The purpose of this study is to develop a software program for nutritional counseling by assessment of nutrients intake status and health degree by using semi-quantitative frequency food intake method and the questionnaire of Cornell Medical Index(CMI) and farmers' syndrome. This program is composed with three parts, nutrients intake, health status with body complaints, and nutrition counseling contents for diet therapy of each body condition states. First, nutrient intakes with percentage of Korean Recommended Dietary Allowances, and quantities of other nutrients intake were calculated and presented in an out-put screen. Second, the different body complaints(farmers' syndrome, anemia, hypertension, gastrointestinal problem, and cardiovascular complaints) were divided 3 groups of health status as normal. suspected and ailment. The contents of nutritional counseling with recommended food kinds. intake quantities. and recommended preparation methods were shown by button click of each health state of body complaints. And also this program could serve several times for one person to compare nutrition education and counseling effect by use of pre and post presentation results. This programs would be effect to home extension workers of rural development administration for farmers' nutrition counseling.
We aimed to evaluate the effect of nutrition education program on nutrition knowledge, dietary behavior, dietary intakes and anthropometric parameters in primary school children. Eighty five 4th grade children (boys = 43, girls = 42) were enrolled in the intervention program for 5 months. The subjects were asked to fill out a questionnaire about nutrition knowledge and dietary behavior two times, at the baseline and after completion of the program. Dietary intake information was collected from participants using a 3-day food record and their anthropometric parameters were measured. Upon completion of the intervention program, both nutrition knowledge and dietary behavior scores were significantly improved in all subjects. Energy intake was increased from 1,571.9 kcal to 1,734.1 kcal with significant improvements in nutrient density for protein, Ca, P, K, vitamin A and niacin. While subjects' height, weight, lean body mass and soft lean mass were significantly increased during the program, significant decreases were observed in the rohrer index, percent body fat, waist-hip ratio and body fat mass. The changes in nutrition knowledge scores were positively correlated with the changes in dietary behavior scores, micronutrient intakes and anthropometric parameters. These results indicate that enhancement of nutrition knowledge through well-planned long-term nutrition education program is effective not only for the improvement of dietary behaviors and dietary intakes but also for the positive changes in anthropometric parameters among primary school children.
The change in people's dietary life has led to an increase in an intake of processed foods and food chemicals, raising awareness about taste education for preschoolers whose dietary habits start to grow. This study aims to evaluate the effectiveness and satisfaction of parents and childcare personnel after developing a taste education program and demonstrating it in class. A part of the curriculum developed by Piusais and Pierre was referred for the program. After educating 524 preschoolers in child care facilities in Seoul, a satisfaction survey was conducted on the program. The data in this study were analyzed using SPSS 14.0. Statistical analysis was conducted based on the frequency after collecting the data. Mean ${\pm}$ SD used to determine satisfaction with taste education, with preferences marked on a five-point scale and the alpha was set at 0.05. The program includes five teachers' guides with subjects of sweetness, saltiness, sourness, bitterness and harmony of flavor, and ten kinds of teaching tools. For the change in parents' recognition of the need for taste education based on five-point scale, the average of $4.06{\pm}0.62$ before the program has significantly increased to $4.32{\pm}0.52$ (P < 0.01). Regarding the change in the preferences for sweetness, saltiness, sourness, and bitterness, the average has increased to $3.83{\pm}0.61$, $3.62{\pm}0.66$, $3.64{\pm}0.66$, and $3.56{\pm}0.75$ respectively. In an evaluation of instructors in child care facilities, the average scores for education method, education effect, education contents and nutritionists, and teaching tools were at $4.15{\pm}0.63$, $3.91{\pm}0.50$, $4.18{\pm}0.50$, and $3.80{\pm}0.56$ respectively. In addition, the need for a continuous taste education scored $4.42{\pm}0.67$. This program has created a positive change in preschoolers' dietary life, therefore the continuation and propagation of the taste education program should be considered.
