한국산 조란류의 피단제조에 관한 연구 (A Study on the Pidan-Making Process with Korean Bird′s Eggs)

  • The alkali solution consisting of 5% NaOH, 5% NaCl, 2% Tea is most suitable for making pidan. During the soaking period, the values of pH increased from pH 9.02~ 9.19 to pH 12 in the egg white and increased from PH 6.1 to PH 11.63 in the egg yolk. Quail's egg jelled on the 7th day of immersion and the hen's egg and duck's egg jelled on the 10th day of immersion. The Quail's egg ripened at $25^{\circ}C$ in 30~35 days, and Sunghua crystals were formed at the end of the ripening period The moisture content of pidans decreased by 3.5~4.0%, but relatively crude protein, crude fat and crude ash increased by 1.0%, 1.9% and twice respectively. The content of Ca in the hen's pidan and quail's pidan increased about 40%, that of K in the duck's pidan increased about 13% and that of Mg in the hen's pidan and duck's pidan increased about 23~28%. The content of Na in the 3 groups all increased approximately 7 times. The content of total cholesterol level in pidan yolks decreased by 21~40% in each pidan. As a result of a sensory evaluation, the white hen's pidan was most agreeable in flavor and the quail's pidan was most agreeable.

삼씨유와 달맞이유의 급여가 계란 내 감마지방산 축적에 미치는 영향 (Effects of feeding evening primrose oil and hemp seed oil on the deposition of gamma fatty acid in eggs)

  • Hemp seed oil and evening primrose oil were incorporated into the diets of laying hens for 5 weeks and the level of gamma fatty acid in the eggs that the treated hens laid was then evaluated. Hens were fed corn-soybean based diets that contained 5% tallow, 5% corn oil (CO), 5% hemp seed oil (HSO), or 5% evening primrose oil (EPO). The hemp seed oil and evening primrose oil influenced the amount of gamma linolenic acid found in the eggs through blood. The level of gamma linolenic acid in the plasma was significantly higher in hens that received the HSO and EPO diets than in those that received the tallow and CO diets. The HSO and EPO diets led to a 1.09% and 4.87% increase in egg gamma linolenic acids, respectively, when compared with eggs produced by hens treated with tallow and CO. Taken together, these data demonstrate that healthy eggs with increased gamma linolenic acids can be generated by minor diet modifications when hemp seed oil or evening primrose oil is included in the hen diet.

  • These experiments were designed to study the Hg contents in Korean Hens Egg by origin, kind, organ, and cooking methods. The following samples were studied. Place of origin Seoul (Legon) Su Woun (Legon) Pusan (Legon) Ulsan (Legon) Tae Gu (Legon) Kwang Ju (Legon) Seoul (New Hampson) Seoul (Native) No of sample 12 12 12 10 10 10 10 10 The following result were obtained. 1. The Hg contents of hen's egg of Seoul origin was 0.087 p.p.m., that of Ulsan origin was 0.077 p.p.m.. Its contents of Tae Gu, Kwang Ju origin were 0.052 p.p.m. and 0.048 p.p.m.. High contents of Hg showed in egg that produced in large cityies ana industrial area. 2. For the kind of egg, the Hg contents of Legon kind was 0.087 p.p.m and that of Native kind was 0.031 p.p.m.. Its contents of Legon kind was higher than that, of Native significantly. 3. By the organ of egg, the contents of Hg in egg yolk was 0.064 p.p.m. that showed 87 percent Hg contents of whole egg, and its value of egg white was 0.009 p.p.m.. 4. About cooking methods, the contents of Hg in parboiled egg was 0.007 p.p.m., that of fried egg was 0.015 p.p.m.. Especially the cooked eggs were significantly lower than row eggs in Hg contents.

소음스트레스에 의한 산난계의 피해상황 연구 (The effect of sound stress on laying hen performance)

  • This study was carried out to set a standard of damage compensation by researching state of damage due to noises in laying and prelaying hens. Recently, there are many damage cases in chicken farms near construction site that were caused by noises of construction. Therefore disputes and complaints about economical loss have increased ceaselessly. But we have few research and report such a thing. The result have shown that the weight loss rate was ranged from 9.48% to 23.2% and mortality of laying period of hens was higher than prelaying period. Pathological findings were fatty liver, congestion and hemorrhage of intestine, erosion of proventriculus and gizzard in order of case frequency. And these signs in hens of laying period was more serious than prelaying period. Half-life rate of antibody titers against Newcastle disease and infectious bronchitis in sound stressed hens was no different compared with non-stressed hens. Egg production rate dropped from 38% to 45% according to strength of noises. Before being stressed, hens produced special, large, middle, small-size eggs in the order. But after being stressed, their egg Production rate of middle, small-size Increased while egg production rate of special, large-size decreased. Production rate of soft and broken shell eggs was 0.015% in the stressed flocks higher than 0.005% in the non-stressed flocks.

