  • The solubility of nickel ferrite in an aqueous solution of boric acid was studied by varying the pH at the temperatures ranging from $25^{\circ}C$ to $320^{\circ}C$. A flow-through autoclave system was specially designed and fabricated to measure the solubility of Fe in hydrothermal solutions under high temperature and pressure. The performance of this flow-through system was directly compared with the conventional static state technique using a batch-type autoclave system. The stability of fluid velocity for the flow-through autoclave system was verified prior to the solubility measurement. The influence of chemical additives, such as boric acid and $H_2$, on the solubility of nickel ferrite was also evaluated.

  • Cyclosophoraose (cyclic $\beta-(1,2)-glucan$, Cys) isolated from Rhizobium meliloti, a soil microorganism, was used as a solubility enhancer for flavonoids. The complexes of the cyclic oligosaccharide with flavonoids were confirmed through $^1H$ nuclear magnetic resonance (NMR) spectroscopic analysis. Flavonoids solubilized by Cys were quantitatively analyzed through high-performance liquid chromatography (HPLC). Among the flavonoids tested, the solubility of naringenin was greatly enhanced by Cys, compared with other compounds. The solubility of naringenin was enhanced about 7.1-fold by adding 10 mM Cys, compared with a control. $^1H$ NMR spectroscopic analysis indicated that the H-6 and H-8 protons, which are located on the A ring of naringenin, were greatly shifted upfield upon the complexation with Cys. This result suggested that Cys showed a regioselective interaction with the naringenin molecule upon the complexation, resulting in the solubility enhancement of naringenin.

  • The bioavailability of Ca is currently one of the most important topics in nutrition research and is correlated with gastrointestinal solubility. Thus, to increase the solubility of calcium, this study was undertaken to examine the effect of $\gamma$-PGA on intestinal Ca solubility. The calcium solubility increased when the amount of $\gamma$-PGA was increased, due to the inhibition of the formation of an insoluble Ca complex with phosphate. Therefore, when $\gamma$-PGA-500 (avg. MW 5,000 kDa) was added at 0.5 mg/ml, $75\%$ of the total Ca was soluble. The amount of soluble Ca uptake in the small intestine was investigated using Balb/c mice as an animal model system. The soluble Ca uptake in the mice orally administered with $\gamma$-PGA-500 (avg. MW 5,000 kDa) was significantly higher than that in the $\gamma$-PGA-l00 (avg. MW 1,000 kDa)-administered mice (P<0.05). Accordingly, these results strongly support the notion that the molecular size of $\gamma$-PGA is correlated with Ca solubility. The effects of other factors, such as casein phosphopeptide and vitamin D, on intestinal Ca absorption have also previously been investigated. Therefore, it is hoped that the present observations will help clarify the role of $\gamma$-PGA in Ca solubility and its industrial application as an additive.

  • Budesonide belongs to Class II in the Biopharmaceutics Classification System (BCS) for its high permeability and poor aqueous solubility. The purpose of this study was to improve the solubility and dissolution rate of budesonide using an o/w microemulsion system in order to develop a nasal formulation. Based on the results of the solubility study and pseudo ternary phase diagrams, microemulsions of about 80 nm in mean diameter were formulated using isopropyl myristate and Labrasol$^{(R)}$ as an oil phase and a surfactant, respectively. Solubility of budesonide in the microemulsions increased up to 6.50 mg/mL, which is high enough for a nasal formulation. In vitro release profiles of budesonide significantly increased from the microemulsions compared to that of the budesonide powder. These results suggest that the microemulsions of budesonide could further be developed into a clinically useful nasal formulation.

