 7% (w/v) per weight of salt to evaluate their physicochemical, sensory, and microbiological characteristics in storage at $10^{\circ}C$ for 30 days. The pH values of all treatments were high, indicating a less acidic environment in all treatments compared to those of the control sample throughout the preservation period. Total acidity increased with storage time as is usually seen with normal kimchi fermentations, whereas the increases were more gradual in the 3 and 5% treatments. The increases in total vitamin C continued until days 6 (control) to 13 (7%), and were different according to the amount of added saltwort and then they decreased after each peak. The fluctuation in reducing sugars fol owed a similar trends of total vitamin C content by showing an initial increase, followed by a decrease based on the saltwort concentration and storage day. The 5% treatment was most effective for suppressing the increase in turbidity among all treatments. The 3 and 5% treatments showed the highest lactic acid bacteria counts during the entire preservation period. In the sensory evaluation results, adding saltwort at more than 3% concentration attained an overall higher scores of acceptability with respect to color, smell, taste, fresh taste, sour taste, crisp, and overall acceptability characteristics. In conclusion, adding saltwort, particularly at concentrations of 3 and 5% extended the preservation period of Yulmoo Mul-kimchi by retarding fermentation effectively.

Physicochemical properties and antioxidant activities of Streptococcus thermophilus KCCM 3782 strain fermented Cordyceps militaris grown on Tenebrio molitor (갈색거저리 동충하초의 Streptococcus thermophilus KCCM 3782 유산균 발효에 따른 물리화학적 특성과 산화방지 활성 비교)

  • This study aimed to provide basic evidence regarding the development of materials by analyzing the physicochemical properties and antioxidant activities of Streptococcus thermophilus KCCM 3782 strain-fermented Cordyceps militaris grown on Tenebrio molitor. Among the solvents tested, DPPH radical scavenging activity was the highest in the hot water-extracted sample after 30 min of extraction. Moisture content decreased, whereas crude protein and fat content increased, after lactic acid bacteria-mediated fermentation. Sodium, magnesium, calcium, and zinc contents increased, with potassium levels attaining the maximum value, whereas free amino acid content decreased after the fermentation. Among Hunter's color values, a value increased to $66.7{\rightarrow}149.92$ after fermentation, whereas the L and b values decreased to $15.79{\rightarrow}-15.75$ and $54.45{\rightarrow}0.01$, respectively. Cordycepin content assay increased from 7.02 mg% to 8.66 mg%. The DPPH free radical scavenging activity of the fermented product was 91.92 EDA%, which was higher than that of the extract (84.69 EDA%). The ABTS free radical scavenging and superoxide dismutase (SOD) activities were also higher in the fermented products.

  • This experiment was carried out to investigate the physiological characteristics of two original yeasts, 5-Y-5 and 6-Y-6, which selected from 24 Takju yeasts and three mutants, 30-24,30-81 and 40-27. induced from two original yeasts by the irradiation of UV light. The results were summarized as follows. 1) Alcohol tolerances of three mutants were decreased in some degree as compared with those of original yeasts. 2) Tolerances of lactic and citric acids of acid producing mutant 30-81, was increased than those of original yeasts. 3) In the case of using ammonium sulfate as a nitrogen source, two original yeasts and three mutants required Ca-pantothenate as a essential growth factor and four strains of yeasts except the mutant, 30-81, required biotin as a stimulated growth factor, When asparagine was used as a nitrogen source, two original yeasts and three mutants showed the same as above result but the stimulated effect of biotin was far less. 4) Propagation powers of the mutants were weaken than those of original yeasts, particular that of acid producing mutant, 30-81, was the weakest in the three mutants. 5) The optimum temperature for fermentation of original yeasts were $30^{\circ}C\;to\;35^{\circ}C$ but three mutants were $25^{\circ}C\;to\;30^{\circ}C$. 6) The optimum pH for fermentation of original yeasts were pH 5 to 6, and there is no appreciable difference between original yeasts and three mutants. The fermentation power of mutant,30-81, was decreased more rapidly than those of other mutants according to approach neutral. Three mutants were more sensible to heat than original yeasts. 7) Two original yeasts and three mutants were inhibited more over 20 percent of sugar for fermentation and three mutants were more sensible to sugar concentration than original yeasts.

