국내산 대추품종의 품질특성 및 영양성분 비교 (Characteristics and nutritional compositions of two jujube varieties cultivated in Korea)

  • 대추의 품종에 따른 특성파악 및 활용을 위한 기초자료를 확보하기 위하여 현재 국내에서 가장 많이 재배되고 있는 품종인 복조대추와 국내산 재래종대추(약대추)의 외형특성과 이화학적 특성을 비교한 결과 재래종대추는 복조대추에 비하여 크기가 작고 경도가 낮았으며 당도, 조단백질, 조지방, 조회분, 식이섬유, 칼슘함량이 높았다. 한편, 복조생대추는 인과 비타민 C의 함량이 높게 나타났다. 따라서 재래종대추는 복조대추에 비하여 크기는 작으나 부드럽고 당도가 높으며 주요 일반영양성분 함량이 높은 것으로 판단된다.

Hybridization Using a New Male-sterile Germplasm as the Female Parent in Chinese Jujube

  • This study identified a new male-sterile germplasm of Chinese jujube, named male-sterile No. 2 (JMS2), and achieved controlled hybridization using that germplasm as the female parent. The anthers of JMS2 before flower bud opening became shrunken, dingy yellow and much smaller than normal ones, and they changed to brown after anthesis. No pollen was observed in anthers of JMS2 and its male-sterile trait remained stable over different years. A total of 1,642 fruits were obtained from ten intra- and interspecific cross combinations via controlled hybridization from 2008 to 2012 using JMS2 as the female parent. Of those, 27.3% produced seeds, on average (0-72.6%). The rate of fruit with seed (RFS) was significantly different between cross combinations or years. Compared to other cross combinations, the RFS in the combination of JMS2 ${\times}$ 'Xingguang' (a Chinese jujube cultivar with high resistance to jujube witches' broom disease) and JMS2 ${\times}$ 'Xing16' (a sour jujube genotype) remained high in different years and reached means of 48.7 and 58.1%, respectively. Finally, 150 plantlets were regenerated from immature embryos, and 51 of them were randomly selected and identified to be authentic hybrids using amplified fragment length polymorphism (AFLP) markers. This is the first report of hybrids obtained from a cross between Chinese jujube and sour jujube.

대추가루를 첨가한 대추인절미의 관능적, 이화학적 특성과 저장성 연구 (Sensory and Physicochemical characteristics and Storage time of Daechu-Injeulmi added with various levels of jujube powder)

  • The purpose of this study was to investigate the effect of addition of jujube on lnjeulmi in storage. Jujube powder was added to lnjeulmi made from the steamed glutinous rice, glutinous rice flour and brown glutinous rice flour. As a result of the sensory evaluation, the more jujube is added, the stronger sweetness and the more bitterness is shown. The sweetness and bitterness, made from brown glutinous rice, of Deachu-Injeulmi added jujube powder is the highest, and the more jujubes are tasted. Tenderness and moistness of Deachu-Injeulmi is decreased in the order of Deachu-Injeulmi made from glutinous rice, brown glutinous rice, glutinous rice flour, tenderness and moistness is increased with less amount of jujube. Chewiness of Deachu-Injeulmi made brown glutinous rice flour is the highest and Deachu-Injeulmi made from glutinous rice is the most rough. Moisture content is decreased in the order of Daechu-Injeulmi from glutinous rice, glutinous rice flour, brown glutinous rice flour. The reducing sugar content about storage period of Daechu-Injeulmi is decreased in the order of glutinous rice, glutinous rice flour, brown glutinous rice flour, and it is dramatically reduced until 48 hours of storage. However, it is increased a little bit after 72 hours. The changes in degree of gelatinization by storage period is that it is rapidly reduced until 24 hours, and it is decreased in the order of glutinous rice, glutinous rice flour, brown glutinous rice flour. That is to say, the more jujube powder is added, the less change there is. Springiness and cohesiveness is decreased during storage. Chewiness and gumminess is higher with more jujube, and it is increased until 24hour of storage period, then it is decreased after 48 hours. Hardness of Daechu-Injeulmi made from glutinous rice flour is the highest and the more jujube is added. Hardness of Daechu-Injeulmi added jujube powder is decreased in the order of Daechu-Injeulmi of 2.5%, 10% and 7.5%. The more jujube is added, the less change of the hardness by the storage period Daechu-Injeulmi is observed, thus the speed of the retrogradation is getting slower.

