A total of 35 hospitals throughout Korea were surveyed for the assessment of the educational function of dietitians. The current situation and the depth of practices were diagnosed in such areas as: 1. The continuing education for the hospital dietitians 2. The characteristics of patient consultation performed by the hospital dietitians 3. Systems and methods of patient instruction practiced by the dietitians, and 4. Prospectives in establishing the nutrition education center for the in-and out-patients. The major findings are: 1. Approximately half of the hospital dietitians feel positive about the practicality of their college education for the job. Extremely small number of them are on any kind of continuing education program 2) The monthly average of only 20 patients at one hospital receive diet consultation or nutrition education service from dietitians. The 50% of the consultation cases is taken up by the patients with diabetes and various circulartory diseases followed by the tube feedings, liver and renal diseases with less frequencies 3) Not even a single hospital has an office for the diet consultation and nutrition education for the in-or out-patients. Very few hospital dietetics have educational aids and/or any feedback system to evaluate the effect of the consultation. Charting is not practiced by most dietitians leaving no record of their contributions to the patient care. 4) Although the necessity of the nutrition education center in the hospital is strong1y recognized among dietitians the progress has been blocked by such obstacles as the poor system in the hospital administration in general, short in funds, lack of preparation in the dietetics and the lack of recognition both by the hospital administration and by the dietitian themselves.
The prevalence of atopic dermatitis (AD) in school-age children has increased in industrialized countries. As diet is one of the main factors provoking AD, some studies have suggested that food additives in processed foods could function as pseudoallergens, which comprise the non-immunoglobulin E-mediated reaction. Eosinophil cationic protein (ECP) is an eosinophil granule protein released during allergic reactions to food allergens in patients with AD. Thus, serum ECP levels may be a useful indicator of ongoing inflammatory processes in patients with AD. The purpose of this study was to investigate the effect of consuming MSG in processed foods on serum ECP levels among children with AD. This study was performed with 13 patients with AD (age, 7-11 years) who had a normal range of total IgE levels (< 300 IU/ml). All participants ate normal diets during the first week. Then, six patients were allocated to a processed food-restricted group (PRDG) and seven patients were in a general diet group (GDG). During the second week, children in the PRDG and their parents were asked to avoid eating all processed foods. On the third week, children in the PRDG were allowed all foods, as were the children in the GDG throughout the 3-week period. The subjects were asked to complete a dietary record during the trial period. Children with AD who received the dietary restriction showed decreased consumption of MSG and decreased serum ECP levels and an improved SCORing score on the atopic dermatitis index (P < 0.05). No differences in serum ECP levels or MSG consumption were observed in the GDG. Serum total IgE levels were not changed in either group. In conclusion, a reduction in MSG intake by restricting processed food consumption may lead to a decrease in serum ECP levels in children with AD and improve AD symptoms.

Information on nutrient requirements and forage intake of fallow weaner deer is required for the development of feeding strategies during the year. An experiment was conducted in which 60 fallow weaner deer (grazing on medic and ryegrass based pastures) were supplemented with a concentrated diet at three levels. The diet contained 2% minerals, 30% lupin and 68% barley grain. Twelve deer from each treatment were dosed with commercial alkane capsules in May, June, July, September and October to predict nutrient intake. The relationships between body weight gain and intake of metabolisable energy and crude protein were established using a general linear models analysis. Dry matter intake from pastures ranged from 0.137 kg to 0.304 kg in May and June and increased to 1.2 kg in October. Nutrient intake from pastures was strongly influenced by amount of supplementary feed and gender. Digestible energy intake from pastures was 1.3, 3.8 and 6.1 MJ/day higher for males than females in July, August and October, respectively. The protein and energy intake was strongly correlated with body weight gain. The energy requirement for maintenance were 7.3, 8.2, 10.2, 10.2 and 10.7 MJ DE/day and the DE required for each kg body weight gain were 19, 18, 29, 34 and 49 MJ in May, June, August and October, respectively. The protein requirement for maintenance was 12.2, 12.6, 15.0, 11.4 and $8.5g/W^{0.75}$ in May, June, July, August and October, respectively. The nutrient requirement defined from this study can be used to assist farmers to explore the possible pasture and stock management practices under southern Australian conditions. However, further research is required to develop rapid and cheap methods for estimating dry matter intake, nutritive value of pastures and to quantify the potential growth rate of fallow deer in southern Australia.
