The present study was conducted on 200 food handlers employed at restaurants with open-kitchens in Seoul to evaluate their food sanitation knowledge levels and practices. A majority of participants (88%) replied that open-kitchens are more hygienic than common kitchens due to the sanitary cooking process. The correct answer rate was 94.3% for sanitation of instruments and utensils and environmental sanitation, whereas food handling sanitation (66.8%) was ranked at the bottom among food sanitation knowledge. Total scores of food sanitation knowledge were significantly influenced by education level and ages of food handlers (p<0.001). Personal hygiene knowledge level of food handlers regarding institutional food service was higher than that of food handlers at restaurants and bakeries (p<0.001). Food sanitation practices scores showed significant differences in personal hygiene (p<0.001) and environmental sanitation (p<0.05) according to certificate possession. As the result of correlation analysis between food sanitation knowledge and practices, there was no significantly positive correlation, whereas a significant positive correlation was observed between knowledge of food handling and personal hygiene practices (p<0.05). The results show need for improvement in both knowledge and practice levels of open-kitchen food handlers. Consistent and customized food sanitation education program should be developed to protect against food poisoning at open-kitchen restaurants.
This study was to evaluate the anthropometry, dietary attitudes and the other factors of 201 children in day-care centers according to their parents' income levels. The evaluation was conducted using anthropometric measurements such as height, weight, skinfold thickness, blood pressure, and questionnaire survey which was completed by the children's mothers. The results are summarized as follows: Overall growth of children was normal according to Korean standard. There were no significant differences in anthropometry according to the income levels. The scores of eating habits of children were different significantly according to income levels. That is, the score was the lowest in the low-income group. Children generally prefer one-dish meal or snacks, while the preference levels of kimchi, seasoned vegetable and beans broiled in soysauce were lower than those cf other foods. In the questions to know mothers' nutrition knowledge, we could see that they didn't know well about protein, breast-feeding, weaning and balance in nutrients. Nutrition knowledge score of mothers was significantly lower in the low income group, which shows close relationship with low-score eating habits of their children. The score of nutrition knowledge was affected by the mother's education level. The higher the mother's nutrition knowledge and education level, the better children's eating habits. These findings emphasize the planning and application of nutrition education programs for mothers especially in the low income group.
Karmiloff-Smith was first to propose the 'Representational Redescription model'. It describes a process through which children elaborate their knowledge from the unconscious and implicit levels to the conscious and explicit levels. The model also assumes that children in perfectly explicit levels are able to express their own representation of knowledge verbally. This study was conducted to investigate Karmiloff-Smith's Representational Redescription(RR) model(1990, 1992, 1999) within the drawing domain. Additionally, how verbalization training influences children's development of representational redescription in drawing were also examined. First, 331 children (4- to 6-year-olds and an older comparison group of 7- to 9-year-olds) were asked to create six drawings of both familiar and novel topics. From these drawings, children were measured for procedural rigidity and developmental differences. Thereafter 80 5-year-olds children who were not able to manipulate their drawings with flexibility were selected. They were divided into an experimental group and two control groups. A group of verbalization training was given a session using 5 tasks. Compared to the control groups, children who practiced verbalization in the training group showed more advanced levels of representation than their previous levels in the pretest. The results were interpreted as meaning that verbalization is likely to facilitate children's reorganization of implicit knowledge within the drawing domain and to transfer this toward explicit forms. Further research needs to pay more attention to the educational applications of learning processes based on representational redescription.
Purpose: The purpose of this study was to investigate health literacy, diabetic knowledge, and diabetic self-care among foreign diabetic patients at a hospital in South Korea. Methods: Participants was 134 foreign patients diagnosed with diabetes and who understand English. Data were analyzed by SPSS version 20.0. Results: Health literacy significantly differed with HbA1c levels, whereas diabetic knowledge significantly differed with education levels, and time since diagnosed. Diabetic self-care significantly differed with time since the diagnosis. Health literacy significantly differed with diabetic knowledge and diabetic self-care. There was a correlation between health literacy and diabetic knowledge and between diabetic knowledge and diabetic self-care but not between health literacy and diabetic self-care. Conclusion: There are significant results on health literacy, diabetic knowledge and diabetic self-care. Subject with adequate health literacy had high scores on diabetic knowledge and self-care.

