김장김치류의 담금방법에 관한 조사 연구 (A Survey on the Preparation Methods of the Winter Kimchi)

  • A survey study was carried out on the preparation methods of the Winter Kimchies in Seoul. Chung Cheong and Kang Won area by questioning 203 homes Individually. The results showed that the cabbage Kimchi was prepared more than 95o of total Kimchi a good heads of the Chinese cabbage were selected as proper quality of the cabbage. The cabbage were brined for 7∼10 hours with using sun-dried salts mostly(66∼78%) In Seoul and Chung Cheong area the quality of Chinese cabbage was regarded as the primary factor and the seasoning materials in Kang Won area for good quality of Kimchi, more than 70eA of the residents prepared Kimchi in Kimchi jar, and the correlation between the jar use kind of resident such as house or apartment was significantly high (p< 0.000)

김치에 관한 원주지역 주부들의 식생활 실태조사 (A Survey on the Dietary Life toy Kimchi of Housewives in Wonju Area)

  • The purpose of this study was to investigate the dietary life about Kimchi of the housewives. Self-administrated questionnaires were completed by 322 housewives in Wonju area. The results were as follows: In the point of housewives' domestic duties, over 50% of housewives took care of their domestic duties alone, and the rate who learned how to manage domestic duties from their mothers before marriage decreased as the age got younger. 77.6% of housewives responded that both man and woman could manage a dietary life at home in the future, and the rate of such response was higher as their educational careers were higher and they were younger. In the point of housewives' basic situation about Kimchi, the rate of housewives who knew how to prepare kimchi was high as they were older, and the holding rate of a refrigerator for Kimchi was high as much as 72.4%. In the point of preparation for Kimchi, the rate who made Kimchi by themselves was high, but the rate of preparing Kimchi by their parents for them was higher in the twenties. Frequency of making Kimchi, an amount or a kind of Kimchi were notably different according to housewives' age, a type of their family, the number of their family, and their having a job or not. Housewives' opinion of a market kimchi was that it was expensive, and not sanitary, and rate of purchasing Kimchi was also low. In the point of the prepartion method of Kimchi for the winter, the rate who gained Kimchi from their parents was higher as they lived in an apartment, and had a nuclear family, and had the lesser family members. In an amount of Kimchi prepared for the winter, 11∼22 heads were 23.9% and 21∼30 heads were 21.9%. In the point of the method preparing Kimchi in the future, 53.8% of housewives responded that they would make by themselves, and 28.0% answered they would prepare or purchase. 77.4% of housewives answered that they would teach how to make Kimchi to their children. In conclusion, in housewives of Wonju area, wanted to make Kimchi by themselves and wanted their children to learn how to make Kimchi.

월동배추의 품질 특성 및 김치 발효 중 이화학적 변화 (Quality Characteristics of Winter Chinese Cabbage and Changes of Quality During the Kimchi Fermentation)

  • 월동 배추 3품종 중 외형적 특징을 조사한 결과 '만풍'이 가장 크고, 무거웠으며 잎의 두께도 가장 두꺼웠다. 그러나 김치제조 시 다듬는 과정에서 초록색의 크고 두꺼운 겉잎이 많이 제거되어 가식부위의 무게는 '설왕'보다 적었다. 배추 3품종 중잎이 두꺼운 '만풍'이 경도 또한 가장 높았으며 산도도 높았다. 김치 제조 후 품질을 조사한 결과 '만풍'은 조직의 경도 저하가 다른 품종에 비하여 적었지만 pH 및 총산의 변화에 있어서는 '만풍' 품종이 가장 큰 변화를 보였다. 김치 발효시 초기의 주된 유기산은 citric acid였지만 발효가 진행되면서 lactic acid와 acetic acid의 생성량이 급격히 증가하였으며 숙성 말기의 주된 유기산은 lactic acid였으며 '만풍' 품종에서 679.7㎎/100g으로서 전체 유기산중 69.6%를 차지하였다.

