A Study on the Content of Minerals in Fortified Food (영양강화식품 중 무기질 함량 조사연구)

  • This study was done to analyze the contents of minerals and to investigate the ratio of measured values to labeled values and to analyze the ratio of calcium to other minerals in 68 specimen with minerals - fortified commercial beverages, noodles, cereals and grain products. Content of calcium, iron and zinc in samples after microwave digestion was analyzed with an ICP-OES. The measured values of calcium were ranged 82.2~293.1% of the labeled values in 38 samples composed calcium - fortified commercial beverages, noodles, cereals and grain products. The measured values of iron and zinc were ranged 83.3~301.0%, 90.1~314.1% of the labeled values in minerals - fortified commercial beverages, noodles, cereals and grain products, 42, 24 samples. The Ca : Fe ratios were 90.55 (50.55~220.64) in fruit & vegetable juice, 850.41 in fruit & vegetable beverage, 553.49 in blended beverage, 179.07 (118.37~238.01) in soy milk, 204.39(41.64~397.52) in noodle, 296.97(121.64~868.88) in fried noodle, 30.89(15.69~62.05) in cereal and 7.73(0.22~49.92) in grain product. The Ca : P ratios were 1.44(0.96~1.98) in fruit & vegetable juice, 1.92 in fruit & vegetable beverage, 1.66 in blended beverage, 4.23(2.25~7.72) in soy milk, 1.14(0.28~1.97) in noodle, 1.88(1.17~2.42) in fried noodle, 1.29(0.87~2.92) in cereal and 0.30(0.06~1.57) in grain product. The Ca : Mg ratios were 1.85(0.87~5.04) in fruit & vegetable juice, 28.72 in fruit & vegetable beverage, 2.97 in blended beverage, 5.27(2.93~9.36) in soy milk, 3.97(1.34~7.57) in noodle, 6.77(4.63~10.78) in fried noodle, 4.40(2.30~12.55) in cereal and 1.17(0.23~7.48) in grain product. These results suggest calcium contents and the ratio of calcium contents to other minerals in calcium-fortified food products should be strictly controlled. Moreover, to avoid problems with Excessive nutrition, there must be initiatives for better understanding on food labelling and nutrition for fortified food.

  • Obestity, characterized by an excess accumulation of fat, is a detriment to good health and wellbeing. It is easy for individuals to take on excess fat as soon as enough food and leisure are available in a society, causing an imbalance between energy intake and energy expenditure. Although there has been disagreement as to which side of this energy equation is more important in th epidemic of obesity, both sides are certainly involved. I think the prevalence of obesity begins with infancy. It seems to be relatively constant throughout childhood. Some retrospective studies have suggested that there is a direct progression from a fat chile to a fat adult. Obesity has been associated with excess mortality in many studies. The effect of obesity on cardiovascular disease has not always been an independent one, but has generally been through exacerbation of other rish factors such as hypertention, diabetes, hyperlipedmia, galbladder disease, gout and cancer of the grease and endometrium. The weights of identical twins raised in separate homes have been reported to be similar, thereby suggesting that heredity contributes significantly to weight. Overweight and obesity are by far greater health problems for many people in our society. Therefore in this paper we consider the relationship between body energy balance and problems of obesity. Whatever the weight of the person, the goal of the nutritionist and health care workers is to find solutions that will allow persons to feel better about themselves.

Exposures of Organic Solvent Mixtures to Rotogravure Printing Workers (일부 그라비아 인쇄업 근로자의 혼합 유기용제 노출농도)

  • The purpose of this study was to evaluate concentrations of organic solvent mixtures in air of rotogravure printing workplaces. Qualitative and quantitative analysis of organic solvents contained in the gravure inks used at rotogravure factories had been done. The results obtained were as follows: 1. The gravure inks mainly consist of toluene, methyl ethyl ketone(MEK), and ethyl acetate(EA), and traces of isopropyl alcohol(IPA), xylene, 2-butanol, cyclohexane, cellosolve etc were also contained in them. 2. Thinner used as a diluent consist of toluene, MEK, and EA. 3. Geometric mean concentration of toluene in ambient air were 23.81 ppm at gravure printing of packing material, 42.10 ppm at gravure printing of wallpaper, 16.95 ppm at gravure printing of plastic bottle for beverage and 4.31 ppm at gravure printing of plywood printing or floor covering. Concentrations of toluene in ambient air showed statistically significant difference between types of printing. 4. Concentrations of MEK in ambient air were 12.43 ppm at gravure printing of packing material, 5.47 ppm at gravure printing of wallpaper, 16.78 ppm at gravure printing of plastic bottle for beverage and 16.44 ppm at gravure printing of plywood printing or floor covering. MEK concentrations in ambient air showed no significant difference. 5. Conentrations of EA were 14.30 ppm at gravure printing of packing material, 1.92 ppm at gravure printing of wallpaper and 21.12 ppm at gravure printing of plywood printing or floor covering. EA concentrations in ambient air shown significant difference. 6. Percentage of the workplaces where the ambient air concentration of organic solvent mixtures exceeded the Korean Permissble Exposure Level(KPEL) amounted to 18.03%. 7. Toluene concentrations in ambient air of rotogravure printing workplaces ranged from 0.69 to 156.02 ppm and urinary hippuric acid excretion ranged from 0.10 to $1.32g/{\ell}$.

