탈지 및 지질첨가 전분겔의 관능적 기계적 특성 (Sensory and Instrumental Characteristics of Defatted and Lipid-reintroduced Starch Gels)

  • 강남콩, 녹두. 옥수수전분을 탈지 및 지질첨가한 다음 8% 겔을 만들어 실온에서 3시간과 24시간 저장한 후 겔의 관능적, 기계적 특성변화를 알아보았다. 관능검사 에서 전분겔의 종합적인 맛에 영향을 주는 요인들은 견고성, 응집성, 탄성, 휘어짐성으로 녹두전분겔이 가장 높은 값을 보여주었고 옥수수전분겔, 강남콩전분겔 순이었다. 전반적으로 탈지전분이 생전분보다 겔을 만들었을 때 유의적으로 높은 값을 보였고 탈지 및 지질첨가 옥수수전분겔의 특성치가 녹두전분겔과 비슷하였다. 기계적 물성검사에서 시료전분겔의 특성을 잘 나타내 주는 특성치는 견고성으로 녹두전분겔이 가장 높았고 옥수수전분겔, 강남콩전분겔 순이었으며 탈지전분이 모든 경우에 가장 높았다. 탈지 및 지질첨가 옥수수전분겔의 견고성과 탄성은 녹두전분겔과 비슷하였으며, 24시간 저장한 전분겔은 3시간 저장한 전분겔보다 견고성은 증 가하였으나 다른 특성치는 비슷하였다.

The Effect of Chitosan on the Rheological Properties of Soymilk and Quality Characteristics of Tofu

  • The effects of low viscosity chitosan on the rheological properties of soymilk using a model system and on tofu qualities were examined. The flow behavior of soy milk with chitosan closed the Newtonian flow and stabilized according to increasing chitosan concentration. The soymilk containing $glucono-\delta-lactone$ exhibited a more pseudoplastic flow behavior compared with that of the control soymilk. The addition of low viscosity chitosan to the tofu preparation did not significantly affect its physicochemical properties. However, the results of the TEM image and instrumental textural properties showed that low viscosity chitosan affected the construction of the tofu structure. Chitosan tofu had low scores across the whole field of appearance in the sensory evaluation, and its overall eating quality was scored significantly lower. These results suggest that the addition of low viscosity chit os an affects the quality of tofu, which changes according to the degree of polymerization and concentration of chitosan.

단호박 첨가수준에 따른 호박떡의 기호성 및 품질특성 (Sensory and Quality characteristics of pumpkin rice cake prepared with different amounts of pumpkin)

  • 단호박의 첨가수준을 10%, 15%, 20%, 25%, 30%, 35%로 달리하여 제조한 호박떡의 기계적 측정 및 관능적 특성을 통해 품질평가를 하였다. 호박떡의 수분함량은 단호박의 첨가량이 증가할수록 증가하는 것으로 나타났다. 색도의 경우 L 값은 단호박 첨가량에 의존하여 낮아졌으나, a 값과 b 값은 첨가량에 의존하여 증가하는 것으로 나타나 단호박의 첨가량이 증가할수록 carotenoids계 색소의 영향으로 황색 및 적색이 증가함을 알 수 있었다. Two bite compression test에 의한 물성특성치를 살펴보면, hardness, gumminess, chewiness 등은 단호박의 첨가량이 증가할수록 감소하는 경향을 나타냈고, cohesiveness 및 springiness는 각 시료간의 큰 차이를 보이지 않아, 단호박 첨가량이 증가할수록 조직의 견고도가 저하됨을 알 수 있었다. 관능검사 결과에서는 항목별로 유의적인 차이를 나타냈는데, flavor의 경우 유의성을 나타내지 않았으며, 이를 제외한 모든 항목, 즉 color, moistness, consistency, overall acceptance에서 30% 첨가구를 선호하는 결과를 보였다. 기계적 물성치와 관능적 물성치를 비교해 볼 때, 떡의 조직감이 견고한 것보다는 부드러운 것을 선호하는 것으로 나타났다.

