Quality Characteristics of Yanggaeng with Peucedanum japonicum Powder (방풍나물 분말 첨가 양갱의 품질특성)

  • This study developed a new yanggaeng(red bean sweet jelly) by adding Peucedanum japonicum powder from 5% to 20%. It has been evaluated its physicochemical, sensory characteristics and antioxidant activity. The DPPH radical scavenging activity of Peucedanum japonicum powder was 40.53% and the total phenolic compound content was 13.36 mg/100 g. Moisture content of yanggaeng with Peucedanum japonicum powder added 5~15% was 50.24~48.32% significantly higher than in the control group(p<0.05). The hardness of yanggaeng was $2,748.25g/m^2$in control and the PY5 and PY10 were $4,012.05g/m^2$ and $4,019.40g/m^2$ respectively, significantly higher than control(p<0.05). However, when the amount of Peucedanum japonicum powder was increased by more than a certain rate, it decreased again, as $2,155.39g/m^2$ in PY20. As a result of the acceptance test of the yanggaeng, the flavor of yanggaeng with Peucedanum japonicum powder was evaluated significantly higher than control(p<0.05), but PY20 was 5.20 not significantly difference with PY10. The overall acceptance of the yanggaeng showed the lowest value of 4.00 in the control, PY15 showed significantly high value as 7.80(p<0.05). Compared with the control, the acceptance of samples with Peucedanum japonicum powder 5~15% was higher than that of control. It was concluded that 10% and 15% of the Peucedanum japonicum powder could be added for the development of the yanggaeng. According to the above study result, to enhance the utilization of Peucedanum japonicum for developing functional food would be possible, and a new yanggaeng product by adding Peucedanum japonicum would have good potential.

Quality Characteristics of Sulgidduk Added with Saltwort(Salicornia herbacea L.) Powder (함초 분말을 첨가한 설기떡의 품질특성)

  • This study was performed to examine the optimum addition amount of saltwort(Salicornia herbacea L.) powder to rice flour in the preparation of saltwort Sulgidduk. Saltwort powder was added to rice powder at ratios of 5, 10, 15 and 20%(w/w). The moisture contents of Sulgidduk were increased with the addition of saltwort powder. The pH contents of Sulgidduk were decreased with the addition of saltwort powder. The incorporation of saltwort powder in Sulgidduk lowered the lightness but increased the redness values. Mineral contents of Sulgidduk were increased with the addition of saltwort powder. The hardness and brittleness were decreased, whereas cohesiveness was increased with the addition of saltwort powder. In the sensory evaluation of saltwort Sulgidduk, the acceptance of flavor, taste, chewiness and overall acceptability characteristics was the highest at the 5% level. Saltwort Sulgidduk, with the addition of 5% of saltwort powder to rice flour was found to be the best recipe in terms of the sensory qualities.

Quality Characteristics of Sulgidduk by the Addition of Sea tangle (다시마를 첨가한 설기떡의 품질 특성)

  • This study attempted to determine the optimum addition amount of sea tangle to rice flour in the preparation of sea tangle Sulgidduk. The moisture content of sea tangle Sulgidduk with added sea tangle was $39\sim53%$. With increasing addition of sea tangle, the L-value was decreased. The a- and b-values were the highest at the 25% level, there is no respective comparison here. In the mechanical evaluation of sea tangle Sulgidduk, the hardness was the lowest in the 35% sea tangle Sulgidduk during storage. The adhesiveness and cohesiveness did not differ significantly with the addition of sea tangle for storage period. The springiness was the highest at the 25% level during storage. The gumminess and brittleness were the lowest at the 35% level and the highest at the 0% level during storage. In the sensory evaluation of sea tangle Sulgidduk, the acceptance of the color, taste and chewiness characteristics was the highest at the 25% level. Sea tangle Sulgidduk with the addition of 25% of sea tangle to rice flour was found to be the best recipe in terms of the sensory qualities of color, taste, chewiness and overall acceptability.

