Objectives: This study aimed to assess the adherence to dietary guidelines among college students in the post-COVID-19 era and examine the changes in their dietary habits as the learning environment transitioned from remote to in-person classes. Methods: We conducted a survey involving 327 college students in Daejeon from March to April 2023. The survey questionnaires included various factors, including age, gender, type of residence, frequency of use of delivery food, convenience food, and eating out. In addition, we investigated the extent of adherence to the dietary guidelines for Koreans and the degree of dietary changes following the post-COVID-19 shift in class format were investigated. For comparative analysis of the level of adherence to dietary guidelines in relation to dietary habit changes, an ANOVA and a post hoc Scheffe test were employed. We also performed a multiple linear regression analysis to identify dietary factors influencing the level of adherence to dietary guidelines. Results: The study revealed a high rate of convenience food consumption and a low rate of homemade food intake among students. There was a marked increase in the consumption of processed foods, convenience foods, dining out, sweet foods, high-fat fried foods, beverages, and alcohol following the transition from online to in-person classes. When examining adherence to Korean dietary guidelines, the highest scored practice was 'Hydration', and the lowest was 'Breakfast habit'. Increased consumption of convenience foods, late-night snacks, and dining out were negatively correlated with adherence levels to dietary guidelines, specifically correlating with 'Healthy weight', 'Hydration', 'Breakfast habit', and the total score of adherence. The adoption of 'regular meals' was positively associated with increased adherence levels to dietary guidelines. Conclusions: The transition from remote to in-person classes post-COVID-19 led to increased intake of convenience foods, dining out, sweet foods, high-fat fried foods, and alcohol. The rise in convenience food and late-night snack consumption negatively influenced several aspects of the dietary guidelines adherence, thereby suggesting the need for strategies to encourage healthy dietary habits among college students.
This study was conducted to evaluate sanitary managment practices of institutional foodservice employees in Daejeon and Chungnam areas, and to suggest a guideline for an effective safety & sanitary managment of the institutional foodservice. The subjects consist of 782 employees in 80 institutional foodservice, respectively. The collected data was processed using the SPSS V.10.0 package for descriptive analysis. The results of this study were summarized as follows. The employees were female(97.2%), over 41 age(68.1%), high school(51.0%), less than 1-5 years(52.8%) of total career in the institutional foodservice. Employment status was contract(64.2%) and cook's certification w3s not applicable(80.1%). The institutional foodservice was over 1,000 number(65.0%) of average serving per day and operations format was direct(69.6%) management and 11-20 number of employees for cooking were 58.2%. Employees(96.0%) were received sanitation training and 82.4% of them have been monthly educated. Sanitation training instructor was dietitian 91.6%. The rating of sanitary management practices was food handling 4.36/5.00, food products management 4.32/5.00, personal hygiene 4.31/5.00, equipments and tools handing 4.18/5.00. The employees, who were educated in the sanitation training, presented significantly higher rates of the sanitary management practices than of the uneducated employess. Therefore, the institutional foodservice operations will have to pay special attention to sanitation training program of the employees. The suitable methods of sanitation training must be developed to improve the practical use of sanitary management by employees and institutional foodservice. Also, to enhance these practices, it is necessary to establish the countermeasure to care for safety & sanitary management of the institutional foodservice.
The aim of this study analyzed changes in dietary habits and lifestyles before and after COVID-19 targeting adolescents, using the food consumption behavior survey (2019 vs 2021). In the change in health-related factors, height decreased overall, and a significant difference was especially evident in males. Awareness that functional foods and eco-friendly foods contribute to health has increased. Among the results of dietary behavior, the frequency of skipping breakfast showed that the rate of not skipping breakfast and the rate of skipping breakfast more than 5 times increased at the same time(p=0.019). The rate of eating out decreased significantly after COVID-19, and it was analyzed that schools and school cafeteria, as well as Street carts or restaurants and academy, all increased significantly as places where snacks were not consumed. In order to analyze changes in food-related lifestyle, it was grouped into convenience-seeking, quality/safety-seeking, taste-seeking, and health/safety-seeking. 'Small packaged or pre-processed products' decreased. On the other hand, items such as 'Safety rather than price when choosing food' and 'Don't eat food that could go bad' improved. 'Tend to eat regularly' was higher than 2021 compared to 2019. Also 'Tend to purchase HACCP and GAP-certified products' are increased. Because of COVID-19 changes in lifestyle have affected the diet of adolescents. The results of this study suggest that it can be used as a guideline establishment and nutrition counseling material for the formation of correct eating habits for adolescents in the future pandemic era.
