오디의 인식도 및 오디 이용 가공 제품 개발 방향 연구 (관련 산업체 근무자와 전공 학생들을 중심으로) (A Study on Recognition and Preference for Processed Product Developments of Mulberry(Morus alba L) Fruit Products)

  • 본 연구는 오디 생산농가 호수와 재배면적이 점차로 증가 하고 있는 추세에서 산업체종사자와 전공 관련 학생들을 중심으로 오디의 이용도를 높이기 위한 연구이다. 설문조사를 통해 과실을 이용한 유사형태의 가공제품 이용횟수를 조사한 결과 산업체 종사자는 일주일에 3-6회 4 1.7%로 사용이 많았다. 오디 이용도를 높이기 위한 가공제품개발 형태는 산업체는 시럽과 냉동 퓨레, 잼의 형태로 전공 관련 학생은 농축액, 잼, 시럽 순으로 선호하였다. 이러한 결과에 기초한 제품개발형태로는 시럽, 무설탕 농축액, 잼 순으로 제품 개발을 할 수 있으리라 사료된다. 제과품목으로는 냉장제품, 빵, 케이크류의 제품을 개발할 필요성이 제기된다. 오디가공제품을 요리품목에 활용할 경우, 두 집단 모두 채소 및 고기요리와 가장 잘 어울릴 것으로 나타났으며 이는 채소와 함께 먹을 수 있는 드레싱 및 소스를 오디와 접목하여 개발할 필요성이 있으리라 사료된다.

매실의 수확시기별 성분의 변화 (Changes in Components of Ume Fruit during Development and Maturation)

  • 매실을 이용한 가공제품의 품질을 결정하는 여러 가지 물리 화학적 성질을 조사하기 위하여 1993년 6월 18일과 6월 28일 2회에 걸쳐 수확한 6가지 매실 품종의 가공적성에 영향을 주는 주요 성분을 측정한 결과는 다음과 같다. 1. 매실의 증량은 완숙기까지 증가되어 6월 28일까지 증가되었고 과실에서 씨의 중량을 뺀 과육자체의 중량인 과육율도 증가되었다. 그러나 소매는 6월 28일에 낙과가 많아지면서 중량과 과육율이 감소되어 6월 28일 이전에 수확해야 될 품종으로 생각되었다. 2. 매실의 경도는 2.5-3.9Kg/$mm\varphi$로 나타났는데 완숙기까지 성숙될수록 감소하는 경향을 보였고, 3. 수분은 88.5%-99%로 일본산 매실보다 수분함량이 높은 것으로 나타났으며 조회분은 0.6%-0.7%이었다. 4. 매실의 산도는 구연산함량으로 6.2%-7.5%이었는데 수확기가 완숙기로 갈수록 증가하는 경향을 나타냈으며 이러한 내용을 조사하기 위하여 비휘발성 유기산 함량을 분석하였다. 매실과육중의 주요 유기산은 구연산과 사과산으로 검출되었고 구연산은 완숙기로 성숙하면서 증가하였으나 사과산은 감소하는 경향이었는데 전체량은 성숙될수록 증가하였으며 앵숙, 남고, 소매에 많은 량이 함유되었다. 5. 매실 과육의 유리당 함량은 2.5%-3%였는데 과당과 포도당이 주요한 유리당으로 나타났고 수확시기에 따른 변화는 거의 없는 것으로 나타났다. 6. 비타민 C는 0.6-2mg%함유되었는데 앵숙을 제외한 다른 품종들은 완숙기로 성숙되면서 감소되었다. 7. 그리고 매실을 알카리성식품으로 판정하는데 중요한 요소인 금속 무기성분은 칼륨, 칼슘, 마그네슘, 나트륨 순으로 많았는데 나트륨과 마그네슘은 소량이 함유되었다.

Silencing of the Target of Rapamycin Complex Genes Stimulates Tomato Fruit Ripening

  • The target of rapamycin complex (TORC) plays a key role in plant cell growth and survival by regulating the gene expression and metabolism according to environmental information. TORC activates transcription, mRNA translation, and anabolic processes under favorable conditions, thereby promoting plant growth and development. Tomato fruit ripening is a complex developmental process promoted by ethylene and specific transcription factors. TORC is known to modulate leaf senescence in tomato. In this study, we investigated the function of TORC in tomato fruit ripening using virus-induced gene silencing (VIGS) of the TORC genes, TOR, lethal with SEC13 protein 8 (LST8), and regulatory-associated protein of TOR (RAPTOR). Quantitative reverse transcription-polymerase chain reaction showed that the expression levels of tomato TORC genes were the highest in the orange stage during fruit development in Micro-Tom tomato. VIGS of these TORC genes using stage 2 tomato accelerated fruit ripening with premature orange/red coloring and decreased fruit growth, when control tobacco rattle virus 2 (TRV2)-myc fruits reached the mature green stage. TORC-deficient fruits showed early accumulation of carotenoid lycopene and reduced cellulose deposition in pericarp cell walls. The early ripening fruits had higher levels of transcripts related to fruit ripening transcription factors, ethylene biosynthesis, carotenoid synthesis, and cell wall modification. Finally, the early ripening phenotype in Micro-Tom tomato was reproduced in the commercial cultivar Moneymaker tomato by VIGS of the TORC genes. Collectively, these results demonstrate that TORC plays an important role in tomato fruit ripening by modulating the transcription of various ripening-related genes.