The Quality Characteristics of Sulgidduk with Added with Burchu (Allium tuberosum R.) Powder during Storage (부추가루 첨가 설기떡의 저장 기간 중 품질 특성)

  • The purpose of the study was to perform research a proximate analyses and sensory evaluations for sulgidduk over a storage period, where the sulgidduk contained added with buchu powder added at 1%, 2%, and 3% concentrations. The general composition of the buchu powder was 34% crude protein, 1.8% crude lipid, and 21.8% crude fiber while the moisture contents of the buchu powder was 2.71%. The moisture contents of the sulgidduk samples over the storage period ranged from 34% to 38%. Color and moisture changes were not significant (p<0.05) during storage, while the values showed significant decreasing trends (p<0.05) with greater additions of buchu powder. In terms of textural characteristics, hardness, cohesiveness, gumminess, and chewiness decreased significantly (p<0.05) with greater concentrations of buchu power, while adhesiveness and springiness showed no significant differences(p<0.05). Based on the sensory evaluations, overall preference was high for the 3% buchu powder sample. This sample received high scores on flavor, color, taste, chewniess, and moisture, suggesting that adding 3% buchu powder would be feasible for making sulgidduk.

The Quality Characteristics of Sulgidduk with the Addition of Citron Preserved in Sugar (당절임 유자를 첨가한 설기떡의 품질특성)

  • This study investigated the most desirable mixture ratio of citron preserved in sugar to rice flour for Yuza Sulgidduk(Sulgidduk added with Citron). The moisture contents were $39\~40\%$ The L-value was decreased with increasing addition of Citron, while a- and b-values were increased. The pH was increased with addition of citron. In the mechanical evaluation, hardness was the highest at $\0%$ and the lowest at $26\%$ citron content during the storage period. Cohesiveness was decreased and adhesiveness was increased during the storage period. Springiness showed little difference among the different levels of citron addition. Gumminess decreased with increasing citron content. Brittleness was the highest at $0\%$ level and the lowest at $26\%$ level. In the sensory test characteristics, the color, flavor, sweetness, sourness, astringency were increased with addition of citron. The softness, moistness, chewiness and the overall-acceptability were the highest at $20\%$ level. Consequently, Yuza Sulgidduk with the addtion of $20\%$ citron to rice flour was determined to be the best recipe in terms of the sensory test results.

Quality Characteristics of Yukwa (Fried Glutinous Rice Cake) with Curry Powder (카레 분말을 첨가한 유과의 품질특성 연구)

  • Yukwa was prepared with different amounts of curry powder (0, 5, 10, 15, and 20%) based on the amount of waxy rice flour used, and its physical, sensory, and antioxidant properties were measured. In terms of the textural properties, the hardness began to increase when ${\geq}15%$ curry powder content was used; however, the crispiness was unchanged by the amount of curry powder used. The expansion degree of yukwa significantly decreased when 20% curry powder was used. The internal microstructure was measured by scanning electron microscopy (SEM), which showed a more compact and homogeneous structure as the curry powder content increased. The use of increased curry powder in yukwa decreased the acid and hydroperoxide values, and this could have resulted from the antioxidant action of curcumin in the curry powder. Through sensory evaluation, yukwa containing 15% curry powder was chosen as the most acceptable by the elderly.

Evaluation on HACCP prerequisite-program performance within general hospital foodservice operations (종합병원 급식소의 HACCP 선행요건 관리 수행도 평가)

