  • EMC는 치즈와 유사한 효소작용은 거치게 되지만 치즈에 비하여 더 많은 효소작용에 의하여 더욱 강력한 풍미를 생산하게 된다. 이러한 우수한 EMC의 개발을 위하여 적합한 효소를 찾아내는 것은 중요한 과제이다. 심지어 동일한 PGE도 송아지의 것이 어린 염소나 어린 양의 것에 비하여 더 부드러운 맛을 생산할 수 있다. 특히 체다치즈의 풍미를 위하여는 미생물효소보다 동물성 esterase나 peptides가 유리한 것으로 알려지고 있으며, 체다치즈나 스위스치즈의 경우 비단 백태 질소화합물의 양도 EMC가 치즈에 비하여 3배 가까이 많았다. 체다 EMC의 성분 비율에서도 유리지방산에는 butyric acid, myristic acid, palmitic acid와 oleic acid가 많았고, 유리 아미노산에는 glutamic acid, valine, leucine과 lysine이 많은 것으로 나타났다.

  • Prolific females require better nutrition and feeding practice because of larger litter size and the substantial decline in body fat. Life-time pig output will be compromised if body protein and fat are not properly managed. First litter females are especially vulnerable because they can loose ${\geq}15%$ of whole-body protein. Conservation of body protein mass during first lactation minimizes wean to estrus interval and increases second litter size (up to 1.2 pigs). The ability to influence litter-size by amino acid nutrition is a new dimension in our understanding. A P2 fat depth below 12 mm at farrow and below 10 mm at wean compromised wean to estrus interval (>2 d) and next litter size (0.5 to 1.5 pigs) in sows. It is now clear that a 'modest' excess of feed during the first 72 h of pregnancy decreases embryo viability so that the potential for an increased litter size at birth is not realized. The capacity for milk production by prolific young sows is 25% higher than the standard used previously (NRC, 1988). First litter females averaged 9.82 kg milk/d for a 21 d lactation. Second and third litter counterparts averaged 10.35 kg/d. Milk production was 95% of peak by 10 d of lactation and sows were in greatest negative energy and lysine balance during the first 6 d. Nearly 45% of the total loss in body protein occurred within the first 6 d, but this could reduced to 30-35% by using a more aggressive feeding strategy after parturition. There appear to be 2 phases in lactation for lysine need (d 2-12 vs 12-21). Feeding to the higher level alleviates the second litter size decline. The lysine requirement for lactation can be predicted with accuracy, but we are not able to predict the second limiting amino acid. Mammary uptake of valine relative to lysine and recent work with practical diets suggest that the recent NRC (1998) pattern is realistic and that threonine and valine could be co-limiting for corn-soy diets for prolific sows nursing 10-11 pigs. Empirical studies are needed to refine the ideal pattern so that synthetic lysine can be used with more confidence. Milk fat output for the elite sow is extraordinary and poses an unnecessarily high energetic cost. Methods that reduce mammary fat synthesis will benefit the sow and may enhance piglet growth.

  • 우리나라의 하천에 분포(分布)하고 있는 담수어(談水魚)의 식품학적(食品學的)인 기초자료(基礎資料)를 얻고져 비교적(比較的) 희귀종(稀貴種)에 속(屬)는 은어, 누치, 쏘가리 및 밀어 배육중(背肉中)의 핵산관련물질(核驗關聯物質), 유리(遊離)아미노산(酸) 및 구성(構成)아미노산(酸)을 분석(分析)하였다. 핵산관련물질(核酸關聯物質)은 IMP가 월등히 많아 은어, 누치, 쏘가리 및 밀어 배육중(背肉中)에 $10.7{\sim}19.5{\mu}mole/g$의 범위였다. UMP 및 hypoxanthine은 $2.0{\mu}mole/g$ 이하였고. GMP와 inosine은 흔적량에 불과하였다. 그리고 AMP는 은어 배육(背肉) 및 밀어 배육(背肉)에서 각각 2.0, $2.7{\mu}mole/g$으로 검출(檢出)되었으나 누치와 쏘가리 배육(背肉)에서는 흔적량으로 검출(檢出)되었다. 유리(遊離)아미노산(酸) 조성(組成)을 보면 은어 배육(背肉)의 엑스분중(分中)에는 taurine 및 histidine이 각각 전체(全體)의 36.6%, 15.4%, 누치 배육(背肉)에는 taurine, glycine 및 histidine이 각각(各各) 21.2${\sim}$29.0%, 쏘가리 배육(背肉)에는 taurine, histidine 및 alanine이 각각(各各) 14.5${\sim}$31.8%, 밀어 배육(背肉)에는 taurine, proline 및 threonine이 9.1${\sim}$31.2%로서 비교적(比較的) 많은 함량(含量)이 검출(檢出)되었다. 구성(構成)아미노산(酸) 은어 배육중(背肉中)에는 glutamic acid, glycine, aspartic acid 및 lysine이 총(總) 구성(構成)아미노산(酸)의 44.0%, 누치 배육중(背肉中)에는 43.5%, 그리고 쏘가리 및 밀어배육중(背肉中)에는 glutamic acid, aspartic acid, lysine 및 leucine이 각각(各各) 43.3%와 43.1%를 점유(占有)하고 있었다. glutamic acid는 어종(魚種)에 관계(關係)없이 그 함량(含量)이 가장 많았다.

