Varietal Difference in Retrogradation of Cooked Rice and Its Association with Physicochemical Properties of Rice Grain

  • The experiments were carried out to elucidate the varietal variation of retrogradation in aged cooked rice and its association with some physicochemical properties of milled rice. The fifteen rice materials were selected from forty-three low-amylose japonica and Tongil-type rice cultivars based on palatability and retrogradation of cooked rice stratified by preliminary sensory evaluation of warm and cooled cooked rice. One japonica glutinous rice variety was included for comparison of retrogradation of cooked rice. The $\alpha$-amylase-iodine method was adopted for checking the varietal difference in retrogradation of cooked rice. The desirable checking time for evaluating the varietal difference in deterioration of aged cooked rice was four hours after storing in room temperature and two hours after preserving in refrigerator based on the largest coefficients of variations in degree of retrogradation of cooked rice. The rice cultivars revealing the relatively slow retrogradation in aged cooked rice were Ilpumbyeo, Chucheongbyeo, Sasanishiki, Jinbubyeo and Koshihikari. A Tongil-type rice, Taebaegbyeo, and a japonica cultivar, Seomjinbyeo, showed the relatively fast deterioration of cooked rice. The retrogadation index represented by the percentage of retrogradation difference between warm and cooled cooked rice to original estimates of warm cooked rice was significantly affected by the degree of retrogradation of cooled cooked rice. Generally, the better rice cultivars in eating quality of cooked rice showed less retrogradation and much sponginess in cooled cooked rice. Also, the rice varieties exhibiting less retrogradation in cooled cooked rice revealed higher hot viscosity and lower cool viscosity of rice flour in amylogram. The sponginess of cooled cooked rice was closely associated with magnesium content and volume expansion of cooked rice. The hardness-changed ratio of cooked rice by cooling was negatively correlated with solids amount extracted during boiling and volume expansion of cooked rice. The major physicochemical properties of rice grain closely related to the palatability of cooked rice may be directly or indirectly associated with the retrogradation characteristics of cooked nce. The varietal difference in retrogradation of cooked rice can be effectively classified by scatter diagram on the plane of upper two principal components based on some retrogradation properties of cooked rice. The deteriorated structural change in cooled cooked rice by observing through the scanning electron microscope was more conspicuous in the fastly retrograded cooked rice than in the slower one.

상자병(橡子餠)의 재료배합비에 따른 Texture특성 (Sensory and Mechanical Characteristic of Sang-ja-byung by Different ingredient)

  • 도토리전분과 도토리가루의 첨가량, 당의 종류와 양, 물의 첨가량을 달리하여 제조한 상자병(橡子餠)의 관능검사, 기계검사, 수분측정, 색도측정한 결과를 요약하면 다음과 같다. 1 관능검사 결과 Color와 Flavor는 도토리전분 5%에 꿀 첨가 군이 가장 좋았다. Grain은 도토리가루 5%에 설탕 첨가 군이 가장 고왔으며, Moistness와 Chewiness는 15%에 설탕을 첨가한 군이 가장 좋았다. Sweetness는 도토리 전분 15%에 꿀 첨가 군이 가장 달았다. Overall quality는 도토리전분과 도토리가루 모두 10% 첨가하고 설탕, 꿀, 올리고당 첨가 순으로 바람직하다고 평가되었다. Flavor를 제외한 항목에서 모든 시료는 유의 차가 있었다(P<0.05). 2. 기계검사 결과 Springiness는 도토리전분 10%에 설탕을 첨가한 군, Cohesivness는 도토리전분 5%에 설탕을 첨가한 군, Chewiness와 Gumminess는 도토리전분 15%에 꿀을 첨가한 군이 가장 높았고, Adhesiveness는 도토리 전분 5%에 꿀을 첨가한 군이 가장 높았다. Hardness는 도토리전분 15%에 꿀을 첨가한 군이 가장 단단했고 도토리가루와 전분의 첨가량이 증가 할수록 단단했으며, 설탕 첨가 군이 꿀이나 올리고당 첨가 군 보다 부드러웠다. 모든 시료는 유의 차가 있었다(P<0.05). 3. 수분함량은 쌀가루 32.93%, 도토리전분 8.52%, 도토리가루 13.26%이며 도토리 전분을 첨가한 상자병(橡子餠)이 44.11%, 도토리가루 첨가한 상자병(橡子餠)이 44.3%였다. 4. 색도측정 결과 L값은 도토리전분 5%에 올리고당을 첨가한 군, a값은 도토리가루 15%에 설탕을 첨가한 군, b값은 도토리전분 15%에 올리고당을 첨가한 군이 가장컸다. 이상의 결과로 얻어진 상자병(橡子餠)의 가장 바람직한 배합비는 쌀가루 315 g에 도토리가루와 도토리 전분 35 g (10%), 설탕 60 g(17.1%), 소금 3.5 g(0.1%), 물 130 ml (37.1%)이다.