  • Characteristics of fruit vibrations are related to the material properties of the fruit. A new method for spectral analysis is developed and used for the non-destructive estimation of fruit firmness. The resonant frequency of the fruit is related to its firmness. However, the determination of the resonant frequency is not easy So the smoothing method is applied to the frequency spectra to obtain a robust estimate for the resonant frequency.

플럼코트 '하모니' 과실의 수확 후 품질에 미치는 저장온도 및 1-MCP 처리의 영향 (Effects of Storage Temperature and 1-MCP Treatment on Postharvest Quality in Plumcot Hybrid cv. Harmony)

  • 본 실험은 자두와 살구의 종간잡종인 플럼코트 '하모니' 과실의 수확 후 적정저장 온도를 구명하고 에틸렌작용 억제제인 1-MCP 처리효과를 알아보기 위하여 수행되었다. 과실은 숙기를 3가지로 구분하여 수확 후 각각 0, 5, 10 및 $20^{\circ}C$의 온도에 저장하였고, 1-MCP($1{\mu}L{\cdot}L^{-1}$) 처리는 $10^{\circ}C$에서 24시간 처리 후 $10^{\circ}C$에 저장하였다. 온도가 낮은 저장조건일수록 플럼코트 '하모니' 과실의 호흡량을 현저히 낮추었고 온도가 높을수록 호흡량의 증가와 함께 품질이 빨리 저하되었다. 저장온도 $20^{\circ}C$는 과실의 부패가 빠르게 촉진되어 유통조건으로 부적합하였다. 숙기에 따른 품질은 30-50% 정도의 붉은 착색 과실이 양호하였는데 특히, $10^{\circ}C$에 저장할 때, 식미가 가장 양호하였다. 1-MCP는 플럼코트 '하모니' 과실의 연화, 색도 변화, 산도 변화 등 전체적인 품질의 변화를 지연시키는데 효과적이었다.

Quali-Quantitative Analysis of Flavonoids for Mulberry Leaf and Fruit of 'Suhyang'

  • BACKGROUND: Globally, mulberry (Morus sp.) is exploited for feeding leaf to silkworms in order to obtain silk fiber or for animal feedstock production. Also, mulberry fruit is known to a by-product that was produced from mulberry tree after harvesting leaves for silkworm rearing, as a yield and consumption of mulberry fruit was increased, it has been fixing to a newincome crop. Mulberry leaves and fruits are used for the health benefits of human beings. Mulberry contains various bioactive components, such as alkaloids and flavonoids. Mulberry flavonoids are an important part of the diet because of their effects on human nutrition. The flavonoids in mulberry leaf and fruit of 'Suhyang'(Morus alba L.) were determined. METHODS AND RESULTS: Flavonoids for mulberry leaf and fruit of 'Suhyang' were analysed using ultrahigh performance liquid chromatography coupled with diode array detection and quadrupole time-of-flight mass spectrometry (UPLC-DAD-QTOF/MS)technique. An UPLC-DAD-QTOF/MS system was used, and identification of mulberry leaves constituents was carried out on the basis of the complementary information obtained from LC spectra, MS ions, and MS/MS fragments. The mulberry leaf (16 flavonoids) and fruit (9 flavonoids) were isolated and analyzed from Suhyang using UPLC-DAD-QTOF/MS chromatogram. To the best of our knowledge, Quercetin 3-O-(6"-O-malonyl) glucoside and quercetin 3-O-rutinoside (rutin) was detected on the highest content in leaf and fruit, respectively and further research will be devoted to evaluate their biological activity. CONCLUSION: Obtaining information about the concentration of functional materials in mulberry leaves could contribute to the development and promotion of processed, functional products and offer possible industrial use of 'Suhyang', holding promises to enhance the overall profitability of sericulture.

국산 참다래 골드 신품종 도입농가의 경영성과 및 경영효율성 분석 (A Study on Management Performance and Efficiency of New Domestic Kiwi Fruit 'Gold' Growers)

  • The purpose of this study is to analyze the farms growing domestic kiwi fruit 'Gold' on their management performance and efficiency in order to reduce the risks involved with introducing new kind of crops for growing, and suggest improvements. First, the result of analysis showed that domestic kiwi fruit 'Gold' growers' income were higher than the average growers due to the fruit's high unit price and productivity. Second, the analysis of management efficiency resulted in scale efficiency having greater impact on inefficiency rather than pure technical efficiency. As for the analysis of technical efficiency, the depreciation costs of agricultural facilities had the greatest influence on its inefficiency. Third, inefficient farms put in excessive inputs across the board, while labor costs(self labor cost + hired labor cost) were the largest factor of optimal inputs according to the models of technical efficiency and pure technical efficiency. Fourth, because of greater reliance on mechanical tools from rising labor costs, there's a need for individual farms to avoid buying farming equipments and instead share the equipments of nearby farms and agricultural cooperatives, or start renting agricultural machines from companies.

