Risk ranking must be determined for various hazards/food combinations to conduct microbial risk management effectively. Risk Ranger is a simple, easy-to-use calculation tool developed in Microsoft Excel and designed to rank the risk (low, medium, and high) for semi-quantitative microbial risk assessment. The user is required to answer 11 questions in Risk Ranger related to 1) severity of the hazard, 2) likelihood of a disease-causing dose of the hazard being present in the meal, and 3) the probability of exposure to the hazard in a defined time. This study determined the risk ranking for twenty three combinations of foodborne pathogens/potentially hazardous foods (PHFs) using a Risk Ranger. In this study, pathogenic E. coli in fresh cut produce salad was scored as 79, which was the highest rank among the 23 combinations of the foodborne pathogens and PHFs. On the other hand, zero risk was obtained with V parahaemolyticus in sushi, Salmonella in meat products and E. coli O157:H7 in hamburger patties. Although Risk Ranger is very simple method to rate the risk of foodborne pathogens and PHFs combination, the accuracy of result was mainly affected by the availability and accuracy of data in the literature. According to the result of literature review, the data are needed for contamination rate of raw materials, consumption amount/frequency of PHFs, and the effect of processing on pathogen. Risk ranking must be continuously revalidated with new data.
Food safety has been a growing consumer concern over the last few decades, and remains a priority for consumers, the food industry, and regulatory agencies alike. Although consumer concern for food safety has increased, consumer confidence has decreased. The emphasis on food safety is related to that of preliminary risk management. The ability to collect and provide food risk information is a key element in enhancing the way food safety authorities protect consumers from risk. This review aims to investigate the current situations of international organizations, as well as several countries' systems for collecting and providing food risk information. Through the comparison and analysis of each system, this review proposes strategies to establish a systematic collecting of information and provision of infrastructure in Korea. To develop an information collection system suited to Korea's situation, it is necessary for Korea to strengthen interactions and cooperation with other trade partners through the enlargement of international networks. Such efforts on food risk communication should be made by providing high quality and clear information.
This study examined the influence of perceptions of food risk and food labeling on the purchase of labeled food items and the intention to pay higher prices for safe food. Data were obtained from the Korea Rural Economic Institute's Consumer Behavior Survey for Food 2020. The analysis focused on the responses of 6,355 consumers, all of whom were mainly responsible for food purchases. The analysis investigated the moderating effect of food risk perception on the relationship between food labeling perception and the purchase of labeled food. Regarding the purchase of labeled food, statistically significant effects were noted for gender, educational level, perception of food labeling, and perception of food risk; however, the interaction effect of perceptions of food labeling and food risk was not statistically significant. With regard to the intention to pay higher prices for safe food, except for age, statistically significant effects were observed for gender, educational level, food expenditure, perception of food labeling, and perception of food risk; moreover, the interaction effect of perceptions of food labeling and food risk was significant. The results indicate that consumers reporting low food labeling perception and low purchase of labeled food were most vulnerable regarding food safety; therefore, it is necessary to provide such consumers with food label provision methods and specified education programs.
The purpose of this study was to evaluate dietary intake according to the risk of coronary heart disease (less than 10% = low-risk group; 10~20% = middle-risk group) based on Framingham risk score (FRS), on 122 male adult subjects. The body weight and body mass index were not significantly different between the groups, while height of the low-risk group was shown to be significantly high compared to that of the middle-risk group. The daily energy intake was shown to be significantly high in the low-risk group with 1,910.88 kcal, compared to 1,606.63 kcal of the middle-risk group. As a result of analyzing nutrient intake per 1,000 kcal of energy, while the low-risk group had significantly high intake of animal protein, fat, and animal fat compared to the middle-risk group, the intake of plant protein, carbohydrate, and plant iron was found to be significantly low. The daily food intake was shown to be significantly high in the low-risk group (1,445.16 g), compared to the middle-risk group (1,075.12 g). The low-risk group was found to have significantly high intake of sugars, eggs, and beverages compared to the middle-risk group, while mushrooms intake was significantly high in the middle-risk group. Dietary variety score (DVS) was significantly high in the low-risk group with 26.42, compared to 22.66 of the middle-risk group. Dietary diversity score (DDS) was indicated to be significantly high in the low-risk group with 3.70, compared to 3.27 of the middle-risk group. The low-risk group was indicated to have significantly high score in DDS of dairy products and fruit group, compared to the middle-risk group. In the correlation between diversity index of food intake (DVS and DDS) and FRS, DDS was shown to have significantly negatively correlation with FRS after adjusting for confounding factors. To sum up these results, the adult males with low-risk of coronary heart disease had more various consumptions of fruits and milk, compared to the subjects with the middle-risk. The proportion of consuming major food groups such as cereals, meat group, milk, fruits, and vegetables more than a fixed quantity was indicated to be high. Accordingly, dietary habit for intake of various food seems to be necessary, to prevent coronary heart disease.
