The principal objective of this study was to evaluate the effects of the addition of sourdough to various grain flours in bread, specifically, in regards to the physicochemical characteristics of bread dough, sensory evaluation, and bread storage. As the incubation time of sourdough increased, the total titratable acidity increased. Viable yeast counts of sourdough increased consistently until the third day, while lactic acid bacteria counts increased until the second day. The weight of breads containing sourdough made with rye flour, strong flour, and Korean wheat flour were higher than that of the control. However, the height, volume, and specific volume of control were higher than those of the groups with sourdough made with various grain flours. The pH of breads containing sourdough was lower than that of the control, while the total titratable acidity and moisture content were higher than those of the control. In analyzing the visible mold colony during the five days of storage at $30^{\circ}C$, mold growth in breads containing sourdough made of Korean wheat flour, barely flour, and rye flour was retarded. In the color measurement, the L values of the control and bread containing sourdough made with barley flour were higher than that of the other groups after five days. The a value of bread containing sourdough made of rye flour was higher, and the b values of breads containing sourdough made of Korean wheat flour, barley flour and rye flour were higher than those of the other groups after five days. The hardness of breads containing sourdough increased as storage time increased, where as breads containing sourdough made of Korean wheat flour, Korean whole wheat flour, and rye flour revealed no significant differences with control group. Sensory evaluation scores in terms of after swallowing, taste, and overall preference of bread containing sourdough made of Korean wheat flour was higher than those of the control group.
This study aimed to determine the optimal harvesting time for covered barley to make grain silage, in Honam region of Korea. We harvested six varieties of barley every third day from 24 to 42 days after heading (DAH). The moisture content decreased from 62.4% at 24 DAH to 24% at 42 DAH. The moisture content at 36 DAH was 44.3%; however, moisture content at 39 and 42 DAH was lower than 40%. Yield of covered barley significantly increased from 24 to 42 DAH (p < 0.05). Yield at 36 DAH (557 kg/10a) was not significantly different from that at 39 and 42 DAH (p < 0.05). With respect to the feed value of barley grain silage, the amount of crude fiber and crude ash was different by harvesting time (p < 0.05). However, the amount of crude protein, crude fat, and total digestible nutrients (TDN) from 24 and 42 DAH was not significantly different. The pH of grain silage from 24 to 42 DAH was between 3.8 and 4.2 and it was stable until 36 DAH (p < 0.05). However, the pH of grain silage at 39 and 42 DAH was 5.2 and 5.8, respectively, which was higher than the pH of silage with good fermentation quality. The lactic acid content of barley grain silage from 24 to 42 DAH decreased from 5.5% to 0.5% (p < 0.05). The amount of lactic acid at 36 DAH was higher than that at 39 and 42 DAH (p < 0.05). With respect to moisture content, yield, feed value, and fermentation, the optimal harvesting time for grain silage of covered barley was 36 DAH. This could increase the use efficiency of harvesting machine for barley and reduce the harvesting time gap between whole barley silage and grain silage in Korea. Moreover, using barley grain silage for animal feed could reduce the import of corn.
Purpose: This study was conducted to investigate the storage and quality characteristics of brown rice under the low temperature warehouse conditions using ambient cold air in the winter. Methods: This new technique maintains rough rice warehouse temperature below $15^{\circ}C$ without cooling operation until the end of May. Four hundred tons of rough rice were stored in the low temperature grain warehouse, and were aerated from the top to the bottom using ambient cold air in February. The quality of rough rice was evaluated from February through October. Results: The results were as followings. Moisture contents of rough rice in the low temperature storage had decreased less than the ordinary temperature storage. Cracked rate of brown rice in the ordinary temperature storage and low temperature storage increased by 4~10.8% and 1.6~7.2%, respectively. The germination rate of rough rice under the ordinary and the low temperature warehouse decreased by 15.0~25.0% and 1.7~8.0%, respectively. The acid value of brown rice under the ordinary and the low temperature warehouse increased by 3.67~6.72 KOH mg/100g and 3.08~4.08 KOH mg/100g, respectively. Conclusions: The result indicates that low temperature storage using ambient winter air showed better maintaining germination of rice, less change of physiological activities and cracked kernel, and better maintaining of rice quality, comparing the ordinary temperature storage.
This study aims to research the quality characteristics of rice cookies added with 0%, 10%, 20% and 30% guava(Psidium guajava L.) powder, and the results are as follows. Their moisture contents ranged from $5.90{\pm}0.12$ to $6.02{\pm}0.13%$. The L value and b value decreased significantly with more guava powder added. The spread factor decreased significantly, while the hardness of rice cookies increased with increased addition of guava powder. The 20% guava powder cookies added with rice powder received the highest scores in the sensory factors(color, taste, flavor, texture, overall acceptability, top grain score). The results showed that rice cookies added with 20% guava powder were considered the best.

