Manufacturing and Physical and Chemical Characteristics of Fruit Leathers Using Flesh and Pomace of Japanese Apricots (Prunus mume Sieb. et Zucc) (매실과육과 매실착즙박을 이용한 Fruit leather의 제조와 그 특성)

  • Fruit leathers were manufactured from flesh and pomace of Japanese apricots and evaluated for their physical, chemical, microbiological and sensory properties. The contents of total dietary fiber(TDF) in Japanese apricot leathers(JAL) and Japanese apricot pomace leathers(JAPL) were 4.06% and 7.82%, respectively. One hundred grams of leather contained 368kcal in JAL and 352kcal in JAPL. Water activities of fruit leathers were 0.36 in JAL and 0.48 in JAPL. None of the factors had an effect on the microbiological counts of any of the organisms. The L, a and b values of the fruit leathers were higher in those made of JAF than those made of JAP. The fruit leathers made of JAF were harder than those made of JAP. Sensory panelists preferred fruit leathers made of JAP to those made of JAF in all attributes, except for their color.

  • Tomato has a limited shelf life and is highly perishable due to its high moisture content. As fruit leather, is a traditional food of Nepal, it can be beneficial to move towards value addition and diversification of the traditional product. The main aim was to analyze the nutritional values and phytochemicals of the tomato pulp and prepared leather, and sensory evaluation of prepared tomato leather. Five samples A, B, C, D and E were prepared with 80:20, 72.5:27.5, 95:5, 87.5:12.5 and 65:35 fruit pulp: sugar ratio respectively. Analysis of raw tomato pulp and all the five samples was performed. Sensory quality of the product sample A was found superior to that of other samples but chemical and phytochemical properties of product sample C was found superior than that of other prepared samples. Therefore, we had two best products, in terms of sensory properties and in terms of nutritional properties. The best product on the basis of nutrients (sample C) had acidity (%), TSS (°Bx), pH, total ash content (%), crude protein (%), crude fat (%), crude fiber (%), carbohydrate (%), vitamin C (mg/100 g), total energy (Kcal/100 g), TPC (mg GAE/g of dry extract), TFC (mg QE/g of dry extract), DPPH scavenging activity (% of inhibition) and lycopene content (mg/100 g) was found to be 3.70.1, 20 ± 0.02, 3 ± 0.1, 2.30 ± 0.05, 2.69 ± 0.04, 0.87 ± 0.02, 5.46 ± 0.01, 69.68 ± 0.02, 25.17 ± 1.25, 297.31 ± 0.01, 85.35 ± 0.02, 65.39 ± 0.02, 59.23 ± 0.03 and 98.57 ± 0.02 respectively. A tasty and nutritious product of tomato, leather can be prepared which can be more appealing to the consumer.

Drying Characteristics of Strawberry Fruit Leather

  • The effects of air temperature and sample thickness on drying kinetics of strawberry leather were investigated. The mathematical modeling was performed by using three thin-layer dying models. The independent variables were sample thickness (S1 = 1.8, S2 = 2.7, and S3 = 3.6mm) and air temperature (50, 60, 70, and 80$^{\circ}$C). All samples took place in the falling rate period. The values of effective moisture diffusivity, D$_{eff}$ varied from 2.40 to 12.1$^{\times}$10-9m$^{2}$/s depending on drying conditions. The values of activation energy, E$_{a}$ were 35.57, 33.14, and 30.46 KJ/mol for each sample of S1, S2, and S3. The two-term exponential model was found to satisfactorily describe the thin-layer drying kinetics of strawberry leather.