Objectives: The purpose of this study was to effects of education program of smoking prevention and cessation through the linkages between subjects on smoking knowledge, grit, health promoting behaviors of college students in some area. Methods: A non-equivalent control group pre-post test design was used. The intervention group received the education program for 6 weeks from October 1 to November 15, 2019. The control group lived only usual daily life. Results: t-test showed that Smoking Knowledge (t=3.78, p<.001) and grit (t=3.75, p<.001) were significant differences between the two groups. In terms of health promotion behaviors, total(t=2.89, p=.002) and physical activity(t=3.20, p=.002), health responsibility(t=3.90, p<.001), spiritual growth(t=1.99, p=.049), interpersonal relations(t=2.61, p=.010) were significant difference between the two groups, in other hands nutrition(t=0.89, p=.372) and stress management(t=1.69, p=.092) were no significant difference between two groups. Conclusions: the education program of smoking prevention and cessation through the linkages between subjects was founded to be an effective education program in improving smoking Knowledge, grit, health promoting behaviors of college students in some area.
This study was conducted to investigate that the nutrition labeling use is associated with demographic and psychosocial factors according to each nutrition information on the nutrition labeling in Korean adults. The study subjects (N=1,140) were individuals who were aged 20 years and more and answered on the question of nutrition label use and who participated in the Korean National Health Examination and Nutrition Survey (KNHANES) in 2010.As age older, there was more interest in information such as sugar, protein, fat, cholesterol than calories. In contrast, as age younger, there was more interest intrans-fat, sodium as well as calories. As higher education level, there were more aware of trans-fat, sodium and calories. From the result that the most interested nutrition items were significantly different by democratic factors, we could understand interested nutrient information on the nutrition labels could change according to individual specific education. Therefore, this can also provide basic data for systematic education program by nutrition label use.
The purpose of this study was to do the quantitative analysis about food and nutrition informations in TV program by monitoring newscastings, health-related food and nutrition information programs, dramas for family, education programs for children, and seniors’ information programs in major TV broadcasting companies (KBS, MBC, SBS, EBS). In this study, number of cases about the health-related food and nutrition informations and the length of program were analyzed. Also, they were compared and analyzed by the year. Monitoring staff, who had majored in food and nutrition and completed the monitoring training, monitored programs and analysis the quantity of food and nutrition informations in each program from 2002 to 2003. Results of quantitative analysis for this study are as follows; There were total number of 15,226 cases. Among them, the total number of health-related information was 5,623 cases(36.9%), and the total number of food-related information was 3,848 cases (25.3%). The ratio of total food and nutrition information to total health-related informations was 86.2%. In news programs from 2002 to 2003, the total number of health-related information to total cases decreased to 16.1% from 17.9%. The ratio of total food and nutrition information to total cases decreased to 3.6% from 6.6%. The frequency of the health-related informations was mostly served in the newscastings was highest, in both October 2002, and September 2003. In health information programs from 2002 to 2003, the ratio of food and nutrition information to total cases increased to 57.4% from 32.4%. In dramas from 2002 to 2003 , the ratio of broadcasting time of food-related scenes to total cases decreased to 17.2% from 20.8%. In education programs for children the ratio of food and nutrition information to total cases was 8.2% in 2002. In information programs for seniors the ratio of food and nutrition information was to total cases 26.2% in 2002. As the result of this study, the rate of health-related information in TV program and the rate of food and nutrition information were changing. And the rate of nutrition information in health information programs are increased. To give sound informations to the public, monitoring should be established and managed continuously.
