  • The implementation of HACCP(Hazard Analysis and Critical Control Point) which is a systematic preventive approach to food safety is increasing in school feed or food manufacture. Thus, there are several automatic systems to assist HACCP management, however the most of existing systems are one of computer programs or correcting sensor data programs as ancillary means. Therefore, to be applied to efficiently automate HACCP system, the HACCP supporting computer system should be easy usability of the personnel involved in the HACCP operations and must be able to manage in real time the various HACCP data. In this paper, we develop a web-based HACCP automatic system operating freely available from any Internet computing environments. This system can be used as the management system of all the processes of HACCP and make possible to manage a broad range of operating information through the web server. So, the results from operation of the proposed automatic HACCP system can be consistently systematic.

Analysis of Food Web Structure of Nakdong River Using Quantitative Food Web Parameters Obtained from Carbon and Nitrogen Stable Isotope Ratios (낙동강 수생태계 먹이망 구조 분석: 안정동위원소 비 기반의 정량적 생태정보를 이용한 영양단계 시공간 분포 경향 파악)

  • Recently, quantitative analyses of food web structure based on carbon and nitrogen stable isotopes are widely applied to environmental assessments as well as ecological researches of various ecosystems, particularly rivers and streams. In the present study, we analyzed carbon and nitrogen stable isotope ratios of POM (both planktonic and attached forms), zooplankton, benthic macroinvertebrates and fish collected from 6 sites located at Nakdong River. Samples were collected from upstream areas of 5 weirs (Sangju, Gangjeong-Goryeong, Dalseong, Hapcheon-Changnyeong, and Changnyeong-Haman Weirs) and one downstream area of Hapcheon-Changnyeong Weir in dry season (June) and after rainy season (September). We suggested ranges of their carbon and nitrogen stable isotope ratios and calculated their trophic levels in the food web to compare their temporal and spatial variations. Trophic levels of organisms were relatively higher in Sangju Weir located at upper part of Nakdong River, and decreased thereafter. However, the trophic levels were recovered at the Changnyeong-Haman Weir, the lowest weir in the river. The trophic level calculated by nitrogen stable isotope ratios showed more reliable ranges when they were calculated based on zooplankton than POM used as baseline. The suggested quantitative ecological information of the majority of biological communities in Nakdong River would be helpful to understand the response of river food web to environmental disturbances and can be applied to various further researches regarding the quantitative approaches for the understanding food web structure and function of river ecosystems as well as restoration.

A study on the duration of Ginkgo biloba extract effective in improving cognitive function in the elderly: A systematic review and meta-analysis

  • Evidence regarding the efficacy of Ginkgo biloba extract on cognitive function has been contentious. This study evaluated the effective period of G. biloba intake to improve cognition in the elderly. PubMed, EMBASE, Cochrane, Web of Science, and PsycArticles databases were searched for short-listing relevant studies. Twenty-five studies fulfilled the inclusion criteria. Cognitive efficacy was assessed based on the duration of intervention. G. biloba intake for 3-6 months statistically significantly affected cognitive function (SMD= -0.21; 95% CI -0.39, -0.03; p=0.02). However, the improvement in activities of daily living (ADLs) was not statistically significant. Thus, G. biloba intake for more than three months improves cognition in the elderly people with cognitive impairment and AD dementia without any safety risk. Intake for up to six months does not improve ADLs significantly in mild to moderate dementia patients.

  • The purpose of this study was to develop the web-based practical problem-solving teaching plans for middle school home economics class. Five practical problems which were obesity, food waste, processed food, genetically-modified food, and imported food were selected based on the food, nutrition and diet of adolescent in middle school home economics syllabus. Web-based practical problem-solving teaching plans were consisted of 5 processes: 1)recognition of the practical problem, 2)gathering and evaluation of various information, 3)figure out the best way to tackle the practical problem, 4)put into behavioral practice, and 5)analyze the results of the behavioral practice. For the effective lesson, several supplemental materials, such as individual and group reports format. obesity test methods, animations. pictures, and modules were developed. Teaching plans including supplemental materials provided might be useful to middle school home economics teachers.