계절별.발효온도별 총각김치의 품질 특성의 변화 (Seasonal Changes in Quality of Chonggak Kimchi Fermented at Different Temperatures)

  • 총각김치의 최적 숙성을 위한 발효온도 조건 확립 및 계절별 총각김치의 품질 특성에 대한 기초자료를 제시하고자 봄, 여름, 겨울 총각김치를 저장 온도에 따른 발효 양상을 살펴보았다. 총각김치의 pH의 변화는 계절별 김치의 영향보다는 저장 온도에 따른 영향이 컸다. 총각김치의 산도 변화는 계절 및 온도의 영향을 모두 받았는데, 발효 온도가 높을수록 계절의 영향이 크게 나타났다. 발효온도 $15{\sim}20^{\circ}C$에서 저장한 봄 총각김치의 초기 산도 상승은 급격하였다. 이에 반해 여름 총각김치의 산도변화는 모든 발효 온도에서 가장 낮았는데 이는 여름무의 환원당의 함량이 가장 낮았기 때문으로 생각된다. Leuconostoc sp.와 Lactobacillus sp.의 증식은 전형적인 발효 양상을 따랐으며 $10^{\circ}C$에서 발효시킨 총각김치의 유산균의 증식이 $5^{\circ}C$에서 발효시킨 김치보다 활발한 것으로 나타났다. 총각김치의 조직감의 변화는 발효 온도보다는 계절적 영향이 큰 것으로 나타났다. 겨울 총각김치는 저장기간 중 김치의 조직감이 잘 유지되는데 반해 봄 및 여름총각김치는 담금 후 조직감이 급격히 감소하였다. 총각김치의 관능평가 중 종합적인 평가는 여름과 겨울김치가 유사하였으나 겨울 총각김치의 가식기간이 길었다. 관능검사에서 가장 높은 평가를 받은 총각김치는 $10^{\circ}C$에서 발효시킨 겨울총각김치이었다.

  • 1) In Seoul, it was known that the season for preparing Kimchies (fermented vegetables) for the winter was from the middle of November to early in December, in which the preparing rates of Kimchies in the middle of November, the end of November and early in December were 32.7%, 41.3% and 12.5%, respectively. The time that the largest quantity of them was prepared was about the end of November. 2) The average cost of Kimchies prepared for the winter for a family of four, five, six and seven was $10,000{\sim}15,000$ Won, $15,100{\sim}20,000$ Won, $10,100{\sim}20,000$ Won and $10,100{\sim}20,000$ Won, respectively, and the cost did not increase in proportion to members of a family. In case of the family of $6{\sim}7$, the cost for Kimchies showed a wide range compared with those for the family of $4{\sim}5$ 3) The main raw materials of kimchi for one person for the winter required $12{\sim}20$ heads of Chinese cabbages, $14{\sim}20$ roots of radishes, $4{\sim}7$ cloves of garlics and $300{\sim}500g$ of powdered red pepper. 4) The residents living in Seoul had prepared the several kinds of the pickles for the winter as follows; (1) Chinese cabbage Kimchi (98.9%), (2) Whole Chinese cabbage Kimchi (74.7%), (3) Kkakdugi (68.6%), (4) Dongchimi (66.4%) and (5) Chong-kak Kimchi (63.3%). It has, therefore. been considered that the five kinds of Kimchies mentioned above may be industrialized. 5) Uniqueness of the raw materials used for the most popular Chinese cabbage Kimchi was to use leeks, garlics, red peppers and gingers as spices, and it was also known that proper amounts of salted shrimp pickles and oysters was mixed to the Kimchies. Therefore, it had been considered that the characteristics of Chinese cabbage Kimchies for the winter had the hot taste with freshness. 6) For keeping the Kimchies during the winter about the half of the pickle jars was buried in the ground, and another half of them were wrapped in the straw bags or styropol and they were placed on the ground or kept in the basement, 7) In most case (80.9%), the salt concentration of pickling was adjusted by one's experiences, and only 19% of them was measured with the instruments. 8) Most of remaining kimchies were usually used for other cooks, but some of them were thrown away. 9) The ratio of the people who had ever bought the market Kimchies for their own edibility was 17.8% and most of them got it only in the spring and summer season. 10) About 18% of the residents living in the general houses in Seoul had ever bought the market Kimchies. It was also known that about 48% of the residents living in the general houses and about 79% of the residents living in the apartments wanted to purchase the market Kimchies if the production of the delicious Kimchies were industrialized. The season that the people wanted to get the market Kimchies was a little different each other among the residents. About 13.4% of the residents living in the general houses wanted to purchase the Kimchies during the summer, and 11.9% of them wanted to get it throughout the year. On the other hand, in case of the apartments, 25.2% of the residents wanted to get it during the summer and 24.4% of them wanted it throughout the year (4 seasons) and 19.9% of them wanted it during two seasons. The data mentioned above have shown that many residents hope strongly an industrial production of the Kimchies. It is also true that many residents living in both the general houses and apartments want to get the market kimchies throughout the year, and particulary during the summer season that most foods are very apt to be spoiled.

