Quality Characteristics of Kochujang Prepared with Different Meju Fermented with Aspergillus sp. and Bacillus subtilis

  • For preparation of high quality kochujang by the traditional fermentation method, 4 types of kochujang were prepared with brick- or grain-shaped meju fermented with different strains (Aspergillus sojae, Aspergillus oryzae+Bacillus subtilis). After 100 days of fermentation at $25^{\circ}C$, the moisture, pH, salt, and ethanol content of kochujang were 40.52-43.20%, 4.71-4.82, 8.7-9.1%, and 0.75-0.94%, respectively, showing slight differences according to the strains and shapes of meju. Titratable acidities were slightly increased for up to 60 days of fermentation. The amino-type nitrogen content of kochujang prepared with brick-shaped meju (A. oryzae+B. subtilis) was the highest (164.20 mg%) among all of the kochujang types. The redness (a) value of kochujang prepared with brick-shaped meju (A. sojae) were higher (19.08) than those of other treatments (18.37-18.59). Sensory evaluation of kochujang prepared with grain-shaped meju (A. sojae) showed the highest scores for color and overall acceptability, 'at $6.43{\pm}1.87$ and $6.29{\pm}1.44$, respectively. It was estimated that high quality kochujang could be made by using meju fermented with selected strains.

  • Wheat is the most abundant crop in the world, accounting for one third of the world's population diet. In Ukraine, wheat is in fact, in addition to its nutritional value, a national symbol of the state. Therefore, the main thesis on the development of modern plant growing in Ukraine is the reduction of costs and the introduction of innovative technologies. The quality of grain and seed depends on many factors, namely: agro-climatic conditions, sowing condition of the seed material, quality characteristics of the soil, yielding properties of seeds, pre-sowing seed treatment. etc. For this purpose, the photosynthesis and intensity of photosynthesis need to be limited to the width of the leaf and the height of the leaves by a smaller cut of the stem. It is extremely important to ensure that the head and side pagons of wheat are in good condition. All parameters are often secured by the technology of grain preparation before delivery. Prior to this technology, it is possible to introduce processing of the material in the form for the development of the material. This article presents the effectiveness of the use of infrared irradiation for the pre-sowing treatment of winter wheat seeds in Sekobra Research, Germany.

초음파 신호의 패턴 인식에 의한 금속의 열처리 온도 분류 (Temperature Classification of Heat-treated Metals using Pattern Recognition of Ultrasonic Signal)

  • Recently, ultrasonic testing techniques have been widely used in the evaluation of the quality of metal. In this experiment, six heat-treated temperature of specimen have been considered : 0, 1200, 1250, 1300, 1350 and 1387$^{\circ}C$. As heat-treated temperature increases, the grain size of stainless steel also increases and then, eventually make it destroy. In this paper, a pattern recognition method is proposed to identify the heat-treated temperature of metals by evidence accumulation based on artificial intelligence with multiple feature parameters; difference absolute mean value(DAMV), variance(VAR), mean frequency(MEANF), auto regressive model coefficient(ARC), linear cepstrum coefficient(LCC) and adaptive cepstrum vector(ACV). The grain signal pattern recognition is carried out through the evidence accumulation procedure using the distances measured with reference parameters. Especially ACV is superior to the other parameters. The results (96% successful pattern classification) are presented to support the feasibility of the suggested approach for ultrasonic grain signal pattern recognition.

Varietal Variations in Physicochemical Characteristics and Amylopectin Structure of Grain in Glutinous Rice

  • Thirty-eight glutinous rice varieties were classified into nine groups on the scatter diagram by the upper two principal components (56% contribution to the total information) based on eleven physicochemical characteristics including the viscograms and physical properties of cooked rice. The first principal component was the factor mainly associated with the viscogram characteristics of rice flour emulsion and the second was the factor chiefly related to the physical properties of cooked rice and water absorbability of rice grain. Indica glutinous rices were clearly distinguished from japonica ones by the first principal component score. Javanica glutinous rices were widely distributed on the intermediate zone between indica and japonica or on several japonica rice groups. Significant positive or negative correlations were found among water absorption rates of rice grain, physical properties of cooked rice, and viscogram characteristics of rice flour. Especially in japonica glutinous rices, the breakdown and setback viscosities of rice flour were closely associated with the alkali digestion value of milled rice and the stickiness of cooked rice. The frequency ratio of short glucose chains (A-chain) to intermediate glucose chains (B-chain), the ratio of B- chains to long glucose chains (C-chain) and the relative frequency of A- or B-chain fractions representing the amylopection structure of rice starch was closely associated with the breakdown and setback viscosities of rice flour.

