주민의 외식행동에 따른 지역 외식산업의 마케팅 전략 (A Study on Dining-Out Behaviors of Community for Marketing Strategy of Local Foodservice Industry)

  • The purpose of this study was to propose the marketing strategy for the local foodservice industry which can lead to successful business in keen competitive foodservice industry by adapting community residents' dining-out behaviors. A total of 350 adults (291 collected, 102 men and 188 women) was surveyed with a questionnaire about the frequency of dining-out, company when out to eat, proper price for one meal, reasons why one chooses a specific restaurant, and general information. Data was analyzed by SPSS/win 7.5. Over the 1/3 of residents (36.3%) ate out 1-2 times a week and slightly over the 1/4 of residents (26.4%) did so 1-2 times a month. Usually men did more dining out than women. Teachers/ professors' (52.6%) dined out 1-2 times a week. Respondents with 1-2 million won of monthly income (46.4%) ate out 1-2 times a week. Almost 3/4 of respondents chose Korean restaurant. The main factors affected selecting the specific restaurant were 'cleanliness of food and atmosphere of restaurant', and 'reasonable price'. More than 1/3 of respondents (38.9%) answered 5,000-8,000 won was reasonable price for eating-out. Respondents in 20's dined out with friends (70.4%) and friends (43.0%) chose the specific restaurant; on the other hand, the other age groups usually dined out accompanied by family (60.7 - 73.7%) and respected spouse or children's opinion when selecting a restaurant. Thus, the menu must be reevaluated from the customers' view point and nutritional status for the well-being of community residents.

  • The purpose of this study was to analyze which factor, influenced their change from pre-wage group to family business group. The subject of study classified by wage earner group and family business group. Independent variables effected by transform to family business group are classified by personal variables and workable variables. The major findings of this study are as followings: Sex, age, marriage of personal variables and pre-work time, pre-wage, wholesale - retail business, restaurant business and person service business of pre-industry of work variables had significant effect on transform to family business. Especially, Marriage group and low pre-wage income group significant effected on transfer to family business. By this, personal to transfer to family business can conjugate information of search and choice decision and can be used as a valuable data for future family business study.

  • This is the study about the efficient operation management of family restaurant employee. This study focus on the establishment and proposal of the efficient management plan of family restaurant industry's worker by the result which was analyzed statistically. In the side of employee's management, It will have to try to become accomplished a policy of public welfare possible to understand and the both direction communication that it will be able to understand with each other to understand. Also the possibility of incentive in order to be, must endeavor as continuation of the holiday duration when is not the money compensation which is simple even from compensation dimension, the holiday system which is various. In the side of employee's development training as providing the chance possibility of ability development there is a possibility where a satisfaction the business enterprise of family restaurant industry's worker will lead and occupation it will feel and the continuous training against the field which the oneself inside the store is keeping it leads and the knowledge. In the conclusion, the study of the human resources and the efficient human resources who is the possibility the manager and worker for being satisfactory should be go on.

  • This study investigates the importance of customers who use hotel restaurants on the basis of literature and actual data, establishes positioning strategies to stimulate hotel restaurants amidst an intensely competitive market, and sets up marketing strategies that can be applied to hotel restaurant business from the analysis results. Determinant factors for hotel restaurants were service quality, food, atmosphere and cleanness, brand and reputation, the attitude and appearance of attendants, and variety of menu, in the order of importance. As for the analysis results for satisfaction, the higher the customers regarded on the attitude and appearance of attendants and the food of the restaurant, the higher the overall satisfaction, the intention of revisiting, and the intention of recommendation of the customers became. Therefore, the marketing and promotion staffs of hotel restaurants should search for the ways to meet these needs of customers as much as possible, and identify the usage inclinations and satisfaction level of customers when carrying out marketing activities and establishing customer relationship marketing strategies.