서울 및 충청지역의 김치담금 재료비 및 숙성김치의 화학적 성질 조사 (A Study on the Material Ratio of Kimchi Products of Seoul and Chung Cheong Area and Chemical Properties of the Fermented Kimchis)

  • 김치 담금시 재료의 배합비와 숙성시 특성 측정을 위해 서울과 충청도에서 조사된 김장김치의 종류는 배추김치, 깍두기, 총각김치, 나박김치, 동치미, 보쌈김치, 백김치 등이었고 이 중 배추김치담금에 사용하는 주, 부재료는 약 20-25종류였으며 젓갈 및 어패류 의 사용이 많았다. 배합비는 배추 71.9%$\pm$7.7, 무채 11%, 파 2.3-2.6%, 마늘 1.3-1.6%, 고추가루 2.7-3.2% 그리고 젓갈 3.9~4.2% 등이었다. 봄김치는 배추김치, 깍두기, 총각김치와 열무김치, 오이김치 등을 담았으며 배추김치에 김장김치의 갓 및 굴, 새우 등 어패류 대신에 부추, 생홍고추, 양파 등 신선한 계절야채르르 많이 사용하였다. 양념류는 김장김치에 비해 젓갈은 다소 적고 그 외 사용비는 비슷하였으며 나박김치, 열무김치 등 국물김치에서 건더기와 물의 비는 약 40:48을 이루었다. 또한 배추김치의 최적 숙성은 pH 4.2~4.5, 총산도 0.5~0.8% lactic acid 범위였고 선호하는 염도는 김장김치류 2.3~2.74%, 봄김치류 1.8~2.4% 범위였으며 국물김치는 1.3~1.7%의 낮은 염도를 보였다.

전남지역 김장 배추김치의 품질 특성 (Quality Characteristics of Kimchi Prepared for the Winter around Chonnam Area)

  • 전남 지역의 김장 배추김치의 품질특성을 조사하기 위하여 22개 지역의 김장 배추김치를 수거하여 -1$\pm$1$^{\circ}C$의 김치냉장고(ANAX, KC-070S)에 보관하면서 품질 특성을 분석하였다. 김치 담그는 시기는 2001년 11월말부터 12월 중순이였으며 8개월 가량 숙성한 뒤에 분석을 실시하였다. 배추김치는 pH는 4.75 정도였으면 산도는 0.84% 수준이었다. 염도는 3.50%였으며, 환원당은 13.25mg%를 나타내었고, 김치의 저장 과정 중 커다란 변화중의 하나인 총 비타민 C는 10.18mg%가 함유되어 있었다. 휘발성 산도는 0.09%를 나타냈으며, 산화환원 전위값은 시료간에 차이가 크게 나타났는데 Eh/sbu 7/ 값이 -134.08mV였다. 색도는 L값이 52.29의 높은 값을 보였으며, a값과 b값은 19.68 및 27.69를 나타내었다. 미생물수의 변화를 살펴보면 총 균수는 5.5${\times}$$10^{6}$을 나타내었고, 총 젖산균수는 4.6${\times}$$10^{5}$, 총 효모수는 8.8${\times}$$10^{5}$을 나타내었다. 김치의 조직감의 변화를 기계적으로 측정한 결과 9.26kgf로 나타났다. 펙틴 조성의 변화를 보면 알코올불용성 고형물함량은 5.53%를 나타내었고, 알코올불용성 고형물로부터 분리해 낸 열수가용성펙틴(HWSP), 염가용펙틴(NaSP), 산가용성펙틴(HClSP)의 함량비를 살펴보면, methoxyl group이 비교적 많은 수용성 펙틴인 열수가용성펙틴(HWSP)은 17.35%, low methoxyl group을 갖고 있는 펙틴질인 염가용성펙틴(NaSP)은 29.65%, protopectin의 양으로 표시되는 산가용펙틴(HClSP)은 53.0%로 나타나 산가용성펙틴의 함량이 가장 높았다.높았다.