The configuration design of a mechanical product can be efficiently performed when it is based on the functional modeling. There are methodologies, which decompose function from the abstract level to the concrete level and match the functions to physical parts. But it is difficult to carry out an innovative design when the function is matched only to a pre-detined part. This paper describes the configuration design process of a mechanical product with a design expert system, which uses function taxonomy and TRIZ theory. The expert system can propose a functional modeling of a new part. which is not in the existing parts list. The abstraction levels of design knowledge are introduced, which describe the operation of mechanical product in the levels of abstraction. This is the theoretical background of using knowledge of function and TRIZ for configuration design. The expert system is adequate to control this design knowledge. which expresses knowledge of functional modeling, mapping rules between functions and parts, selection of parts, and TRIZ theory. The hierarchy of functions and machine parts are properly expressed by classes and objects in the expert system. A design expert system has been implemented for the configuration design of a train bogie, and a new brake system of the bogie is introduced with the aid of TRIZ's 30 function groups.
The purpose of this study was to analyze employees' practice levels and knowledge of sanitation at school foodservice operations, to examine the sanitation conditions of current school foodservice, and to suggest an effective sanitary training program. A questionnaire survey was conducted on a total of 578 subjects and 501 reponses were made available for this study. The collected data was analyzed using SPSS of windows. The main results can be summarized as follows: Training through handouts was the most effective (53.2%) and lack of time caused by overwork (57.1%) made the practice of sanitation training difficult. The degree of employees' perceptions of the necessity of sanitary training programs was marked at 4.18 points. According to the foodservice employees' evaluation about the knowledge of sanitation concerning the sanitary training program contents, the area of environmental sanitation (96.3%) was the highest while food poisoning control (72.9%) was lowest. Foodservice employees' practice levels was ranked above 4 points (out of 5 points) in 9 areas. Practice levels of cleaning and disinfection management were highest while that of safety management was lowest. About the food service employees' practice levels of sanitation, the degree of practice and the application of knowledge was 4.39 points. There was a significantly positive correlation between the practice level of sanitation and sanitation knowledge(p<.01). Thus, educational material needs to be standardized in order to improve employees' sanitation practice level.
The main purpose of this research was to examine the variables that influence environment-friendly management behaviors of family resources. For this study, environment-friendly management behaviors were classified into four categories: buying, using, recycling and disposal. Another purpose of this study was to find out the levels of environmental education, environmental knowledge, and environmental consciousness among household managers. In order to determine the levels, a structured survey questionnaire was administered and data were collected from 391 housewives who live in Seoul and Jeonju. The results show that environmental consciousness and environmental knowledge affected buying and disposal behavior. There was a significant difference in using behavior by the degree of environmental consciousness. The variables that affected recycling behavior were environmental education and environmental consciousness. The level of environmental awareness was highest in ! environmental consciousness, second highest in environmental knowledge, and lowest in environmental education.
Purpose: The purpose of this study was to evaluate levels and correlations of epilepsy specific knowledge, attitude and anxiety in mothers of children with epilepsy. Methods: Participants were 176 mothers of children with epilepsy living in B and Y cities. Data were analyzed using descriptive statistics, t-test, ANOVA, and Pearson correlation coefficients with the SPSS 21.0 program. Results: Participants scored 57.2 (${\pm}1.7$) out of 100 points on epilepsy-related knowledge; 35.6 (${\pm}5.0$) out of 48 points on attitude toward epilepsy; 58.1 (${\pm}15.3$) out of 85 on anxiety related to a child's epileptic condition. The participants had higher levels of epilepsy-related knowledge if their family monthly income was three million KRW or higher (t=-2.92, p=.004); if there was no side effect from the medication (t=-2.91, p=.004); and if the mothers' perception of the child's health was good (F=6.181, p=.001). There was a positive correlation between knowledge and attitude related to epilepsy (r=.321, p<.001), and a negative correlation between knowledge and anxiety (r=-.257, p=.001). Conclusion: Findings indicate that interventions which reduce mothers' anxiety by providing epilepsy specific knowledge and help to achieve more positive attitudes to better ways of coping with child's disease.

Purpose: The purpose of this study was to investigate the knowledge of diabetes and insulin use in patients with type 2 diabetes. Method: Participants (139) were recruited from the endocrinology outpatient department of a tertiary care hospital in an urban city. Knowledge of diabetes knowledge was measured by a brief diabetes knowledge test which had two components: a 14-item general test and a 9-item insulin-use subscale. Result: The average scores for knowledge of diabetes and insulin were 62.4 and 41.8 respectively. Scores were lower for items on the definition of glycosylated hemoglobin, diabetic diet, signs of ketoacidosis, and insulin reaction compared to other items. Knowledge scores were significantly lower for older participants, those who had lower levels of education, those who did not have a spouse, those who did not have a job, those who were not being treated with insulin, and those who tested their blood glucose less than 3 times a day. Conclusion: Definition of glycosylated hemoglobin, diabetic diet, signs of ketoacidosis, and insulin reaction should be included in education for patients with type 2 diabetes. Special education programs should be developed for elderly people, those with low levels of education those without a spouse, or without a job, or who are not being treated with insulin.

This study was done to identify the levels of knowledge and attitude toward HIV/AIDS in professional graduate medical school students. A cross-sectional survey was used, and data were collected in 2014. Participants were 97 students in South Korea. Data were analyzed using SPSS WIN 19.0 program. The mean score for HIV/AIDS knowledge was 8.91 and attitude was 7.00 out of 15. The levels of HIV/AIDS knowledge and attitude were not statistically significantly different according to participants' general characteristics. There was a statistically significant correlation between the levels of HIV/AIDS knowledge and attitude. Medical students having a high HIV/AIDS knowledge level tended more towards a positive attitude. These findings can be used in developing effective education strategies for medical students and health care providers to increase knowledge and decrease negative attitude toward HIV/AIDS.
