유기철의 첨가가 육계의 성장과 체조성에 미치는 영향 (Effects of Organic Iron Supplementation on Growth Performance and Body Composition in Broiler Chicks)

  • 본 연구의 목적은 유기철이 첨가된 사료를 육계에 적용하여 생산성과 계육에 미치는 영향을 평가하고자 실시하였다. 사양시험은 Ross broiler 168수를 공시하였으며, 시험사료는 NRC(1994)의 육계 영양소 요구량에 맞추어 기초사료를 배합하고, 황산 제1철(FeSO$_4$ㆍ7$H_2O$:FE)을 사용하여 사양표준 권장양인 Fe 80mg/kg을 첨가한 대조구(FE-80), \circled1 대조구에 항생제(CTC 0.05%)를 첨가한 항생제 처리구, \circled2 (FE-80+A), Fe 160mg/kg 처리구, \circled3 (FE-160), Saccharomyces cerevisiae R100 (yeast mutant; YM, 철 함량 200mg/kg)을 대조구의 철 함량 기준으로 80mg/kg 첨가한 처리구, \circled4 (YM-80), Fe 160mg/kg 처리구, \circled5 (YM-160), Saccharomyces cerevisiae 2805-a7 TYFHLAG-1(ferritin containing yeast; YF, 철 함량 500mg/kg)을 대조구의 철 함량 기준으로 80mg/kg 처리구, \circled6 (YF-80) 및 Fe 160mg/kg 처리구, \circled7 (YF-160)로 7처리 4반복으로 반복당 6수씩 총 168수를 임의 배치하여 6주간 사양 시험을 수행한 결과, 처리구별 증체량은 대조구(FE-80)에 비해 YM-160처리구가 유의하게 높게 나타났다(P<0.05). 혈중 cholesterol 함량은 대조구(FE-80)와 비교하여 YM과 YF 처리구에서 유의적으로 높게 나타났다 (P<0.05). 혈중 철 함량은 YF-160 처리구가 가장 높았으며, YM처리구가 대조구(FE-80)에 비해 유의하게 낮게 나타났(P<0.05). 도체 cholesterol은 대조구(FE-80)에서 가장 높게 나타났으며, YM과 YF 처리구에서 낮게 나타났으나, 처리구간에 유의한 차이는 없었다. 산패도는 대조구(FE-80)가 가장 높게 나타났으며, YM-80 처리구가 가장 낮게 나타나 유의차를 보였다 (P<0.05). 지방산 함량은 포화지방산의 비율이 대조구에 비해 YM 및 YF 처리구들이 높게 나타났으며, 이들 처리구들 중에서 YF-80 처리구가 가장 높은 비율을 나타냈다. 한편 불포화지방산의 비율은 YM-160 처리구가 가장 높았다. 도체의 철(Fe) 함량은 대조구(FE-80)가 가장 낮았으며, YM과 YF 처리구들에서 높게 나타났다. YM과 YF의 처리구들 중 YF-160 처리구에서 유의하게 가장 높게 나타났었다(P<0.05). 결론적으로 유기철을 육계사료에 첨가하는 경우, 육계의 생산성 향상과 더불어 철분강화 계육의 생산이 가능할 것으로 기대되며, 향후 이 분야에 심도 있는 연구가 진행되어야 할 것으로 사료된다.

서울지역 청소년 및 성인의 타우린 섭취량, 혈중 농도 및 소변내 배설량에 관한 연구 (Dietary Intakes, Plasma Levels and Urinary Excretions of Taurine in Adolescents and Adults Residing in Seoul Area)