  • 외식 경험에 대한 온라인 리뷰의 확산은 특히 해외 관광객의 음식점 선택에 중요한 영향을 주고 있다. 선행 연구는 음식의 질, 서비스, 분위기, 가격을 음식점 선택의 중요 요인으로 식별해왔다. 하지만, 이러한 4개의 대표적 요인 이외에 관광객의 음식점 선택에 중요한 영향을 미칠 수 있는 문화적 요인에 대한 연구는 크게 주목받지 못하였다. 본 연구는 중국인 관광객이 dianping.com에 게시한 76개 한식당에 대한 온라인 리뷰 10,000건 이상을 텍스트 마이닝 기법으로 분석하여 해외 여행 맥락에서 관광객의 음식점 선택에 대한 문화적 요인의 영향을 탐색하였다. 연구 결과, 문화적 요인인 한류가 중국인 관광객의 한식당 경험과 만족도에 영향을 미치는 것으로 나타났다. 또한 냉면, 비빔밥, 떡, 족발, 김치찌개 등 한식 관련 단어는 모든 리뷰 주제에 걸쳐 등장했다. 본 연구 결과는 텍스트 마이닝을 활용하여 음식점 선택과 관광객의 만족도에 대한 문화적 요인의 중요한 역할을 식별함으로써 기존 문헌에 기여한다. 해당 연구 결과는 많은 중국인 관광객을 유치하기 위한 실질적인 지침을 제공한다.

베이비부머 소비자의 온라인을 통한 외식정보채널유형 선택에 관한 연구 (Study on the Type of Selecting Channels through the On-Line about Restaurant Information by Baby Boomer Consumers)

  • 본 연구는 베이비부머 외식소비자가 온라인을 활용한 외식정보를 탐색 시 1)군집에 따른 인구통계학적 특성의 차이 2)군집별 온라인 채널 선택유형의 차이를 분석하고자 하는데 목적이 있다. 본 연구에서는 최근 3개월 내 온라인 채널을 활용해 외식정보를 탐색한 수도권지역에 거주하는 베이비부머 외식소비자 총 280명을 대상으로 2016년 4월15일부터 4월 30일까지 조사하였다. 실증분석을 위해 빈도분석, 요인분석, 군집분석과 교차분석을 실시하였다. 요인분석결과 온라인 활용속성은 3개의 요인, 정보 유용성 몰입, 온라인 주도활동과 습관이 도출되었다. 요인분석을 바탕으로 베이비부머 소비자를 군집분석 하였다. 4개의 군집으로 온라인 적극활용형, 습관형, 온라인 주도 활동형과 소극활용형으로 세분화되었다. 군집별 인구통계학적 특성은 성별과 월평균소득에 유의미한 차이를 나타냈다. 개인형 온라인 채널에서 4개의 군집 모두 개인블로그, 페이스북, 트위터 순으로 선택하였다. 기업형 온라인 채널에서는 온라인 적극활용형과 습관형은 외식업체 공식홈페이지. 공식블로그, 공식페이스북, 공식트위터 순으로 선택하였다. 온라인 주도 활동형과 소극활용형은 외식업체 공식홈페이지. 공식블로그, 공식트위터, 공식페이스북 순으로 선택하였다. 또한 시사점과 향후도 논의하였다.

