  • The main purpose of this study is to examine the different physicochemical properties of spray-dried products. The carrier agents and powders after the spray-drying process were analyzed for encapsulation yield, moisture content, color parameters, total polyphenol content (TPC), antioxidant capacity (AC), bulk density, flowability, wettability, hygroscopicity, water solubility index (WSI), particle size and microstructure. The spray-drying process was carried out with different carrier agents including maltodextrin (MD) and the combination of maltodextrin and gum arabic (MD-GA) with MA/GA ratio of 70/30, dried at the inlet/outlet air temperature of 160 ℃/70 ℃, 4 bar, airflow rate of 70 ㎥·h-1 and feed flow rate of 750 mL·h-1. The results showed that the different carrier agents have significant influences on the physicochemical properties of the powder produced by the spray-drying method. In there, while the values of recovery efficiency and flowability of spray-dried products from MD are higher than those of spray-dried products from MD-GA combination, the opposite is true for the values of TPC, AC, bulk density and wettability, whereas hygroscopicity and WSI values are equally represented in both products.

  • To improve the textural properties and stabilize the structure and gel matrix of non-waxy rice starch gels, non-waxy rice starch/gum mixture gels were prepared from various food gums, gum arabic, guar, algin, deacyl gellan, xanthan and gellan gums. The morphological and textural properties and freeze-thaw stability of their gels were compared. Rice starch/gum mixture gels with various gums formed a more homogeneous gel matrix with smaller particle size than rice starch gel without Em, but the trends differed depending on the gum types. The textural properties of rice starch/gum mixture gels were changed with the gum types. The shape of the rice starch/gum mixture gel matrix was desirable when mixed with gellan and algin. The textural properties of gels hardened in the rice starch/algin mixture gel and softened in the rice starch/algin mixture gel. The rice starch gels showed V-type crystallinity by x-ray diffractometer, but the peak at $2\theta$ = $20^{o}$ was decreased with increasing gum addition. The freeze-thaw stability increased with increasing gum addition. Gellan and algin were especially effective.

  • The effects of some hydrocolloids such as carboxymethylcellulose, xanthan gum, gum arabic, and sodium alginate, on quality attributes of rice cake (packsulki) were investigated. Fresh(F) and refrigerated(R) packsulkis were evaluated by sensory evaluation and with Instron Testing Mashine. The results of sensory evaluation indicated the differences among packsulkis with and without additive. Hardness of packsulkis increased markedly when refrigerated. Differences among R groups were much smaller compared to those among F groups. Textural characteristics measured by Instron also revealed the differences among the groups. They showed similar tendancy to those of sensory evaluation.

  • Different adhesives(CF-clear, arabic gum, cethylmethyl cellulose, polyvinyl alcohol, polyvinyl pyrrolidone, hydroxy propyl cellulose, methyl cellulose) and particulate matters(bentonite, kaolin, calcium carbonate, peatmoss, talcum, vermiculite, zeolite, calcium hydroxide, plaster, calcium phosphate, vermiculite + calcium carbonate, vermiculite + kaolin, vermiculite + talcum) were evaluated by coating index method. According to the weight of single coated seeds, CF-clear and polyvinyl alcohol appeared to be the best coating adhesives for red clover and tall fescue seeds. Both vermiculite and vermiculite + talc(l : 1) for red clover, and vermiculite + talc(l : 1) for tall fescue appeared to be the best particulate matter(P < 0.01). Percent friability showed excellent results for the arabic gum, CF-clear, and polyvinyl alcohol when compared to others(p < 0.01). The coating index showed high with vermiculite and vermiculite + talc(l : 1) in coating red clover seed, and talc, vermiculite, and vermiculite + talc showed good coating index in coating tall fescue seed.

  • The main objective of this study was to establish optimum condition of wet grinding process for manufacturing microparticulated seaweed calcium. Process parameters such as concentration of forming agent, rotor speed, bead size, feed rate, and grinding time were adapted during wet-grinding of seaweed calcium. The particle size range of the raw seaweed calcium was 10-20 $\mu$m. The calcium particles were reduced to under 1 $\mu$m as nano scale after grinding. Gum arabic was suitable for forming agent and 5%(w/v) concentration was the most effective in grinding efficiency. A wet-grinding process operated at 4,000 rpm rotor speed, 0,4 mm bead size, and 0.4 L/hr feeding rate, respectively, produced less than 600 mm(>>90%)-sized particles. In batch systems, 8 cycles of grinding showed higher efficiency, but 20 min of grinding time in continuous processing was more efficient to reduce particle size than the batch processing. Based on the result, the optimum conditions of the wet grinding process were established: operation time of 20 minutes, rotor speed of 4,000 rpm, bead size of 0.4 mm, feed rate of 40 mL/min and 30% mixing ration with water. The size of the resulting ultra fine calcium particles ranged between 40 and 660 mm.