  • Purpose: This study was conducted to examine prerequisite-program performance of the hospital foodservice operation and develop measures for improvement of prerequisite-program performance. Methods: Data were collected through surveys administered to 168 hospital dieticians in the Seoul, Incheon, Gyeonggi-do, Daegu, and North Gyeongsang areas. Out of total questionnaires, 65 questionnaires were usable and the response rate was 38.7%. Statistical analyses were performed using the SPSS program (ver 20.0) for ${\chi}^2-test$ and one-way ANOVA. Results: According to the result of the prerequisite-program evaluation, the percentage of 'appropriate', 'needs to be improved', and 'inappropriate' was 44.6%, 47.7%, and 7.7%, respectively. The score for the 'inappropriate' group was significantly lower than that of the 'appropriate' group or 'needs to be improved' group on the food safety management (p < 0.001), preparation facility management (p < 0.001), water management (p < 0.001), and storage transportation management (p < 0.05) parts. Holding rate of foodservice facility and equipments in the 'appropriate' group were significantly higher than in the others on convection oven (p < 0.01), air conditioner (p < 0.01), three-compartment sink (p < 0.01), hot-holding equipment (p < 0.01), cold-holding equipment (p < 0.05), exclusive thawing refrigerator (p < 0.05), and sterilizer for sanitary shoes (p < 0.05) items. Conclusion: To improve the quality of hospital foodservice, foodservice managers and HACCP specialists should develop and implement a prerequisite-program and a HACCP plan considering the characteristics of the hospital foodservice operation.

Quality Characteristics of Pound Cake with Added Mulberry Fruit Powder (오디 분말을 첨가한 파운드 케이크의 품질 특성)

  • Mulberry fruit powder was substituted for wheat flour in pound cake recipes in amounts of 0%(control), 5%, 10%, 15%, and 20%. We measured the specific gravity of the dough, specific loaf volume, dough yield, baking loss, moisture content, pH, color, identified the texture, and conducted a sensory evaluation for each pound cake. Moisture content increased according to the amount of mulberry fruit powder, but specific gravity, dough yield, and pH decreased. Specific loaf volume and baking loss increased as the amount of mulberry fruit powder increased, but not considerably. The chromatic 'L' and 'b' values were reduced as more mulberry fruit powder was added to more pound cake, While the chromatic 'a' value increased. Texture hardness, springiness, gumminess and chewiness decreased as the pound cake contained more mulberry fruit powder. Cohesiveness did not show any considerable differences beteeen the cakes. A sensory evaluation showed a high preference for the pound cake made with 10% mulberry fruit powder.

Quality Characteristics and Antioxidant Activity of Cookies Prepared from Taraxacum coreamm Powder (민들레 분말을 이용한 쿠키의 품질과 항산화성)

  • This study assessed the preparation and quality characteristics of cookies prepared from Taraxacum coreamm powder (TCP) (0, 2, 4, 6, 8%) substituting wheat flour. The pH of the cookie dough significantly decreased with increasing TCP. However the density of the cookie dough was not significantly different among the test groups. The baking loss rate of the groups with TCP was slightly lower, whereas the moisture content was higher than the control group. The spread factor of the cookies decreased significantly with increasing TCP. The hardness of the cookies increased as TCP increased. In Hunter's color value, the L and a value of the cookies decreased with increasing TCP, while the b value increased. The DPPH radical scavenging activity of the cookies significantly increased with increasing TCP. Based on the above results, this study suggested that TCP can be a good ingredient to increase the functionality of cookies.

Effect of Carrot Powder on Anti-Oxidative and Quality Characteristics of Perilla-Dasik (당근가루를 첨가한 들깨다식의 품질 특성 연구)

  • Carrot powder was added at different levels (0, 5, 10, 15, and 20%) to Perilla-Dasik, and its effects on the physical and antioxidant properties of Dasik were measured. For texture characteristics, hardness, cohesiveness, and chewiness of Dasik slightly increased as carrot powder content increased. For color properties, both $a^*$ (redness) and $b^*$ (yellowness) values increased as carrot powder content increased. Anti-oxidative effects, as measured by acid value, peroxide value, and free radical scavenging activity, were greater in samples containing carrot powder compared to control. In the sensory test, Dasik with carrot powder was more preferred than control (without carrot powder). Based on these results, 20% addition of carrot powder in the formulation was the most acceptable for Dasik.