낱알형 개량메주의 품질수명에 관하여 (Studies on the Shelf-life of the Grain Shape Improved Meju)

  • 품질평가의 지표가 되는 메주의 성분 및 그 기준과 낱알형 개량메주의 품질수명을 측정할 목적으로 낱알형 개량메주를 제조하고 포장상태와 비포장상태로 저장하면서 저장기간 중 메주의 성분변화를 측정하였으며 또한 저장기간을 달리하여 간장담금을 한 후 90일간 숙성시키면서 숙성기간 중 간장덧액의 성분변화와 관능시험을 통하여 개량메주의 저장기간이 간장의 품질에 미치는 영향을 비교 검토하였다. 개량메주의 저장 중 총 질소함량은 변화가 없었으며 수분함량, amylase 역가 및 protease 역가는 감소하였고 $NH_2-N$ 함량과 $NH_3-N$ 함량은 증가하였다. 이들 중 저장기간 중에 변화가 큰 성분은 $NH_2-N$ 함량과 protease 역가였으나 간장발효의 가장 중요한 효소인 protease가 보다 좋은 지표성분임을 알 수 있었다. 또한 메주의 pretense 역가와 그 메주로 담근 간장의 품질은 밀접한 상관관계를 나타내었으며, 메주의 저장기간이 길어질수록 간장의 품질이 저하되었다. 낱알형 개량매주의 품질은 protease역가로 평가하였을 때 저장 15일된 메주가 가장 좋았으며 그 이후에는 저장기간이 길어질수록 메주의 품질이 저하되어 저장 90일 이후에는 비포장과 포장상태의 상대역가가 저장초기에 비하여 50%, 49%, 180일 이후에는 48%, 41%로 각각 감소함으로써, 메주의 품질수명 한계를 상대역가 50%(200O.D. at 660nm/g)로 정할 경우 낱알형 개량메주의 품질수명은 90일 정도인 것으로 추정되었다. 또한 본 실험조건하에서는 메주의 품질 및 간장덧액의 기호도 측면에서 포장상태 저장이 개량메주의 품질향상에 별다른 효과가 없는 것으로 생각되었다.

Mapping of grain alkali digestion trait using a Cheongcheong/Nagdong doubled haploid population in rice

  • We performed a molecular marker-based analysis of quantitative trait loci for traits that determine the quality of appearance of grains using 120 doubled haploid lines developed by anther culture from the F1 cross between 'Cheongcheong' (Oryza sativa L. ssp. Indica) and 'Nagdong' (Oryza sativa L. ssp. Japonica). We therefore calculated the alkali digestion value (ADV), used to indirectly measure gelatinization temperature, to evaluate the quality of cooked rice in 2013 and 2014. The ADV score of frequency distribution was higher milled rice than brown rice. In total, nine different quantitative trait loci (QTLs) were found on 5 chromosomes in 2013 and 2014. Also, chromosome 5, 8 were detected over two years. We conclude that selected molecular markers from this QTL analysis could be exploited in future rice quality. In conclusion, we investigated ADV of brown and milled rice in CNDH population. This study found nine QTLs related to the ADV of brown and milled rice. The detected one marker can be used to select lines with desirable eating-quality traits because ADV is closely associated with the eating quality of cooked rice. Therefore, it will be useful to collect resources and distinguishable in many varieties for rice breeding program.

중산간지와 고냉지산 쌀 형태 및 이화학적특성의 품종 및 산지간 변이 (Varietal and Locational Variation of Grain Quality Components of Rice Produced in Hilly and High Altitude Areas in Korea)