  • Purpose - Since the number of cafés operated by using cultural marketing in Jeju Special Self-Governing Province is increasing, this study emphasizes the necessity of cultural marketing, which is a different strategy of specialty coffee shops, focusing on Jeju Island. The purpose of this study is to investigate the effect of positive effects of service quality and brand image on customer satisfaction through cultural marketing. Research design, data, and methodology - It emphasizes the necessity of cultural marketing of specialty coffee shops, and how the positive effects of service quality and brand image brought through cultural promotion, culture support, cultural support, cultural enterprise influence customer satisfaction. The results of this study are as follows. In order to verify the research hypothesis of this study, Jeju residents who have experience using cultural marketing conducted in coffee shops in Jeju Island are targeted. The cafe in Jeju area, which runs from April 4 to April 14, 2018. A total of 110 copies of the questionnaire were distributed, and the final 100 copies were used as final empirical analysis data. Result - The results of the study are as follows. First, promotion and culture business activities have positive influence on brand image. Second, production and cultural business activities had positive effects. Third, brand image has a positive effect on customer satisfaction. Fourth, service quality has a positive effect on customer satisfaction. Conclusions - The implications of this study are following as: First, if you want to grow into a cultural enterprise in the province by enhancing your brand image, you need to prioritize cultural direction and business direction for cultural companies among sub-factors of cultural marketing. Second, it is necessary to improve the customer satisfaction through the improvement of the brand image considering the composition of the stores in the city, the facilities and the atmosphere, and the consumer tendency such as product and customer age.

The Influence of the Experiential Marketing Factors of Restaurant on the Brand Image, Satisfaction, and Customer Loyalty : Focused on Restaurants in Complex Shopping Mall

  • The purpose of this study is to develop and test a model that explains the effect of experiential marketing factors on: 1) brand image, 2) satisfaction, and 3) loyalty in context of restaurants located in complex shopping mall. In addition, the study clarified how these variables relate to each other. Survey were distributed to customers who have visiting experience(s) in a restaurants in complex shopping mall. Total 360 participants were distributed and 344 questionnaires were used for analysing. The confirmatory factor analysis and structural equation modeling(SEM) have been employed research methods for frequency analysis, reliability analysis and measurement model validation. The findings of this study identified that relation factor of experiential marketing elements was only significant factor on brand image Furthermore, sense and recognition were critical components of customer satisfaction. Last, present study also identified the significant relationship between satisfaction and customer loyalty. These findings may contribute to provide valuable marketing strategic for this business segmentation, and it can be utilized as a fundamental study to establish an efficient business plan to increase revenue especially for restaurant business located in complex shopping mall.

외식 업체 파트너쉽 요인이 SCM에 미치는 영향 (A Study on the Effects of the Partnership Factors of the Foodservice Industry on SCM Success)

  • Various techniques of business innovation such as MRP, ERP have been introduced, which has offered many advantages to the foodservice industry. However, these techniques optimized only a part not for the whole supply chain. For overcoming this problem, companies introduced SCM(Supply Chain Management). Since SCM research for restaurant business hasn't been widely studied, this research focuses on the relation between purchasers and suppliers in the domestic restaurant business. It divided the types of purchaser-supplier relationships in the foodservice industry and studied the influences that partnership factors have for the results. The SCM achievement was divided into asset management, job efficiency and customer satisfaction sharing, reliance/cooperation, professional technology and relation concentration. Under these factors, it looked into the difference that partnership affects SCM achievement. It made it easy to understand the importance by practically analyzing the relation of partnership factors extracted by SCM achievement and investigation suggested by the previous researches. It was found that the partnership factors such as extracted information sharing, reliance/cooperation, professional technology, and relation concentration positively affect the SCM achievement such as asset management, job efficiency and customer satisfaction.

  • 인터넷 기반의 정보시스템은 모든 기업들에게는 필수적인 요소이며 기업 활동을 위해 전략적으로도 활용되어지고 있다. 이러한 정보시스템은 더 이상 외식기업도 예외는 아니다. 본 연구는 외식사업에서 제공하는 정보품질이 근로자 직무만족에 영향을 주는가와 그리고 경영성과에 어떻게 영향을 미치는지를 알아보았다. 본 연구에서는 인터넷 정보품질은 근로자 직무만족에 영향을 주는 것으로 판명되었다. 그리고 경영성과에도 영향을 주는 것으로 나타났다. 본 연구를 바탕으로 좀 더 다양하고 활발한 연구가 진행되어 한식의 세계화와 외식기업의 글로벌화를 위한 인터넷 정보시스템 품질에 더욱 노력하여야 할 것으로 생각된다.