The purpose of this study was to assess the prospective teachers' perception of food risk with the goal of providing the ways to improve their knowledge and perception of food risk. A self-administered questionnaire was developed and offered to 307 freshman and sophomore in an elementary teacher-cultivating university located in Seoul. The collected data were analyzed in terms of frequencies, cross tabulation analysis, t-test and ANONA with a deviation level of 5% using SPSS 15.0. The results of this research were as follows: 'Taste' was identified as an important factor for purchasing food (54.4%), and 'Manufacture date/expiration date' (67.0%) was checked first before food was purchased. The respondants viewed food additives (66.8%) followed by environmental contaminants (17.6%) as the most dangerous factors for food consumption. Even though they did not know the actual level of risk these factors posed to food, they still perceived them as dangerous. Most of them did not have any educational experiences on food risk, and if any, their sources of information were TV (46.6%) and the internet (19.5%). And, they did want to have information on food risk through TV, radio (41.1%) and the internet(16.4%). Based on the above results, the subjects who have great potential to influence children appeared not to have sound knowledge or a balanced perception of food risks. Therefore, systematic educational opportunities for prospective teachers should be provided to promote food risk communication.

It needs to be required for the professional committee in Food Safety Policy Commission to develop as a exclusive office of Risk Assessment by separating from a policy decision. Administrative Branches should reinforce feeble functions such as fundamental investigation;research for carrying out Risk Assessment with securing efficiency throughout reassessment of prior Risk Management Means.
The goal of this study was to examine which factors influence consumers' demands to reveal the identity of GMO(Genetically Modified Organism) food, risk perception, and decision-making to purchase it. Consumers perceived its risk, and demanded labeling to identify it. Not many consumers wanted to buy GMO food. The results also revealed as follows. First, the level of demand to label for identifying GMO food were high among female consumers, consumers with negative attitude, and consumers severly perceived its risk. The level of perceived risk was high among consumers who were old and had high income, exercised their own healthy programs, showed negative attitude toward GMO food, and demanded strongly for labelling. Second, old consumers, consumers with high income, consumers concerning more about health, consumers with negative attitude and strong demand to label for identifying GMO food were more likely to perceive risk highly for GMO food. Third, consumers' attitudes and the level of perceived risks for GMO food significantly influenced the decision-making to purchase GMO food. However, other variables turned out not to affect consumers' decision-making to purchase it.

A recent advance in communication technologies accelerates the spread of food safety issues once presented by the news media. To respond to those safety issues and take steps in a timely manner, automatically detecting related information from the news data matters. This work presents an AI-based system that detects risk information within a food-related news article. Experts in food safety areas participated in labeling risk information from the food-related news articles; we acquired 43,527 articles in which food names and risk information are marked as labels. Based on the news document, our system automatically detects food names and risk information by analyzing similarities between words within a text by leveraging learned word embedding vectors. Our AI-based system shows higher detection accuracy scores over a non-AI rule-based system: achieving an absolute gain of +32.94% in F1 for the food name category and +41.53% for the risk information category.
In Korea, food-risk shock announcements are made one or more times annually; such as last September, 2010 when Seoul City revealed a very high concentration of cadmium in small octopus intestines sold in Korea. As a result, consumers avoided eating domestic as well as imported small octopus. Fishermen protested against Seoul city; however, the Korean Food and Drug Administration (KFDA) announced that small octopus intestines pose no safety risk. The conflict between KFDA and Seoul City on the safety of small octopus intestines amplified the confusion of consumers. The small octopus cadmium shock resembled previous food-risk shocks in many respects. Effective risk communication is important in resolving food risk shocks as risk affects people case-by-case; for example people who do not eat small octopus intestines should not be at any risk, but those who do enjoy small octopus intestines, especially one more times per week, could be at risk. Therefore, it is necessary to communicate different risk messages to people or groups with different eating habits. From this point of view, the risk message conveyed by the KFDA on small octopus intestines was not appropriate.
