As the importance of elderly's dietary life have increased, low-income elderly's meal should be taken care by social policies. Nevertheless, there is a lack of systematic management in home-delivery meal service. This study aims to investigate the elderly's experience on home-delivered meal service, especially identifying the symbolic meaning of home-delivered meal service on elderly's dietary life. Using an in-depth interview, qualitative data was collected from five elderly participants who received home-delivered meals. Data was analyzed based on Colaizzi's 6 steps method, deriving 148 significant statements, 18 formulated meanings, and 5 themes: , , , , and . Elderly participants regarded the home delivered meal as not only a decent meal but also felt appreciated. The home-delivered meals were found to be their only meal all day; thus, they considered these meals as a means of survival. Home-delivered meals are considered as a lack of consideration for the elderly's physical condition, including their tastes, portion size, and cooking method. Also, these elderly seemed to lose their appetite due to aging and it caused the enjoyment of eating. The elderly have kept silence never expressing any opinions regarding the home delivered meals because they were offered for free. The results suggested that the home-delivered meal service should be developed with the multilateral evaluation methods to reflect the elderly's needs to improve the quality of the home-delivered meal service.
BACKGROUND/OBJECTIVES: We investigated the associations between eating away from home (EAFH) and overweight and obesity among Ugandan adults using the 2014 Uganda non-communicable disease risk factor survey. SUBJECTS/METHODS: In total, 3,025 participants aged 18-69 years were included in the analysis. The frequency of EAFH was assessed by asking participants the number of meals eaten per week that were not prepared at a home. EAFH frequency was categorized as; less than once/week, 1-2 times/week, or ≥ 3 times/week. Logistic regression was used to evaluate the associations between overweight, obesity, and EAFH. We also tested whether sex and age modified these associations. RESULTS: Participants that ate away from home ≥ 3 times/week were 2.13 times more likely to be obese than those that ate away from home less than once/week (odds ratio [OR], 2.13; 95% confidence interval [CI], 1.28-3.54). However, when the analysis was stratified by sex, women that ate away from home ≥ 3 times/week were 42% less likely to be overweight than those that ate away from home less than once/week (OR, 0.58; 95% CI, 0.36-0.94). Men that ate away from home ≥ 3 times a week were 3.89 times and 2.23 times more likely to be obese and overweight, respectively, than those that ate away from home less than once/week (obesity: OR, 3.89; 95% CI, 1.50-10.09; overweight: OR, 2.23; 95% CI, 1.42-3.51). Age-stratified analysis showed that among participants aged 31-50 years, those that ate away from home ≥ 3 times a week were 3.53 times more likely to be obese than those that ate away from home less than once/week (OR, 3.53; 95% CI, 1.69-7.37). CONCLUSIONS: Frequent EAFH was positively associated with overweight and obesity among men, and obesity among young/middle-aged adults, but negatively associated with overweight in women. Nutritional interventions for obesity reduction in Uganda should include strategies aimed at reducing the frequency of eating meals prepared away from home, and specifically target men and young/middle-aged adults.
The middle school subjects were 65.8% girls and 34.2% boys. Seniors were most abundant at 56.3%. The most abundant location was Gyeonggi-do (54.7%), and 69.3% of subjects were living with 4?5 family members. Approximately 56% of the mothers had graduated from high school, and 58.1% were unemployed. The mother most often prepared the food (78.4%), fish was eaten mostly in the home, and taste was the most important factor (62.6%). The preferred home food menu was fish because it is healthy, and the main cause for disliking the school meal service was poor quality dishes compared to a home cooked meal. The acceptance and type of fish were proportional. Rice was the most favored dish to eat with fish and scored 3.97, the highest rank. Approximately 50% answered that fish was nutritious, and a significant difference was observed regarding the mother's educational background (p<0.05). Students who never had a lecture about fish answered that fish was not nutritious, which showed a significant difference with education (p<0.05). Approximately 44% of students ate fish 2?3 times per week, and male students showed a significantly higher intake of fish than female students (p<0.05). The poorly educated disliked fish the most, and the higher frequency intake of fish resulted in a significantly higher percentile (p<0.001).
