Increasing the Pig Market Weight: World Trends, Expected Consequences and Practical Considerations

  • The present report has been aimed at reviewing important factors which need to be closely analyzed or considered when increasing the market weight of finishing pigs. The pig market weight has increased worldwide during the past few decades, which is attributable primarily to an increased lean gain potential of finishing pigs. To increase the market weight, however, the acceptability of larger pigs by the packer as well as pork consumers should be met first. By increasing the market weight, total number of breeding stock, as well as the facility for them, necessary for producing a given weight of pork can be reduced, whereas more building space for finishing pigs and an additional nutrition program for the later finishing period are needed. Additionally, a more thorough disease prevention program especially against ileitis and mycoplasma pneumonia may also be needed, because outbreaks of these are known to increase with increasing body weight over 110 kg. Some larger finishing pigs may deposit excessive fat that may be reduced or prevented by using hormonal and/or nutritional agents. Backfat thickness increases linearly with increasing body weight between 110 and 130 kg, whereas intramuscular fat content does not change significantly. With increasing live weight within this range, the ratios of belly and loin to carcass weight also are known to increase. Some physicochemical characteristics related to fresh and cooked meat quality including color, firmness, juiciness, etc. are known to be unaffected or slightly changed following an increase of slaughter weight. In conclusion, ratios of primal cuts and pork quality characteristics are not significantly affected by increasing the market weight. Moreover, increasing the market weight of lean-type pigs approximately up to 130 kg is normally profitable to producers, as long as packers and consumers accept larger pigs.

Effects of Increasing Slaughter Weight on Production Efficiency and Carcass Quality of Finishing Gilts and Barrows

  • A total of 582 gilts and barrows were analyzed to investigate the regressive relationships to slaughter weight (SW) of variables related to production efficiency and pork quality. Average initial weights and SW were 88.6 and 122.5 kg, respectively, for gilts and 88.7 and 121.4 kg, respectively, for barrows. Average daily gain and gain:feed ratio were not affected by SW. Backfat thickness, which was significantly greater (p<0.01) in barrows (23.3 mm) than in gilts (20.7 mm), increased with increasing SW (0.21 mm/kg; p<0.001). When the 4-notch carcass yield and quality grades were quantified according to an arbitrary 1 point-per-1 notch scale, the former, but not the latter, regressed on SW (-0.64/10 kg; p<0.01). The percent yield of the belly per total lean (overall mean=20.7%) increased with increasing SW (0.37%/10 kg; p<0.001), whereas in other cuts, the SW effect was negligible. The redness of the loin also increased with increasing SW (p<0.05), but other physicochemical characteristics were minimally influenced by SW. In sensory evaluation, effects of SW for fresh and cooked loin, ham, and belly were mostly considered insignificant in terms of quality, albeit statistically significant in several cases. However, positive regressions on SW (p<0.01) of the marbling and acceptability scores of fresh loin as well as the fat:lean ratio of fresh belly were noteworthy. Collectively, SW of approximately 125 kg was maximal for both sexes under the current carcass yield grading, in which 94 kg is the upper weight limit for grade A carcass. However, if the carcass weight limit of the grading was to be removed or broadened, the SW for gilts (but not that for barrows because of their excessive fat content at above 125-kg SW) could be increased to 135 kg or greater without compromising carcass quality.

Effects of the slaughter weight of non-lean finishing pigs on their carcass characteristics and meat quality

  • The present study aimed to assess the feasibility of increasing the slaughter weight (SW) of non-lean finishing pigs to improve their meat quality. A total of 36 (Landrace × Yorkshire) × Duroc gilts and barrows were slaughtered at 115 (Av), 125 (Hi), or 135 (XHi) kg, followed by physicochemical analyses and sensory evaluation on their longissimus dorsi (LD) and Semimembranosus (SM) muscles. Backfat thickness was greater (p < 0.05) for the XHi (31.2 mm) and Hi (29.3 mm) groups than for Av (25.0 mm). Dressing percentage and yield of the belly per whole carcass were also slightly greater for XHi and Hi vs. Av. The intramuscular fat (IMF) content of SM was greater for XHi (2.64%) than for Av (1.83%) and Hi (2.04%) and also was correlated with SW (r = 0.55). The pH value, lightness, redness, drip loss, shear force, and moisture and protein contents of LD and SM, as well as IMF content of LD, were unaffected by SW. Percentages of 14:0, 16:0, and total saturated fatty acids (FA) were less for Hi and XHi vs. Av in SM, those of total unsaturated FA, 18:2, 20:4, and n-6 being opposite; FA composition of LM was not influenced by SW except for a reduced 18:0 percentage for XHi vs. Av. The sensory score was less for XHi vs. Av for odor in fresh LD and SM, and less for Hi and XHi vs. Av for aroma in fresh LM; scores for color, drip loss, marbling, and acceptability were unaffected by SW. As for cooked muscles, none of the scores for color, aroma, flavor, juiciness, tenderness, and acceptability was affected by SW, except for a greater LD color score for Hi and XHi vs. Av. Collectively, the results suggested that the increased yield of the carcass and belly due to increased SW is outbalanced negatively by excessive backfat deposition in production efficiency, whereas the SW increase exerts little influence on overall sensory quality of fresh or cooked meat. Production of non-lean market pigs overweighing 115 kg therefore will be uneconomical unless consumers pay a substantial premium for the over-fattened pork.

