잡초의 향기가 소비자 행동에 미치는 영향 (Effect of Fragrance of Weeds on the Behavior of Consumers)

  • The fragrance has a great influence on consumers' cognition, emotional response, attitude, memory, and behavior since the human sense of fragrance is physically and neurologically closer to the hippocampus of the brain. The fragrance materials are exposed to humans ranging from skin interaction to inhalation. We have lots of stories and literature on the usage of fragrance in everyday life in Korea from the Dangun myth to present K-beauty cosmetics. In Korean history, such archives as Dong-Eui-Bo-Gam and Gyu-Gak-Chong-Seo at Joseon Dynasty clearly recorded the application of many weeds for the manufacture of various fragrance products. In recent times, fragrances in weeds have been being applied to touch the consumer's feelings. The present mini-review is an attempt to introduce and discuss fragrant weeds in the archives and in science journals, effects of fragrant weeds on the human electroencephalographic activity, and effects of fragrance on the behavior of consumers. This review could be useful for the development of natural cosmetic and perfumery products from fragrant weeds.

방향성 식물자원의 정유함량에 관한 연구 I. 목련과 , 운향과 수목의 시기 및 부위별 정유함량 (A Study on the essential oil of fragrant woody landscape plants)

  • This experiment was carrie out to investigate the amount of essential of leaves and fruits of Magnolia sieboldii, Magnolia hypoleuca, Evodia danillii male and female, Phellodendron amurense male and female and Zanthoxylum schinifolium male and emale by Karlsrube set on August, August, September and October in 1994. Essential oil yield was highest in the fruits of Zanthoxylum schinifollium leaves on Augus the amount of essential oil of Magnolia sieboldii and Magnolia hypoleuca leaves was more than the one of Evodia danillii, Phellodendron amurense and Zanthoxylum schnifolium leaves. The amount of essential oil were not diferent between male and female leaves.

기체크로마토그래피에 의한 한국산 배초향의 정유 분석과 Cholinesterase 억제활성 (Gas Chromatographic Analysis and Cholinesterase Activity of the Essential Oil from Korean Agastache rugosa)

  • The herb of Agastache rugosa (Lamiaceae) called Korean mint as a spice or Agastache Herba as a crude drug is known to contain highly fragrant volatile substances. This research aimed to establish the quantitative gas chromatography (GC) method on the essential oil of A. rugosa using the three standard compounds, estragole, methyleugenol, pulegone, and to find whether the essential oil has anti-Alzheimer's activity. The GC quantification method was established by determining the linearity of calibration curve ($R^2$), linear range, and both limit-of-detection (LOD) and limit-of-quantification (LOQ). The $IC_{50}$ of the essential oil on the activities of acetylcholinesterase (AChE) and butyrylcholinesterase (BChE) were determined to be $69.06{\pm}0.26$ and $76.71{\pm}0.58{\mu}g/ml$, respectively.

Stimulative and Sedative Effects of Essential Oils upon Inhalation in Mice

  • This study investigated the stimulative or sedative effects of inhaling fragrant essential oils (EOs) by using a forced swimming test (FST) with mice. This behavioral test is commonly used to measure the effects of antidepressant drugs. The inhalation by mice of EOs, such as ginger oil (p<0.05), thyme oil (p<0.05), peppermint oil (p<0.05), and cypress oil (p<0.01) resulted in 5% to 22% reduction of immobility. The same results were achieved when over-agitation was artificially induced in the mice by an intraperitoneal injection of caffeine (a psycho-stimulant). In contrast, inhalation of some EOs by the mice resulted in increased immobility. To evaluate more correctly the sedative effects of EOs, the immobility of over-agitated mice induced with caffeine was ascertained after the inhalation of various EOs. Inhalation of lavender oil (p<0.01) and hyssop oil (p<0.01) increased the immobile state in mice that were treated with caffeine. The results of this study indicate that the inhalation of essential oils may induce stimulative or sedative effects in mice.

오리엔탈 나리 '카사블랑카'의 개화단계별 향기성분 변화 (Change of Fragrant Components by Flowering Stages in Lilium Oriental Hybrid 'Casa Blanca')

  • 본 실험은 오리엔탈 나리 'Casa Blanca'의 유용한 향기성분을 찾아내어 이 성분들의 개화단계별 정유함량과 정유성분 구성의 차이를 알아보고 각각의 이용 가능한 추출적기를 규명하고자 수행하였다. 'Casa Blanca'의 개화단계별 정유함량은 꽃봉오리 단계를 제외하고는 개화단계가 진행됨에 따라 증가하여 만개 후 개화 단계에서 가장 높았다. 오리엔탈 나리 'Casa Blanca'의 정유성분을 분석해 본 결과 이들의 주성분은 각 단계에 따라 farnesol(18.96%), benzyl salicylate(13.81%), butyl-hydroxy toluene(12.87%), geranyl linalool isomer(7.46%), isoeugenol(7.17%)이었다. 이들의 개화 단계별 정유성분을 비교해 보면, fatty acid derivative류는 개화 초기와 개화 후기에 많은 반면 benzenoid류는 개화 중기, 만개 단계에서 많았다. 오리엔탈 나리 'Casa Blanca'의 주성분 중 butyl-hydroxy tolune과 isoeugenol과 같은 benzenoid류 물질들은 대부분 강한 항산화 효과가 있어 식품의 첨가제나 방부제로 이용 가능할 것으로 기대된다. Geranyl linalool isomer와 같은 monoterpene계 물질은 개화 후기로 갈수록 함량이 증가되었고 나리의 구성 성분 중 가장 많은 함량을 나타내는 farnesol과 같은 sesquiterpene계 물질은 만개 시에만 나타났고 이는 geranyl linalool isomer와 함께 좋은 향기를 가져 중요한 향료로 이용 가능할 것으로 기대된다. 이러한 오리엔탈 나리 'Casa Blanca'의 유용한 주성분들의 개화단계에 따른 추출적기를 살펴보면 farnesol, benzyl salicylate은 만개단계, butyl-hydroxy tolune은 1/2 개화한 단계, geranyl linalool isomer, isoeugenol는 만개 후 단계였다. 이로 미루어 보아 오리엔탈 나리 'Casa Blanca'의 정유는 개화단계에 따라 정유성분과 정유함량에 변화가 있었으며, 이들 성분은 추출적기를 알맞게 고려한다면 향장류나 식품첨가제, 아로마테라피 등에 유용하게 이용될 것으로 기대된다.