대추농축액을 첨가한 브라운소스의 품질특성 (Quality Characteristics of Brown Sauce Added with Jujube Concentrate)

  • Brown sauce is very frequently used for western meat dishes, and this study aims to develop brown sauce for Asians and Koreans by adding jujube concentrate which has natural sugar and is used in Chinese medicine. The ingredients and sensory characteristics of brown sauce added with jujube concentrate were examined and the results are as follows. First, the moisture content increased with increased amount of jujube concentrate added, while the pH decreased. In the results of the sensory evaluation, the sample added with 5% jujube concentrate had the highest score, and the one added with 9% jujube concentrate had the lowest score in color. In the flavor evaluation, the sample added with 5% jujube concentrate had the highest score, and the one added with 9% jujube concentrate had the lowest score. In overall acceptability, the sample added with 5% jujube concentrate had the highest score, and the scores were high in order of 3%, 7%, and 9% concentrates when the samples were heated for 16 hours. Also, when making brown sauce made with beef leg bones, their ingredients continued to flow out even heated for more than 10 hours. Therefore, it was considered that more delicious and healthier sauce could be made by adding jujubes when making beef leg bone brown sauce. Based on these results, even though brown sauce originated from western foods, it can be used to Koreans' taste by adding Korean ingredients. Moreover, more recipes can be made from the brown sauce added with jujube concentrate for more Asians including Koreans to enjoy.

건조방법에 따른 건조대추의 성분 변화 (Changes in the Components of Dried Jujube Fruit by Drying Methods)

  • This study was carried out to investigate change in the components according to drying methods of jujube. Raw jujube was dried with five methods such as sun-drying, hot-air drying after pretreated with sunlight, blanching, microwave treatment, respectively. The contents of soluble sugar and protein in sun-dried jujube were higher than those of other drying methods. The free sugars of dried jujube were consisted of sucrose, glucose and fructose. And the contents of free sugar was not different by drying methods. The major organic acids of dried jujube were oxalic acid, citric acid and malic acid. The contents of glutamic acid, glycine and alanine were higher than those of other amino acids, and the content of each amino acid was not different by drying methods.

대추 고추장의 품질 특성과 이의 이용성에 관한 연구 (A Study on the Quality Characteristics and Utilization of Jujube Gochujang)

  • 본 연구에서는 한국의 대표적인 전통발효식품인 고추장에 약리성 재료인 대추를 첨가하여 기능성 고추장으로써 이용가능성을 알아보고자 본 연구를 실시하였으며, 연구 결과는 다음과 같다. 고추장의 수분 함량은 대추 농축액 첨가군은 첨가량이 증가할수록 고추장의 수분 함량이 유의적(p<0.001)으로 높아지는 경향을 보였고 대추 가루 첨가군은 이와 반대되는 결과를 보였다. 색도는 대추 첨가량이 증가할수록 명도와 황색도는 높아 졌고, 적색도는 낮아졌으며, 염도도 낮아지는 경향을 보였다. 점도는 대추 농축액 첨가군은 첨가량 증가 시 점도가 감소하였으며, 대추 가루 첨가군은 이와 반대되는 결과를 보였다. 관능검사 결과 GJC30과 GJP15가 가장 높은 기호도를 나타내 대추 농축액은 30%, 대추 가루는 15% 첨가 시 고추장의 관능적 및 기계적인 품질 특성의 향상이 가능한 가장 적절한 첨가 수준이라고 사료된다. 이상의 연구 결과를 통해 우리나라 특산물인 대추를 고추장에 첨가함으로써 고추장이나 이를 이용한 떡볶이용 고추장 소스에 활용하는 것이 유효할 것으로 사료된다.

발효 흑대추 추출물의 항산화 효과 (Antioxidant Activities of Extracts from Fermented Black Jujube)