떡에 대한 인지도와 기호도 및 소비행동에 관한 연구 -부산·영남지역의 대학생을 중심으로- (A Study On Consumer Awareness, Preference, and Consumption Behavior Regarding Rice Cakes - With a Focus on College Students in Busan and the Yeongnam Region -)

  • The purpose of this study is to understand consumer awareness and preference regarding rice cakes by surveying the awareness, preference, and consumption behavior of college students regarding rice cakes, and to survey their perception and usage of rice cakes, thereby using the results as basic data to establish measures to develop Korea's rice cakes. To sum up the study's results, the survey included both male (54.5%) and female (45.5%) subjects. Those aged "20 to 23" accounted for the largest share (67.9%) of total respondents, and those majoring in "humanities and social studies" comprised the largest portion (47.8%). A majority of the respondents resided in "small and medium-sized cities", and most either lived at home or lived away from their families. A majority of the subjects received monthly allowances ranging from 200,000 to 300,000 won. In order of awareness, the most well-known type of rice cake was "injeolmi (rice cake made from glutinous rice and coated with bean flour)", followed by "songpyeon (half-moon-shaped rice cake)", "garaeddeok (bar rice cake)", and "baekseolgi (steamed white rice cake)". The women were better aware of "injeolmi", "baekseolgi", and "garaeddeok" than the men, and "soemeoriddeok" was not commonly known among either gender. In terms of preferences for rice cakes, overall, the subjects liked "injeolmi" and "songpyeon" the most. However, certain differences were found in preferences for rice cakes between the men and women. The women exhibited higher levels of preference for "injeolmi" and "songpyeon" than the men. On the other hand, the men revealed higher levels of preference for "baekseolgi", "jeolpyeon", and "garaeddeok" than the women. The most common answer to important factors for popularizing rice cakes was "a diverse assortment of rice cakes", followed by "the development of creative technologies" and "the taste of rice cakes reflecting consumer needs", in order of importance. Among the important factors to popularize rice cakes, "the development of unique packaging containers for rice cakes" (p<0.05) and "the development of proper packaging materials" (p<0.05) showed statistically significant differences. In the survey of consumption of rice cakes, the most frequent answer to the question "why do you like rice cakes? was "their tastes are good" with 146 respondents, followed by "I have been eating them for long" with 115 respondents. To the question "when do you use rice cakes", the most frequent answer was "I use them in daily life" with 133 respondents, followed by "I use them at special events" with 115 respondents. The women were found to use rice cakes frequently in daily life, whereas the men used them frequently at special events. When asked whether they had the intention to use rice cakes as a meal substitute, 100 men answered that they had no intention, whereas 96 women answered that they had the intention. When asked about the type of rice cake considered suitable for a meal substitute, the most popular answer was "injeolmi" with 108 respondents, followed by "baekseolgi" with 106 respondents.

「규합총서(閨閤叢書)」에 수록된 떡의 종류 및 조리법에 대한 고찰 (A Literature Review Investigation Collecting and Cooking Methods of Tteok (Rice Cake) in 「Gyuhapchongseo」)

