닥나무 열매( 저실자)의 휘발성 향기성분과 지방산조성에 관한 연구 (Volatile Aroma Components and Fatty acid in Fruit of Broussonetia Kazinoki Siebold)

  • Voltaile aroma components and fatty acid in fruit of Broussonetia kazinoki siebold were investigated . The experimental results revealed the presence of 41 volatile components . Forty one compounds , including 4 hydrocarbons(2.45), 7 aldehydes (20%), 3 ketones(1.0%), 7 terpenes(18.05), 8 acids (42%), 4 alcohols (4.2%) and 5 phenols (9.85) were identified. The content of crude lipid was 28.5% . Fatty acid composition were mainly consisted of linoleic (91.61%) and followed by oleic(3.525) , palmitic (3.40%), stearic (0.855) and linolenic acid(0.39%)

Kluyveromyces lactis에 의한 유청으로부터 과일향 성분의 생성 (Formation of Fruit Aroma Compounds from Whey by Kluyverumyces lactis)

  • 유당발효 효모인 Kluyveromyces lactis ATCC 8585를 이용하여 유청에서 과일향 풍미성분의 생산성을 향상시키기 위하여 3차에 걸처 NTG를 처리하고 geraniol의 항균력에 내성을 지니는 변이주 중 모균주에 비해 yeasty-flavor는 약하나 fruity-flavor가 강한 변이주를 선발하고 K.lactis 450 K라 명명하였다. 3일간 배양시킨 발효액을 pentane-dichloromethane(2:1)용매로 추출하여 얻은 oleoresin을 gas chromatography로 분석한 결과, 모균주보다 변이주가 더 많은 종류와 양의 향기성분을 생산한 것으로 나타났다.

Effect of essential oils and linalool on berry quality during simulated marketing of 'Shine Muscat' grapes

  • 'Shine Muscat' (Vitis labruscana Bailey x Vitis vinifera L.) grapes recently have been greatly favored in Korea, and as of 2022, account for 38.6% of the total grape market in Korea. However, there is a lack of research on post-harvest quality control appropriate to the unique characteristics of 'Shine Muscat'. In order to continuously increase domestic demand and exports in the future, it is essential to establish proper postharvest techniques. Essential oils have remarkable potential as biologically active and environmentally friendly antiseptics for the fruit industry. The objective of this study is to evaluate the effects of essential oils and aroma constituent treatment on fruit quality attributes of 'Shine Muscat' grapes in order to extend fruit quality during a simulated export period. A cluster of 'Shine Muscat' grapes was placed in a newly developed paper box container, and treated with rosemary essential oil, thyme essential oil, and linalool, along with an untreated control. The results showed no significant effect on fruit quality indices, such as cluster weight loss, berry firmness, soluble solids content, titratable acidity, sugar acid ratio, and color change, but showed a positive effect on the alleviation of berry shatter compared to the untreated control. In addition, rosemary oil treatment reduced the proportion of unhealthy berries. Therefore, the results indicated that the newly developed packaging container along with certain essential oil treatment could be applied as a promising packaging material for table grape export.

숙성 기간과 저장용기를 달리한 쌀 증류식 소주의 Check-All-That-Apply (CATA)를 활용한 감각특성 및 기호도 분석 (Sensory characteristics and preferences of rice-based distilled soju aged in different types of containers using Check-All-That-Apply (CATA))

  • CATA 방법을 이용하여 저장용기를 달리하여 숙성한 증류식 소주와 시판 제품의 감각 특성을 파악하고 소비자 기호도를 조사하였다. CATA 용어의 총 합을 분석한 결과 총 21가지 특성 중 14가지 특성에서 빈도수 차이가 10 이상으로 나타났으며, 11가지 특성에서 시료간의 유의적인 차이가 존재한 것으로 나타났다. 대응 분석 결과 F1상에서 오크 숙성 시료가 양의 방향으로 분포하였으며, 나머지 시료가 음의 방향으로 분포하여 오크 숙성에 의한 증류식 소주의 감각특성의 차이를 확인하였다. 전반적으로 오크숙성과 관련 특성이 높게 나타난 JRJ, 6RO, 18RO가 기호도 평가에서 전반적으로 높은 평가를 나타내었다. 기호도와 감각 묘사용어 빈도수 합의 관계를 살펴보면, 단향, 과일맛, 단맛의 경우 기호도에 긍정적인 영향을 미치며, 알코올향, 아세톤향, 쓴맛은 부정적인 영향을 미치는 것을 알 수 있다. 스테인레스 스틸과 옹기 같은 숙성용기와 숙성기간에 따른 감각특성의 차이는 CATA 평가를 통해서는 뚜렷한 차이를 확인하지 못 하였다. 향후 CATA 조사 인원 확대 및 다양한 감각평가 방법의 적용을 통해 이러한 차이도 파악이 가능하리라 여겨진다.