박하(Mentha arvensis) 향료의 향기성분이 정신적 스트레스 완화에 미치는 효과 (Fragrance Chemicals in the Essential Oil of Mentha arvensis Reduce Levels of Mental Stress)

  • 본 연구는 박하(Mentha arvensis) 식물 유래 향료의 향기성분을 구명하고, 향기성분들이 인간의 뇌파에 어떠한 영향을 미치는지를 이해하고자 수행하였다. 초임계추출기를 이용하여 박하 식물(Mentha arvensis L. f. piperascens)로부터 에센셜오일을 얻었으며, 최적 회수율은 $70^{\circ}C$, 200 bar 조건에서 2.38%이었다. 박하 에센셜오일에 함유되어 있는 향기 화합물을HS-SPME/GC-MS로 분석한 결과, 총 32종의 화합물이 검출되었는데 alcohol 류가 6종(67.11%), hydrocarbon 류가 13종(17.05%), ester 류가 9종(11.50%), ketone 류가 2종(7.16%), oxide가 1종(2.77%) 그리고 aldehyde가 1종(0.56%)이었다. 박하 에센셜오일에 함유된 주된 향기 화합물은 (Z,Z,Z)-9,12,15-octadecatrien-1-ol (50.06%), 2-hydroxy-4-methoxyacetophenone (7.50%)과 3,4-dihydro-8-hydroxy-3-methyl-1H-2-benzopyran-1-one (6.60%) 이었다. 총 20명의 피험자(남녀 각 10명)를 대상으로 박하 에센셜오일 향기 흡입 전과 흡입 중에 뇌파분석을 수행한 결과, 향기를 흡입 중에는, 흡입 전과 비교하여, relative fast alpha power spectrum이 유의성 있게 증가하는 반면(p<0.05), gamma power spectrum과 spectral edge frequency 90% 지표는 유의성 있게 감소하는 결과를 얻었다(p<0.05). 본 연구의 결과들은 박하의 향기성분이 정신적 긴장을 완화시킨다는 것을 시사하여 준다.

  • The essential oils are fragrant products whose complex compositions are obtained from various parts of plants by dry or steam distillation. Plants with variable biological activities have been explored worldwide. The presence of a large number of phenols, terpenes and other aromatic compounds make essential oils more precise in their mode of action. Because of this, they are known to possess many biological activities like antimicrobial, antioxidant and anti-inflammatory etc. In this article, we will review the published literature summarizing the chemistry of essential oils and their important biological activities.

Determining the Optimal Recipe for Long-Grain Jasmine Rice with Sea Tangle Laminaria japonica, and Its Effect on the Glycemic Index

  • Thai Jasmine rice (Oryza sativa, long grain Indica var.) is popular in southeastern Asia and China due to its non-glutinous, fluffy texture and fragrant smell. However it has a high starch digestibility, which leads to an increased glycemic index (GI). Therefore it may require modified cooking methods for diabetes patients. The objectives of this study were to optimize the ratio of Thai Jasmine rice, sea tangle, and olive oil (CLTR) based on consumers' acceptance. The GI of plain cooked Thai Jasmine rice (CLR) was measured as a control. Sensory evaluation and response surface methodology were used to determine the optimal ratio. Texture analysis and nutritional evaluation were also performed on the optimal recipe of cooked Jasmine rice with sea tangle. A multiple regression equation was developed in quadratic canonical polynomial models. We used 26 trained Chinese panelists in their forties to rate color, flavor, adhesiveness, and glossiness, which we determined were highly correlated with overall acceptability. The optimal CLTR formula was 34.8% rice, 2.8% sea tangle, 61.9% water, and 0.5% olive oil. Compared to CLR, CLTR had a lower hardness, but a higher springiness and cohesiveness. However, CLR and CLTR had the same adhesiveness and chewiness. The addition of sea tangle and olive oil delayed retro-gradation of starch in CLTR and increased total dietary fiber, and protein and ash contents. The degree of gelatinization, and in vitro protein and starch digestibility of CLTR were lower than those of CLR. Based on Wolver' method, the GI of CLTR (52.9, incremental area under the glycemic-response curve, ignoring the area below fasting, as used for calculating the GI [Inc]) was lower compared with that of CLR (70.94, Inc), which indicates that CLTR is effective in decreasing and stabilizing blood glucose level, owing to its lower degree of gelatinization and starch digestibility. Our results show that CLTR can contribute to the development of a healthier meal for families and the fast food industry.