  • This study was conducted to estimate the laying performance and heterosis of Korean Native Chicken(KNC), Rhode Island Red(RIR), and KNC x RIR crossbreds A total of 1,274 female pullets were produced from KNC, RIR and RIR crossbreds in National Livestock Research Institute, Korea. The experiment was conducted for 2O~64 weeks from Jan 20. to Nov.25, 1996. The age at first egg of crossbreds were 144.1~148.7 days. The first egg weight of crossbreds was 39. 4~40.3 g, and body weights at first egg of KNC dark brown strain x RlR(DR), KNC light brown strain x RlR(LR) and KNC dark black strain x RlR(BR) were 1,943 g, 1,925 g and 2,044 g, respectively. During the laying period the average viability of crossbreds was 96.6~98.3%. The hen-day egg production of crossbreds were 111.1~113.O eggs at 40 weeks of age, and 223.5~227.5 eggs at 64 weeks of age, respectively. The hen-day egg production peaks were 78.2~80.1% in KNC, and 85.8~87.5% in crossbreds. The heterosis were estimated to be 3.61%, 9.21%, 4.78%, 2.97% and -1.63% for the first egg days, body weights at first egg, layer viability, hen-day egg production, and feed conversion ratio, respectively.

산란계 사료 내 비타민 D3 첨가에 따른 난각품질과 계란내 비타민D3 함량에 관한 농장조사 (Farm Survey on Eggshell Quality and Egg Vitamin D3 Contents in Laying Hens Fed Vitamin D3-enriched Diets)

  • 비타민 D3는 난각 형성에 필요한 칼슘의 흡수와 대사에 필수적일 뿐 아니라 칼슘과 인의 대사를 조절하여 뼈 건강에 필수적인 요소이며 건강한 면역체계를 유지하는 영양소이다. 계란과 관련된 비타민 D3에 관한 연구는 많이 이루어져 왔으나 산란계 농장에서 수행한 연구는 보고된 바가 거의 없다. 본 연구는 비타민 D3 강화계란을 생산하는 산란계 농가에서 생산되는 계란의 난각 품질과 계란 내 비타민 D3 함량을 분석하고자 농가 조사를 수행하였다. 산란계 4개 농가를 선정하여 16,500 IU 및 29,000 IU 함유한 사료 급여 전과 후에 계란을 수거하여 난각 품질과 계란내 비타민 D3 함량을 측정하였다. 분석 결과 비타민 D3 첨가는 난각두께를 개선하는 효과는 있었으나, 난각색과 난각강도에는 미치는 영향은 미미하였다. 산란계 사료내 비타민 D3를 첨가하면 계란 내 비타민 D3 함량이 증가하는 것으로 조사되었다. 결과적으로 산란계 농가에서 사료 내비타민 D3를 추가로 공급한다면 난각 품질의 개선과 비타민 D3 강화계란을 생산할 수 있는 것으로 확인되었다. 향후 더 많은 산란계 농가에서 사료와 계란 내 비타민 D3 함량에 대한 추가 조사를 진행한다면 계란 내 비타민 D3 함량을 추정할 수 있는 회귀식을 도출할 수 있을 것으로 사료되었다.

Egg Antibody Farming and IgY Technology for Food and Biomedical Applications

  • It has been recognized that the hen, like its mammalian counterparts, provides young chicks with antibodies as protection against hostile invaders. This system facilitates the transfer of specific antibodies from serum to egg yolk, and provides a supply of antibodies called immunoglobulin Y(IgY) to the developing embryo and the hatched chick. The protection against pathogens that the relatively immune-incompetent newly hatched chick has, is through transmission of antibodies from the mother via the egg. Egg yolk, therefore, can be loaded with a large amount of IgY against pathogens which can immobilize the existing or invading pathogens during the embryo development or in day-old chicks. Thus, the immunization of laying hens to various pathogens results in production of different antigen-specific IgY in eggs. Egg yolk contains 8∼20 mg of jmmunoglobulins (IgY) per ml or 136∼340 mg per yolk suggesting that more than 30 g of IgY can be obtained from one immunized hen in a year. By immunizing laying hens with antigens and collecting IgY from egg yolk, low cost antibodies at less than $10 per g compared to more than $20,000 per g of mammalian IgG can be obtained. This IgY technology opens new potential market applications in medicine, public health, veterinary medicine and food safety. A broader use of IgY technology could be applied as biological or diagnostic tool, nutraceutical or functional food development, oral-supplementation for prophylaxis, and as pathogen-specific antimicrobial agents for infectious disease control. This paper has emphasized that when IgY-loaded chicken eggs are produced and consumed, the specific antibody binds, immobilizes and consequently reduces or inhibits the growth or colony forming abilities of microbial pathogens. This concept could serve as an alternative agent to replace the use of antibiotics, since today, more and more antibiotics are less effective in the treatment of infections, due to the emergence of drug-resistant bacteria.