감마선 조사 처리에 의한 우유의 화학적${\cdot}$세균학적 및 항원성 변화 (Changes of Chemical, Bacteriological, and Allergenicity of Raw Milk by Gamma Irradiation)

  • 본 연구는 항원성을 저감한 우유 및 유제품 개발을 위한 기초자료 도출을 위해 열처리와 감마선 조사 처리 시 우유의 화학적, 미생물학적 및 면역적 변화를 비교하였다. 열처리와 감마선 조사 처리 시 열처리 온도와 조사량이 높을수록 유리지방산 함량이 증가하는 경향을 나타내었으며 UHT 처리시와 5 kGy 조사시 유리지방산 함량은 유사하였다. $10^3$ CFU/mL 수준의 원유를 저온, 고온, 초고온으로 열처리시와 1${sim}$10 kGy로 감마선 조사처리 시 모두 일반세균과 대장균 군이 검출되지 않았으나, 일주일 지난 후에도 UHT 처리유와 5kGy 이상 조사 처리유에서 일반세균과 대장균 군이 검출되지 않았다. 원유를 열처리시 arginine, asparate, iso-leucine, leucine, lysine, methionine이 감소된 반면 조사처리에 의해 aspartate, histidine, iso-leucine, leucine, lysine이 감소되어 열처리와 조사처리가 단백질의 일차구조에도 영향을 미칠 수 있는 것(p<0.05)으로 나타났다. 또한, 우유의 항원성은 감마선 조사처리시 5kGy 이상에서 유의적(p<0.05)으로 감소하였다. 이상의 결과로 볼 때 5 kGy 정도의 감마선 조사처리로 UHT 처리시와 유사한 화학적, 미생물학적 효과와 우유의 항원성 감소효과를 기대할 수 있다.

  • 여름철 즐겨먹는 토마토, 수박, 참외, 복숭아, 자두중(中)의 유리(遊離) amino 산(酸) 및 당(糖)을 Amino acid Autoanalyzer와 thin layer chromatography에 의해 분석(分析) 조사(調査)한 결과(結果)는 다음과 같다. 1) 과즙중(果汁中)에서 동정(同定)된 amino산(酸) 종류(種類)로는 aspartic acid, glutamic acid, alanine, serine, asparagine, lysine, valine, glycine, methionine, histidine, thereonine, leucine, isoleucine, proline, arginine의 15개(個)였고 그밖에 1개(個)의 unknown이 발견 되었다. 2) 토마토, 복숭아, 자두 중(中)에는 10개(個)의 amino산(酸)이 수박과 참외(가식부(可食部))중(中)에는 13개(個)의 amino산(酸)이, 그리고 참외(과피부(果皮部))에는 11개(個)의 amino산(酸)이 함유(含有)되었다. 3) 일반적(一般的)으로 이러한 amino산(酸)들은 소량이지만 골고루 함유(含有) 되었다. 4) 토마토에는 glutamic acid와 aspartic acid가 가장 많이 함유(含有)되었고, 수박에는 asparagine과 lysine이, 참외에는 alanine, serine, aspartic acid가 그리고 복숭아와 자두에는 aspartic acid와 serine이 가장 많이 함유(含有)되었다. 5) 과즙중(果汁中) 유리당(遊離糖)은 다같이 glucose, fructose, sucrose, maltose의 4개(個)가 함유(含有)되었고 그중(中) glucose와 fructose는 다량(多量)이고 sucrose, maltose는 소량(少量)이었다.

  • The isoelelectric points of Cd-BP(l) and Cd-BP(II), cadmium-binding proteins, were 6.01 and 5.35, respectively. Both of them contained zinc. As for the amino acid composition, Cd-BP(I) contained a lot of glycine and lysine but none of such aromatic amino acids as tyrosine and phenylalanine.. On the other hand, Cd-BP(II) contained leucine, histidine, asparti cacid and alanine but no aromatic amino acids.