  • As diverse physiological functions of taurine have been reported, taurine-containing health drinks and products are marketed worldwide for the treatment of various conditions such as improvements of liver, heart and circulatory functions or as an aid to athletic performance. Although animal studies have shown that taurine is fairly safe when supplemented in the diet for an extended period, the effective dose range of taurine for dietary supplements is in controversy. Reports on dietary taurine intakes have been sparse, and would serve as a guideline for determining an appropriate taurine dosage. The present study was aimed to estimate dietary intake level of taurine using the taurine content database of commonly used food stuffs established recently in our laboratory, and also to evaluate plasma concentration and urinary excretion of taurine in adolescents and adults residing in Seoul area. Dietary taurine intakes of the subjects were 219$\pm$16.9mg/day for 16-19 years old(n=123), 177$\pm$18.1mg/day for adults older than 20 years old(n=123). Male subjects(n=115) consumed 216$\pm$21.1mg of taurine/day, while female subjects(n=131) consumed 181$\pm$14.3mg of taurine/day(p<0.05). The level of dietary taurine intake was positively correlated with the levels of dietary intakes of energy, carbohydrate, total lipids, cholesterol, vitamin A, vitamin B$_1$, niacin, vitamin C, calcium, phosphorous, sodium and potassium at p<0.01, and with dietary intakes of iron and animal lipids at p<0.05, respectively. Plasma taurine concentration of subjects were 135$\pm$5.9$\mu$mol/L, which is considered to be within a normal range for healthy subjects. The subjects excreted 1158$\pm$72.7nmol/ of tarine mg creatinine in their urine, which is approximated as 150-170mg of taurine/24hr urine based on the assumption that 18mg creatinine/kg/day is excreted in the urine of healthy adults, and this would be about 80% of the daily taurine intake observed in the same subjects. Dietary taurine intake level was positively correlated with plasma taurine concentration, as well as with urinary taurine excretion corrected by creatinine excretion at p<0.05. The present study was the first report of taurine intake, and plasma concentration and urinary excretion of taurine in a Korean population so far, and these results would serve as an index for the future study evaluating taurine status in a diverse population within and outside Korea. 한국농촌주민(韓國農村住民)의 계절별(季節別) 식품섭취조사연구(食品攝取調査硏究) (A Study on Seasonal Variations of Food Consumption of Korean Farmers)

  • This is the report of a food consumption survey of 193 members of 30 farm families in three rural villages of Korea. From a total of 188 households of the three villages, namely Wolgok in Kyunggi Do Province, Wachon in Kangwon Do Province, and Sobong in Cholla Namdo Province, 30 households were chosen for the survey. Four consecutive seasonal surveys, beginning in the autumn, November 1974 and finishing with the summer, August 1975, were made and each survey covered three consecutive days. The Precise Weighing Method was used in evaluating the kinds of food and nutrient intakes of the subjects. This method entails the accurate weighing of all foods by the investigator just prior to their consumption by the subjects under investigation. This survey was male to determine the actual food eaten by the members of these farm families at each season of the year, and to note any special differences in the foods consumed. The results obtained are summarized as follows: Food Intake The traditional ordinary diet of Korean farmers consists mainly of rice and other cereals as staple foods, and simple subsidary foods. The nutritional shortcomings of rice as a staple food are evident in the subclinical status of nutritional deficiencies. The mean consumption of cereals and their products was very high and it was more than half of the daily total food intake throughout all the seasons. The consumption of animal food, fruits, and fat by the farmers was very low. Fruit intake during winter and spring was almost nil. One of the special foods in the Korean dietary pattern is Kim-chi, a variety of pickled and fermented vegetables. The mean intake of Kim-chi during autumn and winter was very much higher than the other seasons. Korean farmers have difficulties in balanced year-round supply of food due to seasonality of food production and lack of food preservation. As nutrition problems of Korean farmers are highly influenced by seasonal variations, the expansion of an appropriate food preservation and storage programme should be encouraged. Special consideration should be given to new methods of preservation, the types of foods preserved, and production and consumption of nutritionally valuable foods for the improvement of the nutritional status in rural communities. Nutrient Intake Average adult rates for calorie and protein in the three study areas were 0.80 and 0.87 respectively, with little variations by villages. The adult caloric intake in averaged 2,928 kcal for autumn, 2,662 for winter, 2,673 for spring, and 2,760 for summer. Cereals contributed most of the total calories. In terms of the recommended daily dietary allowances for the Korean given by the Korea FAO Association, the diets in this survey were adequate except in the winter and spring. The protein intake averaged from 76.4 grams in autumn to 83.4 grams in summer and was near the recommended allowance, but a relatively large proportion of the total protein came from cereals and their products. The fat intake was unsatisfactory, ranging from 19.2 grams to 29.3 grams for the four seasons, and the consumption during farming season was higher than other seasons. It is apparent that the diet of the Korean farmers should be supplemented by calcium during autumn and winter. The highest calcium intake, with a mean of 583.5 milligrams, was recorded in summer. The mean intake of iron ranged from a low of 9.2 milligrams in the autumn to a high of 15.0 milligrams in the spring and it was satisfactory for all seasons. Among the vitamin group, the daily average intakes of vitamin A, thiamine, riboflavin, and ascorbic acid were lower than the desired intake throughout all the seasons. The mean vitamin A intake as ${\beta}-carotene$ ranged from a low of 2,807.8 IU to a high of 5,221.0 IU. The thiamine intake ranged from 0.98 milligrams to 1.19 milligrams, while mean riboflavin intake ranged from 0.92 milligrams to 1.13 milligrams. Ascorbic acid intake was 37.3 milligrams, the lowest, and the highest 47.8 milligrams. Niacin intake among Korean farmers was higher than the recommended allowance throughout all the seasons, and the mean intake ranged from 18.3 milligrams to 25.8 milligrams. The main character of the Korean farmers' diet has been found low in quality of protein and high in carbohydrate. Attention should be paid to the low intake of vitamin A, thiamine, riboflavin, and ascorbic acid among Korean farmers.