저영양 비육돈 사양이 도체 및 돈육 품질에 미치는 영향 (Effects of the Low Plane of Nutrition on Carcass and Pork Quality of Finishing Pigs)

  • 본 연구는 저영양 비육돈 사양이 고영양 사양에 비해 도체 및 돈육의 질을 개선시킬 수 있을지를 조사하기 위해 수행되었다. 체중 약 50kg의 LYD 교잡종 암퇘지와 거세돼지 각각 68두씩을 8돈방에 배치하고 3.54Mcal DE/kg과 1.00% 라이신을 함유한 고영양사료 혹은 3.02Mcal DE/kg과 0.68% lysine을 함유한 저영양사료를 약 120kg까지 급여하고 도살하였다. 총 20개의 도체로부터 삼겹살, 등심, 뒷다리 및 목심을 잘라내고 삼겹살과 등심, 뒷다리 및 목심의 대표적인 근육의 질에 관한 이화학적 분석과 관능검사를 수행하였다. 일당증체량, 사료효율 및 등지방두께는 고에너지구보다 저에너지구가 낮았다(p<0.05). 목심의 가열감량, 경도 및 씹힘성 수치는 저영양구가 고영양구보다 낮았다. 신선육(근육)에 대한 관능평가에서 등심의 색깔, 상강도 및 기호도 평점은 저영양구가 고영양구보다 높았고, 삼겹살의 근육:지방 균형 평점은 저영양구가 고영양구보다 높은 경향을 나타냈다(p<0.10). 또한 뒷다리 가열육에 대한 관능평가에서는 풍미 및 다즙성 평점이 저영양구가 고영양구보다 높았다. 결론적으로, 이상의 결과는 저영양으로 비육돈을 사양하면 고영양 사양에 비해 성장성적은 저하되지만 도체 및 돈육의 질을 향상시킬 수도 있음을 시사한다.

Assessment of growth performance and meat quality of finishing pigs raised on the low plane of nutrition

  • This study was performed to investigate the effects of the low plane of nutrition on growth and meat quality of finishing pigs. A total of 136 crossbred barrows and gilts weighing approximately 55 kg were allotted to 8 pens, with 17 animals housed per pen, in a 2 (sex) ${\times}$ 2 (nutrition) factorial arrangement of treatments. The animals allotted to a medium plane of nutrition (MPN) received a finisher phase 1 (P1) diet containing 3.47 Mcal DE/kg and 0.92 % lysine and a P2 diet containing 3.40 Mcal DE/kg and 0.78 % lysine for 35 d and 36/43 d, respectively; the animals allotted to the low plane of nutrition (LPN) received only a P2 diet containing 3.00 Mcal DE/kg and 0.68 % lysine 7 d longer than MPN. The animals were slaughtered following the feeding trial, after which the loin, ham, Boston butt, and belly were taken from a total of 24 animals, with the average live weight being 120 kg, and their physicochemical and sensory quality traits were analyzed. Average daily gain did not differ between MPN and LPN during either P1 or P2. Average daily feed intake was greater (P < 0.05) in LPN vs. MPN during both phases whereas the opposite was true for the gain:feed ratio. Backfat thickness (BFT) was less in LPN vs. MPN (21.7 vs. 24.1 mm at 115 kg). The plane of nutrition influenced no effect on any of the physicochemical characteristics of fresh loin, ham, or Boston butt analyzed in the present study. Fresh hams from LPN exhibited superior aroma and odor scores than those from MPN; however, sensory quality traits were not influenced by the plane of nutrition in other fresh primal cuts or cooked meat. Instead, fresh primal cuts and cooked meat from gilts rendered superior physicochemical characteristics and sensory scores, respectively, than those from barrows. Results suggest that the low plane of nutrition may be useful to increase the slaughter weight of finishing pigs with a moderately high BFT by virtue of its BFT-lowering effect with or without exerting a slightly positive influence on pork quality.