매실(Prunus mume) 착즙액을 첨가한 생국수의 품질 특성 (Quality Characteristics of Wet Noodle with Maesil(Prunus mume) Juice)

  • This study was conducted to investigate the properties of wet noodle when different concentrations of Prunus mume juice were added to the wheat flour. The characteristics of wet noodle including cooking properties, color, mechanical texture properties, and sensory quality were determined. The compositions of Prunus mume were 88.19% moisture, 0.45% crude ash, 4.04% citric acid and 0.41% total sugars. The pH of Prunus mume was 2.76. The moisture absorption rate, weight, volume and turbidity of cooked noodles added with Prunus mume juice were lower than reference sample. When the amount of Prunus mume juice increased, the Hunter L(brightness) value, a(redness) value of cooked noodles decreased but b(yellowness) value increased. Instrumental rheological characteristics of wet noodle containing Prunus mume juice were measured with a texture analyzer. The hardness, adhesiveness, cohesiveness, springiness and gumminess of wet noodle with 20% Prunus mume juice were higher than others. However, the hardness of cooked noodle decreased with the increase in the amount of Prunus mume juice into noodle. The adhesiveness, cohesiveness, springiness and gumminess of cooked noodles added with Prunus mume juice were higher than reference sample. The results of sensory evaluation of cooked noodles containing Prunus mume juice indicated that the appearance, color, taste and chewiness of the cooked noodle with 10% Prunus mume juice showed the higher preference than others. Based on cooking properties, rheological and sensory evaluation, addition of 10% Prunus mume juice suggested to be acceptable for processing wet noodle.

쌀 품종별 증편 가공적성에 관한 연구 (Studies on processing adaptability of rice varieties for the preparation of Jeung pyun)

  • The sensory and instrumental characteristics of Jeung pyun made from varietal difference in physicochemical characteristics of rice grain were investigated to obtain the basis information for developing various rice cultivars adaptable to rice food processing. In sensory evaluation of Jeung pyun, aroma, springiness, and stickiness revealed significant difference between the rice cultivars. Acceptability of springiness was highly correlated with amylose content. And loaf volume of Jeung pyun was also highly correlated with the protein content of rice grain. In textural analysis, Jeung pyun made from the higher amylose content rice became harder during storage. Jeung pyun made from the lower alkali digestible rice showed the more sticky and elastic.

살구씨가루를 첨가한 설기떡의 품질특성 (Quality characteristics of Sulgidduk by the Addition of Apricot Seed Powder)

  • The aim of this study was to determine the optimum amount of apricot seed powder to add to rice flour in oder to prepare Sulgidduk (traditional rice cakes). As the apricot seed powder level of the Sulgidduk increased, the moisture contents of the samples decreased (40.30~43.46%), and the color of L- and a-values also decreased, while the b-value increased. According to instrumental test results, hardness, springiness, gumminess, chewiness and adhesiveness were all highest in the 0% apricot seed powder sample. The cohesiveness of samples did not show a conclusive relationship with the level of apricot seed powder present. In sensory evaluation results, the 3% and 6% samples received high overall acceptability scores. In conclusion, based on both sensory and instrumental testing, the optimal Sulgidduk mixture consisted of 3~6% apricot seed powder added to rice flour.

전분과 감미료의 종류가 감귤편의 품질특성에 미치는 영향 (Effects of the Kinds of Starch and Sweetener on the Quality Characteristics of Kamgyulpyon)

  • This study was performed to find out the quality characteristics of Kamgyulpyon in which the kinds of starch and sweetener were varied. The quality characteristics of the samples were estimated in terms of sweetness, color difference, instrumental texture and sensory evaluation. The results from this study were as follows. $\circled1$ Sweetness of the samples prepared with oligosaccharide was lower than those with sugar or honey. When Kamgyulpy n was prepared with sugar, the sweetness of the samples containing mung bean starch was higher than that with other starch sources. $\circled2$ Lightness, redness and yellowness of the samples prepared with oligosaccharide were higher than those with sugar or honey. When the same sweeteners were used, the lightness of the samples containing corn starch and the rednness of the samples containing potato starch were higher than those with other starch sources, but there were no significant differences in yellowness. $\circled3$ Hardness and chewiness of the samples prepared with sugar were higher than those with oligosaccharide or honey, but there were no significant differences in springiness and cohesiveness. When Kamgyulpyon was prepared with honey, the hardness and chewiness of the samples containing potato starch were lower than those with other starch sources. $\circled4$ In the results of sensory evaluation, the sweetness, clarity, springiness and overall acceptability of the samples containing potato starch or com starch were higher than those with mung bean starch. Kamgyulpyon containing potato starch and oligosaccharide showed the highest overall acceptability.