맥주공장(麥酒工場) Sludge의 사료적(飼料的) 가치(價値)에 관하여 - 제2보(第二報) 식품공장 활성오니(活性汚泥)의 사료화에 관한 연구 - (Studies on the Activated Sludge of Food Industries for Animal Feed - Part2. Nutritive Value of Brewery's Activated Sludge -)

  • 맥주(麥酒) 공장폐수(工場廢水) 활성오니(活性汚泥)의 사료적(館料的) 가치(價値)를 구명(究明)하기 위하여 병아리 사료(飼料)에 활성오니(活性汚泥)를 3% 간격으로 12%까지 첨가(添加)하여 본시험(本試驗)을 실시(實施)하였던 바 다음과 같은 결과(結果)를 얻었다. 1 성분분석(成分分析) 시험(試驗) (1) 활성오니(活性汚泥)의 조단백질(粗蛋白質) 함량(含量)은 42,50%였고 조회분(粗灰分)은 15.69%였으며 ME 함량(含量)은 kg당(當) 2060 kcal였다. (2) 활성오니(活性汚泥)의 총(總)아미노산 함량(含量)은 42.24%로서 조단백질함량(粗蛋白質含量)의 99%가 순(純)아미노산(酸) 이었고 특(特)히 methionine과 threonine이 많이 들어 있었다. (3) 활성오니(活性汚泥)의 무기물함량(無機物含量)은 P,Mg, Cu, Fe등(等)은 충분(充分)하나 Ca는 상당히 부족했다. 2. 포양(飽養) 시험(試驗) (1) 병아리의 성장(成長)은 활성오니(活性汚泥)의 첨가수준(添加水準)이 증가할 수록 감소되는 경향이었으나 각처리간(各處理間)에 통계적(統計的)인 유의성(有意性)은 없었다. (2) 사료섭취량(飼料攝取量)은 활성오니(活性汚泥)의 첨가수준(添加水準)이 증가할 수록 매우(p<0.05) 증가했다. (3) 사료요구율(飼料要求率)은 활성오니(活性汚泥)의 첨가수준(添加水準)이 증가할 수록 증가했으나 각처리간(各處理間)에 통계적(統計的)인 유의성(有意性)은 없었다. 3. 대사시험(代謝試驗) (1) 고형물(圖形物) 이용률(利用率)은 활성오니(活性汚泥)의 첨가수준(添加水準)이 증가할수록 감소되는 경향이었으나 각처리간(各處理間)에 통계적(統計的)인 유의성(有意性)은 없었다. (2) 조단백질(粗蛋白質) 이용률(利用率)은 활성오니(活性汚泥)의 첨가수준(添加水準)이 증가 할 수록 매우 (p<0.01) 감소되어 대조구 및 3%구(區)가 6, 9. 12%구(區)에 비하여 조단백질이용률(粗蛋白質利用率)이 높았다. (3) 조회분(粗灰分) 이용률(利用率)은 활성오니(活性汚泥)의 첨가수준(添加水準)이 증가할수록 매우 (p<0.05) 감소되었다. (4) NFE 이용률(利用率)은 활성오니(活性汚泥)의 첨가수준(添加水準)이 증가할수록 약간 감소되는 경향이었으나 각(各) 처리구간(處理區間)에 통계적(統計約)인 유의성(有意性)은 없었다. 따라서 본시험(本試驗)에 의하면 맥주공장폐수(麥酒工場廢水) 활성오니(活性汚泥)를 병아리 사료(飼料)에 $6{\sim}9%$정도 첨가(添加)할 수 있을 것 같다.

