Objectives: This review examined the scientific evidence regarding the impact of climate change on food safety. Methods: The impact of climate change on food safety was assessed based on a survey of related publications reported in the past 20 years. The terms used for literature selection reflect three aspects: climate change; food; and food safety. Results: Climate change is expected to affect the key elements of food production - water and climate. These impact on food safety through many different pathways. Directly, food shortages according to the population grovoth result in a food security/food supply problem, These relationships are commonly understood. The indirect impacts include an increase in food-borne diseases and pathogens, increased mycotoxin production, and increased risk of pesticide residues in foods due to greater use of pesticides in response to warming and increased precipitation and the accompanying diseases in certain crops. Field studies and statistical and scenario analyses were performed to provide evidence. However, quantification of these relationships is still lacking. Conclusion: Adaptation measures at the local and community levels are essential since the pressures from weather and climate events may differ according to region and sector. It is recommended that we go beyond empirical observations of the association between climate change and food safety and develop more scientific explanations. We also need to explore alternative materials for bioenergy demands in order to improve sustainability.
Garlic(Allium sativum Linn) is widely used as a common condiment for a variety of foods and beverages. It has been well known that fresh garlic and garlic supplement of commercial preparations have various therapeutic properties including antimicrobial activity, antiplatelet aggregation, antihypertension, and cholesterol-lowering effects, which contribute to its increasing uses for an alternative medicine. Allicin(diallyl thiosulfinate), the major bioactive components of garlic, is formed by alliinase cleavage of the naturally occurring alliin upon crushing or mincing of garlic, and is the progenitor of a number of other products, such as diallyl disulfide. CYP3A4, heme-containing monooxygenase, is a key enzyme responsible for drug metabolism. Therefor, in the present study, we isolated and examined the compounds with CYP3A4-inhibiting activities from garlic. Among EtOAc extracts of garlic, we found that N-p-coumaroyltyramine and N-feruloyltyramine showed remarkable CYP3A4-inhibiting activities, compared to diallyl disulfide. Structures of the isolated active compounds were established by chemical and spectroscopic means.
Amyloid plaque, also called senile plaque, the product of aggregation of ${\beta}$-amyloid peptides ($A{\beta}$), is observed in brains of the patients with Alzheimer's disease (AD) and is one of the key factors in etiology of the disease. In this study, hydrolysates obtained from the sea hare (Aplysia kurodai) were investigated for ${\beta}$-secretase inhibitory peptide. The sea hare's muscle protein was hydrolyzed using six enzymes in a batch reactor. Trypsin hydrolysate had highest ${\beta}$-secretase inhibitory activity compared to the other hydrolysates. ${\beta}$-secretase inhibitory peptide was separated using Sephadex G-25 column chromatography and high-performance liquid chromatography on a C18 column. ${\beta}$-secretase inhibitory peptide was identified as eight amino acid residues of Val-Ala-Ala-Leu-Met-Leu-Phe-Asn by N-terminal amino acid sequence analysis. $IC_{50}$ value of purified ${\beta}$-secretase inhibitory peptide was $74.25{\mu}M$, and Lineweaver-Burk plots suggested that the peptide purified from sea hare muscle protein acts as a competitive inhibitor against ${\beta}$-secretase. Results of this study suggest that peptides derived from sea hare muscle may be beneficial as anti-dementia compounds in functional foods or as pharmaceuticals.

Leuconostoc mesenteroides is a heterofermentative Grampositive bacterium that plays key roles in fermentation of foods such as kimchi, sauerkraut, and milk, leading to the production of various organic acids and aromatic compounds. To study the microbiological and genomic characteristics of L. mesenteroides, we have developed a new chemically defined minimal medium by using the single omission technique. During the exponential cell growth, this species required glutamine, methionine, valine, and nicotinic acid as essential nutrients and 8 amino acids (arginine, cysteine, histidine, leucine, phenylalanine, proline, threonine, and tryptophan), 5 vitamins (ascorbic acid, folic acid, inosine, calcium panthothenate, and thiamine), and others (manganese, magnesium, adenine, uracil, and Tween 80) as supplemental nutrients. This medium is useful to study the metabolic characteristics of L. mesenteroides and to explain its role in food fermentation.
Members of the genus Aspergillus are the most common fungi and all reproduce asexually by forming long chains of conidiospores (or conidia). The impact of various Aspergillus species on humans ranges from beneficial to harmful. For example, several species including Aspergillus oryzae and Aspergillus niger are used in industry for enzyme production and food processing. In contrast, Aspergillus flavus produce the most potent naturally present carcinogen aflatoxins, which contaminate various plant- and animal-based foods. Importantly, the opportunistic human pathogen Aspergillus fumigatus has become the most prevalent airborne fungal pathogen in developed countries, causing invasive aspergillosis in immunocompromised patients with a high mortality rate. A. fumigatus produces a massive number of small hydrophobic conidia as the primarymeans of dispersal, survival, genome-protection, and infecting hosts. Large-scale genome-wide expression studies can now be conducted due to completion of A. fumigatus genome sequencing. However, genomics becomes more powerful and informative when combined with genetics. We have been investigating the mechanisms underlying the regulation of asexual development (conidiation) and gliotoxin biosynthesis in A. fumigatus, primarily focusing on a characterization of key developmental regulators identified in the model fungus Aspergillus nidulans. In this review, I will summarize our current understanding of how conidiation in two aspergilli is regulated.