매실의 다양한 이용을 위한 가공 저장 및 포장방법

  • 매실을 다양하게 이용하고 부가가치를 높이며 매실의 품질저하 방지 및 이용성 증대를 도모하기 위하여 실시된 지금까지의 매실의 가공, 저장 및 포장 방법에 대한 것을 조사하였다. 매실의 저온저장 시청매실은 $0\~1^{\circ}C$의 저온보다도 $5\~8^{\circ}C$에서 저온 장해가 발생하기가 쉽다고 보고되었다. 이러한 장해를 방지하기 위하여 수확직후에 $0^{\circ}C$정도의 냉수로 급속히 청매실의 품온을 저하시키면 $5\~8^{\circ}C$의 저장에서도 저온장해가 경감되고 추숙도 억제한다고 한다. 상온 CA저장 조건 하에서 청매실의 선도를 유지하기 하는데 대량으로 발생하는 에틸렌의 제거와 저산소($2\%$ 하한), 고이산화탄소($8\%$)의 가스조성이 효과적이라고 보고되었다. 청매실의 저장 중 선도유지를 위하여 청매실을 저밀도폴리에틸렌(LDPE 20${\mu}m$) 필름 봉투에 포장하여 에틸렌 제거제를 넣고 $20^{\circ}C$에 저장한 결과, 에틸렌생성량은 낮은 수준으로 유지되었고 연화에 의한 품질저하가 현저히 억제된는 것을 볼 수 있다. 그리고 MA포장(LDPE 30${\mu}m+$에틸렌제거제)에서도 청매실의 녹색유지 효과가 탁월하였고 이산화탄소 농도가 높을수록 황화가 억제된 것이 연구에 의하여 밝혀졌다. 포장재의 두께를 달리할 때 청매실의 선도유지 효과도 서로 다르게 나타난다고 보고되었다. 청매실을 두께가 다른 필름에 포장, $25^{\circ}C$에서 8일간 저장한 매실은 LDPE 20, 30 필름에 포장한 것이 저장 8일에도 녹색을 그대로 유지한 것을 보아 선도유지 효과가 있음을 알 수 있다. 그리고 중량감소은 LDPE 30, 40이 적게 나타났고 장해정도는 LDPE 20, 30 적게 나타났다. 청매실의 저장 중 선도유지가 가장 양호한 LDPE 30 포장재에 청매실과 함께 탄산가스흡수제, 에틸렌제거제를 각각 또는 혼합첨가하고 밀봉한 후 $25^{\circ}C$에서 10일간 저장한 매실은 에틸렌제거제 첨가한 것이 녹색유지효과와 선도유지효과가 좋았으며 매실의 장해발생도 가장 낮은 것으로 보고되었다. 매실을 이용하여 제조되는 가공식품으로는 매실주, 매실차, 매실 Fruit leather, 매실절임, 고추장장아찌, 매실식초, 매실잼, 매실김치 등이 있다. 앞으로 매실의 이용을 증진시키고 소비를 더욱 촉진시키기 위해서는 매실의 생리학적특성을 이해하여 더욱 효과적인 저장 및 포장방법을 개발하고 생리활성을 이용한 새로운 매실제품의 개발에 대한 연구가 뒤따라야 할 것이다.

A study of Jinging(進貢) Bangmul(方物) Provisions in Yoji Doseo(輿地圖書) (『여지도서(輿地圖書)』에 나타난 진상(進上) 관련 조항의 분석)

  • In Ryeojidoseo(輿地圖書) Jinging(進貢) Bangmul(方物) item, The Goods name, date, How to make, quantity, etc. are recorded. However, the difference between the towns by the way it is written. at Goods in Jinging(進貢) Bangmul(方物) item, contained medicines, fish and shellfish, provisions, fruit, salted seaweed, weaponry, Leather, buchaeryu are included. And these goods are the town were offering some of the tribute(貢物) and the donation to the palace(進上物) in the mid 18th century. And this is closely related to daedongbeop(大同法). If this analysis approach to the provinces, This analysis makes clear. for example, in Gyeonggido(京畿道) only 12 species recorded and in Chungcheongdo(忠淸道) no a monthly-Jinsang(朔膳進上), in Chollado(全羅道) Sammyeongilbangmul(三名日方物) is not recorded but Bamboo and liabilities are recorded, no bangmul-Jinsang(方物進上) in Gangwondo(江原道), etc. This shows the nature of the Jinging(進貢) Bangmul(方物) item.