This study was carried out for establishment of toxicological monitoring system in oriental medicinal plants. Hence on our research, we used Banha(Pinellia ternata) and Kangbanha, Bubbanha, Jaebanha, Geokbanha by distinguished processing methods. These are frequently used in Bangyakhabpeon, which is one of the most well-known clinical book in oriental medicine. As we reviewed the reported documents, we judge homogentisic acid(HA) and 3,4-dihydroxybenzaldehyde(3,4-DBA) as poisonous substance and to verify its existence, we established analysis condition of HPLC by gaining sequential fraction extracts and studied the degree of its virulence to provide basic information on the guidelines of using this medicine. Optimum condition of HPLC was H₂O : MeOH : CH₃COOH (57:35:8) in HA and 3,4-DBA analysis. HA content of raw Banha was 11.03mg/100g and HA contents of its processed product were decreased. Exceptionally, Jaebanha was increased in 175.97% than raw Banha. 3,4-DBA content of raw Banha was 2.93mg/100g and 3,4-DBA contents of its processed product were decreased. These results will be applies in intake guideline establishment, quality control and stability evaluation of oriental medicinal plants.
This study was designed to assess the perception and use of weaning diets and to serve as a guideline of processed weaning diets through a survey focused on the Gwangju-Jeonnam regions. The following results were obtained. Most subjects mixed 'home-made' and 'commercial' weaning diets and considered weaning diets as 'a diet for supplementing insufficient nutrition'. The most frequently used type of weaning diet was 'a kind of gruel with vegetables or meat', followed by 'boiling powder with water' and 'grinding or crushing fruits'. Two thirds (68%) of subjects had experienced buying weaning diets, mainly a powder type. The most common reason to buy weaning diets was 'troublesome', followed by 'excellent nutrition', 'convenient to go out', and 'don't know how to make'. The following results according to factors were found. The types of provided and of weaning diets were significantly different by age; the understanding of weaning diets, by education and mothers' employment; and where to get information about weaning diets, by economic status. The highest request for developing weaning diets was a type of 'powder' and 'gruel', and the highest cooking type was 'adding boiling water', followed by 'a semi-cooking product' and 'a finished product'. 'Retort pouch' package, a 'single' package unit, and 'keeping cold' were also requested by the participants. A desirable package unit in developing weaning diets was significantly different by mother's employment; the cooking type of product, by economic status; a way to keep product, by mother's employment; and package types, by education and economic status. When weaning diets were made by environmentally friendly agriculture, 69.5% of subjects were willing to purchase them. With the increase in economic status, education, and employment rate, the use of weaning diets on the market will increase. For this reason, correct nutrition education is needed. With the increasing demand for environmentally friendly agriculture, a variety of weaning diets should be developed to meet this demand.
