김치 종주국 논란의 배경과 진실, 그리고 대응 방안 - 김치의 탄생과 변화 과정 및 독특성을 중심으로 - (The Background and Truth of the Controversy over kimchi Suzerainty, And Countermeasures - Focusing on the Birth, Process, and Uniqueness of kimchi -)

  • What is the origin of kimchi and what changes did it go through to become the kimchi of today? Also, what makes kimchi different from other pickled vegetables such as Chinese paochai, Japanese tsukemono, and Western pickles, and sauerkraut, and what is the identity of kimchi? This study is the result of thought on these fundamental questions about kimchi which is the only pickled vegetable distributed around the world that uses a fermented and ripened animal seasoning called jeotgal (salted marine life) to dramatically improve its umami taste and nutritional value, thereby securing its uniqueness. Kimchi has further evolved into a unique and high-quality pickled vegetable through the use of its specialized seasoning, adopting a composite fermentation mechanism and absorbing new ingredients such as red pepper. It is expected that this paper will invigorate the discussion on the firm establishment of the identity of kimchi and the future direction that it may take.

초등학생의 김치 인식이 호의적 태도와 섭취에 미치는 영향 (Effect of an Elementary Schoolchild's Cognition about Kimchi on Favorable Attitude and Intake)

  • 본 연구는 초등학생의 김치에 대한 인식이 태도와 섭취 빈도 및 섭취량에 미치는 영향 관계를 살펴보았다. 김치에 대한 인식은 선행연구를 참고하여 '우수성', '정체성', '세계화' 인식으로 구성하였고, 각 인식별로 김치에 대한 선호와 비선호를 나타내는 '태도'와의 영향 관계와 '태도'가 김치 섭취에 미치는 영향을 확인하였다. 그 결과 김치의 '정체성'과 '세계화' 인식은 '호의적 태도'에 정(+)의 영향을 준다는 것을 확인하였다. '우수성' 인식은 '호의적 태도'에 유의적 영향이 나타나지 않았으나 '호의적 태도'에 유의한 영향을 주는 '정체성'과 '세계화' 인식에 정(+)의 영향을 미친다는 것을 확인하였다. 김치에 대한 '호의적 태도'는 '김치 섭취 빈도'와 '김치 섭취량'에 정(+)의 영향을 준다는 것도 확인하였다. 이러한 연구 결과를 토대로 아동의 김치 섭취 증진을 위해서는 김치의 정체성과 세계화 인식을 자극하는 교육 콘텐츠 개발과 보급의 필요성을 확인하였다. 또 그 기본이 되는 내용은 김치의 우수성인 것으로 사료된다.

김치 독자성의 근거와 형성 과정에 대한 고찰 (A Study on the Basis and Formation Process of Kimchi's Uniqueness)

  • The Chinese Sigyeong records the foods of the Primitive Pickling Period, pickling being a universal vegetable storage method, but does not indicate the origin of the pickled vegetables or the location of the source of transmission. Kimchi mainly used salt and sauce-based soaking materials at the beginning of the Fermented Pickling Period (beginning in the 1st to 3rd centuries A.D.), and it differed from the Chinese method, which used alcohol and vinegar. In the Umami-Flavored Pickling Period (beginning in the 14th and 15th centuries A.D.), jeotgal, fermented seafoods, were added, and pickles with a completely new identity were created, one different from any other pickles in the world. Lastly, entering the Complex Fermentation and Pickling Period (beginning in the 17th and 18th centuries), the technical process evolved using a separate special seasoning containing red pepper as the secondary immersion source after pickling in brine, the primary immersion source. As a result of this, kimchi was transformed into a food with a unique form and taste not found anywhere else. The unique characteristic of kimchi is that the composition of original materials, a combination of salted marine life and vegetable ingredients, is its core identity, and there is a methodological difference in that it is completed through a second process called saesaengchae (生菜)-chimchae (沈菜).