Development of an Educational Web Site and e-Learning System for Elementary School Students to Reduce Sugar, Natrium and Fat Intakes (초등학생의 당, 나트륨, 지방 섭취 저감화를 위한 교육용 웹사이트 및 e-learning system 개발)

  • This study was carried out to reduce children's sugar, natrium and fat intakes and establish their healthy lifestyle. To achieve these goals, we developed an educational web site and an e-learning system. The targets of this web site are children, parents and educators. This site has various information about sugar, natrium and fat, and has special menus for each target: such as the 'Let's study' for children, 'Guides for child's eating' for parents, and 'Educational softwares, Lesson plans/materials, and Textbooks/Teaching guides' for educators. We developed three nutrient characters and applied them to the web site. We provided information in the form of texts, images, flash and sounds. This site has special boards in 'Nutrition cafe' menu to interchange information or their successful stories between the connecters. We developed an e-learning system with two courses. One is for junior elementary students and the other is for senior students. Children can study each nutrient step by step in a course according to their academic ability and concern. Also, they can evaluate their academic achievement in this system, which was uploaded into 'Let's study' in children menu in the web site. Conclusively this web site and e-learning system could contribute to reducing children's sugar, natrium and fat intakes by helping children study them systematically and effectively by on-line system. We expect this e-learning system would be a new nutrition education system to make nutrition education more active.

Antioxidant and Anti-inflammation Effects of Water Extract from Buckwheat (메밀 추출물의 항산화 및 항염증 효능)

  • This study was conducted to investigate the effects of the hot water extract from buckwheat (WEB) in RAW-264.7 macrophage cells against lipopolysaccharide (LPS). In these experiments, we evaluated the anti-inflammatory effects of WEB by measuring MTT assay, nitric oxide (NO), inducible NOS (iNOS) production, and cyclooxygenase-2 (COX-2) expression by Western blotting. The extracts showed a protective effect by increasing cell viability on LPS in RAW264.7 cells. WEB (0.25, 0.5, and 1.0 mg/mL) significantly suppressed LPS-stimulated production of NO. Also, WEB reduced the expression of iNOS and COX-2 proteins. The present results show that WEB has potent anti-inflammatory effects on RAW264.7 cells. In addition, WEB has various antioxidant effects as a result of 2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) and 2,2-Diphenyl-1-picrylhydrazyl (DPPH) which possess a radical scavenging activity. The total polyphenol and flavonoid contents of the WEB were $13.22{\pm}3.69mg\;GAE/g$ extract and $38.53{\pm}5.20mg\;CE/g$ extract respectively. The present results give the understanding of biological activities of buckwheat and encourage their application for supplements.

A Study on Relationship between Socio-demographic Factors and Food Consumption Frequencies among Adolescents in South Korea: Using the Korea Youth Risk Behavior Web-based Survey from 2011 (한국 청소년의 사회인구학적 요인과 식품섭취빈도와의 관련성 연구 : 제7차(2011) 청소년건강행태온라인 조사를 이용하여)

  • The objective of this study was to analyze the influence of socio-demographic factors on food consumption frequencies among adolescents in Korea. Data were obtained from the Seventh Korea Youth Risk Behavior Web-based Survey (2011 KYRBS), a nationwide representative sample of 75,643 (37,873 males and 37,770 females) middle and high school students. It was carried out as a self-administered on-line survey. The frequency of eating breakfast was 4.8 times per week for middle school students and 4.6 times per week for high school students (p < 0.001). Higher levels of perceived household economic status, family affluence scale (FAS) and education attainment of mother were associated with more frequent breakfast eating. The frequencies of consumption of vegetables and milk were higher in males than in females (p < 0.001). The frequency of consumption fruits was higher in females than in males (p < 0.01). Higher levels of perceived household economic status, FAS and education attainment of mother were associated with more frequent consumption of vegetable, fruits and milk. The frequencies of consumption of soda, fast food and instant noodls were higher in males than in females (p < 0.001). The frequency of consumption of snacks was higher in females than in males. Adolescents with lower levels of FAS and education attainment of mother were at risk for skipping breakfast and consuming of soda, fast food and instant noodls more frequently. Whereas, adolescents with higher levels of FAS, education attainment of mother were more likely to be frequent consumers of vegetable, fruits and milk. These findings demonstrated that being high school students and belonging to lower level of socio-economic status (SES) were associated with undesirable food habits.