  • Mulberry containing many bioactive components is very useful as functional food resource. Mulberry leaf ice cream, mulberry leaf tea, mulberry noodle, mulberry fruit jam, mulberry wine etc. have been developed in Korea. Because mulberry fruit has abundant natural pigments belonging to anthocyanins, we can expect their therapeutic and physiological effects. However, there are few reports about mulberry seed. So we studied on fatty acids of mulberry seed for the purpose of increasing the functional utilization of mulberry fruit. (omitted)

조기낙엽이 참다래 '헤이워드' 과실 바람들이와 품질에 미치는 영향 (Fruit Quality and Fruit Locule Air Hole of Kiwifruit (Actinidia deliciosa cv. Hayward) Affected by Early Defoliation)

  • BACKGROUND: The fruit quality and flowering characteristics of Kiwifruit (A. deliciosa cv. Hayward) in the following year is known to be affected by the extent and timing of defoliation of the current year. In korea, the production of kiwi, which is a perennial, straggling deciduous warm-temperate fruit, is often restricted by wind damage due to typhoons resulting to defoliation at the middle season of its growing period. In this paper, we report the effect of the different timing of defoliation and severities at the current season to the kiwifruit quality. METHODS AND RESULTS: Twenty seven-year-old 'Hayward' trees grown under polyethylene film rain-shelter were defoliated in different days from August to September at seven day-intervals. In each day, 0, 25, 50, 75 and 100% of leaves were removed from the trees. Fruits from each treatment were classified into four floating types (L: lying in bottom, S: standing on bottom, F: floating and SF: floating at the surface of water) by submerging them into tap water. Defoliation of kiwifruit trees in August and September caused air holes in locules of inner pericarp. Increased number of air hole in locules of a fruit was observed in floating types F and SF, and most of the air holes were located in stem end. The defoliation of trees in August significantly reduced the ratio of L-floating type fruits, which have the least number of locule air holes. The extent of defoliation also affected the distribution of the four types, the more leaves removed, the less L-floating type fruits harvested. The weight of fruits from trees defoliated in August was lower than that of fruits from September. Soluble solids content decreased as the number of locule air holes increased. Negative correlations were observed between the extent of defoliation and the weight and soluble solids content of fruits. CONCLUSION: Early defoliation effect on kiwifruit locule air hole occurrence and fruit quality were more severe in August than in September. And also if the defoliation severity is over 25%, severe fruit quality reduction expected to happen due to increase of fruit locule air hole in the inner pericarp.

성목기 '감홍'/M.9 사과나무의 착과수준이 고두증상 및 과실품질에 미치는 영향 (Influence of Crop Load on Bitter pit incidence and Fruit Quality of 'Gamhong'/M.9 Adult Apple Trees)

  • BACKGROUND: The 'Gamhong' cultivar, middle season apple with big fruit size and high soluble solid content, has been bred in Korea. However, it was hard to cultivate the cultivar in Korea by serious bitter pit. The relationships between shoot growth, fruit size, and bitter pit may be affected by crop load. This study was conducted for 2 years (7~8 years after planting) to investigate vegetative growth, fruit quality, bitter pit incidence, return bloom, and gross income for optimum crop load of 'Gamhong'/M.9 adult apple tree. METHODS AND RESULTS: The crop load was assigned to 4 different object ranges as follow: 45~64, 65~84, 85~104, and 105~124 fruits per tree. The vegetative growth, average fruit weight, percentage of fruits heavier than 375 g, soluble solid content, and return bloom increased significantly at the crop load range of 45~64 fruits. However, the lowest total gross income per tree may have been caused by the highest bitter pit incidence and the lowest yield per tree in any other crop load range. The total gross income and yield per tree increased significantly at the crop load range of 105~124 fruits and return bloom dropped to 40%, and hence it was possible to occur biennial bearing. It was 85~104 fruits that biennial bearing did not occur and total gross income was as high as the crop load range of 105~124 fruits. Also, the yield of high grade fruits per tree, with fruit weight of 400~499 g and none bitter pit on fruit surface, was highest at the crop load range of 85~104 fruits, compared to other crop load range. CONCLUSION: In considering fruit size, bitter pit incidence, return bloom, and gross income, the optimum crop load range of 'Gamhong'/M.9 adult apple tree in high density orchard was 85~104 fruits per tree.
