조미 콩 스낵 개발 및 생리활성물질 분석 (Development of Soybean Snacks and Analysis of Bioactive Compounds)

  • The purpose of this study was to analyze the bioactive compounds of soybean snacks and to carry out a sensory evaluation of those variations which had various seasoning mixing ratio. Five soybean snacks were developed for these experiments. Proximate composition, the contents of total phenol compounds and isoflavone, and sensory characteristics of the soybean snacks were measured. There were significant differences in amounts of isoflavones and total phenolic compounds of soybean snacks($p$ <0.05). The seasoned soybean snacks had a higher level of daidzein and genistein contents than did control group. The total phenol compound contents of the control group was 210.3 mg gallic acid equivalents/100 g, whereas those for individual soybean snacks(A~E) were 152.3, 160.2, 162.4, 158.4 and 164.6 mg gallic acid equivalents/100 g, respectively. In sensory evaluation, there were significant differences($p$ <0.05) in taste, texture, and overall acceptability of the soybean snacks.

당귀 잎의 항산화 활성 (In vitro Antioxidant Activity of the Aqueous of Angelicae gigas Nakai Leaves)

  • Angelicae gigas Nakai has been used as a traditional medicine as well as an edible vegetable in South Korea. In this study, the total phenolic and flavonoid content and antioxidants of A. gigas Nakai leaves were examined in vitro via hydroxyl-radical-scavenging activity, reducing power activity, metal chelating assay, and DPPH-free -radical-scavenging assay. Among all the extracts from A. gigas Nakai leaves, the ethanol extract showed the strongest effects in all of the assays. The $EC_{50}$ values for the DPPH-radical-scavenging activities of ethanol, methanol, and water extracts were 31.47, 42.14, and $58.47{\mu}g/mL$, respectively. Among the extracts from A. gigas Kakai leaves, the ethanol extract had the highest levels of total phenolics ($7.84{\pm}1.46$ mg TAN/g) and total flavonoids ($4.23{\pm}0.03$ mg QE/g), which correlated strongly with the individual phenolic-compound (p-hydroxybenzoic acid, vanillin, and trans-ferulic acid) contents. The ethanol extract also showed stronger antioxidant activity than tocopherol in hydroxyl- radical-scavenging activity assay. These results indicate that the ethanol extract of A. gigas Kakai leaves possesses significant antioxidant properties, which suggests its great potential as a functional-food ingredient in the food industry.

NF-κB Inhibition and PPAR Activation by Phenolic Compounds from Hypericum perforatum L. Adventitious Root

  • A new compound, perforaphenonoside A (1), along with 11 known compounds (2-12) were isolated from a methanol extract of adventitious roots of Hypericum perforatum. Their chemical structures were elucidated using chemical and physical methods as well as comparison of NMR and mass spectral data with previously reported data. Their inhibition of NF-${\kappa}B$ and activation of PPAR was measured in HepG2 cells using a luciferase reporter system. Among the compounds 3, 6, 7 and 12 inhibited NF-${\kappa}B$ activation stimulated by TNF${\alpha}$ in a dose-dependent manner, with $IC_{50}$ values ranging from 0.85 to $8.10{\mu}M$. Moreover, compounds 1-3, 7, 11 and 12 activated the transcriptional activity of PPARs in a dose-dependent manner, with $EC_{50}$ values ranging from 7.3 to $58.7{\mu}M$. The transactivational effects of compounds 1-3, 7, 11 and 12 were evaluated on three individual PPAR subtypes. Among them, compound 2 activated $PPAR{\alpha}$ transcriptional activity, with 153.97% stimulation at $10{\mu}M$, while compounds 1, 2 and 11 exhibited transcriptional activity of $PPAR{\gamma}$, with stimulation from 124.76% to 126.91% at $10{\mu}M$.

한국산 약용식물로부터의 SOD활성 및 Phenolic Compounds 함량 비교 (Comparision of SOD Activity and Phenolic Compound Contents in Various Korean Medicinal Plants)

  • 한국에 분포하고 있는 82종의 약용식물에 대하여 환경내성 및 기능성 소재의 개발을 위한 탐색을 위하여 항산화효소와 관련된 첫 번째 방어기작인 SOD 효소활성과 Phenol 화합물의 함량정도를 검정하여 본 결과 SOD 효소활성은 원지 (P. tenuifolia Willd.), 백편두 (D. lablab L.), 백개자 (S. alba L.), 대황 (R. palmatum L.), 감초 (G. uralensis Fisch), 연자육 (N. nucifera Gaertn), 지황 [R. glutinosa (Gaertner) Liboshitz], 현삼 (S. buergeriana Miq.), 인진 (A. capillaris Thb.)등에서 다른 약용작물보다 비교적 높은 SOD 효소 활성 능력을 나타냈다. Total phenol함량은 $(3{\sim}249.731\;{\mu}g/g)$의 범위를 보였으며 지유(S. officinalis L.), 대황 (R. palmatum L.), 복분자 (R. chingii Hu)에서 각각 $249.731\;{\mu}g/g,\;209.546\;{\mu}g/g,\;170.333\;{\mu}g/g$으로 가장 높은 함량을 나타냈다. 16종의 phenol 화합물의 경우에서는 82종의 약용식물이 각기 매우 상이한 농도의 분포를 나타내었다. 앞으로의 연구에서는, 항산화 효소 및 phenol 화합물이 많이 함유하여 우수한 기능성을 가지고 있는 것을 확인된 약용식물에 대해 그들의 이용성을 증대시킬 수 있는 구체적인 연구가 수행되어져야 할 것으로 사료된다. 또한 phenol성 물질을 많이 함유하는 약용식물 추출물을 이용한 기능성 식품, 화장품, 천연 보존재 및 의약품 등으로 개발 (Cook & Samman, 1996)할 수 있을 것으로 판단되어진다.

