조리방법에 따른 채소류의 수용성 비타민 및 기능성 성분의 함량과 잔존율 변화 (Alterations in the Content and True Retention of Water-soluble Vitamins and Bioactive Compounds in Vegetables, according to Different Cooking Methods)

  • This study examines the effects of different cooking methods (stir-frying, steaming, superheated-steaming) on the contents and the true retention of moisture, water-soluble vitamins, and bioactive compounds of ten selected vegetables: broccoli, brussels sprout, cabbage, eggplant, green bean, onion, red cabbage, red onion, squash, and tomato. The total color difference (𝚫E) values were decreased after stir-frying the samples, except for eggplant, green bean, and tomato. The true retention of water-soluble vitamins (B1, B2, B3, and C) was increased in most vegetables after superheated-steaming, as compared to steaming and stir-frying. Moreover, compared to the uncooked vegetables, a higher true retention of total polyphenol and flavonoid was obtained for most vegetables subsequent to superheated-steaming. Total anthocyanin content was detected only in eggplant, red cabbage, and red onion, and a smaller loss of anthocyanin was determined after subjecting red cabbage to superheated-steaming. Also, the free radical scavenging activities were higher in superheated-steaming vegetables, except in eggplant and squash. These results indicate that superheated-steaming induces a positive effect for retaining water-soluble vitamins and functional components of vegetables.

  • '여명'은 양파와 파간의 종간교잡을 이용하여 육성된 품종으로 추파용 비가림하우스 재배에 적합하며 주요 품종특성은 다음과 같다. 1. 초형은 외대파형이며 엽색은 파에 비해 다소 진하며 위경기부에 안토시아닌이 착색되며 비대가 약하게 일어난다. 2. 수량구성요소인 초장, 위경장, 위경너비가 크고 주당 생체중은 302 g으로 다수성 형질을 가지고 있다. 3. 파밤나방, 노균병, 녹병, 흑반병에 저항성이 있다. 4. 수량은 13,128 kg/10a로 '금장'에 비해 141% 증수되었다.

부산지역 낙지볶음의 표준조리법 개발 및 영양소 분석 (The Standardized Recipe and Nutrient Analysis of Stir-fried Whip-arm Octopus in Busan)

  • The purpose of this study was to develop the standardized recipe and to analyze the nutrients of stir-fried whip-arm octopus as one of the kind of traditional local foods in Busan. The standardized recipe was developed by using cookbooks, home recipes, and the recipes by commercial food restaurants. The nutrient was analyzed by using an AOAC method. Sensory evaluations were made on nine sensory attributes by a 12-member panel. As the results, the whip-arm octopus was recorded as a food source for health, rejuvenation in Jasanobo. Since early 1900, the stir-fried method has been used for cooking with the ship-arm octopus. The main ingredients were whip-arm octopus, onion, large green onion as the local stir-fried whip-arm octopus in Busan. The ingredients of soup were shrimp, little neck clam, and water. Seasoning sauce was mixed with red pepper powder, soy sauce, sesame oil, chopped garlic, chopped onion, and sugar. The seasoning sauce was fermented for three days. The results of sensory scores were salty seasoning 3.66/5.00, taste 3.75/5.00, thickness 3.84/5.00, and smell 4.09. Nutrient retention per 100g of the stir-fried whip-arm octopus was 67.54kcal, protein 6.43g, fat 1.66g, Ca 28.06mg, Fe 2.56mg, cholesterol 68mg, and taurin 51mg. Fatty acid consists of various unsaturated fatty acids such as linoleic acid(46.24%) and oleic acid(33.67%).

경작지내(耕作地內) 도시하수(都市下水) Sludge 의 처리(處理)가 작물(作物)중 Cu 및 Pb 함량(含量)에 미치는 영향(影響) (Effects of Municipal Sewage Sludge on Contents of Lead and Copper in Crop Plants.)