제외국에는 지정되었지만 국내에는 아직 미지정된 식품첨가물의 종류가 많다. 전세계적으로 가공식품이 꾸준히 개발됨에 따라 새로운 유형의 가공식품의 등장이 증가하고 있으며, 국가별로 수출입에 관한 법률 규정이 상이하여 우리나라에서는 안전성 검정 및 사용량 제한이 되어있지 않은 식품첨가물을 이용한 새로운 가공식품이 국내 수입식품 중 혼입되어 유통될 수 있다. 이에 따라 국민의 안전한 먹거리를 보장하기 위한 지속적인 모니터링을 하기 위하여 미지정 식품첨가물의 분석법 개발이 필요하다. 본 고에서는 학계에서 진행된 분석법 개발과 검증에 대한 연구를 소개하였으며, 선행연구에서 제시된 분석법을 활용하여 분석법 개발을 진행하였다. 첫 번째 소개된 12가지 식품 착색료에 대한 동시분석법은 선행연구 분석법의 재현이 용이하였지만, 두 번째 소개된 유화제의 분석법은 일반적인 연구실에는 구비되지 않은 고가의 장비를 이용한 분석법에 대해 활용이 불가하고, 선행 연구된 간행물이 오래되어 재현이 어려운 문제점이 있었다. 가공식품 시장이 커지면서 식품첨가물이 신생되기도 하고, 까다로운 분석물질이 등장함에 따라 미지정 식품첨가물의 분석법 개발 연구는 중요하다. 따라서 이에 관련된 국가기관(식약처 등)과 산업계, 연구계, 학계에서는 미지정 식품첨가물의 분석법 개발에 대한 끊임없는 연구 진행이 필요하며, 본 연구 분야의 발전 가능성은 무궁무진할 것으로 사료된다.
본 연구는 서울 경기지역 초등학생 학부모를 대상으로 식품첨가물에 대한 인식 및 정보요구도를 조사 및 분석하고, 이를 토대로 식품첨가물의 올바른 정보 제공을 위한 학부모 대상 교육용 스마트폰 앱을 개발하여 시범 적용 및 평가를 수행하였다. 식품첨가물에 대한 인식과 정보요구도를 서울 경기지역 초등학생 학부모 358명을 대상으로 설문조사한 결과, 학부모들은 가공식품 구입 시 '안전성'(40.5%)에 가장 영향을 미치는 것으로 나타났으며, 식품을 구입할 때 제조일자나 유통기한 외에 제일 먼저 확인하는 사항은 '원산지'(35.4%)로 나타났다. 식품 구입 시 식품표시사항을 이해하고 구매하는지에 대해서는 '보통이다'(45.1%)와 부정적 응답(15.7%)이 과반수 이상 나타났다. 식품안전에 가장 위협이 되는 요인으로 '식품첨가물'(42.7%)을 가장 많이 선택하였으며, 식품첨가물 중 '표백제 및 발색제' > '보존료' > '색소' 순으로 건강에 위험하다고 응답하였다. 가공식품 구매 시 식품첨가물이 적게 들어간 것을 선택 하는지에 대해 긍정적 응답(63.1%)이 높은 반면, 가공식품의 식품첨가물 표시 내용 이해 여부에 대해 '보통이다'(49.2%)와 부정적 응답(21.0%)이 과반수 이상 나타났다. 식품첨가물에 관한 교육 및 홍보 필요성에 대해 88.0%가 긍정적 답변을 하였으며, 식품첨가물에 대해 가장 알고 싶은 정보는 '안전성'(74.3%)으로 나타났다. 설문 결과와 연구진의 브레인스토밍을 통해 1강, '식품첨가물이란?', 2강, '식품첨가물 안전한가?', 3강, '식품표시를 읽자', 4강, '식약처의 안전 관리', 5강 '애니메이션 즐겨보기'로 구성하여 '식품첨가물 바로 알기' 앱을 개발하였다. 개발된 교육용 앱을 서울 경기지역 초등학생 학부모 27명에게 시범 적용하여 교육 전과 교육 후를 비교한 결과, 식품첨가물의 위해성에 대해 '조금 해롭다'(40.74%)에서 '해롭지 않다'(48.15%)로, 식품첨가물에 대해 '잘 모른다'(44.44%)에서 '약간 알고 있다'(59.26%)로, 식품첨가물이 들어있는 가공식품을 안심하고 섭취해도 되는지에 대해 '잘 모른다'(44.44%)에서 '그렇다'(59.26%)로 식품첨가물의 인식이 개선된 것을 확인할 수 있었다. 본 연구를 통해 개발된 교육용 스마트폰 앱 '식품첨가물 바로알기'는 학부모들에게 식품첨가물에 대한 올바른 이해와 부정적 인식을 개선하는 것으로 나타났으며, 이를 활용함으로써 식품첨가물에 대해 효과적인 정보전달 매체로 기여할 수 있을 것으로 사료된다.