Characterization of Prophages in Leuconostoc Derived from Kimchi and Genomic Analysis of the Induced Prophage in Leuconostoc lactis

  • Leuconostoc has been used as a principal starter in natural kimchi fermentation, but limited research has been conducted on its phages. In this study, prophage distribution and characterization in kimchi-derived Leuconostoc strains were investigated, and phage induction was performed. Except for one strain, 16 Leuconostoc strains had at least one prophage region with questionable and incomplete regions, which comprised 0.5-6.0% of the bacterial genome. Based on major capsid protein analysis, ten intact prophages and an induced incomplete prophage of Leu. lactis CBA3626 belonged to the Siphoviridae family and were similar to Lc-Nu-like, sha1-like, phiMH1-like, and TPA_asm groups. Bacterial immunology genes, such as superinfection exclusion proteins and methylase, were found on several prophages. One prophage of Leu. lactis CBA3626 was induced using mitomycin C and was confirmed as belonging to the Siphoviridae family. Homology of the induced prophage with 21 reported prophages was not high (< 4%), and 47% identity was confirmed only with TPA_asm from Siphoviridae sp. isolate ct3pk4. Therefore, it is suggested that Leuconostoc from kimchi had diverse prophages with less than 6% genome proportion and some immunological genes. Interestingly, the induced prophage was very different from the reported prophages of other Leuconostoc species.

농산물의 브랜드와 포장디자인에 관한 연구 - 당진군의 사례연구 - (A Study on Brand and Packing Design of Agricultural Products - A Case Study in Dangjin County -)

  • This study was carried out in order to develop brand and packing design for agricultural products of Dangjin County. Current packing designs such as rice packs, cucumber box, sweet potato box, apple box and kimchi pack were collected from agricultural cooperatives in Dangjin area. For those packing designs, corporate identity(CI) clinic was conducted and the results obtained were as follows: There are varieties of names, colors, fonts, and sizes far the same items, so that consumers could not easily find and understand those CIs of agricultural products in Dangjin County. Among others, those packages are needed CI clinic such as the packages of Dangjin apple(Song-ak Agricultural Cooperative), Dangjin sweet potato(Seok-moon A. C.) and rice(Daehoji A. C., Shinpyeong A. C.). However, the packing design of Hyang-chae-bang Kimchi is evaluated as good design. For CI clinic, it is desirable to develop unique and united brand name and simple design for the packages such as the case of 'Anseong-Matzum' of Anseong City, which is unique and united brand name with simple design enhancing synergy effect for agricultural marketing.

Isolation of 2 Bacillus Strains with Strong Fibrinolytic Activities from Kimchi

  • Two Bacillus strains, K3 and K208, both demonstrating strong fibrinolytic activities were isolated from Kimchi, a traditional Korean preparation of fermented vegetables. Isolates were subjected to various molecular biology based identification methods including RAPD-PCR and identified as B. subtilis and B. velezensis, respectively. Tryptic soy broth (TSB) was found to best maintain both the growth and the fibrinolytic activity of these strains. Culture supernatants were analyzed by SDS-PAGE and fibrin zymography, and the results indicate that a 40 and 27 kDa band seem to be responsible for the fibrinolytic activities of these two isolates and the 27 kDa band was subsequently identified as the mature form of AprE, the major fibrinolytic enzyme. Thus the aprE genes were cloned and the translated amino acid sequences demonstrated 99.3% identity with each other, and 86.5% identity with BsfA, a fibrinolytic enzyme from B. subtilis ZA400 also isolated from Kimchi, and AprE2, a fibrinolytic enzyme from B. subtilis CH3-5 isolated from Cheonggukjang, a traditional Korean fermented soy. Given this B. subtilis K3 and B. velezensis K208 may be promising starter cultures in the production of fermented foods.

Identification of Lactic Acid Bacteria in Kimchi Using SDS-PAGE Profiles of Whole Cell Proteins

  • This study was conducted to evaluate the practical usefulness of the sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PACE) fingerprinting of whole cell proteins far the identification of lactic acid bacteria in Kimchi. SDS- PACE of whole cell proteins of the reference strains and lactic acid bacteria isolated from Kimchi yielded differential banding patterns that were highly specific fingerprints, thus making it possible to identify. Identification of the isolates from Kimchi was achieved by comparing the SDS-PAGE fingerprints of isolates to those of reference strains. In addition, the reliability of SDS-PAGE was examined by comparing the results with those of the APL 50 CHL system assay and 16S rRNA gene sequence. SDS-PACE assay showed a different identity to reference strains, while the APL 50 CHL system and 16S rRNA gene sequence could not distinguish a few strains. Therefore, SDS-PAGE of the whole cell proteins is a specific and a reliable method that will be useful for the identification of lactic acid bacteria in Kimchi to the species level, and can be used as an alternative or complementary identification method.