  • Cow pea (Vigna unguiculata) was intercropped with Ziziphus spina-christi as summer forage in two consecutive seasons of 2017 and 2018. The aims to find out suitable agroforestry practice for saline soils of Khartoum State. And to investigate effect of tree spacing on forage biomass yield under semi -irrigated systems. Completely randomized block design with 3 replicates was conducted for this trial. Thus Z.spina-christi that fixed at 4×4 m was intercropped with cowpea at 1 m and 1.5 m spacing from trees trunk. Tree growth parameters were measured in terms of tree height, tree collar diameter, tree crown diameter and fruit yield per tree. While crop were parameters were determined in terms of plant height, number of plant, forage biomass yield per ha and land equivalent ratio. Soil profile of 1×1 m and 1.5 m depth was excavated and its features were described beside its chemical and physical properties were analyzed for 0-10 cm, 0-30 cm, and 30-60 cm and 60-100 cm layers. The results revealed that soil pH, CaCO3, SAR, ESP, and EC ds/m were increased by increasing soil depths. Meanwhile tree growth in terms of tree height was significant in the first season 2017 when compared with tree collar diameter and tree crown diameter. Also significant differences were recorded for tree growth when compared with sole trees in the second season in 2018. Tree fruit showed marked variations between the two seasons, but it was higher under intercropping particularly at ZS2. Crop plant height was highly significant under sole cropping than intercropping in first season in 2017. In contrast forage biomass yield was significant under intercropping in ZS1 and ZS2 treatments. Land equivalent ratio was advantageous under this agroforestry system particularly under ZS2. Thus it recorded 5 and 9 for ZS2 in the two consecutive seasons respectively. Therefore, it is feasible to introduce this agroforestry system under such arid lands to provide summer forage yield of highly nutritive value and low cost for animals feed as well as to increase farmers' income and to halt desertification and to sequester carbon.

  • Lipolytic characteristics of candia cylindracea lipase was studied by various triacylglycerols with different fatty acyl chains as substrate. The substrate was emulsified with gum arabic and the rate of hydrolysis was determined by pH stat method. The effects of gum concentration, pH, temperature, and $Ca^{2+}$ ion on the enzyme activities were examined. The results show that the effect of these factors are markedly depending on the structurla nature of substrates. The triolein was the best substrate among tested. Present study demonstrates that for characterization of lipolytic enzymes, it is critically important to select proper substrate and activator.r.

  • This study was carried out to evaluate the effects of hydrocolloids such as arabic gum, carboxymethylcellulose (CMC), and pectin on the quality and sensory properties of frozen-par baked baguettes according to frozen storage periods. Exactly 0.2 and 0.5% hydrocolloids were added to the baguettes based on flour. Specific loaf volume, hardness, moisture content, and sensory evaluation of baguettes were analyzed. Specific loaf volume of baguette with added 0.2% CMC was the highest after 3 weeks of storage at $-18^{\circ}C$. Moisture contents were not significantly different between control and experimental baguettes. In terms of hardness, baguette with added 0.2% pectin had the lowest value after 3 weeks of storage at $-18^{\circ}C$. In sensory evaluation, baguette with 0.2% pectin among hydrocolloids had the highest score for external and internal properties, as well as total acceptance. Consequently, 0.2% pectin increased the quality of baguette.

  • This study was carried out to investigate rheological properties of bread dough by adding hydrocolloids such as arabic gum, pectin and carboxyl methyl cellulose (CMC). 0.2% and 0.5% of each hydrocolloid were added to the dough. Farinograph, pH of dough, extensograph, fermometer and amylograph were analyzed. In farinograph, water absorption rate of dough was increased by adding hydrocolloids and the highest water absorption resulting in 70.8% was shown by adding 0.5% of CMC. Dough development time increased but stability decreased. pH of dough was lowered by adding hydrocolloids and pH of dough with 0.5% of pectin was the lowest. In extensograph, resistance of dough decreased but extensibility increased and R/E value lowered. In fermometer, $CO_2$ gas production increased and dough with 0.2% of CMC showed the largest gas production. In amylograph, initial gelatinization temperature increased by $0.5-1.5^{\circ}C$, but temperature for maximum viscosity was lowered by $1-1.5^{\circ}C$ and maximum viscosity was increased.