  • 도시생활하수의 처리과정에서 얻어지는 sludge를 토양개량제 등으로 토양에 처리하였을 때 토양중에 증가될 수 있는 Cu 및 Pb이 식물체에 홉수 축척되 는 정도를 비교 분석하기 위하여, sludge 를 0, 22. 5, 45. 0, 90.0ton/ha 수준으로 토양에 처리하고 감자, 무우, 배추, 파의 4 종 작물을 pot 재배하여 각 식물체 부위별 Cu 및 Pb 농도를 분석하고 토양중에서의 이블 중금속 농도의 증가와 식물체중의 Cu 및 Pb 함량증가와의 관계를 분석한 결과는 다음과 같다. 1. 토양중 sludge 처리량의 증가는 식물체중의 Cu 및 Pb 함량을 증가시켰다. 2. 작물별 잎중의 Cu 및 Pb 홉수축적량은 무우<쪽파<배추<감자 순으로 중가하였고 Pb의 홉수축적이 Cu보다 높았다. 3. 작물별 뿌리중의 Cu 홉수축적량은 배추<쪽파 <무우<감자 순으로, Pb의 홉수축적량은 무우<배추<쪽파<감자 순으로 많아졌다. 4. 식물체 부위별 Cu 농도가 가장 낮았던 부위 는 무우 잎, 배추 잎과 뿌리, 쪽파의 괴경으로 그 범위가 $6.500{\sim}9.000ppm$ 이었고, Pb은 무우 잎과 뿌리로 $2.563{\sim}13.533ppm$ 이였다. 5. sludge를 토양에 90.0ton/ha 수준으로 처리 하여 재배한 식물체중의 Cu 함량은 sludge를 처리 하지 않은 토양에 재배한 식물체중 함량에 비하여 $0.17{\sim}0.6ppm$배 범위로 흡수축적되었고, Pb 함량은 $0.32{\sim}1.8ppm$배 범위까지 홉수 축적되었다. 6. sludge 처리에 의한 식물체중의 Cu 홉수축적율은 잎에서 $0.34{\sim}2.21ppm$, 인경 및 괴경에서는 $0.28{\sim}1.48ppm$, 뿌리에서 $0.25{\sim}0.80$배였고, Pb의 경우는 잎에서 $1.81{\sim}5.71$, 인경 및 괴경에서 $1.08{\sim}2.44$, 뿌리에서 $1.28{\sim}7.66ppm$1.28-7.66 배의 축적률을 나타냈다.

Pepsin의 단백소화작용(蛋白消化作用)에 미치는 조미료(調味料)의 영향(影響) (The effect of natural condiments on peptic activity)

  • The effect of natural condiments on peptic hydrolysis of casein in vitro has been studied, peptic activity was determined by the colorimetric method using folin reagent. The obstructive compounds on colorimetry from hydrolyzates of casein were separated by gel filteration method using sephadex G-10 column and 0.05M NaCl. Zinger and red pepper $(0.1{\sim}1.0%)$ were found to have slightly supressing effect for protein digestive action of pepsin. But garlic, green onion and onion acted as synergist for protein digertive action of pepsin.

파의 Acid Phosphatase의 특성 (Characterization of Acid Phosphatase from Welsh Onion)

  • 파로부터 acid phosphatase를 Sephacryl S-200 gel filtration과 CM-Sepharose CL-6B ion exchange chromatography를 이용하여 부분정제하였다. p-nitrophenyl phosphate를 기질로 사용했을 경우에 최적pH는 5.5, 최적온도는 $60^{\circ}C$였다. 효소의 활성화 에너지는 4.86kcal/mole이었다. 효소는 pH 6.0에서 가장 안정하였으며, $50^{\circ}C$ 이하에서 대체로 안정하였다. 효소는 p-nitrophenyl phosphate를 기질로 가장 잘 이용하였으며, 5'-IMP와 5'-GMP는 기질로 거의 이용하지 못하였다. 효소는 p-nitrophenyl phosphate를 기질로 했을 경우에 $K_{m.app.}$값이 0.87mM이었다 $Cr^{+++},\;Zn^{++},\;Cu^{++}$이온은 효소의 활성을 저해하였으며, 또한 molybdate와 metavanadate 이온이 효소의 활성을 저해하였다. 그리고, NaCl의 농도가 높을수록 효소의 활성을 저해하였다.

