Latitudinal Variation of Nutritional Condition and Diet for Copepod Species, Euchaeta sp. and Pleuromamma spp., from the Northwest Pacific Ocean Using Lipid Biomarkers (지방 바이오마커를 활용한 북서태평양에서 요각류(Euchaeta sp. and Pleuromamma spp.)의 서식 위도별 영양상태 및 먹이원 연구)

  • In order to ascertain latitudinal variation of lipid contents and compositions in copepods, we collected warm water copepod species (Euchaeta sp. and Pleuromamma spp.) from four different regions from low (sub-tropical) to mid (temperate) latitudes in the Northwest Pacific Ocean. Total lipid contents of Pleuromamma spp. were about 11 $ug{\cdot}ind^{-1}$ with little latitudinal variation, whereas Euchaeta sp. showed slightly higher lipid content (20 $ug{\cdot}ind^{-1}$) than Pleuromamma spp. with latitudinal gradient (low at subtropic and high at temperate). Wax esters, known as the major storage lipid classes, were found to be the dominant lipid classes (accounting for more than 35% of total lipids) in Euchaeta sp., whereas in Pleuromamma spp., phospholipids, known as cellular membrane components, were the dominant lipid classes. However, the exception was specimens from warm pool region exhibiting dominance in storage of lipids as a form of triacylglycerols. Among fatty acids, polyunsaturated fatty acids (PUFA), especially docosahexaenoic acid (DHA : 22:6(n-3)) (about 35% of total fatty acids), were most abundant in Euchaeta sp., while saturated fatty acids (SAFA), specially hexadecanoic acid (16:0) (about 30% of total fatty acids), were most abundant in Pleuromamma spp.. Among the neutral fraction of lipids, phytol, originated from the side chain of chlorophyll, was found in all samples which generally indicate active copepods feeding on algae. While only trace amounts of short-chain fatty alcohols were found in Pleuromamma spp., significant amounts of fatty alcohols were found in Euchaeta sp.. Particularly, significant amounts of long chain monounsaturated fatty alcohols (20:1 and 22:1), generally found in cold water species, were found in Euchaeta sp. from low latitudes. The latitudinal variation of trophic lipid markers in these copepods could be significantly related with in-situ food availability and species-specific diet preference. The result of this study suggests that the lipid contents and compositions in copepods may not only indicate their nutritional condition and feeding ecology but also provide insight into species-specific living strategies under different environmental conditions (i.e. water temperature, food availability).

Evaluation of Biological Activity and Characterization of Taste and Function-Enhanced Yam Chips (과실주스 침지 및 동결건조로 제조된 산약칩의 특성 및 생리활성 평가)

  • In this study, we have developed taste and other functional enhancements of yam chips, from tasteless and flavorless yam slices, through the process of soaking freeze-dried yam in different commercially available juices, including apple, omija (fruit of Maximowiczia typica), grape, wild grape, orange, tomato, red ginseng, and black garlic juice. The analyses of color (brightness, redness and yellowness), pH, brix, acidity, total polyphenol, total flavonoids, total sugar and reducing sugar, DPPH and ABTS scavenging activity, reducing power and nitrite scavenging activity, of the different yam chips showed that the freeze-dried yam slices absorb various components of fruit juices, such as flavonoids, sugars, organic acids and flavors, during the soaking process. These changes resulted in increased taste (both sweet and sour tastes), flavor and antioxidant activity in the yam chips. The soaking time for yam slices in juice is considered to be a crucial factor for the taste and bioactivity of yam chips. In the case of grape juice-yam chips, which had the highest preference among the 8 different chips, the optimum soaking time was noted as 120 seconds. The optimization of the soaking process is necessary for various juices. These results suggest that taste, and other functional enhancements, in yam chips can be developed by juice-soaking and freeze-drying methods.

Quality of Tteokbokki tteok prepared by adding various concentration of brown rice (흑미 첨가량을 달리한 떡볶이 떡의 품질에 관한 연구)

  • The purpose of this study was to investigate the properties of tteok prepared from white (Samkwang) and brown rice (Heugseol, Heugjinju). The moisture and crude protein contents of rice were 14.89~17.15% and 4.79~6.81%, respectively. The crude lipid and crude ash contents of rice were 0.48~2.66% and 0.39~1.60%, respectively. The water binding capacity of Heugjinju (141.97%) was higher than those of other rice flours. As the soaking time increased, water absorption ability was in the order of Samkwang > Heugseol > Heugjinju. Using a rapid visco analyser (RVA), the initial pasting temperature of Heugseol was the highest, and the peak viscosities of Heugseol were higher than those of other rice flours. The quality characteristics of Tteokbokki tteok were assessed after its preparation by adding different amounts of Heugseol and Heugjinju (0, 5, 10, and 20%, w/w) content. The textural properties (hardness), of Heugseol and Heugseol measured using a texture analyzer, were greater than those of the control. Sensory preference tests revealed that 10% Heugseol and, 10% Heugjinju had the highest scores in appearance, color, and overall acceptability. The sensory test results revealed that Tteokbokki tteok prepared by addition of 10% added brown rice was the best.

