중학생의 환경오염과 학교급식 음식물쓰레기 감량에 대한 태도 (An Attitude about Reduction of Environmental Pollution and School Lunch Leftovers in Middle School Students)

  • The objectives of this study were to determine the recognition of food waste, school lunch leftovers and satisfaction toward school lunch in middle school students in Seoul. Four hundred students were surveyed beginning April, 2007. The results are summarized as follows. The primary means in which students learned about environmental pollution were 'video media' (54.7% males, 39.2% females) and 'by teachers' (23.2% males, 33.0% females). The primary effects on food habits after participating in the school lunch program were 'having a balanced diet' (23.3%) in the females, and 'decreased intake of junk food' (24.9%) in the males. The serving sizes for cooked rice, soup, and meat were higher in the females (3.46, 3.46, and 2,91, respectively) than the males (3.18, 3.29, and 2.73, respectively). The primary school lunch leftovers for one week were cooked rice (4.55), meat (4.35), kimchi (3.84), fish (3.60), vegetables (3.38), and soup (3.08). Importance-performance analysis of the school lunch meal indicated that good taste had high importance, but low performance. Nutritional balance, food safety, cleanliness of tableware and supplies, clean uniforms of employees, and cleanliness of the dining area had both high importance and performance.

  • DPRK have been encountered serious food problems in recent years, because of lack of availabilility of supplies, unfavorable weather conditions and above all lack of production incentives for farmers. Self-management is one of the method of increasing production incentives for farmers. For the well established self-management program, DPRK have to distribute farmland to farmers, not property rights but utilization rights. However farming situations are different, the distribution methods will be different according to the farming situations.

  • The problem of food deficiency is a major discouragement to many low-income developing countries. Most of these countries experience constant danger of hunger, malnutrition and diseases as they are unable to maintain their food supplies mainly due to lack of arable lands and modern crop, livestock and fishery production technologies. In addition, the pollutants resulting from the secondary industries are becoming another serious issue in their food problems. The pollutants mixed in the sands blowing from the mainland China and the toxic waters flowing in the farm land form the industrialized zones are some of the examples. The Vertical Farm, or Plant Factory, proposed in this study could be the best alternative food production system for them. Vertical farm is an efficient food production system that yields relatively a large volume of food materials without environmental risks. The system does not require a large open space and manpower and can minimize the possibility of infiltration of pollutants. This research describes a basic model of the system focusing on determining the optimal sites for it based on the meteorological data concentrating on the atmospheric pollutants. The types and volume of pollutants are analyzed and identified through the big data obtained, followed by visualization of analysis results and their comparisons for better understanding.

Survey on 'Go Bag' Items in Internet Shopping Malls

  • Purpose - This research was to help distribution of Go Bags (Survival Bag or Disaster Supplies Kit), which are useful for disaster preparedness, by surveying precomposed Go Bag items in internet shopping malls. Research design, data, and methodology - We checked 15 items including food, water, first aid kit, radio, flashlight or candles, battery, lighter or matches, whistle, blanket, towel, toilet paper, personal sanitations, raincoat, can opener, disaster manual in Go Bags based on the recommendations by the Ministry of the Interior and Safety. The number of items and price, domestic product, accreditation were compared using a Chi-square test. The Pearson's R was also used to summarize the strength of the linear relationship between the number of items and price, sub-items. Results - Mean of the sub-items was 21, and mean of the items was 8. There was a statistically significant difference between the number of items size and the price level (p=.014). There was also a statistically significant difference between the number of items and sub-items (p<.001), and correlation coefficient was a positive linear relationship of .467. Conclusions - Only eight were sold in the internet shopping malls as a precomposed Go Bag items. Even the approved Go Bags had no difference in the number of items. Higher prices had a relatively greater number of items, and it had a positive correlation between the size of sub-items and items.

  • Research and technology has been transforming the agriculture to agribusiness which encompasses all operations with all the connections from faming per se, to manufacture & distribution of production supplies and farm commodities. Further, with the revolutionary development of information technology in the last two decades, we cannot talk about agribusiness process alone without considering the information technology embedded in the artifact, process, and structure. Despite the emergence of precision agriculture (PA) which is supported by IT based innovations which can not only improve efficiency in farming operations but also contribute to environmental sustainability, the adoption of IT among farmers and in agriculture industry are rather low than expected. Thus, Korean government has been seeking to converge IT into food, agriculture, forestry and fisheries to improve the competency of the agribusiness, and much progress has been made. This paper investigated the status quo of the current IT convergence with Food, Agriculture, Forestry and Fisheries in Korea, and further proposed future policy directions.