최소가공 절단 양파의 MA 포장 (Modified Atmosphere Packaging of Fresh-cut Onion)

  • 신선 편의가공된 절단양파제품의 적정 포장방법을 개발하고자 LDPE $30{\mu}m$, PD900과 PD941 필름을 이용한 수동형 MA 포장의 적용 가능성을 연구하였다. 포장필름을 달리하여 $1^{\circ}C$에서 38일간 저장하면서 포장내의 가스조성, 중량 손실, 부패율, 색도, 경도 등을 측정하였다. 기체 투과도가 낮은 PD900포장이 곰팡이 부패나 육안적인 품질손상 없이 38일 동안 저장되는 데에 무리가 없었고, 색택과 가용성 고형분 함량에서도 비교적 양호하였다.

  • 부재료를 달리하여 제조한 김치가 기호도 및 관능적 특성에 미치는 영향을 조사하였다. 외관 기호도에서는 고춧가루를 첨가하지 않은 시료가 가장 싫은 기호도를 보였고, 젓갈, 마늘, 생강, 무, 파, 양파 등을 각각 첨가하지 않은 시료들은 대조구와 유의적인 차이(p<0.05)를 보이지 않으며 높은 기호도를 보였다. 향, 맛 및 종합적인 기호도에서는 마늘을 첨가하지 않은 시료의 싫은 정도가 가장 높아 김치의 기호도에 마늘의 영향력이 가장 큼을 알 수 있었다. 고춧가루는 김치의 향미 특성 중 매운맛에만 영향을 주었고, 젓갈은 김치의 감칠맛, 단맛, 짠맛을 상승시켰으며 마늘은 신맛, 감칠맛, 단맛, 탄산미, 상큼한 맛 등 전반적인 향미를 상승시키면서 군덕맛을 억제해 주었다. 생강은 매운맛과 상큼한 맛에, 무, 파, 양파 등은 김치의 상큼한 맛에 영향을 주었다. 마늘은 김치, 깍두기, 열무김치인 김치 종류와 5, 10, $20^{\circ}C$의 숙성온도에 상관없이 김치의 관능적 특성 중 마늘의 유무는 군덕맛, 쓴맛에, 마늘 첨가량의 차이는 신맛, 단맛, 상큼한 맛에 유의적인 영향을 미친다는 것을 알 수 있었다.

김치의 숙성기간에 따른 외국인의 관능적 선호도 조사 (A Study on Foreigner Preferences and Sensory Characteristics of Kimchi Fermented for Different Periods)

  • This study was designed to investigate foreigner preferences for the sensory characteristics of kimchi with different fermentation periods. After fermentation in a 5 freezer for 1, 7, and 15 days, Red Chinese Cabbage Kimchi, White Chinese Cabbage Kimchi, Kkakdugi, Chonggak Kimchi, Cucumber Kimchi, Green Onion Kimchi, and Mustard Kimchi were served to the respondents. The respondents had resided in Seoul and Kyunggi province for 3 years or less, and were from Asia, Europe, and the Middle East. Most respondents (62.9%) consumed a Korean meal daily, and 45% of all respondents reported eating kimchi 3 or 4 times a week. As a result, it can be said that foreigners residing in Korea preferred to eat kimchi as a side dish. Based on the respondents answers, we were able to determine the relative popularity of the different types of kimchi. They were, from most popular to least popular, Red Chinese Cabbage Kimchi, Kkakdugi Kimchi, Cucumber Kimchi, White Chinese Cabbage Kimchi, Chonggak Kimchi, Green Onion Kimchi, and Mustard Kimchi. Among those fermented for 1 day, Cucumber Kimchi was most preferred for its. When evaluating the overall preference of Kimchi, the best was in the order of Chinese cabbage (red)>Kkakdugi>Cucumber>Chinese cabbage (white)>Chonggak>Green onion>Mustard Kimchi. For 1 day in a fermented period, Cucumber Kimchi had the most preferred taste (5.76), appearance (5.66), odor (5.89), and texture (5.70). However, Cucumber Kimchi was least popular after 15 days of fermentation (p<0.01). The most preferred Kimchi after 15 days of fermentation was Red Chinese Cabbage Kimchi. Among the kimchi fermented for 7 days, White Chinese Cabbage Kimchi was most preferred. While foreigners indicated that they were satisfied with all the types of kimchi fermented for 1 day and 15 days, they were not satisfied with any of the kimchi fermented for 7 days, save for the White Chinese Cabbage Kimchi. Kkakdugi Kimchi had very high satisfaction scores for appearance, but low scores in taste. On the other hand, Chinese Cabbage Kimchi had low scores in odor (5.02-5.29), but high in texture (5.37-5.62) and taste (4.80-5.30), which are not factors sensitive to a change in acidity. These results showed that foreigners were generally satisfied with Kimchi, but became less satisfied as the Kimchi ripened. Most foreigners were not satisfied with the types of Kimchi that had a strong flavor. Chinese Cabbage Kimchi became the least sour after fermentation, and Cucumber Kimchi became most sour after fermentation.

