This study examined the menu management and utilization of cooking equipment at school foodservice operations in the Chonbuk area. Self-administered questionnaires were collected from a total of 193 school dietitians. Statistical data analysis was completed using the SPSS v. 11.5 program. The results are summarized as follows. Among the 193 schools, 58.5% were elementary schools and 41.5% were middle and high schools. Approximately 97% of the schools prepared meals in the conventional manner. Among the school, 68.4% had a menu cycle of 1${\sim}$2 weeks. The frequency of using convenience foods was significantly different between the elementary schools and middle and high schools(p<0.001). Approximately 45% of the dietitians responded that the most important details for menu planning were menu variety and consumer preference. However, 66.8% of the dietitians responded that a key problem for menu planning was limited and worn-out kitchen equipment. Although the cost of purchasing cooking equipment is high, most dietitians responded they have high needs for equipment in order to meet of the quantity demands of food production. In terms of utilized cooking equipment, most schools had mixers, vegetable cutters, choppers, dish washers, etc. Yet the amenities most often lacking were meat slicers, composting machines, ovens, and griddles. In utilizing the cooking equipment, there was no significant difference between the dietitians in the elementary(3.67) schools and those in the middle and high school foodservice systems(3.70); however, the utilization level was poor. Therefore, governmental regulatory agencies should review and finance support for purchasing cooking equipment. Finally, purchasing analysis was conducted regarding the dietitians' opinions on menu recipes and useful equipment.
Objectives: A pilot study was undertaken to assess the bioaerosol levels in restaurants and determine the effects of variations in temperature, relative humidity, and air movement on these levels. It focused on the differences between kitchens and dining areas, as well as between summer and winter. Methods: A field survey was performed in six restaurants. An Anderson type air sampler was used for sampling bioaerosols, such as total suspended bacteria (TSB), Gram-negative bacteria (GNB), Gram positive bacteria (GPB), opportunistic bacteria (OP), Staphylococcus spp., and total suspended fungi (TSF). Results: The average levels of TSB were $1{\times}10^2CFU/m^3$ and of TSF they were $1{\times}10^0{\sim}10^1CFU/m^3$. The kitchens had higher bioaerosol levels compared to dining areas, and summer showed much higher levels than winter. The concentration of OP in summer was more than six-fold that of winter. S. aureus was detected both in kitchens and dining areas, even in winter. The main effect of air movement on TSB levels was significant (p<0.05), as was air temperature, relative humidity and air movement on TSF levels (p<0.05). Conclusion: There was a wide variation in bioaerosol levels among different restaurants. The results indicate that cooking foods may be a key factor affecting bioaerosol levels. The effects of air temperature and relative humidity reveal that bioaerosol levels may vary according to the season. The observation of pathogenic bacteria suggests that the hygiene management of establishments should be improved. Future research is needed to characterize the relation between bioaerosol levels and the occupant density of the dining area.
Conjugated linoleic acid (CLA) consists of several geometric isomers of linoleic acid. CLA is found in foods derived from ruminants and exhibits strong anticarcinogenic effects in a variety of animal models. Matrix metalloproteinases (MMPs) play a key role in cancer progression. Specifically, MMP-2 and -9, which hydrolyze the basal membrane type IV collagen, are involved in the initial breakdown of collagen and basement membrane components during tumor growth and invasion. However, the effects of CLA on cancer cell motility and MMP expression and activity are not currently well known. Therefore, the present study examined whether CLA reduces the activity of MMP and cell motility in SW480 and SW620 cells, the human colon cancer cell lines. Gelatin zymography and Western blot analysis revealed that phorbol 12-myristate 13-acetate (PMA) induced the activity and protein expression of Mr 92,000 MMP-9 in both cell lines. To examine whether CLA inhibits the MMP activity, cells were incubated with 100 ngfmL PMA in the presence of various concentrations of CLA. PMA-induced MMP-9 activity was decreased by 20 $\mu$ M CLA in SW480 cells, and by 10 $\mu$ M and 20 $\mu$ M CLA in SW620 cells. Results from the Hoyden chamber assay showed that cell motility was increased by PMA and that PMA-induced cell motility was significantly decreased by 20 $\mu$ M CLA in SW480 cells. These results indicate that CLA may reduce the motility and MMP activity in human colon cancer cells.