This study was conducted to identify differences in growth based on the obesity index in sixth grade. Heights and weights of 141 students from first to sixth grades were collected from school records. Other information was gathered by survey, and the weight length index (WLI) was calculated. Subjects were classified into three groups: underweight (n = 57, UG), normal (n = 53, NG), and obese (n = 31, OG) using the WLI. Differences in weight, height, and growth velocity were compared among the three groups from the first to sixth grades. With regard to growth, the past physical status of the three groups was maintained. More than 50% of the OG was in the overweight range when they were in the third to fifth grades. Approximately 60% of NG was in the normal weight range between the first and fifth grades. More than 70% of UG was in the underweight range when they were in the first to fifth grades (p < 0.001). Growth velocity was faster in OG than that in NG and UG (p < 0.001). The annual growth rate of children was the highest when they moved from the third to the fourth grade (p < 0.001). The results indicate that general balanced diet education should be implemented in lower grades, because physical growth formed in lower grades tended to be maintained in senior grades. It would be better to educate students about diet to prevent obesity before the fifth grade when a major change in body structure has occurred.
The purposes of this study were 1) to identify incidence, severity and duration of morning sickness; 2) to explore the diet relieving nausea; and 3) the demographic factors related to morning sickness. The data were collected on 281 pregnant women by the questionnaire comprized of demographic variables, obstetric characteristics, and pattern of morning sickness from 6 weeks gestational period to 30 weeks, who visited prenatal clinic of three general hospitals and a public health center in Seoul. The data were analyzed with descriptive statistics and $x^2$ test, using the program of SPSS/WIN 8.0. The results were as follows; 1. Incidence of morning sickness comprised of 72.3% pregnant women. Occurrence of morning sickness was gestational mean of 5.93 weeks, and morning sickness ceased after gestational mean of 14.62 weeks. 2. Of those women who experienced morning sickness 27.9% had morning sickness in the morning and 19.7% in the afternoon, and 45.3% had morning sickness for 1 hour in duration and 19.2% throughout the entire day. 3. Of those pregnant women 51.2% had moderate discomfort and 33.5% had severe discomfort in morning sickness. The situations that triggered morning sickness were 'hunger' for 32.9%, 'smell' for 30.3%, and 'cooking' for 23.3%. 4. The affects of morning sickness to lifestyle were 'moderate change' for 39.9%, 'mild change' for 33.5%, and 'much change' for 23.6%. 5. To remedy morning sickness 34.6% of pregnant women tried to eat fruits, and 14.8% tried to drink carbonated beverage. The effective foods relieving morning sickness were fruits for 38.4%, carbonated beverage for 15.6% and dry carbohydrate for 12.0% of pregnant women. The ineffective foods relieving it were milk for 31.0% and dry carbohydrate for 23.7% of pregnant women. 6. The level of relieving of morning sickness by diet were 'mild' for 55.7%, 'no change' for 21.7%, and 'moderate' for 17.7% of pregnant women. 7. There was a significant association with morning sickness and age, but no significant associations with morning sickness and parity, educational level, occupation, type of marriage, and type of family.
This study was designed to investigate the nutritional value of fermented soybean bran as animal feed. Natural soybean bran has low protein quality and high cellulase contents. The soybean bran was supplemented by urea and ammoniumsulfate as N-source for incubation of Aspergillus niger. After incubation of soybean bran with Aspergillus niger, the nutritional quality of protein and riboflavin contents were increased in general and more in aging process than in fermentation. In order to elucidate the biological efficiency of prepared soybean bran, 120 male weanling rats were divided into 22 groups, five rats each, and were fed by standard casein diet mixed with soybean bran in the proportion of 1/10, 1/15, 1/20 respectively. The animals were kept under the experimental diet for nine weeks. In the result of this study, food efficiency ratio showed higher in the groups of urea and ammonium-sulfate-add group than row soybean bran group but the former group is lower than the later in the body weight gains. Protein efficiency ratio was also same trend. It was noteworthy that the nitrogen retention rate in total body on the basis of urinary nitrogen excretion and dietary intake nitrogen and in big organ such as liver and spleen were higher in fermented group than raw soybean bran fed group. It was worth while to treat the soybean bran in first place fermentation and further aging process to elevate the biological efficiency and effect of nutritional values specifically of protein and of riboflavin.
This study was designed to investigate the problems facecl by adolescents who have nephrotic syndrome and who have struggled with their disease over a long time. Information obtained from this study can be utilized as basic data in planning nursing care for these adolescents. The subjects in this study were 13 adolescents who were being treated in the pediatric OPD of one general hospital in Seoul. The treatment period ranged from 2 to 15 years. The tool for this study was constructed after asking patients with nephrotic syndrome about their problems using anunstructured questionalire. Problem items which were observed during nursing cared in the pediatric unit. were also inclucled. Ten problem items were constructed on the basis of Moonlcy's problem check list and two additional items related to diet and physical activity were added to the list. The results of this study can be summerized as follows : adolescents with Nephrotic Syndrome. 1) have a vague knowledge about their illness and have distorted concepts. 2) feel social isolation within their peer group because of their changed appearance, limited physical activity and special diet regimen. 3) have problesm in heterosexual relationship because of short height in boys and changes in body propotions in girls. 4) think that their personality has changed due to illness. In most cases(8) changes were in a negative direct ion but in two cases they were positive. 5) have problems with scholastic achievement due to physical weakness and school absence. 6) who are in late adolescentce are more realistic and plan for their future taking into consideration their prognosis much more so than do patients who are in early adolescence. 7) have problems in their peer relationships. 8) have limitation their enjoy ment of leisure time. 9) have some conflict with their siblings. 10) think religion is significant and it has and influence on their life.