  • 본 연구는 조선 후기 고문헌인 "규합총서(閨閤叢書)"에 나타난 떡의 종류 및 조리방법을 고찰하여 떡의 종류, 떡에 사용된 재료, 떡의 조리법에 대한 내용을 정리하여 전통조리법을 이해하고, 현재의 기호와 식생활에 맞게 재창조하는 데 필요한 문헌적 자료를 제공하고자 함을 목적으로 한다. "규합총서(閨閤叢書)"는 조선시대 빙허각 이씨가 한글로 쓴 가정대백과 전서이다. '주식의편'에 요리법을 소개하고 있으며, 떡의 분류와 함께 28종의 떡이 기록되어 있다. 연구방법은 내용분석 방법(Contents Analysis)을 이용하였다. 떡을 조리형태에 따라 분류하면 찌는 떡 15가지(53.5%), 치는 떡 2종류(7.1%), 삶는 떡3종류(10.7%), 지지는 떡 7가지(25%), 기타 1가지(3.5%)로 찌는 떡이 53.5%로 가장 많았다. 떡의 주재료에 따라 분류한 결과, 찹쌀이 13회, 멥쌀이 10회, 기타가 5회로 나타났다. 떡의 주재료로는 찹쌀이 12회(42.8%), 멥쌀이 10회(35.7%), 기타가 6회(21.4%)로 찹쌀이 멥쌀보다 많이 사용한 것으로 나타났다. 부재료는 꿀, 잣, 대추 순으로 많이 사용하였고, 연육, 검인, 수시, 생마, 송기, 백봉령 등 약제도 부재료로 사용되었다.

인절미의 노화억제를 위한 반죽, 첨가제 및 효소분해의 영향 (Effect of Kneading, Ingredients and Enzymatic Hydrolysis on Retrogradation of Injulmi)

  • This study was carried out to investigate the effects of modified starch, sugars and enzymatic hydrolysis with ${\beta}-amylase$ on extending the self-life of Injulmi, a Korean soft and glutinous rice cake, in terms of maintaining a soft texture. The Injulmi was prepared with or without kneading of waxy rice flour, NaCl and water mixture. The Injulmi was stored at -20, 4 and $20^{\circ}C$ and the hardness was measured to calculate the Avrami exponents during storage. The results showed that cold heading and enzymatic hydrolysis with ${\beta}-amylase$ before steaming of the waxy rice dough significantly extended the self-life on the basis of the Avrami equation. Among the various additives including different kinds of starches, sugars and polymannuronic acid, the addition of 1.5% tapioca starch, 8.0% of glucose or 3.0% of polymannuronic acid was also effective for delaying the retrogradation phenomena during storage. However, despite the effectiveness of these treatments, the Injulmi developed hardness within 2-3 days at $4^{\circ}C$ and within 4 days at $20^{\circ}C$ while storage at $-20^{\circ}C$ showed a storage stability that was maintained over x days. Sensory showed the Injulmi prepared with NOVA-0.005, GL-8.0 had a lower hardness than that of the other treatments.

원행을묘정리의궤(園行乙卯整理儀軌) 중(中) 조리면(調理面)에서 본 반과상고(盤果床考) (A Study of Cookery of Daily Meal (Bankwa Sang: Fruit Table) in Wonheng Ulmyo Jungri Euigwae (1795))

  • To analyze dialy meal of royal meal, studied Bankwa Sang(Fruit Table) were on record Wonheng Ulmyo Jungri Euigwae (1795). Historic book 'Jungri Euigwae' described the king's visit to his father's royal tomb 'Hyun Neung Won', during the domain of Cheung Jo, the 22nd king of Choson Dynasty. The results obtained from this study areas follows. The fruit table, which similar in concept to desert in the west but quite different in service, was prepared for a guest. The table consisted of two kinds of trays, on which serveral kinds of fruit were stacked to a height of between 4 chon (4寸 : about 12 cm) and 1 chuk(1尺 : about 30.3 cm) according to Korean measurement system. The table was decorated with beautiful artificial flowers made of paper and silk. The number of sets to be arranged on the table were different according to the royal status of the eater: 12 sets-25 sets for king's mother, 7 sets-11 sets for the king. Soy sauce mixed with vinegar and pine-nu meal, mustard were ruled out from kind of sets. Kinds of dishes served with a meal generally were noodles (麵), soup (湯), fried fish (煎油花), fried meats and vegetables (花陽灸), slices of raw fish (魚膾), minced raw meat (肉膾), slices of boiled beef (片肉), stew (蒸), rice cake (餠), sweet rice dish (藥飯), patterned savory cake (茶食), fried cake made of wheat flour, honey and oil (藥果), fried glutinous rice cake (强精), various fruits preserved in honey (正果), sugar candies (各色糖), fruits (果物) honey (淸), soy sauce mixed with vinegar and pine-nut meal (醋醬), mustard (莽子).