Agar 첨가에 따른 백설기의 품질특성 연구 (A Study on Quality Characteristics of Backsulgi with Adding Agar Powder)

  • The purpose of this is to agar powder addition to retard retragradation for making Backsulgi. Backsulgi is manufactured promptly by adding ingredients having agar powder and then observation of sensory and texture characteristics. Then Backsulgi determinded in storing at the temperatures of 20 and Celsius degrees for 0, 24, 48 and 72 hours, respectively. The results from this study are as follow; 1. Moisture absorption of control show 34.4%, compared with, Backsulgi with agar powder added 3%, 6%, 9%, 12%, 15% show higher 37.03%, 39.28%, 41.72%, 43.5%, 44.70%, respectively. 2. In terms of chromaticity, lightness of control show $70.68{\pm}7.248{\sim}61.25{\pm}0.90$, the longer time is and much agar powder Backsulgi show lower and 15% agar powder added Backsulgi show $51.53{\pm}0.921{\sim}54.715$. Then redness(a) of control show $-0.70{\pm}0.14$, compared with 15% agar powder added Backsulgi show $-0.32{\pm}0.047$. 15% agar powder Backsulgi show $9.03{\pm}0.313$ higher in yellowness than control $5.47{\pm}0.40$. 3. Control and agar powder Backsulgi was shown pH 6.1~6.3, the longer time is, all Backsulgi was shown pH 5.5~5.9 and much agar powder Backsulgi was shown an weakly acidity. 4. Swelling and pore ratio of control was shown 85.36% and 118.32%, compared with, agar powder added Backsulgi was higher a rate of increase. 5. For a sensory evaluation, the longer time is, adding agar powder rice cake is more perfected at 20$^{\circ}C$ in times if smooth, inner moisture, chewiness, after selling, overall quality. 6. Determination of texture characteristics by a reometer shows that Backsulgi with agar powder added change more in hardness that controls, indicating that effect of retarding retrogadation is higher when storage time is longer. 7. The correlation of hardness, springness between sensory and instrumental evaluation showed significantly positive function.

콩첨가에 따른 증편의 품질과 표면구조 변화 (Changes in Adding Soybean on Quality and surface structure of Korean Rice Cake(Jeung-Pyun))

  • Jeung-Pyun is a traditional fermented Korean food with rice flour, water, sugar, salt and unrefined rice wine(Takju). In order to investigate how the addition of soybean has an influence on Jeung-Pyun fermentation, changing to adding amount of soybean 0%, 5%, l0%. 15%, 20% based on rice weight, we carried out sensory evaluation and measured the physicochemical properties, instrumental characteristics and degree of gelatinization. The specific volume of Jeung-Pyun was increased as the more soybean was added. The pH of Jeung-Pyun batter was decreased as the fermentation time was longer, but it was increased as more soybean was added. The degree of gelatinization of Jeung-Pyun was decreased as storage day was longer, but it was high as more soybean was added compared to control(0%). In sensory evaluation, Jeung-Pyun added 5∼10% of soybean was good generally. Correlation coefficient between hardness and degree of gelatinization was high. In instrumental characteristics, hardness was increased only in control for room temperature storage(20$^{\circ}C$), but at 4$^{\circ}C$ it was less increased than control(0%) as more soybean was added. Cohesiveness was decreased generally as storage day was longer at 4$^{\circ}C$, but it was less decreased as more soybean was added. In brittleness at 4$^{\circ}C$, Jeung-Pyun of adding soybean was higher compared to control. In surface structure of Jeung-Pyun observerd by SEM. air pore size was small and distributed regularly as more soybean added. In conclusion. it can be suggested that the addition of soybean improve the quality of Jeung-Pyun.

Effect of Buckwheat (Fagopyrum esculentum) Powder on the Physicochemical and Sensory Properties of Emulsion-type Sausage

  • Various amounts of buckwheat powder (0%, 1%, 2%, and 3%) were added to emulsion-type pork sausages. The effects of buckwheat powder on the physicochemical characteristics of the emulsion type sausages, including proximate composition, cooking yield, viscosity, pH, instrumental color, texture profile analysis (TPA), and sensory evaluation, were determined. Increased levels of added buckwheat powder led to higher moisture (p<0.05), ash content (p<0.05 or >0.05), and cooking yield (p<0.05). However, the protein and fat contents of the sausage samples were lower (p<0.05) with higher levels of added buckwheat powder. The instrumental color and pH values were affected by the addition of buckwheat powder, which has a pH of 6.1 and associated color coordinates of $L^*=75.0$, $a^*=1.3$, and $b^*=8.7$. Meat batter with 3% buckwheat powder was shown the highest (p<0.05) viscosity indicating great formation of emulsion. There were no significant differences in the TPA among the treated samples. The viscosity value increased with increasing cooking yield in the batter ($r^2=0.7283$) i.e. the correlation coefficient between the two measurements was very high and positive. For sensory traits except for tenderness, the highest scores (p<0.05) was detected on sausages with 3% added buckwheat powder by a panel. These results suggest that the addition of 3% buckwheat powder to emulsion-type sausages produces a more beneficial meat product, with a lower fat content, greater formation of emulsion and no adverse effects on sensory properties.
