균온처리 동결에 의한 식육의 저장중 품질변화 (Changes in Quality during Frozen Storage of Meat with Thermal Equalized Freezing)

  • 균온처리 및 다양한 동결방법에 따른 동결식육의 조직과 냉동냉장 중의 품질변화를 비교 검토한 결과, 동결속도가 $0.39{\sim}0.66\;cm/h$ 일 때, 빙결정의 크기는 $30{\sim}50\;{\mu}m$ 수준이며 조직은 찌그러지거나 불규칙한 균열이 발생하였으며, 동결속도가 $1.14{\sim}2.26\;cm/h$의 경우는 빙결정 크기가 $10{\sim}30\;{\mu}m$ 수준으로 주로 조직 내 또는 조직내외에 생성되며 조직파괴는 미세하게 일어남을 보여 주었으며, 특정동결시간$(t_c)$에 따른 빙결정의 평균직경(D)는 $D({\mu}m)=4.089+26.88\;logt_c\;(r^2=0.913)$의 상관관계를 나타내었다. 동결방법에 따른 드립손실율은 우육의 경우 정지공기식으로 처리한 시료는 타 처리구에 비해 계속 높게 나타났으며, 돈육은 우육에 비해 상대적으로 드립손실량이 적게 나타났으나 송풍식으로 처리한 시료에서 저장 40일째, 7.39%로 가장 높게 나타났다. 동결 우육 및 돈육의 pH변화는 뚜렷한 차이를 나타내지 않았으며, VBN 및 TBA값에 있어서는 균온처리한 시료가 완만 및 급속동결 처리한 타 시료에 비해 저장 200일 까지 가장 변화가 없었다. 동결저장온도의 상하변동에 있어서는, 온도변동 횟수가 증가할수록 pH 및 수분함량은 뚜렷한 변화가 없었으나 드립손실율, VBN 및 TBA값은 온도 변동횟수가 증가할수록 서서히 증가하는 경향을 보여주었다.

저장방법에 따른 벼의 저장특성 (Storage Characteristics of Rough Rice by Storage Method)

  • The objective of this study was to investigate the adequate storage method that was able to maintain the high quality of rough rice according to storage methods and period. The quality change of the rough rice during the storage period was evaluated by storage method such as cooling bin using winter cold air, ordinary temperature bin, freezing, refrigeration and indoor storage. Moisture content, brown rice whiteness, hardness, crack ratio and germination ratio were measured in this study. Moisture content of rough rice stored in cooling bin using winter cold air and ordinary temperature bin were decreased by 0.07% and 0.42%, respectively, which were lower than the other storage method. The hardness of brown rice increased in order of storage method such as winter cooling bin, normal bin, freezing storage, refrigeration storage and indoor storage. Crack ratio by indoor and ordinary temperature bin storage were increased by 2.68% and 3.63%, respectively, whereas cooling bin using winter cold air, refrigeration and freezing storage showed below 1.0%. The highest germination rate was found in cooling bin using winter cold air. As a result, cooling bin using winter cold air can be evaluated for the adequate storage method of rough rice.

KLAPS를 이용한 한반도 어는비 사례 연구 (Case Studies on Freezing Rain over the Korean Peninsula Using KLAPS)

  • In this study, the occurrence circumstances of 3 cases (12 Jan 2006, 11 Jan 2008, 22 Feb 2009) when the freezing rain was observed at more than two observatories in a day with more than three times each observatory, were investigated. Following the advanced study about the same cases, we have tried to find more delicate differences in using the Korea Local Analysis and Prediction System (KLAPS; 5 km reanalysis data) that has the smallest grid scale at current situation. As results, three common characteristics are found: (1) Just before the occurrence of the freezing rain, the wind direction was consistently continuous and the wind speed was constant or gradually increased for at least 3 hr more. (2) Surface air temperature (Relative humidity) was respectively $3.08^{\circ}C$ (28.76%), $0.47^{\circ}C$ (50.07%) and $-3.60^{\circ}C$ (71.07%) 3 hr ago to break out the freezing rain. It means the freezing rain occurs in a wide range of atmospheric environments. However, the closer it got to the occurrence time of the freezing rain, the closer the surface air temperature was to $0^{\circ}C$, and the bigger the humidity of the surface air was. (3) The liquid precipitation formed in the upper atmosphere, met a cold advection bellower than 950 hPa level and suspected to be changed to the super-cooled condition.