한국의 발효식품에 관하여 (Traditional Fermented Food Products in Korea)

  • Fermented foods available in Korea may be classified into four groups, namely, fermented soybean products, fermented cereal products, fermented vegetable products, and fermented fishery products based on raw materials used. The representative fermented foods based on soybean are Kanjang(soysauce), Doenjang(fermented soybean pastes), and Kochujang(red pepper added-fermented soybean paste). Such fermented products are made using Meju(functioning as a starter and prepared by fermentation of steamed soybean mash) as an essential ingredient, and used widely as a soup base and/or in seasoning side-dishes for everyday meals year around. Excepting Sikhae, all fermented products based on rice and other cereal grains are of alcoholic nature. Takju (Makgeolli) used to be made using rice as the major raw material, however, mainly due to the shortage of rice in recent years, other cereals, such as, barely, corn, and wheat flours are also used to replace rice today. Owing to such changes in the raw materials. the popularity of Takju has been somewhat reduced, yet it is still widely consumed in rural areas. Although Chungju is a popular rice wine with superior qualify over Takju, the amount consumed is considerably limited. The highest qualify rice wine, Bupju, in particular, is made by a low temperature fermentation using glutinous rice. Kimchi is an unique fermented vegetable product of long tradition in Korea. Although it was for consumption mainly in winter season serving as a source of vitamins, today it is widely used throughout the year. Except Kkakdugi and Dongchimi, all of the fermented vegetable products contain salted Korean cabbage as an essential item, while they abound in varieties depending on material composition and methods of processing, and also on seasons and localities Next to Kimchi in this category is Kkakdugi made of raddish in popularity and quantity consumed. The four groups of fermented food products described above are reviewed in some detail and evaluated in terms of their nutritional significances, processes and microorganisms involved. and their commercial potentials. Jeotkal (or Jeot) is a name given to all fermented products of fishery origin. A number of Jeot can be prepared by adding salt and allowing fermentation to the raw materials such as shrimp, anchovy octopus, clam, oyster, etc.

농촌거주 외짝가족의 식생활관리 -부부가족과의 비교- (The Odd Pair Family's Dietary management in rural, Korea - Comparison with the Pair Family -)

  • Recently the rural Korea has been remarkedly changed of family and social value in accordance with the development of industry. The lower economic class made by social economic growth is widespread with increasing aged, specially odd pair family in rural. The purpose of this study was to investigate to help and keep improve health of rural lower economic class, family system by comparing and analyzing the dietary management, between pair and odd pair family, and to get the data helpful the right guidance for rural. The subjects 1870 collected in 9 provinces by sampling with probability proportional to size (PPS). Questionnaire about dietary habit, food cultivation, production and preservation survey was conducted by trained interviewers. The main results were as follows : 1) The characteristics of odd pair families, head of household was female(77%), over 65 years(84.9%), small family(1.76 persons) and lower education(male 7.5 years, female 3.1 years) status. 2) As the states of diets of odd pair family, having breakfast(87.1 %) but one or two kinds of side dishes(31.3 %) only possible to guess lower status of food intake balance. Nutritional supplements(21. 7 %) was lower than that of paired family. 3) The aspects of dietary habit of odd pair family, no instant foods(70.7%), no snack(38.4%) no dine out(69.2%) were common. 4) Dietary habit scores were 7.78 points of odd pair family compared 8.34 points of paired family. 5) Food purchase place of odd pair family was market(44.2%) but super-market(42.7%) of paired family. 6)In odd pair family, seldom traditional dish preparation(62.0%) but prepared winter kimchi(81.9%), comparing seldom traditional dish(38.6%) and winter kimchi(96.4%) in paired family. 7)The food cultivation state was surveyed, pepper( 42.2 %) and chinese cabbage( 43.9 %) were consumed after cultivation, but sesame(59.4%), bean sprout(90.2%), tofu(92.8%) and egg(93.3%) were consumed by purchase in odd pair family.8) Food cultivation score of odd pair family was 2.98/12points significantly lower than 4.50/12 points of paired family(p<0.01). 9) At the status of fermentation food production in odd pair family, Duenjang(72.1 %) and Gochujang(69.7%) Kanjang(68.3%) Kimchi(82.1 %) and Meju(68.3%) were high rate of production, but more frequently producted in pair family. 10) The score of fermentation food production of odd pair family was 8.57/12points but significantly lower than 10.24/12 points of pair family(p<0.0001). 11) Food preservation score 0.48/6 points in odd pair family was not significantly different than that of pair family(1.07/6points).