  • The purpose of this study was to determine the foaming properties of two small red bean protein isolates at various conditions. Data concerning the effects of pH, temperature, MaCl concentration, sugar concentration and protein concentration on the properties such as solubility, foam expansion, foam stability were presented. The results were summarized as follows : 1. The crude protein contents of two small red beans were 26.14% and 22.71%. The percentage of nonpolar amino acid group was the highest and that of sulfur containing amino acid group was the lowest. 2. Protein solubility showed the minimum at pH 4.5 which is isoelectric point of small red bean protein isolate adn heat treatment lowered solubility(P<0.05). At pH 4.5, solubility increased sighificantly as 0.4M NaCl was added. However, the effect of sugar concentration in the solubility was not significant. 3. Foam expansion of two small red bean protein isolates was high at pH 4.5 and heat treatment at 10$0^{\circ}C$ lowered foam expansion(P<0.05). While addition of NaCl, sugar did not affect the foma expansion, gradual increment of the protein isolates concentration up to 9% decreased the foma expansion slightly. 4. Foam stability was significantly high at pH 4.5 and heat treatment at 10$0^{\circ}C$ lowered foam stability. Addition of sugar caused slight decrease in foam stability. From 1% to 9% suspension, foma stability increased significantly as protein concentration increased(P<0.05)

  • Tannins in plant foods and beverages may produce antinutritional or toxic effects although some proteins with high affinity for tannins seem to function as defense mechanism to tannin toxicity. Our objectives were to investigate of tea tannins, iron and protein and to evaluate the role of proteins in tannin effects on iron solubility. Iron solubility in vitro was measured using tea with and without proteins. Mixtures of tea, protein in varying concentrations(either gelatin or bovine serum albumin), and iron(eithe 10 or 50ug/mL) were prepared. Controls contained water in place of tea. Iron bioavailability was assessed by measuring iron solubility in the simulated gastric condition with pepsin digestion. Bound iron was removed by centrifugation and soluble in tea alone. When iron concentratin was 10ug/mL, addition of small amounts of protein to tea dramatically reduced iron solubility, but solubility of iron increased in the tea mixturea as the concentration of protein was increased. The percnetage of iron that precipitated was much greater at 10ug Fe/mL than the values at 50ug Fe/mL suggesting that the iron binding sites on the tea-protein complex was saturated. These results suggest that interactions of iron with tea tannins are influenced by the concentratins of protein and iron.

  • This study investigated the extractability, solubility, Mg$^{2+}$-, Ca$^{2+}$- and EDTA-ATPase activity of actomyosin prepared from leg and breast muscle of dog meat. The actomyosin extractability of breast muscle(2,100.6 mg/l00 g) was higher than that of leg muscle(500.8 mg/l00 g). The Mg$^{2+}$-ATPase activity of actomyosin had a high ionic strength of 0.02$\sim$0.05 M KCI and did not differ between leg and breast muscle. The Ca$^{2+}$-ATPase activity of actomyosin had a high ionic strength of 0.02$\sim$0.10 M KCI and leg muscle had a higher level of Ca$^{2+}$-ATPase activity than breast muscle did. The EDTA-ATPase activity was lower in low ionic strength and showed higher in high ionic strength, and increased sharply with increasing ionic strength up to 0.3 M KCI. The solubility of actomyosin did not differ between leg and breast muscle, and the solubility started and ended at KCI concentrations of 0.35 M and 0.4 M, respectively.

  • We measured the reductions in size and solubility of mackerel muscle that was freeze-dried, deoiled by supercritical carbon dioxide (SC-$CO_2$), or roasted. The percent size reduction and solubility were high in SC-$CO_2$-treated muscle compared with freeze-dried and roasted muscle. We used oil-free residues to test for heavy metals and determine microbial safety. The SC-$CO_2$, hexane, and ethanol were used to separate oil from muscle. The concentrations of cadmium (Cd) in all treated muscles were less than the values reported in the literature, as were the concentrations of lead in SC-$CO_2$- and hexane- treated muscle. In contrast, concentrations of arsenic and mercury in muscles were greater than the reported values regardless of treatment. Zinc and iron, which are beneficial for health, were found in high levels after all treatments of muscle tissue. After 6 months of storage at different temperatures, SC-$CO_2$-and ethanol-treated muscle showed few bacterial colonies, and none were found after 4 months of storage at $-20^{\circ}C$. These results will be useful to food-processing industries for maintaining high-quality, safe mackerel muscle.