  • 중산간지 및 산간고냉지대에서 재배된 벼의 주요 미질특성에 대한 품종 및 환경변이정도를 파악하고자 오대벼등 자포니카 조생종 5개 품종을 1989년에 중북부 중간지인 철원과 산간고냉지인 진부, 중남부 중산간지인 상주, 화서 및 남부고냉지인 운봉의 4개소에 재배하여 생산된 쌀의 외관 및 도정특성과 주요 이화학적 특성 및 식미특성을 조사하였던 바 이들 미질특성의 품종 및 산지변이를 비교 분석한 결과를 요약하면 다음과 같다. 1. 현미천립중, 아밀로스함량, K/Mg률, 호화개시온도, 최고점도, 강하점도(breakdown) 및 치반점도(setback)에서 품종 및 산지간 변이가 모두 품종${\times}$산지간 교호작용변이에 비해 현저하였고 정현비율, 알칼리 붕괴도 및 단백질 함양에서는 산지간 변이가, 밥의 점성 /경도비율에서는 품종간 변이가 유의하게 켰다. 특히 품종${\times}$산지간 교호작용 변이가 켰던 미질특성은 외관 및 등숙관련특성과 식미 및 응집점도(consistency)등이었다. 2. 현미천립중은 진부올벼와 오대벼가 가장 무거웠고 불완전등숙립률은 진부올벼가 가장 낮았으며 백미건전미율는 오대벼가 심복백 때문에 다른 품종에 비해 약간 멀어졌다. 아밀로스 함량은 출수기가 빠른 진부올벼와 소백벼가 타품종에 비해 약 1% 가량 낮았고 K /Mg율은 식미가 가장 좋았던 오대벼가 가장 낮았으며, 호화개시온도와 치반점도가 유의하게 낮았던 반면 최고점도와 강하점도가 현저하게 높았던 오대벼, 소백벼 및 진부올벼등이 밥맛이 약간 양호한 편이었다. 3. 철원산미가 가장 입중이 무겁고 등숙이 양호하였던 반면 건전미율은 오히려 떨어졌으며 진부산미가 가장 정현비율이 높으면서 건전미율이 높았다. 4. 아밀로스함량은 진부산미가 다른 지역산미에 비해 약 2~3%가 높았던 반면 철원산미가 가장 낮았고 단백질함량은 중부지역산미가 남부지역산미에 비해 약1%가량 낮았으며 K/Mg율은 진부산미가 가장 높았고 K함량은 중부지역산미가 남부지역산미에 비해 다소 높은 경향이었다. 식미총평은 품종별로 산지에 따라 크게 달라서 산지간 평균적 비교가 큰 의미가 없지만 운봉과 철원산미가 진부와 화서산미보다 양호한 경향이었다. 5. 쌀의 알칼리 붕괴도와 호화개시온도는 진부산미가 다른 지역산미에 비해 현저히 높았고 그 다음으로 운봉>화서>철원산미 순으로 낮았으며 강하점도는 철원산미가 가장 켰고 그 다음으로 화서>운봉>진부산미 순으로 저온하에서 등숙된 쌀일수록 낮았으며 치반점도는 이와 정반대의 경향이었다. 밥의 점성 /경도비율은 철원산미가 여타 지역에 비해 약간 높은 값을 나타내었다. 6. 식미관련 미질특성을 이용한 주성분 분석에서 전정보의 약 60% 설명이 가능한 제1 및 제2 주성분치상의 5개 품종별 4개 산지미의 분포로 보아 대체로 진부산미와 여타 지역산미로 확연히 구분되었고 다시 진부산미는 2개군, 여타 지역산미는 3개군으로 세분화 할 수 있었으며 산지내 품종변이가 가장 작았던 것은 화서산미였고. 고냉지산미는 품종 간 변이가 켰다. 식미관련 종합적 미질특성면에서 가장 양호한 군에 속하는 것은 철원, 운봉 및 화서산 오대벼와 운봉산 소백벼였다.

Production and Quality Parameters of Oat Grown in Conventional/Organic Farming

  • Hulled and naked oat is a perspective crop for the low input production systems due to its low requirements for soil quality and nutrition. Oats have good competitive ability against weeds and can provide appropriate yield in organic farming in comparison with other cereal species such as wheat or barley. It is a perspective crop from the point of view of use in the food industry too. The aim of our study was to compare the production and quality parameters of naked and hulled oat grown in both organic (OF) and conventional fields (CF). Small plot trials were conducted in two locations in the Czech Republic (České Budějovice, Prague) for four years (2018-2021) in two production systems (OF, and CF). We used four varieties of hulled oat (Korok, Kertag, Raven, Seldon) and one variety of naked oat (Patrik). During the vegetation, agronomically important data were recorded. After harvest samples were processed in the laboratory and analyzed selected quality parameters of grain dry matter (the protein content was determined by the Kjeldahl method, starch content in grain according to Ewers, fat content in grain dry matter by the modified method according to Soxhlet, and ash content in grain dry matter). The data were evaluated using the program STATISTICA version 13.2, StatSoft, Inc., California, USA. It is clear from the results that the number of panicles before the harvest was influenced by the location, cultivation system, year, and, to a lesser extent, the influence of the variety. The number of panicles in OF averaged 340 per square meter, which was 90% of the value of CF. For thousand grain weight (TGW), a significantly predominant effect of year was found. The independent effect of location on TGW was statistically not significant. Grain yield was predominantly influenced by cultivation system and location. In OF, it reached an average of 3.97 t.ha-1, which was 75% of the yield of CF. As part of the evaluation of the basic grain quality indicators, the content of protein, starch, fat, and ash in the dry matter of the grain was evaluated. The content of protein in the dry matter of the grain was predominantly influenced by year, followed by the influence of the variety and a fairly comparable influence of the cultivation system and locality. On average, it achieved 16.05% in OF and 17.01% in CF. The starch content was then related to the protein content, where as a result of the lower protein content in the grain of OF oats, the content of starch and fat was on the contrary increased. The year turned out to be the most significant factor, affecting both the starch content in the dry matter of the grain and the fat content. This was followed again by a fairly comparable influence on the cultivation system and locality. The influence of the cultivation system and location was not statistically significantly applied in the case of ash content in dry matter. Based on our results we can propose both types of oat (hulled and naked) as perspective crops for OF. An organic farmer can expect to achieve stable yields which, in less favorable conditions for the production of cereals in the OF, may be close to the level of conventional yields. In the future, it will be important to change agrotechnology in OF and increase oat yield because this crop has a good potential to grow in areas with low nitrogen input or less fertile soil.

