명태 수리미 부산물 유래 젤라틴 가수분해물을 이용한 시판 간장의 항산화성 및 ACE 저해활성의 개선 (Improvement of the Antioxidative and ACE-inhibiting Activities of Commercial Soy Sauce using Gelatin Hydrolysates from the By-products of Alaska Pollock)

  • This study examined ways to improve the functional properties of commercial soy sauce using gelatin hydrolysates from the refiner discharge of Alaska pollock, Theragra chalcogramma. The total nitrogen content and pH of gelatin sauce prepared by dissolving the second-step gelatin hydrolysates (15 g), salt (20 g), sugar (5 g), glucose (2.5 g), inosine monophosphate (IMP) (0.5 g), black pepper (0.1 g), caramel powder (0.1 g), ginger powder (0.05 g), garlic powder (0.05 g), vinegar (3 mL), and fructose (3 mL) in water(100 mL) were 1.71% and 5.35, respectively. The results of a sensory evaluation indicated that when preparing blended soy sauce, the optimal blending ratio of gelatin sauce to commercial soy sauce was 20:80 (v/v). Because the total nitrogen content and pH of the blended soy sauce were 1.52% and 5.31, respectively, the blended soy sauce could be sold as a soy sauce. The oxidative property of the blended soy sauce was similar to that of 20 mM ascorbic acid, and its angiotensin-converting enzyme (ACE) -inhibiting activity was 1.5 mg/mL. The results suggest that the antioxidative and ACE-inhibiting activities of commercial soy sauce can be improved by blending gelatin sauce (20) with commercial soy sauce (80). The total amino acid content of the blended soy sauce was 9,107.3 mg/mL, which was higher than that (8,992.4 mg/100 mL) of commercial soy sauce. However, the taste value of the blended soy sauce was 415.8, which was lower than that (431.2) of commercial soy sauce.

Mirepoix Au Maigre 함량 수준에 따른 포도씨유 드레싱의 수용도 변화 (Changes in Preference for Grape Seed Oil Dressing according to Mirepoix au Maigre Content Level)

  • The purpose of this study was to develop an excellent salad dressing using grape seed oil, which contains high levels of unsaturated fatty acids. First, a vinaigrette was made with grape seed oil and vinegar and divided into five portions. Then, five types of mirepoix au maigre ($M_1,M_2,M_3,M_4,M_5$) were made with apple, onion, carrot, garlic, tomato puree, and tomato ketchup by mixing in a main material vessel. The samples were then allowed to ripen for three days. The control group $M_1$ was named $GD_1$, and the experimental groups $M_2,\;M_3,\;M_4,\;and\;M_5$ were named $GD_2,\;GD_3,\;GD_4,\;and\;GD_5$. respectively. To measure receptiveness, a sensory test was conducted using a 7 point category scale. The test concentrated on flavor, taste, color, agreeability, aftertaste, and overall acceptability: the panel consisted of 15 subjects According to the results, $GD_4$ had the best flavor, color and agreeability. The samples with the most preferred taste and aftertaste were $GD_4\;and\;GD_5$. Between $GD_4\;and\;GD_5$, there were no noticeable differences in taste, aftertaste, or overall acceptability, but differences in color and agreeability did exist. Thus, $GD_4$ proved to be the most favorable product. To determine the best complementing vegetables for $GD_4$ yam($VE_1$), broccoli sprouts($VE_2$), mustard leaves($VE_3$), beet leaves($VE_4$), cucumber($VE_5$), and lettuce(VE6) were selected as samples, and a sensory test was conducted. Each vegetable has its own peculiarities. According to the results, $VE_2$ had the nicest vegetable fragrance recording the highest mean value. The vegetable with the most preferred taste, aftertaste, and agreeability were $VE_2\;and\;VE_6$. $VE_1\;and\;VE_6$ had the nicest color and contained the brightest color as well. The highest overall acceptability was awarded to $VE_2\;and\;VE_6$ and there was no remarkable difference between thorn at a level of 0.05. In conclusion, $VE_2\;and\;VE_6$ were the best complementing vegetables with grape seed oil dressing. However, to commercialize such a dressing, many follow-up studies must be conducted.

1700년대~1960년대 문헌에 나타난 탕평채의 문헌고찰 (Literature Review of Tangpyeongchae in Cook Books Published in 1700~1960s)

  • 탕평채의 전통 조리법 발굴을 위해 1700년대부터 1960년대의 고문헌 및 고조리서에 수록된 탕평채의 재료, 양념, 조리방법의 변화 등을 검토하였다. 탕평채는 1700년대 말의 문헌인"경도잡지"와 "고사십이집"에 처음 소개된 후 "임원십육지", "동국세시기", "송남잡식", "진찬의궤", "진작의궤", "명물기략", "규곤요람", "시의전서", "조선요리제법", "조선무쌍신식요리제법", "주부의 동무, 조선요리제법", "조선요리학", "이조궁정요리통고", "우리나라 음식 만드는 법"등에 탕평채가 수록되었다. 조선시대 궁중 연회음식을 수록한 "진찬의궤"와 "진작의궤"에는 청포채란 명칭으로 탕평채가 소개되어 있다. 탕평채의 재료 중 묵, 고기, 미나리, 숙주나물, 달걀, 김의 사용이 보편화된 것은 1900년대 중반 이후이며, 달래, 물쑥과 같은 봄나물을 재료로 사용한 기록도 있다. 1700년대 말에는 단지 초장(간장과 초로 만듦)으로만 무쳐 먹었던 탕평채는 이후 간장, 초 뿐 아니라 고추, 후춧가루, 깨소금, 참기름, 마늘, 파, 소금, 설탕 등을 사용해서 양념하여 보다 다양한 맛을 내고자 하였다. 또한 미나리, 고춧가루, 실고추, 지단채, 통잣, 잣가루, 깨소금, 김 등을 고명으로 사용했다. 탕평채의 조리방법은 1800년대 말의 문헌부터 비교적 자세히 기술되어 있다. 1800년대 말에는 모든 재료를 함께 양념했으나, 1900년대에는 다른 재료를 먼저 양념하고 마지막에 묵을 넣고 무치는 방법도 사용했다.