Studies on the Characterization of Black Goat Meat and Bone Beverage Containing Honey with Red Ginseng (홍삼꿀을 첨가한 흑염소 육골액 음료의 특성에 관한 연구)

  • This study was designed to investigate the characterization of black goat meat and bone beverage containing honey of red ginseng. The crude proteins and moisture contents of black goat meat were higher than those of pork and beef, but the crude lipid content of black goat meat was lower than that of those. The potassium content of black goat meat was lower than that of chicken, but similar to the pork and beef. The sodium content of black goat meat was lower than that of chicken, pork and beef. The result of the sensory evaluation of black goat meat and bone beverage added honey with red ginseng by 25 panels, was that the beverages added $7.5\%\;and\;8.0\%$ honey with red ginseng were better than any other beverages. Thus, the results suggest that the black goat meat bone beverage added honey with red ginseng could be one of valuable drinks.

The Relationship between Beverage Consumption, Nutrient Intake and Body Mass Index in Elementary School Students in Gyeongnam Area (경남지역 초등학생들의 음료수 섭취와 영양소 섭취량 및 BMI와의 관련성)

  • This study was performed to assess the effects of beverage consumption on nutrient intake and anthropometric measurements. Beverage intake and dietary intake were measured by a beverage frequency and quantity questionnaire and three 24-hour dietary recalls in 160 elementary school students in the Gyeongnam area. The number of drinking moments per month was 93.5 and drinking amount of all beverages was 626.6 mL per day. The amount of milk intake was 253.8 ml per day, which was the highest in all types of beverage consumption, followed by juice(133.6 mL), and carbonated beverage(77.7 mL). The amount of sweetened beverage which was defined as all beverages except milk and soy milk was 359.7 mL per day. Energy intakes from all kinds of beverages and sweetened beverages accounted for 20.3% and for 10.5% of the daily energy intake, respectively. The contributions of sweetened beverage intake to the daily energy intake in girls accounted for 13.5%, whereas in boys it was 7.7% and significantly lower. The number of drinking moments and the contribution of sweetened beverage intake to daily energy intake were negatively correlated with protein, vitamin A and niacin intake, respectively. The consumption of milk and soybean milk combined showed a significant negative correlation with the body fat ratio(%) and it also negatively correlated with waist-hip girth ratio(WHR). However, the sweetened beverage intake was not related any of the anthropometric measurement. In conclusion, consumption of the sweetened beverage dropped the nutritional quality of diet. However it was not related with anthropometric measurements in elementary students.

The Effects of Food-Related Lifestyle on Carbonated Beverage Consumption Behavior of the Middle School Students (식생활 라이프스타일이 중학생의 탄산음료 소비 형태에 미치는 영향)

  • The purpose of this study was to analyze middle students' carbonated beverages selection and consumption behaviors depending on their food-related lifestyle. Data was collected from 307 middle students in Incheon region through a self-administered questionnaire. According to the results of the factor analysis, food-related lifestyle showed that the average is more than 3.0, 0.800 in Cronbach alpha coefficient. There were significant differences in carbonated beverages preference according to health seeking, easy seeking, popularity seeking, and safety seeking type (p<0.05). Also easy seeking and popularity seeking type lifestyle showed significant differences in the reason to drink carbonated drinks (p<0.05), especially school canteen amenities tended to pursue the highest fashion. A significant significance positive result of the consumption of carbonated beverages (p<0.01) was shown for the easy seeking type. A significant positive result of the consumption of carbonated beverages (p<0.01) was shown for the taste seeking and safety seeking type. Analysis of the relationship between carbonated beverage consumption, and form factor showed a high correlation coefficient of 0.617 and with brand design, while the taste and the price were (p<0.05) 0.446, and 0.437 in order to design and calories, respectively.

Effects of Korean Green Tea, Oolong Tea and Black Tea Beverage on the Antioxidative Detoxification in Rat Poisoned with Cadmium (한국산 녹차, 우롱차 및 홍차가 카드뮴에 중독된 흰쥐 간조직의 항산화적 해독작용에 미치는 영향)