Comparison of physiological activities and of useful compounds between new and waste bulbs of different lily (Lilium davidii) varieties

  • Lily (Lilium davidii) is a high-yielding flowering plant. Besides roses and chrysanthemums, lily bulbs have long been used as food and in oriental medicine. However, the usage and value of cut lily bulbs has not been recognized. A bulb whose yield has been decreased is called a waste bulb, and a large amount of such bulbs is discarded every year. In this study, the functionality of waste bulbs from cut lilies was investigated to explore their potential use as a value-added product. We divided lily bulbs into two groups, one group with six varieties of new bulbs (Medusa, Siberia, Woori Tower, Yelloween, Le Reve, and Morning Star) used for cultivation and the other group with six varieties of waste bulbs (Medusa, Siberia, Woori Tower, Yelloween, Sorbonne, and Sheila). Physiological activities (${\alpha},{\alpha}$-diphenyl-${\beta}$-picrylhydrazyl: DPPH) and 3-ethlbenzthiazolne-6-sulfonic acid (ABTS) radical scavenging capability and tyrosinase inhibiting activity), the amount of total as well as eight individual phenolic compounds (chlorogenic acid, epicatechin, rutin hydrate, p-coumaric acid, kaempferol 3-O-${\beta}$-rutinoside, phloridzin dihydrate, myricetin, and quercetin), and total flavonoid content were measured in the bulbs by high performance liquid chromatography. We detected high amounts of total phenol and total flavonoid as well as high DPPH and ABTS radical scavenging ability. More tyrosinase inhibiting activity was detected in the new bulbs than in the waste bulbs. However, both the new and waste bulbs showed a higher inhibitory activity than the standard (100 ppm ascorbic acid). Although the content of phenolic compounds differed among varieties, under the conditions of the experiment, the most abundant phenolics were epicatechins, followed by chlorogenic acid, and rutins. Overall, the waste bulbs had a higher content of these compounds than the new bulbs. Based on these results, we concluded that bulbs from cut lilies could be used as functional foods in the future and farmers could expect economic gain from the hitherto neglected waste bulbs.

적색/원적색광 조사 비율에 따른 3종 배추과 채소 새싹의 Glucosinolate 함량 및 항산화 기능성 평가 (Evaluation of Individual Glucosinolates, Phytochemical Contents, and Antioxidant Activities under Various Red to Far-Red Light Ratios in Three Brassica Sprouts)

  • 본 연구의 목적은 3가지의 배추과 작물의 새싹에서 적색(R)과 원적외선(FR)광에 초점을 맞추어서 glucosinolate(GSL), 총 페놀, 총 플라보노이드, 비타민 C 함량, 항산화 활성을 평가하는 것이다. 제한된 환경조건에서 5일된 새싹에 3가지의 R/FR비율을 2일동안 24시간 노출시켜 식물화학물질과 항산화활성을 대조군[형광등, R:B(8:2), 암조건]과 비교하였다. 총 GSL 함량은 각 처리 기간 동안 3가지의 작물 중 브로콜리에서 가장 높았으며, 브로콜리 새싹에서 R/FR 비율이 증가함에 따라 총 GSL 함량이 감소하는 반면 배추와 무의 새싹에서는 유의하지 않은 결과를 보여주었다. 배추 및 브로콜리의 주요 GSL인 progointrin은 대조군에 비해 R/FR 비율이 감소함에 따라 최대 38%, 69%까지 감소하였다. 3가지 배추과 새싹에서 페놀, 플라보노이드 및 비타민 C의 함량 모두 암조건에서 가장 낮았다. 총 페놀 및 항산화 활성은 3가지 배추과 새싹에서 R/FR 비율이 감소할수록 증가하는 반면, 총 플라보노이드와 비타민 C 함량은 작물 간 다른 양상을 보였다. 이러한 결과는 FR의 보광에 따라 배추과 새싹의 기능적 품질을 향상시킬 것으로 기대된다.

잎들깨 유전자원의 기능성분 및 항산화 활성 (Functional Components and Antioxidant Activities of Perilla Leaf Genetic Resource)

  • The objective of this study was to investigate the distribution of functional compounds in perilla leaves of various genetic resources and their antioxidant activities. A comprehensive analysis of functional compounds was conducted for 90 genetic resources, focusing on total polyphenol content (TPC), total flavonoid content (TFC), individual phenolic content (IPC), and lutein. Their antioxidant activities were then analyzed based on their radical scavenging capacity using ABTS (2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) and DPPH (2,2-diphenyl-1-picrylhydrazyl). The TPC content exhibited a range of 13.19 to 35.85 mg gallic acid equivalent/g, whereas the TFC content varied from 11.74 to 46.51 mg catechin equivalent/g. Total IPC was detected in a range of 6,310.98 to 40,491.82 ㎍/g. Lutein was detected at levels between 70.97 and 597.97 ㎍/g. ABTS and DPPH radical scavenging activities of perilla leaves ranged from 30.39 to 58.58 mg trolox equivalent (TE)/g and from 7.74 to 46.56 mg TE/g, respectively. Furthermore, correlation analysis demonstrated that rosmarinic acid, a phenolic acid, exhibited a significantly positive correlation with antioxidant activity. These findings suggest that various genetic resource of perilla leaves could effectively mediate antioxidant capacity. Results of this study provide valuable information for use of perilla leaves in Korea as functional food materials.