본 논문에서는 우리나라의 15개 FTA를 대상으로 HS코드 6단위, 15가지 품목군 별로 엄격성지수를 도출, 분석하고 이를 토대로 원산지결정기준의 국가별, 시기별, 품목별 현황과 특성을 제시하였다. 분석결과 EU와 터키와의 FTA가 가장 높은 엄격성을 나타낸 반면 뉴질랜드, 페루, 인도와의 FTA는 가장 낮은 것으로 나타났다. 또한, 유럽권 FTA를 제외하고는 시간이 지남에 따라 엄격성 정도가 완화되고 있는 추세로 나타났다. 산업별로는 1차산품과 가공식품, 의류/직물/잡화의 품목에서는 엄격성지수가 높았고 반면 일반기계, 전기기계, 화학제품, 정밀기기에서는 낮게 나타났다. 이러한 결과는 관세율이 높고 경쟁력이 취약한 민감품목은 엄격하게, 교역활성화를 위한 품목들은 유연하게 설정하고 있음을 의미한다. 본 논문은 방대한 분량의 우리나라 FTA의 원산지결정기준을 체계적으로 분류하고 이를 근거로 국가별, 품목별로 엄격성지수와 원산지결정기준을 도출, 집대성했다는 데에 그 의의가 있다. 또한 향후 우리나라 FTA의 원산지결정기준의 방향성에 대한 시사점을 제공할 수 있는 2차 자료로 활용될 수 있을 것으로 기대된다.
2009년 4-7월 대형 수산물 도매 시장에서 구입한 조미 건어포류 210건 (오징어포류 157건, 쥐치포 23건, 명태포류 20건 등) 을 조사한 결과, 균종별로는, 대장균군 13.3%(28/210), 바실러스균 15.2%(32/210), 포도상구균 33.8%(71/210), 리스테리아균 5.2%(11/210), 그리고 장구균 4.7%(10/210) 등으로 각각 분리되었다. 대장균군의 경우 Escherichia coli 등 총 28주가 분리 되었고, 건오징어에서 22주로 가장 많았으며, 포도상구균의 경우 Staphylococcus xlosus 등 총 71주가 분리되었고, 건오징어에서 51주가 분리되어 가장 많았으며, 바실러스균의 경우, Bacillus cereus 19주 등 총 32주였고, 건오징어에서 21주로 가장 많았다. 한편, 리스테리아균은 Listeria grayi가 8주, 장구균의 경우는 Aerococcus viridons가 9주로 각각 분리되었다. 16종류의 항생제들에 대해 디스크 확산 법에 의한 항생제 감수성 검사를 실시한 결과, 9주의 E. coli에 대한 다제 내성 양상들은 NOR+LVX+CIP+SAM+VA+S+TE+CF, SAM+C+VA, VA+S+TE, 그리고 VA+S 등으로 나타났고, 21주의 Bacillus cereus에 대한 다제 내성 양상들은 AMC+SAM+CF, SAM+CF, 그리고 VA+CF 등으로 각각 나타났으며 이 가운데 AMC+SAM+CF가 9주로 가장 많았다. 본 연구를 통해 시판 조미 건어포류에서 다제 내성 균주들이 꾸준히 증가하고 그 양상이 복잡해짐을 알 수 있었고, 이와 같은 항생제 다제 내성 균주들의 증가는 최근 수산 가두리양식장에서의 항생제 남용에 대한 가이드라인 설정과 이에 대한 국가적인 관리가 요구됨을 알 수 있다.