  • In order to investigate the effect of Korean green tea, oolong tea and black tea beverage on the antioxidative detoxification in cadmium(Cd) poisoned rat liver, male Sprague-Dawley rat weighing 143$\pm$3.2g were divided into control and experimental groups. The experimental groups were fed standard diet containing 40ppm Cd and were given distilled water(CD), 5% black tea(BT), oolong tea(OT) and green tea(GT), respectively. Tea beverages were extracted from 5G dry leaves of teas in 100ml hot distilled water by the treatment at 85$^{\circ}C$ for 3 min. Liver xanthine oxidase(XOD) activity was increased by the administration of Cd except GT group. Liver superoxide dismutase(SOD), glutathione peroxidase(GSH-px), glutathione S-transferase(GST) activities were decreased by te administration of Cd but did not decreased by the administration of green tea(in GT group). Vitamin E and reduced glutathione contents were significantly decreased in Cd administered groups. Liver lipid peroxide value in Cd administered groups were increased compared to control group, but was not increased in GT group. Serum glutamic oxaloacetic transaminase(GOT) activities in CD, OT, BT groups were higher than control, but that in GT group was similar to control group. Serum glutamic pyruvic transaminase(GPT) activity was not significantly different among various groups. It was concluded that green tea might alleviate peroxidative damage in Cd-administered rat liver by reinforcing antioxidative detoxification system.

The Effect of Enteral Nutritional Support in Cancer Patients (암 환자에서의 경구 영양 보충 효과에 관한 연구)

  • The purpose of this study was to investigate the effectiveness of enteral nutritional support to cancer patients who were clinically malnourished and receiving chemotherapy after surgery. To estimate the effect of nutritional support using Greenbia(Dr. Chung's Food Cooperation, LTD., Seoul, Korea) for patients with cancer, 41 patients were participated between January 1991 to November 1991. All patients were randomized into 2 groups and 18 patients were evaluated(experimental group : 12, control group : 6). The counseling was carried out once a week for 2 months. To compare the nutrient intake before and after administration of nutritional beverage and to identify the potential effectiveness of nutritional support in this group, a record of this diet on all patients during the test period was carried out for 3 days. To evaluate the patients nutritional status, the anthropometric parameters and serum protein were checked at the begining as baseline, week 3, week 6, and at the end of the test(week 8). In the case of energy balance, no patients appeared to be positive before administration of nutritional beverage, while 2 patients among 12 were observed to be more than 100% positive after administration. There were some differences among the experimental group which had administration of nutritional beverage but most of the results of anthropometric parameters were improved. When comparing the experimental and control group, there was significant increase in body weight, body fat, arm circumference and tricep skinfold. This study suggests that enteral nutritional support can help improving the nutritional status of patients received chemotherapy.

Utilization of Leuconostoc mesenteroides 310-12 Strain in the Fermentation of a Traditional Korean Rice-based Beverage (Leuconostoc mesenteroides 310-12 균주를 이용한 전통 쌀 발효 음료의 제조)

  • A lactic acid bacterial strain showing high acid production in saccharified-rice suspension was isolated from Kimchi. This strain was analyzed by API 50 CHL kit and 16S rRNA sequencing analysis and identified as Leuconostoc mesenteroides 310-12. Saccharified-rice suspension was fermented using L. mesenteroides 310-12 strain at $30^{\circ}C$ for 15 h. The changes of pH, titratable acidity and viable cell number during fermentation were determined. The pH and titratable acidity were reached to pH 3.57 and 0.40% after 15 h fermentation, respectively. The viable cell population of L. mesenteroides 310-12 was rapidly increased to $8.9{\times}10^8$ CFU/g during the 15 h of cultivation. The contents of lactic acid and acetic acid were determined to be 0.077% and 0.065% after 15 h fermentation, respectively. The rice-based fermented beverage was manufactured by blending L. mesenteroides 310-12 fermented broth and some food additives. When this beverage was stored at $4^{\circ}C$, the viable cells population was decreased to $1.0{\times}10^7$ CFU/g and pH was nearly maintained for 25 days.

Evaluation of emotion-based messages designed to motivate Hispanic and Asian parents of early adolescents to engage in calcium-rich food and beverage parenting practices

  • BACKGROUND/OBJECTIVES: Setting healthful beverage expectations, making calcium-rich foods and beverages (CRF/B) available, and role modeling are parenting practices promoting calcium intake among early adolescents. This study aimed to evaluate emotion-based messages designed to motivate parents of early adolescents to perform these practices. SUBJECTS/METHODS: Emotion-based messages were developed for each parenting practice and tested in 35 parents from 5 states. Findings were used to modify messages and develop a survey administered via Amazon MechanicalTurk to a convenience sample of Asian (n = 166) and Hispanic (n = 184) parents of children 10-13 years. Main outcome measures were message comprehension, motivation, relevance, acceptability, and novelty. Engagement in the parenting practices was also assessed. RESULTS: Message comprehension was acceptable for the majority of parents. Most also agreed that messages were motivational (setting healthful beverage expectations (69.0%), making CRF/B available (67.4%), and role modeling (80.0%)), relevant and acceptable. About 30-50% indicated they had not seen the information before. Many parents indicated they were already engaging in the practices (> 70%). No racial/ethnic differences were observed for responses to messages or engaging in parenting practices. CONCLUSIONS: Results indicate that emotion-based messages designed to motivate parents to engage in parenting practices that promote calcium intake among early adolescents were motivating, relevant, and acceptable.