'고체중' 출하돈의 성장효율, 도체 품질 특성 및 수익성 (Growth Efficiency, Carcass Quality Characteristics and Profitability of 'High'-Market Weight Pigs)

  • 비육돈의 출하체중은 육질은 물론 양돈업의 수익성에도 크게 영향을 미치는 요인이다(이 등, 2006). 출하체중은 품종 및 사양프로그램 등과 같은 내적인 요인과 소비자 집단의 문화, 전통 및 기호 성향은 물론 도축․가공업자의 요구 등 다양한 외적 요인에 따라 결정된다(Kim 등, 2005). 세계적으로 지난 20~30년 동안 비육돈의 출하체중은 5~20kg 증가하였는데 이는 무엇보다도 종돈 자체가 적육 생산을 극대화하는 방향으로 육종되어 재래의 돼지에 비해 현대의 비육돈은 체중 증가에 따른 지방침적의 증가 정도가 저하되어 일정 한도까지는 출하체중이 증가할수록 돈육의 생산원가가 저하되기 때문이다. 현재 세계적으로 비육돈의 출하체중은 주로 국가에 따라 90~140kg 범위의 수치를 나타내고 있고, 미국의 경우는 주에 따라 92~137kg의 분포를 보이고 있다(NASS, 2006). 국내에서 사용되고 있는 대부분의 종돈은 구미 지역에서 도입된 적육형일 뿐만 아니라 국내 돈육 소비자는 구미의 소비자에 비해 삼겹살과 같이 지방 함량이 높은 부위를 선호하는 등 돼지지방에 대해 관대하여 출하체중을 높게 유지할 수 있는 잠재력이 크다. 그러나 국내 비육돈의 출하체중은 2003년 이후 110kg 수준에 정체되어 구미 지역보다 5~20kg 낮은 수치를 나타내고 있어 앞으로 국내 비육돈의 출하체중을 높일 수 있는 여지가 많다. 이러한 점에 착안하여 본 연구진은 선행연구(이 등, 2006)에서 경남지역에서 가장 일반적으로 사육되고 있는 계통의 비육돈을 110kg 대비 130kg까지 비육․도축하여 도체특성 및 경제성을 분석하여 다음과 같은 주요결과를 얻었다. 본 지역의 대표적인 비육돈은 적육형이기 때문에 생체중 110kg 대비 130kg 출하돈은 사료섭취량과 등지방두께는 다소 증가하고 사료효율은 다소 감소하였으나 일당증체량은 저하되지 않았고, 암퇘지와 거세돼지의 등지방두께는 각각 다소 얇게 & 다소 두껍게 평가되었으며, 도체품질의 척도가 되는 근육의 이화학적 특성에는 차이가 없었다. 수익성 면에 있어서는 110kg 출하돈 대비 130kg 출하돈은 두당 약 20,000원의 손실이 발생하는데 이는 도체품질과는 관계없이 거의 전적으로 A & B 등급의 한계도체중 초과로 인한 도체등급 저하 때문에 발생한 손실로서 만일 이들 등급의 도체중 상한선이 철폐되기만 한다면 130kg 출하돈이 110kg 출하돈보다 훨씬 더 경제성이 높을 것으로 예측되었다. 또한 이와 같은 결과를 토대로 본 연구진은 현행 도체등급 판정 기준을 무시한 암퇘지와 거세돼지의 적정 출하체중은 각각 135 & 125kg 수준이고 이때 암퇘지와 거세돼지의 등지방두께 예측치는 각각 22.5 & 24.0mm라는 결론을 내린 바 있다. 따라서 본 연구는 선행연구의 결론과 같이 암퇘지와 거세돼지를 각각 135 & 125kg까지 비육․도축했을 때 성장효율, 도체의 품질 관련 이화학적 특성과 관능적 수용성 및 경제성을 분석하여 기 발표된 결론의 타당성을 확인․검증하고자 수행되었다.