떫은감 농축액을 첨가한 인절미의 품질 특성 (Effects of Astringent Persimmon Paste on Quality Properties of Injeolmi)

  • 본 연구에서는 떫은감을 효율적으로 활용하기 위해 떫은감을 가열 농축하여 일반성분과 특성을 분석하였으며 떫은감 농축액을 0$\%$, 4$\%$, 8$\%$, 12$\%$, 16$\%$로 첨가하여 제조한 감 인절미를 20$^{\circ}C$에서 저장하면서 수분함량, 색도, 기 계적 품질 특성 , 관능적 품질특성을 측정한 결과는 다음과 같다. 23시간을 가열하여 제조한 떫은감 농축액은 수분함량 36.57$\%$ 조단백질 0.71$\%$, 조섬유 2.39$\%$, 조회분 2.14$\%$, 비타민 C 1.09 mg$\%$, 총페놀함량 57 mg$\%$였고, 감농축액은 pH 4.71, 당도 63 Brix, 유리당은 fructose, glucose, sucrose, maltose가 각각 16.23, 31.07, 0.51, 0.50$\%$였으며 색도는 L, a, b 값이 각각 21.50, 1.59, 0.98였다. 감농축액 0, 4, 8, 12, 16$\%$ 첨가군의 수분함량은 57$\∼$59 범위였다. L값은 감농축액 첨가량이 증가할수록 유의적으로 감소하였고 a값은 감농축액 8$ \% $ 첨가군이 가장 높았고 b값은 감농축액 첨가량이 증가할수록 감소하였다. 경도는 감농축액 0$\%$ 첨가군의 경우 저장2일째부터 부패가 진행되면서 감소하였으나 감농축액 첨가군은 적은폭으로 증가하였다. 부착성은 제조직후와 저장기간동안 감농축액 0$\%$ 첨가군이 가장 낮았다. 응집성은 저장기간동안 감농축액 16$\%$ 첨가군에서 가장 낮았으며, 탄력성은 저장, 2일째까지 감농축액 첨가량에 따른 시료간에 유의적인 차이가 없었다. 점착성은 저장 1일째 이후의 저장 기간에서는 시료간에 유의적인 차이가 없었다. 전반적으로 저 장기간에 따른 기계적 품질특성의 변화가 적었다. 관능평가는 감농축액 첨가량이 증가할수록 색, 향, 단맛, 쓴맛, 떫은맛, 촉촉한 정도, 씹힘성을 강하게 평가하였다. 부드러운 정도는 8$\%$ 첨가군에서 가장 강하게 평가되었다. 전반적인 기호도는 8$\%$12$\%$>4$\%$>16$\%$>0$\%$ 순으로 좋게 평가되었다. 결론적으로 감농축액의 첨가는 당과 탄닌성분을 함유함으로써 인절미의 노화를 지연시키고 저장성을 높이는데 효과가 있는 것으로 생각된다. 또한 인절미를 제조할 때 찹쌀가루에 8$\%$의 감농축액을 첨가하는 것이 감인절미의 색, 향, 단맛, 씹힘성이 적당하고 쓴맛과 떫은맛은 약하게 느끼면서 촉촉한 정도와 부드러운 정도는 강하게 느낄수 있어서 전반적인 기호도에서 가장 적절한 방법으로 사료된다.

채소 즙을 첨가한 밀전병의 품질 특성 (Quality Characteristics of Miljeonbyeong Added with Carrot and Spinach Juice)