The purpose of this study was to evaluate the nutritional status of elderly women living in residential homes by estimating nutrients and food intakes. Food consumption survey was conducted by 3-day 24hr recall method with 99 elderly women aged 65 to 90 years from three residential homes in Seoul, Choonchun and Chunan and 46 free-living elderly women aged 65 to 88 years from Chunan as control group. Food intake data was converted into nutrient intake using computer aided nutritional analysis program. Mean energy intake and percentage of recommended daily allowance (RDA) of residential home residents were 1696㎉ and 101% of RDA while those of control were estimated as 1939㎉ and 119% of RDA. On average, absolute amount of nutrient intakes of residential home residents were slightly higher than control group. Subjects in control group showed significantly lower carbohydrate and vitamin A intake, while vitamin C intake was higher. However, nutrient intake quality determined by INQ (Index of nutritional quality) was significantly higher among control subjects in most nutrients except vitamin A than residential home residents. Intakes of calcium, vitamin A and riboflavin of all subjects in this study were less than 75% RDA meaning that nutritional status of calcium, vitamin A and riboflavin was insufficient and could possibly result in nutritional deficient. Some food groups such as milk or other dairy products must be strongly suggested to improve nutritional status of elderly women in this study. According to the results of this study, meal plans of residential homes are quite adequate in quantity of micronutrients, but need to be improved in both quantity and quality of micronutrients.

This study was carried out in order to investigate the change of protein functionalities such as foaming and emulsifying properties by succinylation of protein isolates. Succinylated and unsuccinylated munghean protein isolates were tested for finding out the effects of pH, heat treatment and sodium chloride concentration on the solubility, emulsion capacity, emulsion stability, foaming capacity, and foam stability. The results are summarized as follows: 1. Succinylation enhanced the solubility of MPI except at pH 4.5. When heated, succinylation greatly increased the solubility of succinylated MPI above $60^{\circ}C$. With the addition of NaCl, succinylation increased the solubility of MPI at acidic condition. 2. Emulsion capacity of succinylated MPI showed the lowest value at pH 7 and higher values at acidic and alkaine condition. when succinylated MPI was heated, emulsion capacity showed the highest at $80^{\circ}C$. With NaCl was added, emulsion capacity of succinylated MPI lincreased at pH 7, 9 or 11 decreased at pH 3 except addition of 1.0M NaCl. 3. Emulsion stability of MPI and succinylated MPI showed the highest at pH 4.5. Succinylation enhanced the emulsion stability of MPI at acidic condition. 4. The foaming capacity of MPI was increased at pH 3, 7 or 9 by succinylation. 5. When heated, foam stability of MPI and succinylated MPI showed the highest at pH 4.5 and at pH 11, respectively. When heated, both proteins showed the highest stability at $100^{\circ}C$.

BACKGROUD/OBJECTIVES: Registered dietitian nutritionists (RDN) are providers of medical nutrition therapy (MNT) to address health and chronic disease. Traditionally, RDNs have provided care in healthcare facilities including hospitals and private care facilities. The purpose of this study was to determine how RDN individualized MNT in the home impacted nutrition, physical activity, and food security. SUBJECTS/METHODS: This is a secondary data analysis. The mean age of the participants (n = 1,007) was 51.6 years old with a mean body mass index (BMI) of 34.1 kg/m2. Individualized MNT visits were delivered by an RDN in the home setting from January to December 2019. Participants were referred by healthcare professionals or self-referred. Participants had MNT benefits covered by their health insurance plan (43.3% Medicaid; 39.8% private insurance; 7.9% Medicare, 9% other). Health outcomes related to nutrition care were measured. Outcomes included self-reported consumption of nutrition factors and physical activity. Our secondary outcome focused on food security. The changes in weight, BMI, physical activity, and nutrition factors were analyzed by a linear regression model or linear mixed model, adjusting for age, sex, baseline value, and number of appointments. Food security was summarized in a 2 by 2 contingency table. RESULTS: Baseline values had significantly negative impacts for all changes and number of appointments was significant in the changes for weight and BMI. Increases in physical activity were significant for both female and male participants, 10.4 and 12.6 minutes per day, respectively, while the changes in weight and BMI were not. Regarding dietary factors, the consumption total servings per day of vegetables (0.13) and water (3.35) significantly increased, while the consumption of total servings of whole grain (-0.27), fruit (-0.32), dairy (-0.80) and fish (-0.81) significantly decreased. About 24% (of overall population) and 45% (of Medicaid population) reported improvements in food security. CONCLUSIONS: This study found that home visits were a useful setting for MNT delivered by RDNs. There is a strong need for individualized counseling to meet the participants' needs and personal goals.