Description and Genomic Characteristics of Weissella fermenti sp. nov., Isolated from Kimchi

  • A Gram-positive, non-motile, and non-spore-forming lactic acid bacterium, designated as BK2T, was isolated from kimchi, a Korean traditional fermented vegetable food, and the taxonomic characteristics of strain BK2T, along with strain LMG 11983, were analyzed. Both strains optimally grew at 30℃, pH 7.0, and 1.0% NaCl. Cells of both strains were heterofermentative and facultatively anaerobic rods, demonstrating negative reactions for catalase and oxidase. Major fatty acids (>10%) identified in both strains were C18:1 ω9c, C16:0, and summed feature 7 (comprising C19:1 ω6c and/or C19:1 ω7c). The genomic DNA G+C contents of both strains were 44.7 mol%. The 16S rRNA gene sequence similarity (99.9%), average nucleotide identity (ANI; 99.9%), and digital DNA-DNA hybridization (dDDH; 99.7%) value between strains BK2T and LMG 11983 indicated that they are different strains of the same species. Strain BK2T was most closely related to Weissella confusa JCM 1093T and Weissella cibaria LMG 17699T, with 100% and 99.4% 16S rRNA gene sequence similarities, respectively. However, based on the ANI and dDDH values (92.3% and 48.1% with W. confusa, and 78.4% and 23.5% with W. cibaria), it was evident that strain BK2T represents a distinct species separate from W. confusa and W. cibaria. Based on phylogenetic, phenotypic, and chemotaxonomic features, strains BK2T and LMG 11983 represent a novel species of the genus Weissella, for which the name Weissella fermenti sp. nov. is proposed. The type of strain is BK2T (=KACC 22833T=JCM 35750T).

韓·美간 농촌부엌공간에 관한 생활문화의 영향과 거주자 요구의 비교 (The Comparison between the American Life Culture and User's Needs and Korean's affecting on the Rural Kitchen Space)

  • The purpose of this study was to find out the design identity of the Korean kitchen space through out comparing life culture and user's needs of the rural kitchen space between Koreans and Americans. This research was done by the literature review and the empirical data collected through the questionnaire by mail in the state of Missouri, USA and the field survey in the province of Chonbuk, Korea. The American rural residents were 104 and the Korean were 100. The results were as follows. 1) The characteristics of the Korean rural food life were the making Kimchi, soy sauce and bean paste etc. and the preparing food for family events such as birthdays and holidays. They had need to be planned the second kitchen. 2) The characteristics were planned the Korean rural main kitchen to be equipped with another refrigerator for Kimchi, to be wider floor area and to be located near the living and the dining room. 3) The kitchen space also was not reflected on the aged's desire, but this factor will be important to be planned.

Casein phosphopeptide를 생산하는 김치 유래 유산균의 분리 및 특성 연구 (Isolation and Characteristics of Lactic Acid Bacteria Producing Casein Phosphopeptides from Kimchi)

  • 본 연구에서는 전국 가정집에서 제조한 김치로부터 분리한 유산균들 중에서 protease 활성 및 CPP 생산 능력이 가장 높은 균주인 strain 0301을 동정하였고 해당 균주의 특성과 CPP 생산 최적 조건을 조사하였다. 0301은 $0.6-0.8{\mu}m$ 크기의 gram 양성 구균이며, 16s rDNA 염기서열 분석 결과 Enterococcus faecalis MG-379로 동정 명명하였다. E. faecalis MG-379 균주를 2% fructose를 첨가하고 pH 6.0인 배지에서 37oC에서 36시간 배양하였을 때 CPP 생산 능력이 최대였으며, ICP를 이용하여 측정한 결과 2227.5 mg/kg으로, 비교 균주인 Enterococcus faecalis KCCM 40450에 비해 약 2배 가량 높은 CPP 생산 능력을 갖는 것으로 나타내었다.