RTD (Ready-to-drink) 콜드브루커피의 이화학 및 감각특성 분석 (Physicochemical and sensory characteristics of commercial RTD cold brew coffees)

  • 시판되는 RTD 콜드브루커피 8종에 대하여 3개의 외관, 9개의 향, 5개의 향미, 4개의 질감/입안감촉에 대한 묘사용어 총 21가지를 개발하였으며, 묘사분석을 실시하였다. 실제 콜드브루커피의 주요 특성으로 알려진 다양한 향미와 쓴맛 관련 향미 용어가 개발되어 향후 콜드브루커피의 감각검사에 주요 평가 용어로 활용이 가능할 것으로 여겨진다. 또한 색도, 탁도, 갈색도, pH, 총산도, 가용성 고형분과 총 폴리페놀함량, 클로로제닉산의 8가지 이화학특성을 분석하였다. 묘사분석 감각특성 항목과 커피의 중요 지표인 이화학 특성 간의 상관분석을 통해 총산도, 가용성 고형분이 주요 감각특성인 흙향, 잔존감 항목에 높은 양의 상관관계를 보임을 확인할 수 있었다. 반대로 총산도, 가용성 고형분이 단향, 고소한향, 구수한향, 구수한맛 감각특성에 높음 음의 상관관계를 나타냈다. 갈색도와 폴리페놀 함량은 흙향과 잔존감 감각특성에 높은 양의 상관관계를 나타냈다. 향후 이러한 이화학적 분석 항목은 콜드브루커피 제품개발 시 감각특성 분석과 더불어 주요 품질지표 항목으로 활용이 가능할 것으로 여겨진다.

콜롬비아 커피 생두의 가공법과 로스팅에 따른 품질 특성 (Sensory Quality Characteristics of Colombia Coffee under Various Processing and Roasting Conditions of Green Beans)

  • The objective of this study was to investigate the sensory quality characteristics of coffee under various processing and roasting conditions of green beans. Colombia green bean samples were obtained from three processing methods: natural, pulped-natural, and washed methods. The green beans were roasted differently according to Agtron number: light (Agrton #65), medium (Agtron #55), and dark (Agtron #45). Moisture content, density, color value, pH, and total dissolved solid contents (TDS) were measured, and quantitative descriptive analysis (QDA) with 23 sensory attributes was performed for nine coffee samples. Hunter L values were significantly elevated with the degree of processing but reduced with roasting intensity. The pH values of the nine coffee samples were 5.6~6.2 and significantly increased with intensity of roasting. TDS decreased with an increase in processing and increased with roasting intensity. QDA results show that smoky aroma and nutty and chocolate flavor significantly increased while fruit and floral aroma decreased with intensity of processing. The attributes of brownness, oily surface, smoky aroma, bitter and burnt flavor, and greasy and heavy mouthfeel significantly increased while fruity and floral aroma, black tea, sour and umami flavor, pureness, and softness decreased as roasting intensity increased. Principle component analysis showed the overall significant relationships between 23 sensory attributes and nine coffee samples under different processing and roasting conditions.

  • Fruit ripening represents a genetically synchronized system that involves developmental process unique to plant species, The phenomenon of ripening includes changes in color, texture, respiration rate, flavor, and aroma. Ripe fruits generally exhibit increased susceptibility to pathogen infection. However, fruits as a reproductive organ have their own protection mechanism against pathogens to maintain their integrity during seed maturation. In several nonclimacteric fruits, such as cherry, grape, and pepper, that do not have an ethylene burst during ripening, resistance against phytopathogens increases during ripening. Colletotrichum gloeosporioides is a causal agent of anthracnose disease in pepper plants (Capsicum annuum). We have established that C. gloeosporioides has susceptible and resistant interactions with pepper fruits during pre- and post-ripening stages, respectively. And we have interested in looking for a molecular mechanism that would explain the fungal resistance during ripening of nonclimacteric pepper fruit. In this presentation, a molecular characterization of the pepper esterase gene (PepEST) that is highly expressed in the resistant response will be demonstrated as an example of development and industrial applications of versatile-usable genes of plant.

문경 풋사과를 활용한 발효 연구 (The Fermentation Analysis of Mungyeong Green Apple)

  • In this study, Green apple from Mungyeong area was used as material in the fermentation process. In apple fruit growing process, to produce a high quality apple fruit, some Green apple should be removed. Since the removed Green apple fruit is inedible, it doesn't have any economical value. To solve this problem, this paper proposed fermentation process to increase the economical value of raw apple as a fermentation product. This research conducted seven days, and the pH and brix value analysis was done every 12 hours during fermentation process. The experimental results show that the fermentation product under blender treatment is better than cutting treatment and without cutting treatment. Initial brix 25% is the best treatment for fermentation because produce fermentation product with a good taste and aroma than other treatment.

몇 가지 과일과 혼합한 멜론잼의 품질 특성 (Quality Characteristics of Melon Jams Mixed with Various Fruits)

  • Melon is a fruit consumed and grown globally because of the sweet taste and pleasant aroma. The purpose of this study was to determine the quality characteristics and antioxidant activities of melon jams added with various fruits such as apple, aronia, blueberry, grape, kiwi, passion fruit, and peach. We determined quality characteristics such as pH, total acidity, antioxidant activity, content of total anthocyanin, polyphenol and tannin, respectively. The 100% melon jam as the control was the highest pH and lowest total acidity, whereas mixed jams with melon and passion fruit showed opposite results. The mixed jams with melon and aronia of the total anthocyanin, the polyphenol contents, tannin, and ABTS radical scavenging activities, were markedly higher than those of the control and other samples (p<0.001), followed by the mixed jams with melon and blueberry. In the taste sensing analysis, mixed jams with melon and passion fruit revealed higher richness and lower aftertaste-bitterness and aftertaste-astringency than the commercial strawberry jam and other samples. Thus, jams mixed with various fruits, in particular, aronia, blueberry, and passion fruit were superior to the 100% melon jam in terms of physiological activity and palatability.