국 종류에 따른 장류의 분양 결정과 조미료의 첨가효과 (A Study on Determining the Optimal Amounts of Fermented Soybean Foods in Various Korean Soups and the Effect of Condiments in Two Basic Stocks)

  • This sudy was conductted for the purpose of determining the optimal amounts of soy tauce, soy bean paste and hot pepper paste, in 3 different Korean soups and comparing the effect of condiments such as salt, soy sauce, black pepper, and Mono Sodium Glutamate, on the taste of two basic Korean Stocks, The results estimated by Palatability Test were as follows: 1. The average NaCl contents of two kinds of commercial soysauce were 15.9%, 25.6%, respectively. 2. The NaCl contents of 2% sardine stock, and 19% beef stock were 0.16~1.17%, 0.17~0.18% respectively. 3. @ According to Saltiness in sardine stock, there was no difference between the soy sauce-added group and the salt-added group. However, for the removing effect of Off-flavor, and Overall Taste, the soy sauce-group had higher score than salt-added group respectively. (p>.0.1) ⓑ In beef stock, there was no difference between the soysauce-added group and the salt-added group in Saltiness test. The soy sauce-added group had higher score in removing effect of Off-flavor (p>.0.1). On other hand, in Overall Taste, the salt- added group was more effective than the soy sauce-added (p>.0.1). 4 @ According to Saltiness test in beef stock, there was no difference between the black pepper-added and non-added group. However, for the removing effect of Off-flavor and, Overall Taste, the added group had higher score than the non-added group, respectively. (p>.10, p>.0.5) ⓑ Also, according to Saltiness test in beef stock, there was no diffetrence between the MSG-added group and non-added group. However for the removing effect of Off-flavor, and Overall taste, the MSG-added group was more effective than the non-added group. (p>.01) 5. The best recipes of soybean sprouts soup for S persons, in this experiment, were soybean sprouts 180 g, sardine 28 g, soysauce 1/2 T.S., salt 7 g, green onion 15 g, choppedgarlic It. s., against 7 C of water, and total cooking time was 20 minutes. 6. The best recipes of clear-beef soup were beef 200 g, radish 200 g, tangle weed 10 g, sesame oil 1/2 t.s., green onion 15 g, chopped garlic 1 t.s., black Pepper 1/8 1.s., and soy sauce 1 T.S., salt 7 g or soy sauce 2 T S., salt 3.5 g. The total cooking time was minutes. 7, The best recipes of soybean pasted Chinese cabbage soup were Chinese cabbage 300 g, sardine 28 g, green onion 15 g, chopped garlic 1 t.s., and bean paste 50 g, hot pepper paste 13 g, salt 3g or bean paste 65 g, hot pepper paste 16 g, salt 1.5 g. And the total cooking time was 25 minutes. 8. Soy sauce, black pepper, M.S.G., bean paste and hot pepper paste were effective on removing Off-flavor of experimental soups.