The purpose of this study was to estimate the daily manganese (Mn) intake of Korean children. This study was done using a three-day dietary intake survey of 257 Korean children (boys 123; girls 134). The Mn intake values were calculated based on a database that provides the Mn content of the frequently consumed Korean foods, alongside the food composition table provided by the Korean National Rural Living Science Institute. The average age, height, weight and body mass index of our subjects were 11.9 years, 155.4 cm, 48.9 kg and 20.2 kg/$m^2$ in boys and 11.9 years, 154.1 cm, 43.5 kg and 18.3 kg/$m^2$ in girls. The average daily energy intakes were 2,249.2 kcal in boys and 2,044.5 kcal in girls. Boys consumed significantly more Mn than girls, based on intake estimates of $4,585.3{\mu}g$ (117.6% of adequate intake) and $4,029.3{\mu}g$ (117.1% of adequate intake), respectively (P < 0.001). Boys had a Mn intake of $2,041.1{\mu}g$ per 1,000 kcal of energy consumption, whereas for girls this was at $1,983.9{\mu}g$ per 1,000 kcal. Neither group exceeded the tolerable upper intake level for Mn. The major food groups which contributed to Mn intake in our subjects were cereals (50.8%), vegetables (21.0%), seasonings (8.9%), and pulses (7.7%). Notably, boys derived a higher Mn intake through cereals and vegetable than did girls (P < 0.001, P < 0.05). The key food sources of Mn, in descending order, were rice, soybean curd, kimchi, black rice and cereals. We propose that the results of our study may be used as a basis for follow-up studies that examine the Mn intake of children.

A few starters have been developed and used for doenjang fermentation but often without safety evaluation. Filamentous fungi were isolated from industrial doenjang koji, and their potential for mycotoxin production was evaluated. Two fungi were isolated; one was more dominantly present (90%). Both greenish (SNU-G) and whitish (SNU-W) fungi showed 97% and 95% internal transcribed spacer sequence identities to Aspergillus oryzae/flavus, respectively. However, the SmaI digestion pattern of their genomic DNA suggested that both belong to A. oryzae. Moreover, both fungi had morphological characteristics similar to that of A. oryzae. SNU-G and SNU-W did not form sclerotia, which is a typical characteristic of A. oryzae. Therefore, both fungi were identified to be A. oryzae. In aflatoxin gene cluster analysis, both fungi had norB-cypA genes similar to that of A. oryzae. Consistent with this, aflatoxins were not detected in SNU-G and SNU-W using ammonia vapor, TLC, and HPLC analyses. Both fungi seemed to have a whole cyclopiazonic acid (CPA) gene cluster based on PCR of the maoA, dmaT, and pks-nrps genes, which are key genes for CPA biosynthesis. However, CPA was not detected in TLC and HPLC analyses. Therefore, both fungi seem to be safe to use as doenjang koji starters and may be suitable fungal candidates for further development of starters for traditional doenjang fermentation.
UV-irradiation is a major factor of photo-aged skin, by which pigmentation, wrinkles and laxity are increased. In addition, the epidermal barrier is disrupted, ultimately causing dryness in photo-aged skin. As an effort to search dietary sources for improving the dryness of UV irradiated skin, the dietary effect of red ginseng based functional foods on the epidermal level of ceramides, a major lipid maintaining epidermal barrier, was determined in this study. Albino hairless mice were fed either a control diet [group UV (UV-irradiated control)] or diets with 0.5% (group M0.5) or 1% (group M1.0) of red ginseng extracts mixed with Torilis fructus and Corni fructus (66.7% red ginseng) in parallel with UV irradiation for 5 wks. A normal control group (group C) was fed a control diet without UV irradiation for 5 wks. The epidermal level of ceramides in group UV was significantly lower than that in group C, in which ceramidase, an enzyme involved in ceramide degradation, was highly expressed. In group M0.5, the epidermal level of ceramide was significantly increased to the level even higher than in group C. In addition, protein expression of serine palmitoyl transferase (SPT), a key enzyme involved in de novo ceramide synthesis, was increased in group M0.5. However the epidermal levels of ceramides as well as of ceramidase protein expression in group M1.0 did not differ from those in group UV. In conclusion, we demonstrate that dietary supplementation of red-ginseng extracts mixed with Torilis fructus and Corni fructus at a level of 0.5% level in diet increased the epidermal level of ceramides coupled with the elevated expression of SPT protein.