Improvement Effect of Fermented Orostachys malacophyllus against Orotic Acid-induced Fatty Liver Model Rats (발효 와송 급여 흰쥐의 orotic acid 유발 지방간 개선 효과)

  • This study aimed to evaluate the protective effect of Orostachys malacophyllus (OM) and fermented O. malacophyllus (FOM) in Sprague-Dawley rats who had been intoxicated with 1% (w/w) orotic acid (OA) for 10 days. The activities of several hepatic enzymes, aspartate aminotransferase (AST), alanine aminotransferase (ALT), alkaline phosphatase (ALP), lactate dehydrogenase (LDH), and cholinesterase, were increased when OA was given, but these parameters were significantly decreased by FOM treatment. In addition, OA treatment resulted in an increased lipid peroxidative index (thiobarbituric acid-reactive substances, TBARS). A worsened antioxidant status (reduced glutathione) in the liver and serum was also observed. FOM treatment improved the antioxidant status of OA-induced fatty-liver rats, which was evaluated by decreased levels of the lipid peroxidative index and improved antioxidant status in the liver and serum. The contents of liver non-heme iron were increased with OA treatment and significantly decreased with FOM treatment, which suggested that the lipid peroxidation contents were inversely correlated with liver non-heme iron content. Based on these results, FOM is considered a material with significant potential for development into a functional health food that can improve fatty-liver conditions.

Effect of Harvesting Time and Making Method on Feed Value and Fermentative Quality in Silage of Whole Crop Barley (수확시기와 조제방법이 청보리 사일리지의 사료가치 및 발효품질에 미치는 영향)

  • This experiment was conducted to obtain basic a information on feed value and fermentative quality of whole crop barley with different harvesting time and making method. As a result, in case of feed value, crude protein, NDF and ADF content were decreased with late harvest, but TDN was increased. In the silage, the results were similar and these patterns showed the same before and after the silage making. Thus, there was no significantly difference in bale and chopper. In case of fermentative quality, pH of the silages showed increasing with late harvesting time but the contents of organic acid did lower, and those tendencies were the same in both bale and chopper condition. But the lactic acid content were approximately 23 percent higher in chopped condition. In conclusion, ensiling at yellow ripe stage is better than other stages, chopped ensiling could improve fermentation quality.

EFFECT OF ADDITION OF INTACT OR ALKALIZED LUCERNE JUICE AT ENSILING ON THE NUTRITIVE VALUE OF RICE STRAW SILAGE

  • This experiment was conducted to study the effect of addition of Lucerne juice (LJ) obtained by mechanical extraction of freshly harvested crop on the nutritive value of rice straw silage. Rice straw (RS) was ensiled with intact, NaOH or $NH_3$ treated LJ at 3:7 ratio on fresh weight basis (LJ RS, LJ NaOH RS and LJ $NH_3$ RS, respectively). Each alkali was mixed with fresh juice at a level of 4% of rice straw dry matter just before ensiling. Rice straw ensiled with water was prepared as the control (W RS). In the digestion trial, goats were allocated in a $4{\times}4$ Latin-square design and fed the diet containing three parts of RS silage and one part of wheat bran (DM basis). For the goats receiving the control silage, urea was supplemented at feeding time so as to adjust the nitrogen intake except for goats on LJ $NH_3$ RS silage. Crude protein content of RS silage was increased from 5.2 to 9.1% (DM basis) by the addition of intact LJ and to about 24% by $NH_3$ treated LJ. The control W RS silage contained only trace amount of lactic acid and was dominated by acetic and butyric acid. The addition of intact LJ reduced butyric acid content and $NH_3-N/TN$ of the silage whereas the addition of alkalized LJ increased those values and shifted to a butyrate type fermentation. Nutrient digestibilities and nitrogen balance of goats were almost the same when they were fed W RS and LJ RS silage indicating the addition of intact LJ did not improve the nutritive value. The addition of alkalized LJ significantly increased the fiber digestibilities of RS silage and $NH_3$ treatment was more effective than NaOH treatment. Postprandial ruminal $NH_3-N$ and blood urea nitrogen (BUN) concentrations were decreased by feeding LJ NaOH RS silage suggesting ruminal protein synthesis was enhanced along with the increase of energy supply for supply for rumen microbes by the alkali treatment. The advantageous fiber digestibilities of LJ $NH_3$ RS silage compared with those of LJ NaOH RS silage might be attributable to a sufficient nitrogen supply for microbial fiber digestion in the rumen.

Effects of Inoculants on the Quality of Round Baled Grass Silage (유산균제 첨가가 라운드베일 목초 사일리지의 품질에 미치는 영향)

  • This experiment was conducted to determine the effect of microbial inoculant on the quality of round baled grass silage at experimental field of Grassland and Forages Division, National Livestock Research Institute, RDA, Suwon from 1997 to 1998. The experiment was consist of randomized block design with three replications. The treatments were three different inoculant (control, inoculant A, B and C). The contents of ether extract(EE), crude protein(CP) and in vitro dry matter digestibility(IVDMD) in inoculant treatment plots were higher than those in control. Silages treated by Inoculant A, Band C had significantly lower acidity than that of control silage (p<0.05). Dry matter(DM) content of control silage was higher than those of inoculant treated silage. There were significant differences in organic acid contents among treatments(p<0.05). Lactic acid was increased with inoculant treatment, but, acetic and butyric acid was decreased. The DM loss of all silages were decreased with inoculant treatment and quality grade of inoculant treated silage was higher than that of control. Results of this study indicate that addition of microbial inoculant will improve the fermentation and quality of round baled grass silage.