Purpose: Although the prevalence rate of chronic diseases is rapidly increasing due to an unhealthy diet in Korea, nurses may not have enough nutritional knowledge to educate their patients. This study investigated the level of nurses' nutritional knowledge for chronic diseases as well as for strokes, and the needs for nurses' nutritional education. Methods: This research is a descriptive research conducted from April to August of 2014, on 242 nurses who work with stroke patients, in two tertiary general hospitals in the city of Seoul, South Korea. Results: The average nutritional knowledge score of our subjects was $19.9{\pm}2.51$ (range 12-24). The correct response rate was 83% which was higher than expected. However, many nurses (31-66%) answered incorrectly on items such as 'Drinking low-fat milk is better than whole milk', and 'Seasoning with a large amount of soy sauce instead of salt can reduce sodium consumption'. We also found that nurses who received continuing education regarding nutrition scored higher than those who did not (p=.020). There was no correlation between nutritional knowledge and the need for nutritional education (r=.034, p=.601). Conclusion: The level of nutritional knowledge of the nurses was relatively low and irrelevant to the completion of nutrition courses during university or duration of experience. Rather, the relevance was higher when the nurse received nutrition-related training after graduating from university. Our results imply that continuous nutritional education is necessary for hospital nurses.

Feed intake (FI) of sows during lactation is a serious problem because sows require a large amount of energy for high milk production during lactation. Providing a palatable diet is important for lactating sows to cope with the stress of breast-feeding. Palatability can be increased by adding sweeteners to diets. This study was conducted to evaluate the effects of saccharin (sweetener) on growth performance, fecal moisture, and litter performance of lactating sows. Sixteen sows were randomly allotted to one of two dietary treatments in a 27-day trial starting from lactation. The two dietary treatments were supplemented with 0 and 0.2% saccharin (sweetener), respectively. Average daily feed intake (ADFI) was increased (p < 0.05) and back fat loss (BFL) was decreased (p < 0.05) in sows fed saccharin supplementation diets compared with sows fed control diet during lactation. However, sows' body weight loss, body condition score (BCS), fecal score, and the number of piglet survival were not different (p > 0.05) among dietary treatments. The two dietary treatments also had no significantly different effect (p > 0.05) on litter weight and average daily gain (ADG) of piglets. Taken together, saccharin has no significant effect on growth performance of piglets but it can increase FI and reduce BFL of lactating sows.
This study was conducted to evaluate the nutritional status and diabetes management of diabetic patients in the Health Center. General characteristics, food habits, food intakes and the knowledge about diet therapy were investigated from ninety one diabetes subjects. Anthropometric assessment such as weight, hight, triceps skinfold thickness, and biochemical measurement of fasting blood glucose(FBG), post prandial 2 hours blood glucose(PP2), and hemoglobin A1c(HbA1c) were obtained form the subjects. The results were summarized as following : 1. The average of age was 60.9 years old and 83.5% of subjects was illiterate and primary school graduated. 2. Relative Body Weight(RBW) and % body muscle were 96.18${\pm}$13.6 and 33.56${\pm}$7.01%, respectively. Obese subjects whose body weight exceeded 120% of the ideal values were 3.3%. 3. The 86.8% of subjects were managed by oral hyperglycemic agents. 4. The mean of FBG, PP2, HbA1c were 140.75${\pm}$44.43mg/㎗, 7.60${\pm}$1.88%, respectively. 5. The mean daily intake of calorie was 1407㎉, and 73.6% of subjects lower caloric intake than prescribed calorie. when the degree of dietary compliance was expressed as Tunbridge score, 18.7% of total subjects was grouped as satisfactory, where as 20.9% and 60.4% could be considered as tolerable and hopeless, respectively. The nutrients intake were lower than RDA except for Vitamin A and Vitamin C and the ratio of carbohydrate : protein : fat was 72 : 14 : 14. 6. The mean score of knowledge test about diet therapy was 3.52${\pm}$2.19 out of possible 14.00 points. The above results suggested that the most of diabetic patient showed the poor nutritional status and they faced the lack of knowledge about diabetes management.