Studies on Self-Perceived Health and Appearance, Health-Related Lifestyles and Dietary Behaviors of Korean College Students Attending Web Class

  • The purpose of this study was to investigate self-perception and practices of health and appearance, health-related lifestyles and dietary behaviors of college students(137 male, 115 female) attending web class via the Internet. This cross-sectional survey was conducted by a self-administered questionnaire and data was analyzed by SPSS program. The average height, weight and BMI of the male and female college students were 174.4cm, 67.8kg, 22.3kg/㎡ and 162.3cm, 52.1kg, 19.8kg/㎡, respectively. Male collage students perceived their health statuses significantly better compared to female students. As for self-evaluation of anemia, female college students perceived significantly more anemia symptoms compared to male college students. Female college students perceived their body image to be obese compared to male college students. Underweight college students perceived significantly less healthy statuses, more anemia symptoms, and worse hair conditions compared to other college students. The rate of male students who exercise was significantly higher compared to that of female students. Male students reported significantly more smoking and drinking of alcohol compared to female students. The rate of female college students skipping meals was significantly higher than that of male college students. Frequency of eating out in female college students was significantly higher compared to that in male students. These results may provide some basic information in developing a nutrition education program for Korean college students using Internet.

The Usage of Diet and Nutritional Information on the Internet by Users' Age (이용자의 연령에 따른 인터넷 상의 식생활 및 영양 정보 이용)

  • The purpose of this study was to develop a web site providing sound and specific diet and nutritional information for internet users in different age groups to protect themselves from junk nutritional information. Among 660 internal users (436 in their 20s, 154 in their 30s, and 63 in their 40s), 66.4% had access to a computer to get nutritional information. Almost 38% of those in their 20s searched in the internet using the term 'diet', whereas 25.9% of those in their 30s and 27.1% of those in their 40s searched using 'cooking and recipe'(p<0.001). The main purpose of using nutritional information on the internet of the subjects was 'to take care of health'(p<0.001). Seventy percent of subjects answered 'so-so' for the satisfaction about the content of nutritional information that was self-explored. Contents related to nutritional information which needed to be improved was 'sound information' for 47.2% of those in their 30s, 'convenience for the application to daily life' for 51.1% of those in their 20s, and 39.6% of those in their 40s. A specialized nutritional information site must to be developed for users to gain access to reliable and valuable information without difficulty, as the variety of the interested area and application area for each user.

A Study on Expansion of Headings of Korean Decimal Classification Based Upon the Analysis of Directory Classifications of Internet Resources in Food and Culture (음식문화 분야 인터넷자원 분류체계 분석을 통한 한국십진분류법의 항목명 확장에 관한 연구)

  • Library classification system is based upon academic disciplines, However, it is difficult to classify for Internet resources due to its lack of up-to-datedness and practicality. Especially, headings of Korean Decimal Classification need to reflect practical aspects and it should be also developed for classification of web based resources. The purposes of this study are to analyze the structures of directory classifications in Internet resources and to suggest additional headings of KDC as a practical library classification as well as a classification system for internet resources. Directory classification systems of Naver, Yahoo, Kyobo Internet book store, Amazon were selected and their food and culture subjects were analyzed for this study. The headings of KDC were compared to them and new possible headings were suggested with reference of NDC and DDC in the area of food and culture. This study provided a way of developing KDC for a classification system for Internet resources as well as library materials.