맥류의 한해와 내동성에 관하여 (Nature of Cold Injury and Resistance in Wheat and Barley)

  • There are several meterorolgical stresses in the winter cereal crops. Among these stresses, cold injury is one of the most important stresses for wheat and barley production in Korea. The reduction in grain yield of the wheat and barley due to cold injury has occurred almost every year in Korea. The objective of the study was to get the basic information in relation to the cold injury and to detect the method minimizing the damage of cold injury. When the air temperature was the ranges of -13$^{\circ}C$ to -15$^{\circ}C$, the soil temperature at the crown part of the plant was very stable, whereas in the ranges of -2$^{\circ}C$ to -3$^{\circ}C$ the soil surface temperature was more unstable and cold than air and subterranean temperatures. The different parts of the plant in wheat and barley possess the different levels of cold hardiness. In comparison to the cold hardiness of plant parts, the leaf and crown are the less sensitive to cold injury than root and vascular transitional zone. The type and extent of stress is determined by the redistribution pattern of water during freezing. These types from freezing processes were three types: a) Equilibrium freezing pattern b) Non -equilibrium freezing pattern, c) Non-equilibrium freezing pattern typical of tender tissues. Cold hardiness in wheat plants were more harder than barley plants at vegitative stage, but inverted at the reproductive stage. Injuries by low temperature during the seasons of barley cultivation in Korea were occured mainly in four stage; in the first and third stage, frost injury occurs, the second stage, freezing injury, and the fourth stage, chilling injury.

한국 남부지방 난온대성 상록활엽수의 동해피해 -전라남도 광양시 중마동의 후박나무를 중심으로- (Freezing Injury of Evergreen Broad-Leaved Trees in Warm-Temperature in the Southern Region in Korea -A Case of Machilus Thunbergii Siebold & Zucc. on the Jungma-dong, Gwangyang-city, Jeollanam Province-)

  • This study was carried out to clarify the climatic factors of the freezing injury for the judgement on the adaptation areas of evergreen broad-leaved trees. We surveyed and analyzed the climatic factors of the freezing injury to Machilus thunbergii Siebold & Zucc. on the streets with the analyzation of planting grounds, soil conditions and the surrounding buildings. This study showed that only the minimum air temperature factor out of the other climate elements, which were the annual precipitation; the average annual temperature; the average monthly temperature of january; the average monthly minimum temperature of January; the average temperature of the coldest month; the warmth index and the coldness index, was matched up with the previous theories and reports on the freezing damages on the evergreen broad leaved trees and Machilus thunbergii Siebold & Zucc. The freezing injury of Machilus thunbergii Siebold & Zucc was occurred when the mean minimum temperature of the coldest month(TMC) in winter season fell down below $-4.1^{\circ}C$ and the temperature fell down below $-9.2^{\circ}C$. The freezing damage on Machilus thunbergii Siebold & Zucc surrounded by high buildings were less than those surrounded by low buildings or at non buildings.

현장계측 데이터를 이용한 일평균 대기온도 산정방법과 동상방지층 설계를 위한 동결지수 보정 (Computing Procedure of Daily Average Air Temperature using Field Data and Frost Index Calibration for Anti-Frost Heave Layer Design)

  • 도로의 동상방지층을 설치하기 위하여 동결심도(동결관입깊이)를 산정하는데, 동결지수는 $0^{\circ}C$ 이하의 기온과 영하온도의 지속시간을 곱한 값을 연간을 통하여 누계한 수치로 표시된다. 따라서, 일평균 대기 온도를 구하는 방법이 동결지수에 영향을 미칠 수 있다. 기상청의 경우 1999년을 기점으로 이전에는 1일 4회 평균 대기온도 제공하였으며, 현재는 1일 8회 평균 대기온도를 제공하고 있다. 본 연구에서는 이러한 일평균 대기온도를 산정하는 방법이 동결지수의 산정결과에 미치는 영향을 확인하기 위하여 한반도 남부(동결지수 $350^{\circ}C{\cdot}$일 미만) 6개 지역을 현장조건(저성토부, 절성경계부 및 절토부)에 따라 구분하여 15개소에 대하여 현장계측시스템을 구축하였다. 그리고 현장계측시스템으로부터 얻어진 대기온도를 통하여 동결지수를 산정하고 상호 비교분석 하였다. 비교분석 결과 일반적으로 1일 4회 평균 대기온도를 사용한 경우가 1일 8회 평균 대기온도를 사용하는 경우보다 약 3% 전후 큰 것으로 나타났으며, 본 연구 지역에 대한 동결지수를 결정할 때 동결지수를 보정할 수 있는 보정식을 제안하였다.

  • This study was experimentally performed to investigate freezing behavior of sea water along horizontal cooled a circular tube with bubbly flow. The experiments were carried out for a variety of parameter, such as sea water velocity, air-bubble flow rate, and cooled-tube temperature. The shape of freezing layer, freezing rate and salinity of frozen layer were observed and measured. And the flow patterns around cooled tube were visualized using the PIV to analyze the relationship between the flow structure and the freezing characteristics. It was found that the experimental parameters gave a great influence on the freezing rate and the salinity of the frozen layer.

미립 피복 상변화 물질의 상변화 온도에 대한 연구 (Phase-change Temperature of Micro-encapsulated Phase-change Material)

  • In order to obtain a new heat transfer fluid having a high thermal capacity, micro-capsules of a phase-change material can be a successful candidate to be added into water. In this study, 25, 50, 100, and $200\mu$m diameter micro-encapsulated Lauric acids were tested by a differential scanning calorimeter. The Lauric acid itself had a single freezing curve, but the micro-encapsulated Lauric acid had double freezing curves. The second freezing dominated for $25\mu$m diameter Lauric acids. But the first freeing energy became big as the size of the capsule increased.