직영 및 위탁 사업체 급식소 영양사에 대한 작업자 지향적 직무분석(제 2 보) : 요인분석에 의한 직무수행 특성 영역 및 직무정보 기술 (Categorization of Competencies and Description of Job Informations for Dietitians in Employee Foodservice by Wdorker-oriented Job Analysis Methodology)

  • The job characteristics and competencies of 285 dietitians in employee foodservices were investigated by worker-oriented job analysis methodology. The purposes of this study were to : a) determine the knowledge, abilities, skills and other characteristics(KASO) needed for dietitians in two types of employee foodservice groups(self-operated vs. contracted), b) categorize KASO items by factor analysis and c) provide job information and job descriptions for dietitians in employee foodservices. The job analysis questionnaire was consisted of questions concerning the 134 KASO items. The questionnaire was mailed to 250 dietitians who are members of The Korean Dietetic Association Practice Group in self-operated foodservices(group A) and 250 dietitians who are employed in contracted foodservice companies(group B). Completed questionnaires were received from 285 dietitians(121 in self-operated, 164 in contracted) ; with response rate of 57%. Statistical data analysis was completed using the SPSS/win and the SAS/win packages. The results of this study can be summarized as follows. 1) Through factor analysis, the 134 KASO items were regrouped into 6 categories :‘primary dietetic tasks concerning menu management and administrative work regarding merchants’, ‘primary dietetic tasks concerning procurement and purchasing of food and supplies and meal production and service control’, ‘primary dietetic tasks concerning facility, sanitation and safety control’, ‘secondary dietetic tasks concerning nutrition education and research’, ‘secondary dietetic tasks concerning foodservice operation management’and‘human attributes’. 2) Analysis of the total scores(average scores of degree of frequency, importance and entry requirements of KASO items within 6 categories), group A showed high priorities placed on‘human attributes’, ‘procurement and purchasing of food and supplies and meal production and service control’, ‘menu management and administrative work regarding merchants’, ‘whereas group B showed high priorities placed on’‘human attributes’, ‘foodservice operation management’.   • The pressure to develop new agricultural technologies will be roughly proportional to the rate of depletion of natural resources employed in agriculture. Of these resources, land, water and gentic resources are critical. The development of agriculture is associated with a scientific and technological establishment, of remarkable capability ; responding rapidly to many problems encountered by the agricultural production. These advantages are also coupled with constraints. Agricultural systems are concerned with the efficient conversion of resources into products that are wanted by the producer or someone else who is prepared to pay for them. They are based on biological processes, but they are operated by the people for a multiplicity of purposes. Study of agricultural systems is aimed at helping in the operation of systems, their repair or their improvement. The future concerns of agriculture will center on (1) increasing and safeguarding the supplies of productive inputs to agriculture, (2) improving the efficiency with which these inputs are used in food production, (3) developing new sources of basic food materials, and (4) coping with the external costs that tend to appear in intensive, mechanized agriculture.

Lactobacillus sporgenes에 의한 젖산칼슘 생산 1. 젖산발효 (The Production of Calcium Lactate by Lactobacillus sporogenes I. Lactic acid fermentation)

  • In order to produce lactic acid and calcium lactate very useful for foods and medical supplies, lactic acid fermentation was studied by Lactobacillus sporogenes, a spore forming lactic acid bacterium. When this bacterium was cultured aerobically in the spore forming medium, the spore forming rate was 96.0% as total cell number 20$\times$108/ml, spore number 19.2$\times$108/ml. One minute agitating every 1 hour in the flask culture, or agitation of 100rpm in the fermenter was most efficient to continue to ferment at 45$^{\circ}C$ for 4days in the fermentation medium containing 10% glucose as carbohydrate and CaCO3 as a neutralizing agent. This homofermentative lactic acid bacterium showed fermentation yield of 99.3% and more than 98.2% of the yield was L(+)-lactic acid.

  • Production of calcium lactate very useful for medical supplies of Ca-therapy was obtained by lactic acid fermentation of lactobacillus sporogenes, a spore forming lactic acid bacterium. Corn steep liquor 1%, soybean enzyme hydrolysate 3%, yeast extract powder 2% can substitute for yeast extract and peptone as nutrient sort traces in fermentation medium using 10% glucose concentration. In the calcium lactate production medium containing yeast extract powder 2%, glucose 18%, CaCO3 12%, the lactic acid fermentation was carried out at 45$^{\circ}C$ for 4days with continuous agitation of 100 rpm. As results, fermentation yield was 97.5%. The five steps such as protein coagulation, decolorizing evaporating, crystallizing, and drying were carried out to harvest calcium lactate from 10l of supernatant of fermented medium to be removed cell and CaCO3. As results, 2065.0g of white crystal calcium lactate dihyrate was recovered and a yield of 84.9% was obtained.

  • With the Sunshine policy, exchange of materials and cultures inter Koreas has been broadened and expectancy of reunification is getting higher. Especially, medical supplies and medicines are one of the biggest parts in the exchange goods. So, preparing an unified official drug standard preparing new medical administration system is required. We compared the Korean pharmacopoeia with North Korean Pharmacopoeia. Two pharmacopoeias have been developed in different direction and have many differences in the nomenclature and format. In this study, we compared general notices, general rules for preparations and crude drugs, monographs, general tests, processes and apparatus.