백년초 및 녹차 가루 첨가 연근 부각의 지질저하 기능성 (Development of Lotus Root Bugak with Plasma Lipid Reduction Capacity by Addition of Opuntia ficus-indica var. saboten or Green Tea as a Coloring Agent)

  • 본 연구는 한국 전통부각 제조방법을 이용하여 부각을 부식으로뿐만 아니라 스낵의 용도로도 사용할 수 있게 개발하고자 하였다. 부각 제조가 상대적으로 간편하며 원료 자체의 색상이 거의 없는 연근을 선정하여 여기에 빨강, 녹색 그리고 노란색을 낼 수 있도록 천연 기능성 색소 소재로 백년초, 녹차 그리고 치자 가루를 사용하였다. 이들 기능성 색소 재료를 삭힌 찹쌀풀 제조 후 첨가하여 다양한 부각을 만들고 이를 말린 후 생 참기름에 튀겨 동맥경화식이에 10%가 되도록 첨가하여 $LDLr^{-/-}$ 마우스에 10주간 섭취시켜 지질저하 기능성을 비교하였다. 실험군은 동맥경화유발식이를 섭취한 wild type mice 대조군(WC), $LDLr^{-/-}$ mice 대조군(CON), 그리고 동맥경화식이에 다양한 연근부각을 첨가한 연근부각군(LRB), 백년초연근부각군(OFB), 녹차연근부각군(GTB), 그리고 치자연근부각군(GFB)의 총 7군이었다. 부각의 효과를 비교하기 위하여 제한식이를 실시하였다. CON의 혈중 지질 농도는 WC에 비해 유의적으로 높았으며, LRB의 혈중 TG, TC 그리고 LDL-C 농도는 CON에 비해 유의적으로 낮았다(P<0.05). 기능성 색소 재료 첨가에 따른 지질저하 기능성을 살펴보았을 때 OFB와 GTB군의 혈중 TG, TC 그리고 LDL-C 농도가 LRB군에 비해 유의적으로 낮았다(P<0.05). 간의 지방산 합성 효소인 FAS와 콜레스테롤 합성 효소인 HMGCR의 발현 역시 OFB와 GTB군에서 LRB군에 비해 유의적 낮아(P<0.05) 혈중 지질 농도 결과와 일치하였다. 그러나 GFB군의 혈중 지질 농도는 LRB군보다 낮았으나 유의적인 차이를 보이지 않았고, FAS 및 HMGCR 발현 역시 유의적인 차이를 보이지 않았다. FAS 및 HMGCR의 mRNA 발현을 조절하는 전사인자인 SREBP-1과 2의 발현을 살펴보았을 때, OFB군과 GTB군은 LRB군에 비해 각각 유의적으로 낮았으나(P<0.05) GFB군에서는 발현 정도가 낮기는 하였으나 유의적이지 않았다. 이상의 결과로부터 백년초와 녹차 가루를 첨가하여 제조한 연근부각은 $LDLr^{-/-}$ 마우스의 간에서 지방산과 콜레스테롤의 생합성 억제를 통해 혈중 지질의 농도를 낮추는 효과가 있음을 확인하였다.