Seasonal content changes of the three key nutrients for organisms, protein, lipid and glycogen, were analyzed for a whole year to delineate the seasonal energy strategy in pen shells, Atrina pectinata. Two metabolically important organs, the visceral mass and the posterior adductor muscle, were examined. Protein in the visceral mass rose in April and stayed at the level until June followed by the constant minimum value between August and November. The protein contents in the posterior adductor muscle increased sharply in April and again in July, followed by a gradual decline thereafter. Total lipid contents in the visceral mass gradually increased between January and May, and then slowly decreased until September since which a new weak increase was noticed. Lipid levels in the adductor muscle rapidly dropped in June and July. Glycogen contents in the visceral mass rapidly increased between February and June, followed by a drastic drop in July. This reduced visceral glycogen level was maintained up to September, and a gradual reduction ensued. Glycogen contents in the adductor muscle steadily but markedly increased from April reaching the maximum in August, and then slowly declined thereafter. These results suggest that an accelerated protein and lipid synthesis occurs in the gonad when the pen shell undergoes the ripe stage of gametogenesis, but the levels of these two nutrients decrease on spawning. With this gonadal process, regular protein synthesis and lipid storage in the posterior adductor muscle are temporarily arrested. The most important nutrient reserves that support gonad developmental cycles in a long term seem to be glycogen of the posterior adductor muscle.
Web usability for e-commerce sites becomes a more important issue as e-commerce gains its popularity. As for fresh foods, consumers are especially sensitive to the quality of information during transaction process. Successful fresh food e-commerce sites, such as Wine. com and Tesco, identified regular usability testing as part of key success factors. This paper aims to identify processes for evaluating usability of fresh food e-commerce sites and provide recommendations to improve usability. The study aims to evaluate Web usability of selected Web sites using heuristic evaluation to provide objective Web usability analysis for each transaction process and think aloud method to understand how users actually evaluate the Web site.
Management of obesity needs good rapport among pediatrician, parents and children. Through motivational interview, pediatrician should explore practical ways to modify the eating behaviors conducive to obesity. Imbalance between energy intake and consumption contributes to weight gain. Therefore decrease of sedentary behavior (screen time <2 hrs) and increase of physical activity (>60 minutes) is also important in management of obesity. The goal of management is the long-term healthy life though healthy behaviors. Creating a home environment that supports healthy habits and behaviors is an important key to modifying lifestyle behaviors. For example, increasing intake of vegetables and fruits, restriction of sweetened beverage, education of healthy selection of foods, and frequent family dinner may be advisable. Family members should change their own behaviors in order to help their children. Parents should be positive role model and monitor their children authoritatively but not restrictively.

The present study was designed to investigate the antidiabetic effect of Cordyceps militaris on activities of hepatic glucose-regulating enzymes, such as glucokinase (GK), pyruvate dehydrogenase (PDH) and acetyI-CoA carboxylase (ACC). We have isolated the active compounds, CM-A and CM-B from C. militaris and the extracts are under investigation to determine their mechanism of action. Hepatic GK, PDH and ACC activities were significantly (p < 0.05) increased compared with the control. Treatment with CM-A led to a rise in percentage of enzymes by 380$\%$,396$\%$ and 286$\%$, respectively, relative to control levels. CM-B were 329$\%$, 312$\%$ and 239$\%$, respectively. The increase in GK and ACC activities was linearly proportional with increased ratio of CM-A. Our findings suggest that C. militaris exerted antihyperglycemic potency, which is thought to be mediated through activation of GK, PDH and ACC enzymes related to glucose metabolism directly or indirectly and therefore C. militaris is promising as antidiabetic functional foods.