  • Quality characteristics of griddled miljeonbyeong containing vegetable juice were assessed by conducting sensory tests and measuring texture and color. When varying amounts of carrot/or spinach juice was added to miljeonbyeong, the sensory preferences of appearance and texture were higher in miljeonbyeong containing a small amount of carrot and spinach vegetable juice, and the preferences of smell and taste were higher in miljeonbyeong containing a large amount of carrot and spinach juice. Overall, preference was highest in miljeonbyeong supplemented with 30 g carrot juice and 10 g spinach juice. Overall preference correlated significantly with appearance (r=0.44) and texture (r=0.47). In miljeonbyeong containing vegetable juice, tensile strength decreased significantly with increasing amounts of carrot juice (34.98~30.82) or spinach juice (40.84~37.07). In all miljeonbyeong samples, tensile strength increased slightly in 1 hour but rapidly increased after 2 hours. Lightness progressively decreased. A-value increased (3.46~9.63) and b-value increased with increasing amounts of vegetable juice added. No difference in the b-value increase was evident between carrot juice (15.19~26.43) and spinach juice(18.19~24.40). Tensile strength was markedly lower in miljeonbyeong amended with carrot juice (34.98~30.82g) or spinach juice (39.05~32.67 g), which contained fat-soluble pigment, as compared with vegetable-free miljeonbyeong (44.81 g), but the addition of beet juice (45.30~44.78 g) containing water-soluble pigment did not lower the tensile strength of miljeonbyeong compared to vegetable juice. In order to improve the texture of miljeonbyeong containing vegetable juice, tensile strength was measured in miljeonbyeong prepared with 30 g carrot juice or 10 g of spinach juice, which produced the highest sensory test scores, and additionally amended with potato starch, corn starch, glutinous rice flour, strong flour or yam powder with a consequent reduction in the content of wheat flour. Improvement was noted in carrot juice-containing samples prepared with 6 g corn starch, 15 g potato starch and 15 g hard wheat flour, and in spinach juice-containing samples prepared with 6 g corn starch, 6 g potato starch, 6 g hard wheat flour and 15 g dried yam powder.

감귤분말 첨가량에 따른 인절미의 품질 특성 (Quality Characteristics of Injeulmi Containing Different Ratios of Citrus Mandarin Powder)

  • The purpose of this study was to investigate the quality characteristics of Gamgyul-Injeulmi containing different ratios of Citrus mandarin powder(0, 3, 6, 9 and 12%). The moisture content of the control group was 45.37%. As the ratio of Citrus mandarin powder increased, moisture content decreased. The water holding capacity of glutinous rice flour with Citrus mandarin powder decreased gradually in proportion to the amount of Citrus mandarin powder added. An analysis of Hunter's color values for Gamgyul-Injeulmi indicate that the addition of Citrus mandarin powder leads to lower L value and higher a and b value compared to the control. Textural analysis of Gamgyul-Injeulmi showed that the hardness, cohesiveness, gumminess and chewiness increased as Citrus mandarin powder was added, whereas adhesiveness and springiness decreased. According to the sensory evaluation of Gamgyul-Injeulmi, as the ratio of Citrus mandarin powder was increased, the flavor, sweetness and hardness all increased. Gamgyul-Injeulmi with 6% Citrus mandarin powder was rated as the best in terms of color and for overall preference in the sensory evaluation.

맥분(麥粉)의 이용(利用)에 관한 연구(硏究) (I) (Studies on the Utilization of Naked Barley Flour (I))

  • 맥분(麥粉)의 가공적성(加工適性)을 알아보기 위해서 나맥(裸麥) Sedohadaka(1971년도(年度) 수확(收穫), 전남지방산(全南地方産))을 정맥(精麥)한 후 다시 제분(製粉)하여, 이것의 일반성분(一般成分) 및 아미노산조성(酸組性)과 점성(粘性), 팽화력(膨化力) 나맥전분(裸麥澱粉)의 amylose 함량(含量), 이것의 alkali number와 blue value, 및 X 선회절상(線廻折像)을 조사(調査)한 결과(結果)는 다음과 같다. 1) 조나맥(粗裸麥)을 81.6%, 79.2%, 74.1%로 제분(製粉)하는 경우 조섬유(粗纖維)의 함량(含量)이 $2.48{\sim}2.36%$로서 소맥분(小麥粉)에 비해서 높은 편이다. 2) 나맥분(裸麥粉)의 호화개시온도(糊化開始溫度)는 소맥분(小麥粉)과 비슷하였으나 나맥전분(裸麥澱粉)의 그것은 $89.5^{\circ}C$로 곡류전분중(穀類澱粉中)에서 높은 편이다. 나맥전분(裸麥澱粉)의 amylose 함량(含量)은 28.5%로 소맥전분(小麥澱粉)과 비슷하였다. 3) 나맥분(裸麥粉)의 팽화력(膨化力)은 곡류전분(穀類澱粉)보다 낮은 편이다. 4) 나맥전분(裸麥澱粉)의 X 선회절도(線回折圖)에 의하면 그 결정화도(結晶化度)가 멥쌀전분보다 낮은 경향이다.