The purpose of this survey was to investigate the status of dietitians' nutrition management in the elementary school lunch program. 84 elementary schools in Pusan that operated the conventional school lunch program system participated in this survey. They were grouped into schools that had started the school lunch program gofore('Previously") and after 1996("Newly"). 84.5% of dietitians were 20-29 years old and 44% of them had a career less 1 year old. 74.6% of "Previously" and 72.4% of "Newly" served their meals in the classrooms. The student's nutrition and preferences were mainly considered in menu planning in both groups. The standardized recipe was used in 90% of total schools but not effectively in both groups. The nutrient value of meals was evaluated by the dietitians in most schools. Nutrition surveys of the meals students ate at home were carried out in 27.3% of "Previously" and 13.8% of "Newly". Students preferences were studied regularly in 60% of "Previously" and 48.3% of "Newly" and students evaluations of meals served by the school lunch program in 52.7% of "Previously" and 34.5% of "Newly". In 92.7% of "Previously" and 72.4% of "Newly", nutrition education was executed but was done mostly by letterssent to students' parents(in about 95% of schools), with only 11.8% of schools educating within in their classrooms. There were few instructional media for nutrition education. The most of them used notice boards(48.0% of "Previously" and 41.6% of "Newly") . Evaluation studies on nutrition management, and nutrition education were hardly correlated to the dietitian's career and educational level. They were also not correlated to the number of meals served by the school lunch program. In conclusion, the status of the nutrition management in the elementary school lunch program was not good and schools that had started the school lunch program before ("Previously") and after 1996(Mewly") were not that different. It appears that most of the dietitians from elementary schools started the school lunch program before 1996 have followed the nutrition management method established in these schools. The purpose of this study was to develop a rice education program and rice cooking practice for university students majoring in foodservice and nutrition. To achieve this purpose, 2 rounds of delphi survey was used by convenience sampling including total of 27 experts in the food and nutrition industry. Below are the findings. First, both the importance and suitability for macro-theme of theory education were in the following order: 'nutrition and health of rice', 'characteristics of rice in food science', 'history and culture of rice' and 'the consumption of rice. Second, the history and culture of rice(traditional culture related to rice, and the origin & history of rice), nutrition and health of rice(main nutritive components and efficacy of rice and prevention of disease), characteristics of rice as food(processed-products of rice and storage, the structure of rice), and the consumption of rice(current status of rice production and consumption) were found to be suitable for the micro-theme of theory education. Third, the education theme for rice cooking practice was determined. Barley sprout song-pyeon and beet song-pyeon were chosen for rice cake. For bread, coconut & walnut muffin, tofu & bean muffin, citron bread, red bean & sweet persimmon pound cake, and sweet potato bread were selected. Dong-rae-pa-jeon, Kimch-jeon-byeong, fried sweet potato fried shrimp were developed for the main dishes.
Objectives: This study was performed to compare the dietary life of single- and non single-person households in the Korea National Health and Nutrition Examination Survey (KNHANES). Methods: A nationally representative sample of 20,421 19-64-year-olds who had 24-hour recall data was taken from the 2014-2016 Korea National Health and Nutrition Examination Survey (KNHANES). Single- and non single-persons were compared for nutrient intake, dietary behaviors, food consumption patterns, nutrition education and confirm nutrition label. Results: The dietary intakes of dietary fiber and iron were lower in single-person households than in non single-person households. The lower the level of education and income, the lower the nutrient intake of single-person households. In the case of those aged 19 to 29, the breakfast skipping rate was higher in single-person households than in non single-person households. The higher the education level, the higher the breakfast skipping rate and the eating out frequency in the single-person households. In the food intake survey, the frequency of healthy food intake in single-person households was much lower than that of non single-person households. The confirmation rate of nutrition labeling was lower in single-person households than in non single-person households. Conclusions: This study shows that single-person households have poorer health-nutritional behaviors than multi-person households. Therefore, a nutrition education program based on the data of this study needs to be developed for health promotion of single-person households.
This study was designed to investigate the impact of a 12-week nutrition education program on 32 male industrial workers (average age: $44.5{\pm}3.8$ yrs, work duration period: $20.1{\pm}5.6$ yrs) diagnosed as having dyslipidemia in a medical checkup at their workplace. This program was implemented with a conceptual framework on strengthening self-efficacy for the improvement of the health conditions of the workers. Most of all, the study exhibited benefits in the industrial workers by ameliorating the risk factors associated with dyslipidemia via changes in dietary behaviors, nutritional knowledge, and attitudes, as well as anthropometric and biochemical parameters. After the nutrition education, overall lifestyle, including the ratios of smoking (P<0.05) and drinking (P<0.01), significantly improved. Exactly 65.6% of the subjects reported that their dietary habits changed. Body weight, BMI, percentage of body fat, and waist circumference all significantly decreased (P<0.001). The systolic (P<0.01) as well as diastolic blood pressures (P<0.001) decreased.