벽돌형 개량메주의 품질수명 (Studies on the Shelf-life of the Brick Shape Improved Meju)

  • 벽돌형 개량메주의 품질수명을 측정할 목적으로 벽돌형 개량메주를 제조하고 포장상태와 비포장상태로 구분하여 $30^{\circ}C$ 항온기 내에서 저장하면서 저장기간 중 메주의 성분변화를 측정했으며 또한 저장기간을 달리하여 간장담금을 한 후 $25^{\circ}C$ 에서 90일간 숙성시키면서 숙성기간 중 간장덧액의 성분변화와 식미 관능검사를 통하여 개량메주의 저장기간이 간장의 품질에 미치는 영향을 비교 검토하였다. 개량메추의 저장 중 성분의 변화가 큰 것은 $NH_2-NH_3-N$ 및 protease 역가였으며 그 중 protease 역가가 간장발효의 중요한 성분일 뿐 아니라 저장 중 가장 큰 변화를 나타내어 품질평가의 가장 좋은 지표성분임을 입증하였다. 간장덧액의 품질 측정에서 저장기간이 긴 메주의 간장이 갈색도는 증가했으나 향미와 맛 그리고 기호도 종합평점에서 뒤졌으며 전반적으로 protease 역가가 높은 메주의 간장이 높은 기호도를 나타내어 품질이 우수함을 알 수 있었다. 벽돌형 개량메주는 낱알형에 비하여 protease 역가가 낮았으나 저장기간 중 역가의 감소가 완만하게 진행되어 저장수명이 더 긴 것으로 나타났다. 본 실험조건에서 벽돌형 개량메주의 품질은 저장 30일째가 가장 좋았으며, 품질평가의 지표가 되는 pretense 역가(O.D. at 600nm/g)는 그 후 서서히 감소되어 저장 180일째에 포장과 비포장이 각각 205와 207을 유지하였으며 따라서 낱알형 개량메주의 기준을 적용할 때 벽돌형 개량메주의 품질수명은 180일 정도인 것으로 추정되었다. 또한 포장상태 저장은 벽돌형 개량메주의 품질향상에 별다른 효과가 인정되지 않았다.

  • Post harvest processes for rice include drying, storage and processing. Drying has a great effect on the quality of the grain. The existing rice centers are with the ill equipped, especially with drying and storage facilities. The rice harvesting has bully mechanized, a large volume of rice with high moisture content are taken to the rice processing complex(RPC). Three, the need for drying and storage facilities becomes more urgent. At present the daily drying capacity of RPC can't exceed over 40~50 M/T. Therefore new technology and facilities for a high quality and main efficient drying should be introduced one such technology is the continuous flow drying system. This research, aims to test performance efficiency the mixed continuous flow grain dryer was whose daily drying capacity is 100 M/T. The results of the performance tests of the dryer are shown as follows; (1) The temperature distribution of the drying modules were measured by a temperature recorder. The fifth module showed the highest value, followed by the seventh and the third. (2) When the intake air temperature was $55^{circ}C$, the drying rates were 1.7 and 2.6%, wb/pass in the exhaust temperatures of 20 and $22^{circ}C$. And when the intake air temperature was $60^{circ}C$, the drying rates were 1.7 and 2.3%, wb/pass in the exhaust temperatures of 22 and $25^{circ}C$. (3) The average increased rate of cracked grains after the drying process was 0.7% which is below the tolerance limit (2.0%) of the continuous grain dryer.