사료 내 수준별 조단백질 조건에서 보호메티오닌과 보호라이신의 사료첨가 급여가 착유우유생산성 및 유성분에 미치는 영향 : 메타분석 (Effect of protected Methionine and Lysine on Milk yield and Composition in Holstein Dairy Cow under Different Dietary Crude Protein Levels : Meta-analysis)

  • The present study was conducted to investigate effect of dietary protected amino acid on milk yield and composition in dairy cow using meta-analysis. Total 21 research papers were employed in analysis, and mixed model was used for the analysis of effects. Effect of protected methionine (PM) and combination of protected methionine and lysine (PML) were investigated under two different levels of dietary crude protein (CP, <18% and >18%). For performance of dairy cow, milk yield, milk composition including milk fat and protein content and yield and 4% FCM (fat corrected milk) production were used for analysis. In case of milk yield, a trend of increment was found at PM supplementation at low CP (P=0.055). However, the effect of PM at high CP was detected as not significant (P>0.05). In case of milk protein, inclusion of PM at low CP showed significant decrement (P<0.05). However, there was no significant effect of MP on milk protein at high CP (P>0.05). Supplementation of MP at high CP level showed significant increment of milk fat (P<0.05). MP supplementation represented significant increment of 4% FCM production (P<0.05) regardless of dietary CP levels. Effects of PML on milk yield and composition at both of low and high dietary CP were not significant in this study. However, it seem to be that there was a possible positive effect of MPL application at high dietary CP on performance of dairy cow.

올리고당의 Maillard 반응물질의 유지에 대한 항산화효과 (The Antioxidative Effects of Maillard Reaction Mixtures of Oligosaccharides)

  • The purposes of this study were to investigate the Maillard reactions of some oligosaccharides with lysine and the antioxidative effects of the ethanol extracts from their reaction mixtures on the soybean oil. The Maillard reactions were carried out of 2% oligosaccharides such as palatinose (PN), fructooligosaccharide (FO), isomaltooligosaccharide (IMO) with 2% lysine (L) for 24 hours heating at 60, 80, $100^{\circ}C$. The color intensity of Maillard reaction mixtures were determined by UV-VIS spectrophotometer upon reaction time and temperature. And the antioxidative effects on the soybean oil of each ethanol extract from Maillard reaction mixture of each oligosaccharide were measured by peroxide value (POV). POV's of soybean oil including reaction extracts were determined regularly every 2 days during 20 days storaged at $60{\pm}1^{\circ}C$. The results were obtained as follows: 1. The color intensity of the Maillard reaction mixtures were raised highly as the browning temperature and time increased. The color intensity of PN L browning mixture was the highest. The order of high color intensity at $100^{\circ}C$ was PN L>FO L>Glu L>IMO L. 2. Comparing the antioxidative effect of Maillard reaction product (at $100^{\circ}C$, for 12 hours) of each oligosaccharide to that of BHT and TBHQ, the order of high antioxidative effect was TBHQ>IMO L>BHT>Glu L>PN L>FO L. 3. From these results, it was known that PN L shown as high brown color intensity was appeared low antioxidative effect, while IMO L shown as low brown color intensity was appeared high antioxidative effect. So, it was recognized that there was no relation between brown color intensity and antioxidative effect.

Effect of dietary sesame (Sesame indicum L) seed meal level supplemented with lysine and phytase on performance traits and antioxidant status of late-phase laying hens

  • Objective: This study was performed to investigate the effects of supplementing sesame seed meal (SSM) with phytase and lysine on performance, egg quality, blood biochemical and antioxidant status of laying hens. Methods: A total of 960, 56-wk-old laying hens were divided into 12 dietary groups with eight replicates per group (10 birds per replicate). A completely randomized design with factorial arrangement 2×3×2 consisted of two levels of lysine supplement (0% and 10% over requirement), three SSM levels (0%, 10%, and 20%) with or without phytase (0 and 300 g/ton). The feeding trial lasted 10 weeks. Results: Birds fed diets with 10% SSM had higher feed intake than groups fed 0% and 20% SSM. The addition of phytase to experimental feeds, improved feed conversion ratio, increased egg weight and mass (p<0.01). Egg quality criteria was not affected by supplementing phytase; however, supplementing 300 g/ton phytase to hens diet, led to a significant (p<0.05) increase in egg shell strength. Egg yolk cholesterol and serum low-density lipoprotein cholesterol, atherogenic index and total cholesterol were decreased (p<0.01) by diet containing 20% SSM. The high-density lipoprotein cholesterol was increased (p<0.05) in serum of hens fed 20% SSM than the other groups. It was also observed that total antioxidant capacity and total superoxide dismutase content of hens fed 20% SSM was significantly higher than control group (p<0.05). Conclusion: As from results, dietary supplementation of SSM and phytase had no negative effects on laying hens performance or egg quality while improving the egg oxidative stability.