Potential of watermelon (Citrullus lanatus) to maintain oxidative stability of rooster semen for artificial insemination

  • Fruits with antioxidant enrichment can be an economically affordable supplement for mitigating oxidative damage prone spermatozoa membrane pathologies. Computer-assisted sperm analyzer and oxidative status were utilized to evaluate the impact of watermelon (Citrullus lanatus) fortification of dextrose saline as diluent for rooster semen and fertility response of hens inseminated. Watermelon juice and dextrose saline were used to formulate diluent of 7 treatments consisting of unextended semen (positive control), 10%, 20%, 30%, 40%, 50% and only dextrose saline (negative control) designated as Treatments 1-7. Pooled semen was obtained from fertile roosters and equilibrated with diluents at ratio 1:2 in the various treatments and were evaluated using computer software coupled microscope and seminal oxidative status assay. 168 laying hens randomly divided into 7 treatment of 8 replicates and 3 hen per replicate. Hen were everted, and semen (2 × 108 Spermatozoa) deposited intra-vagina and eggs collected over 8 weeks to assess fertility and hatchability of eggs laid. The result obtained revealed that watermelon-dextrose saline rooster semen diluent enhanced progressive motility, sperm kinetics and lowered non-progressive motility in T2-T6 compared to T7 over the 3 hours of evaluation. Watermelon addition to rooster semen diluent enhance the antioxidant capacity of rooster semen and lowered lipid peroxide generation. The percentage fertility was highest in T3 (81.01%) and T4 (81.24%) with lowest value obtained in T7 (73.46%). The hatchability of eggs set of hens inseminated with undiluted semen (71.46%) was lower than values for hens inseminated with watermelon inclusive extended semen (75.71%-80.39%). The optimal inclusion of 30%-40% watermelon in dextrose saline diluent enhance rooster semen kinetics, seminal oxidative stability and egg fertility.

Effect of superdosing phytase on productive performance and egg quality in laying hens

  • Objective: An experiment was conducted to determine the effect of superdosing phytase on productive performance and egg quality in laying hens. Methods: A total of 200 42-wk-old Hy-Line Brown laying hens were allotted into 1 of 5 dietary treatments with 5 replicates consisting of 8 hens per replicate. The positive control (PC) and negative control diets (NC) were prepared based on the recommended P levels in layer diets. Supplemental phytase was added to the negative control diet at 10,000 (SD10), 20,000 (SD20), or 30,000 (SD30) fytase units (FTU)/kg. Productive performance was summarized for 6 weeks from 42 weeks to 47 weeks of age. Egg quality was assessed from 4 eggs per replicate randomly collected at the conclusion of the experiment. Results: The SD20 treatment had greater (p<0.05) hen-day egg production than PC, NC, and SD10 treatment groups. There was no difference in hen-day egg production between SD20 and SD30 treatment groups. However, SD30 treatment had greater (p<0.05) hen-day egg production than PC treatment, but showed no difference in hen-day egg production as compared to NC and SD10 treatment groups. However, egg weight, egg mass, feed intake, and feed conversion ratio were not affected by dietary treatments. Egg quality including eggshell strength, eggshell color, egg yolk color, and haugh unit was not influenced by dietary treatments. Conclusion: Superdosing level of 20,000 FTU/kg phytase in diets has a positive effect on egg production rate, but no beneficial effect on egg quality in laying hens.

침자극(鍼刺戟)이 생식능력(生殖能力) 저하(低下) 닭에 미치는 영향(影響) (Effect of veterinary acupuncture (VA) on the eggs-laying rate)

  • Objectives : To investigate the increasing effect of veterinary acupuncture (VA) on the eggs-laying rate, we carried out the experiment in old hens. Methods : Twenty four old hens (ISA Brown; 1,200 - 1,400 g) over 75 weeks old whose eggs-laying rates were under the 50% for recent 15 days were used. In experimental group, VA treatments were performed seven times during 10 days. Unang point at the end of bilateral wing and Migun point at the tail bone were stimulated about 30 seconds by the stainless steel needle (0.3 mm o.d.). In control group, similar manual stress were performed at same frequency. The numbers of laid eggs were observed for 26 days after the beginning of treatment. Bloods were sampled two times from wing veins during and after the treatment period and serum concentrations of luteinizing hormone (LH) and Estradiol were detected. Results : Eggs-laying rates of experimental group $(34.29{\pm}2.79%)$ were significantly increased than that of control group $(27.56{\pm}2.00%,\;p<0.05)$ with the significant increasing of LH serum concentration in experimental group $(from\;0.77{\pm}0.13\;IU/I\;to\; 1.42{\pm}0.22\;IU/I,\;p<0.05)$. Conclusions : Increasing effect of VA treatment on the eggs-laying rate in old hens were proved in this study, and it may be the first prompt on the experimental investigation and development of VA.