This paper gives special attention to the changes of time use patterns of the German population for eating and drinking as well as for household work. It especially examines the changes in time use for meals eaten at home and away from home as well as the division of labour for nutrition provision activities between men and women. The presented results originated from two time budget surveys conducted in Germany in 1991/92 and 2001/02. In a secondary analysis time use patterns for eating and drinking and nutrition provision activities were examined on a base of a representative sample of 12600 private households. Surprisingly the amount of time spent on eating and drinking increased over the period. More Germans ate away from home at least once a day, whereas meals at home were still dominant. Moreover comparisons over time revealed that the share in household and food provisioning work has narrowed between men and women, especially in households with both partners being employed. Overall the analysis shows that time use data allow general statements regarding the amount and changes of time spent on daily eating, household work and especially food provision activities. The extent of women's employment has shown to be most decisive for an equal division of household work between gender. To be able to better interpret the results and to understand the consequences for family life, it is necessary to complement time use data with qualitative interviews to gain comprehensive insight into peoples nutrition goals, motives and barriers of action.
This study examined the experience of administrators of home-based child care centers about CCFSM (Center for Children's Foodservice Management) service using a qualitative approach. Eight administrators of home-based child care centers in Seoul with more than one year's experience of CCFSM were interviewed regarding their opinions on support activities, standards, and foodservice management. The interviews were semi-structured with open-ended questions and they were transcribed and classified according to the subjects. There were negative opinions regarding the indications after a hygiene inspection leaving photographs or records behind, but most positive opinions were about round visits for foodservice sanitation and nutrition management. The participants thought that it is not enough that the number of nutrition education sessions for children be twice a year, and there was a suggestion to increase the rentals of nutrition educational materials. There was a complaint about the menus in that were difficult to prepare for lunch time or to obtain food ingredients for. The administrators poorly recognized how to use the standardized recipes and chlorine-based disinfectants, so they could not be applied properly. They also pointed out the problems of joint purchasing as low quality and high prices in the food service operation. They felt discriminated against compared to with larger scale child care centers because of their size and expressed concerns regarding the fact that many home-based child care centers were not included due to the lack of publicity and budget. Through the results, the CCFSM should provide a differentiated service and management by creating a dedicated team or staff for home-based child care centers so they will not feel left out. In addition, It is also important to constantly gather opinions to improve the menus and to use standardized recipes practically. In addition, it will be necessary to develop nutrition educational materials corresponding to the infants' age for home-based child care centers and increase the rent to expand nutrition education.
The purpose of this study is to investigate the current situation of children's milk intake at home and school in order to identify the better way to help children's milk intake. For this, 895 elementary students participated in this study through the questionnaire developed by researchers. Conclusions drawn from the results of this study are as follows : 1. Various kinds of milk should be provided for children both at home and school so that they can choose an appropriate milk for themselves. 2. Teachers at school should help children's milk intake not through forcing them but through appropriate educational approach. 3. Milk distribution system and ways of refrigeration of milk in school should be improved. 4. Nutrition education should be implemented for children so that they themselves choose milk as favorite beverage.

Kimchi is an important traditional fermented food a korean eating habbit. It is an outstanding food to supply its taste, dietary fiber, vitamins and inorganic substances by microorganism. And recently Kimchi has spotlighted as an international food. To make study of contents concerned Kimchi, analyzed the girl’s high school economics textbook, made questionnaires about necessity of Kimchi education, practiced process of Kimchi to present how to pickle vegetables into Kimchi. The results were: 1. The most of the respondents wanted for Kimchi making and answered that they prepare Kimchi at home by themselves. 2. The most suitable pickling time was about 4 hours and salting conditions by dry and wet styles were 20% for good taste and nutrition of Kimchi. 3. Teaching-learning program by cooperative learning model developed.