The potato has been used as a part of key staple foods in Korea. Recently, the demand for the potato tends to increase due to its nutritional Quality, and the Quantity of imports has rapidly been increasing. Contamination of seed potato by pathogens especially could cause a severe reduction of total production. In order to solve the problem, Korea Research Insistute of Bioscience and Biotechnology(KBIBB) developed the new commodity called a "potato microtuber". Before its production and distribution, researches on new commodity should be undertaken in many aspects, especially in terms of economic aspects. The main objectives of this study are to measure the economic value of the potato microtubers and to forecast its spreading effects and to examine the Contingent Valuation Method(CVM) could be accepted in the economic analysis for a new agricultural product, here in potato microtubers. Through the regression results, the consumer behavior analysis had performed for potential users of potato microtubers, and through the demand function derived by the consequence of functional relationship, consumer's surplus was estimated.

There are severl types of Eco-village developed in abvanced countries including urban, suburban and rural style. For the establishment of Eco-village in Korea, it was focussed to introduce the rural style which has been developed inyersively in European countries such as Denmark, England and Germany. As a key cencept for Eco-villge it was explained briefly and discussed on the renewable energy(wind power park, bio-mass and solar energy collector and heating system), eco-architure, methane gas device, living machine (wastewater treatment facility) and organic farming. It was also discussed how important the basic standard and guidelines for organic agriculture to run essential for the system. For this reason major principles of international applicable standard(draft) for organically grown foods by FAO/WHO Codex alimentarius was shortly desidered. as one of very suitable type for Environmental Agriculture Districts Program which Korean govenment is going to establish in the near future. In conculusion it was also suggested that positive participation of organic famers, enthusiastic eneagement of inhabitans and support strategy of govemment /NGO groups might play very important role for successful managment of Eco-village ecologically sustainable after establishment.
To investigate the anti-inflammatory activity of natural products, we determined the anti-inflammatory activity of purified epigallocatechin (EGC) from Camellia sinensis leaves. In the present study, we found that EGC inhibited the production of proinflammatory mediators (IL-6, TNF-${\alpha}$, NO, and $PGE_2$) in lipopolysaccharide (LPS)-stimulated Raw 264.7 cells. Suppression of IL-6 seems to be at least partly attributable to the inhibitory effect of EGC. TNF-${\alpha}$ is a major cytokine produced by LPS-induced macrophages, and they have a wide variety of biological functions including regulation of inflammation. The inhibition of IL-6 and TNF-${\alpha}$ production by EGC may downregulate the acute-phase response to LPS, thereby reducing LPS-induced inflammation. In addition to IL-6 and TNF-${\alpha}$, EGC effectively reduced the production of other key inflammatory mediators, including NO and $PGE_2$. The inhibitory effect of EGC on NO and $PGE_2$ production was supported by the suppression of inducible nitric oxide synthase and COX-2 at protein levels. These results support the traditional use of EGC in the alleviation of various inflammation-associated diseases and suggest that EGC might be useful in the development of new functional foods for inflammatory diseases.
This study was to investigate the consumption pattern, behaviors, and motivational attitudes related to fruit and vegetables. Data were collected from 344 mothers whose children were attending an elementary school and a middle school in Kimcheon. The average vegetable expenses were under 10,000 won per week. The frequency of purchasing vegetables was 2-3 times a week. Housewives usually bought the vegetables at local markets and grand shopping centers. As for buying vegetables, housewives considered the organic vegetables, preference, price, and nutrition in order. In the family, the vegetables were favored by husbands most and by sons least. The average fruit expenses were under 10,000 won per week. The frequency of purchasing fruit was 2-3 times a week. Housewives usually bought the fruit at local markets and grand shopping centers. As for buying fruit, housewives considered preference, price, and nutrition in order. The fruit were favored by all members most and by husbands least. Housewives identified barriers to increasing vegetables and fruit consumption, including preference for other foods, lack of availability, cost, and time and effort to prepare. Several implications for nutrition interventions were suggested. First, a key motivation for these women was eating healthy food when they are pregnant, suggesting a persuasive appeal to use in interventions. Second, review of the women's current behaviors led to an identification of four specific behaviors that had the most potential for increasing overall consumption. Finally, the findings suggested ways in which nutrition interventions could address each of the barriers identified.
In this study, the distribution of dictyostelid cellular slime molds was investigated from F, H and $A_1$ horizon of pinus, oak forests in Mt. Puk'an, Mt. Nam and Mt. Kwanak. The relationship of cellular slime molds with other soil microorganisms and abiotic factors were analyzed. The six species were isolated as follows: Polysphondlium pallidurn, Dictyostelium purpureum, D. mucoroides, D. crassicaule, D. capitatum, D. implicatum. The dominant species in pinus forests was P. pallidum, and in oak forests it was D. macro ides. In Mt. Nam, D. mucoroides and P. pallidum were isolated at only oak forest. The Correlations of slime mold abundance with bacteria were significant. Even though positive correlations of cellular slime molds with actinomycetes or fungi were not significant, correlations between soil microorganisms were analyzed. Correlation coefficients were high in Mt. Kwanak(r=0.5921) and Mt. Nam(r=0.7243) at significant level P<0.01. There were significant correlations between total slime molds and abiotic factors. It supports that cellular slime molds are limited by foods in nature. In low level of pH, water content and organic matter, that community diversity is more affected by bacteria whose organic degradation capacity is regulated by interactions of soil microorgaisms.