  • 본 연구는 건대추와 건대추를 이용하여 온도 $50^{\circ}C$, 습도 90%의 항온항습기에서 숙성시켜서 제조한 발효 흑대추의 열수 및 에탄올 추출물에 항산화성을 평가함으로서 대추의 식품학적인 기능성을 검토하고자 하였다. 건대추와 발효 흑대추의 열수 및 70% 에탄올 추출물의 수율은 발효 흑대추 추출물에서 높았으며, 70% 에탄올 추출물이 열수 추출물에 비해 높았다. 총 폴리페놀 함량은 흑대추 추출물에서 높게 나타났으며, 열수 추출물이 70% 에탄올 추출물보다 높은 함량을 보였다. 전자공여능은 건대추와 발효 흑대추의 추출물의 열수 및 에탄올 $1,000{\mu}g/mL$의 농도에서 각각 85.0% 이상의 전자공여능을 보였고, SOD 유사활성능은 발효 흑대추 추출물이 건대추 추출물에 비해 높았으며, 대체적으로 열수 추출물에서 높게 나타났다. pH 1.2에서의 아질산염 소거능은 에탄올 추출물에 비해 열수 추출물에서 높았으며, 발효 흑대추보다 건대추 추출물에서 높게 나타났다. Xanthine oxidase 저해활성은 건대추 및 흑대추 추출물의 농도가 증가함에 따라 증가하였으며, 열수 및 에탄올 추출물에서는 건대추에 비해 발효 흑대추 추출물의 저해활성이 높았다. 이상의 결과로 발효 흑대추의 열수 및 에탄올 추출물에서 높은 항산화 활성을 확인 할 수 있었으며, 발효 흑대추는 우수한 기능성 식품으로서의 가능성을 확인할 수 있었다.

A Study on Enhancing the Demand for Non-Timber Forest Products : Focused on Consumer Research of Foods Processed from Jujube

  • While jujubes are mainly sold in dried forms as wholesome foods, sacrificial food and so on, processed foods from jujube are neither highly recognized nor in high demand. Hence, this study has proposed ways to enhance the demand for jujube processed foods and will help prepare the ground for efficient marketing strategies, based on the survey result on the pattern in which customers in Korea purchase jujube-processed foods. The conclusion for this study has been derived by researching the relevant literature and analyzing the relevant company data and customer survey results. The study implies the following points regarding enhancing the demand for jujube-processed foods. First, long-term solutions are necessary. These may include establishing a technological system that can produce various foods processed from jujubes, and improving the customer accessibility in accordance with the changes in the retail environment. To implement these solutions, it is necessary to familiarize the customers with jujube-processed foods by securing a good sales network and through active promotion and advertising. Second, systematic marketing strategies are needed, which may be applied in developing the products as well as distribution and promotion methods and prices that correspond with the changes in the customer environment and the different tastes for various age, gender and residential area groups.

Kinetics of water vapor adsorption by vacuum-dried jujube powder

  • Water vapor adsorption kinetics of vacuum-dried jujube powder were investigated in temperature and relative humidity ranges of 10 to $40^{\circ}C$ and 32 to 75%, respectively. Water vapor was initially adsorbed rapidly and then reached equilibrium condition slowly. Reaction rate constant for water vapor adsorption of vacuum-dried jujube powder increased with an increase in temperature. The temperature dependency of water activity followed the Clausius-Clapeyron equation. The net isosteric heat of sorption increased with an increase in water activity. Good straight lines were obtained with plotting of $1/(m-m_0)$ vs. 1/t. It was found that water vapor adsorption kinetics of vacuum-dried jujube powder was accurately described by a simple empirical model, and temperature dependency of the reaction rate constant followed the Arrhenius-type equation. The activation energy ranged from 50.90 to 56.00 kJ/mol depending on relative humidity. Arrhenius kinetic parameters ($E_a$ and $k_0$) for water vapor adsorption by vacuum-dried jujube powder showed an effect between the parameters with the isokinetic temperature of 302.51 K. The information on water vapor adsorption kinetics of vacuum-dried jujube powder can be used to establish the optimum condition for storage and processing of jujube.

대추 추출액을 첨가한 빵반죽의 이화학적 특성 (Phygicochemical Properties of Bread Dough Added with Jujube Extracts)

  • 대추 추출액 첨가시 제빵적성에 요구되는 반죽의 이화학적 특성 변화를 조사하였다. 대추 추출액의 수분은 92.5%, 단백질 0.50%, 회분 0.37%였고 pH는 4.65로 나타났다. 대추 추출액의 유리당은 sucrose가 4,340mg%로 가장 많았고 fructose, glucose 순으로 나타났다. 반죽의 물리적특성 중 farinogram에서는 대추 추출액 첨가량 증가에 따라 흡수율은 증가하였고 반죽형성시간과 안정도는 짧아졌으며 약화도는 커지는 경향을 보였다. Extensogram의 발효특성은 대추 추출액의 증가에 따라 신장도는 짧아졌고 저항도는 증가하였으며 Resistance/Extensibility값은 증가하였다. Amylogram의 호화특성은 대추 추출액 첨가량이 증가할수록 호화개시온도는 큰 차이가 없었고 최고점도는 감소하는 경향을 보였다.