This study evaluated the grain quality of local brand rice from 6 major rice exporting countries which are anticipated to export their rice to Korea. Recently, with the end of the postponement of rice import tariffs in 2014, Korea is in a very easy environment to import foreign rice. Therefore, the quality evaluation of local brand rice in those countries is needed to secure the quality competitiveness of Korean rice, also to protect the rice industry in Korea. We provided total 38 local brand rice from USA(7), China(16), Australia(4), Thailand(3), Vietnam(5) and India(3), and 2 imported brand rice through MMA from USA and China to find out the status of the grain quality for each country. For the quality evaluation, we analyzed the physicochemical properties, milling and palatability-related characteristics. The amylose content on country average ranged from 24.4(India)~16.2%(Thailand). The protein content was 6.66% by overall average, and was higher in order of India(7.86), Australia(6.80), Vietnam(6.61), Thailand(6.59), China(6.28), USA(5.82). In Toyo glossiness value, it ranged from 75.7~45.2, and the figures in USA and China were the highest level. The head rice ratio ranged from 95.2~72.4%, and the figures in Thailand, USA and China were distinctly high. When we analyze the palatability of boiled brand rice with Chucheongbyeo as check variety by expert panelists, several rice brands from USA and China showed equal or better scores in shape, smell, taste, stickiness, texture and overall score, although most rice brands showed a tendency to decrease significantly in the taste characteristics compared with Chucheongbyeo. From the above results, it can be seen that the grain quality of USA and China rice is very competitive when imported into Korea. The results will provide basic information for the quality control of foreign rice which will be imported into Korea in the near future, also for the quality information which could be applied on the development of high-quality Korean rice varieties. Continuous monitoring about the foreign brand rice is advisable to improve the quality competitiveness of Korean rice.
Post-harvest treatment for barley production requires many steps including drying, cleaning, and packing, and these steps be needed many labor input. Rice processing complex (RPC) is useful for post harvest management system in rice production. However, it is rare to be used for barley production. This study was conducted to explore the variations of quality and labor saving between conventional method and bulk-management system in post-harvest using RPC. The sorting rate was not different between manual method and bulk management. The hardness of non-polished grain was ranged 10,175-10,329 g/$3.14mm^2$, and that for non-polished grain was higher than that for polished grain, but there was not different between drying method. There was not be showed the hunter's value such as L, a and b according to drying method. Cooking characters such as water absorption ratio, swelling ratio, and water soluble extracts by circulated or continued dryer was higher than manual drying using solar heat. Labor input per ha for each cultivation process in bulk-management of barley using rice processing complex was 21 hours, compared to 46 hr/ha in the conventional method, labor input was greatly saved by up to 54.3% in the post-harvest bulk management system.
The objective of this study was to investigate the sensory and quality characteristics of Gamjeobyung containing different ratios of ingredients such as heated potato flour(30%, 40%, 50%), potato starch(30%, 40%), sugar, honey, and water by sensory evaluation and mechanical examination. The results of sensory evaluation showed that Gamjeobyung containing 30% heated potato flour, and potato starch had higher scores in overall acceptability, color, flavor, grain, moistness, chewiness and sweetness preferance. In the textural analysis of Gamjeobyung, the cohesivenss, springiness, adhesiveness were the highest in the samples with 30% potato starch, and the chewiness, gumminess, and hardness were the highest in the 40% added samples. The hunter's color L value and b-value of Gamjeobyung was decreased and a-value was increased of potato starch. The moisture content of Gamjeobyung was higher in the samples with heated potato flour than the samples with potato starch.
This study was conducted to make clustering analysis based on major physicochemical characteristics related to palatability of 394 Korean rice land-races. The items investigated were protein content, Mg content, K content, Mg/K ratio, Toyo-taste value, ADV (alkali digestion value) and amylose content. The range of the physicochemical characteristics such as amylose, protein, magnesium, potassium was from 12.4 to 28.9%, from 5.2 to 9.9%, from 12.7 to 37.7 mg and from 60.0 to 125.9 mg, respectively. In this experiment, the grain quality, properties significantly associated with the estimates of Toyo taste meter, were protein and amylose contents and hot viscosity. Also, at the expected taste as a cooking rice, using Toyo taste meter, a total 16 accessions were selected as good taste as "Ilpumbyeo". Also, IT173444, IT008530 and IT006554 were selected as remarkable sources for the cooking rice, in terms of gelatinated temperature and Toyo taste meter value.

This experiment was carried out to obtain the basic informations on yield performance and physicochemical quality properties of North Korean rices at southern high altitude area, Unbong and southeren plain area, Iksan. North Korean cultivars showed significant difference in number of spikelets per panicle, percentage of ripened grain and yield between two locations, but not significant in number of panicle per hill and l000-grain weight. The highest contribution to grain yield was the percentage of ripened grain and l000-grain weight at Iksan and Unbong, respectively, The protein, amylose content, alkali digestion value and Mg/K ratio showed larger variation in varieties than that in the locations cultivated. Mg and K revealed highly significant variations in locations, varieties and variety $\times$ location (V$\times$L) interaction. The amylogram characteristics such as initial pasting temperature, peak, breakdown, setback and consistency viscosities showed highly significant variation in locations, varieties and V$\times$L interaction. The physical characteristics of cooked rice such as adhesiveness, gumniness and chewiness also showed highly significant variations in locations, varieties and V$\times$L interaction.
In order to find out the possible effects of steamed rice cake with varying addition of macadamia powder on quality improvement, this study applied 3%, 6%, 9% and 12% addition of macadamia powder. As a result, it found that the more addition of macadamia powder led to significantly higher crude oil content. Further it revealed that whit more addition of macadamia powder, it tended to show a lower L value. Also with more addition of macadamia powder a higher b value was shown. According to SEM, it was found that the 0% group showed an inconsistent grain size and porosity, local distribution of big lumps and rough surfaces, whereas more addition of macadamia powder tended to show a large mass formation and smoother cross-section. The 12% group showed a gradually decreasing hardness. According to the results of sensory characteristics, it was found that the 12% group showed the highest level in flavor, nutty, softness, after taste and overall quality. Conclusively, it is found that the preparation of steamed rice cake using macadamia powder is helpful to keep flavor and softness; moreover, it contributes to the overall quality of rice cake.