거제도(巨濟島) 주민(住民)의 영양실태조사(營養實態調査) (Nutrition Survey in Koje Island)

  • Kojedo is the second largest island in Korea and a total population of 115,500 is living on the island of 394.69 sq. km. Under the direction of three nutrition professors, nutrition surveys in two villages in Kojedo, namely Siljun Ri in Hachung Myon and Soowol Ri in Shinhyun Myon, were carried by 30 college senior students majoring in nutrition from August to 20 August 1977. From a total of 176 households of the two villages, 67 households were randomly selected and 390 family members of the households were subjcets of the nutrition surveys. The precise weighing method was used in evaluating the kinds of foods and nutrient intakes of the subjects for three consecutive days. Thirty-seven pre-school children aged between 3 to 6 years and 27 fertile women were examined for biochemical findings and physical status. The main purposes of the surveys are to provide baseline data on nutrition in Kojedo Island for the Kojedo Community Development Project and to compare the nutritional status of the villages of Siljun Ri and Soowol Ri. Siljun Ri is located in the pilot project area of the Koiedo Community Health Project sponsored since December 1970 by the Christian Medical Commission of the World Council of Churches. While Soowol Ri is a control village for comparison. The results obtained are summarized as follows: Food Intake The average food intake per person per day in Siljun Ri, 1064 grams (91.7% in vegetable foods and 7.6% in animal foods) was 90 grams more than that of Soowol Ri, 974 grams (92.8% in vegetable foods and 5.9% in animal foods). However, the food intake per pre-school child in Siljun Ri, 485 grams (92.6% from vegetable foods and 6.4% from animal foods) was 21 grams lower than that of the Soowol Ri, 506 grams (88.5% from vegetable foods and 6.5% from animal foods). The average intake of beans was 16 grams(1.5% out of the total food intake) in Siljun Ri and 21 grams(2.2% of the total food intake)in Soowol Ri. The villagers should be guided for more consumption of soybeans to improve the quality of protein intake from vegetable foods. Nutrient Intake The adult intake in Siljun Ri and Soowol Ri were 2,529 kcal and 2,511 kcal respectively. The average energy intake of pre-school childen in Siljun Ri was 948 kcal and that for adult and 1,500 kcal for childen aged between 4 to 6 years-given by the Korea FAO Association, the diets in both villages were not adequate. Average daily protein intake of the subjected adult in Siljun Ri was 78.4 grams and that of Soowol Ri was 76.2 grams, while pre-school children took 30.7 grams in the former village and 31.7 grams in the latter village per child per day. The protein intake in both villages were lower than the recommended allowances, 80 grams for adult and 45 grams for $4{\sim}6$ years childen, and animal protein intake of the all subjects was very much lower than the RDA. The main charecter of the diet has been found low in quality of protein and high in carbohydrate. The calcium intakes of the pre-school children in both villages, 251.9 milligrams in Siljun Ri and 218.8 milligrams in Soowol Ri, were very much lower than the recommended allowance of 500 milligrams per day. It is apparent that the diet for children should be supplemented with calcium. Among the vitamin group, the daily average intakes of vitamin A and $B_{2}$(thiamine), $B_{2}$(riboflavin), C(ascorbic acid), and niacin were not adequate for the children in both villages. Especially the intake of riboflavin, 0.4 milligrams in both village children, was much lower than the RDA, 0.9 milligrams per day. Physical Characteristics Average height, weight, chest and head circumference of the pre-school children in both villages were similar to those of the Korean standard given by the Korean Paediatrics Association except that the average height of pre-school boys in Siljun Ri was 8 cm higher than the Korean standard of 105 cm. The mean values of upper arm circumference and skinfold thickness of pre-school boys in both villages were the same, 15.4 cm for upper arm circumference and 6.8 mm for skinfold thickness, but the mean values of those of the girls in Siljun Ri were higher than those of pre-school grils in Soowol Ri. Biochemical Findings Avera ge hemogobin value of boys and girls in both villages was the same, 11.1 grams per 100 ml of blood. The incidence of anemia (Hb value below 11g/100ml) was similar in both viltagesr 36.4% for boys and 50% for girls in Siljun Ri and 37.5% for boys and 50% for girls in Soowol Ri. Average hemoglobin values of fertile women were 10.7g% in Siljun Ri and 10.8% in Soowor Ri. The incidences of anemia(Hb valre brlow 12g/100ml) were 100% in Siljun Ri and 86.7% in Soowol Ri. The anemia of these subjects may be caused mainty low intake of good quality protein and iron intake from vegetable food. Recommendation In general, the nutritional status of a community health pilot village is not higher than that of control village due to the lack of nutrition improvement guldance services. Nutrition education should be delivered to the villagers as a main part of the health education artivities. The emphasis should be on building better health through bttter food habits and better food production as well as on preventing malnutrition and diseasrs. It can be an invaluable part of community developnent. Since nutrition is considered to be at least one-half of MCH care, no village or home visits should be made without careful provision for teaching and demoastrating something simple and practical on nutrition. The nurse, midwife, and village health worker should be the chief promoters of nutrition.