Quality characteristics of barley Makgeolli prepared with different barley cultivars and milling recovery (보리의 품종 및 도정률에 따른 막걸리의 품질특성평가)

  • The purpose of this study was to evaluate the effects of barley cultivars (Saessalbori, Saechalssalbori and Huinchalssalbori) and different milling recovery (95%, 85% and 75%) on quality characteristics of barley Makgeolli. The content of moisture, ash, crude protein, and crude fat in barley seeds were reduced with decreasing milling recovery. The qualities of barley Makgeolli were also significantly affected by the milling recovery. Decreasing milling recovery of all cultivars resulted to increase in total sugar content and reducing sugar content but decrease in pH while alcohol content and total acidity were not significantly affected. Moreover, the lightness and yellowness of barley Makgeolli increased by milling while its redness decreased. The sensory evaluation showed that the consumer preference for barley Makgeolli increased at the lowest milling recovery (75%). The results of this study suggest that the milling recovery and cultivar of barley were important factors to improve the taste and color of barley Makgeolli.

Physicochemical Characteristics and Preference of Kimchi Provided to the Elementary School Foodservice in the Seongnam Area (성남 지역 초등학교 급식에 공급되는 김치의 이화학적 특성 및 기호도 조사)

  • This study was carried out to investigate the physicochemical characteristics, intake rate, and sensory properties of kimchi provided to elementary school foodservice in Seongnam. Average amount of kimchi intake at the elementary school foodservice for lower grade(1~3) students and higher grade(4~6) students was 7.15 g(23.83%) and 11.15 g(37.17%) respectively. The physicochemical properties of kimchi provided to the school foodservice in Seongnam were different between head cabbage kimchi(Pogi kimchi, H product) and head cabbage kimchi for children(C product). The head cabbage kimchi showed the pH 4.31~4.65(average pH 4.45), 6.86~8.38 $^{\circ}Brix$(average sugar content 7.74 $^{\circ}Brix$), and salinity 1.36~2.20%(average 1.73%) whereas the head cabbage kimchi for children indicated the pH 4.23~4.45(average pH 4.32), 7.68~8.48 $^{\circ}Brix$(average sugar content 8.18 $^{\circ}Brix$), and salinity 1.38~1.80%(average 1.65%). The result of the sensory evaluation of head cabbage kimchi and head cabbage kimchi for children indicated that there was significant difference by grades and gender. Higher graders tended to prefer less sweet, less sour and salty kimchi, and girls preferred sweet and sour kimchi more than boys. Therefore, it is required to develop kimchi for children considering sensory characteristics by grades and gender.

Quality Characteristics of Vanilla Sauce with Various Sweeteners (감미료의 종류를 달리한 바닐라 소스의 품질특성)

  • The study examined the kinds of sweeteners(xylitol, sorbitol, acesulfame K, aspartame, stevioside) instead of sugar for vanilla sauce to satisfy customers' health needs. According to the results, the sauce with sugar had lowest salinity, highest sugar content, and sauce with aspartame had lowest sugar content. pH were highest in sauce with sorbitol, with aspartame were lowest. L-value, a-value was the highest in sauce with aspartame, while b-value was the lowest. The moisture content was the lowest, while viscosity was the highest in the sauce with xylitol. In a sensory evaluation, texture and overall preference was the highest in vanilla sauces with aspartame which have proper color intensity and strong flavor in mouth feel. The result indicated that health-oriented consumers and satisfy the health of modern people's needs when using the vanilla sauce with aspartame instead of sugar. It is also advised to vanilla sauce with aspartame for preventing adult disease and using the diets for patient.

Quality of White Bread Containing Aster yomena Powder (쑥부쟁이 분말 첨가 식빵의 품질 특성)

  • Aster yomena is a perennial plant that belongs to the Asteraceae family. Seasoned wild vegetables are commonly used as functional ingredients because of their bioactive effects against oxidation, cancer, and inflammation. A recent report showed that ethanol extracts from Aster yomena effectively inhibited gene expression related to lipid accumulation within interstitial cells to prevent obesity, further raising awareness of its usefulness as a highly functional ingredient. Several studies have investigated Aster yomena, but none have investigated the effects of processing on its use. Therefore, this study investigated the quality characteristics and antioxidative activity of breads in which refined salt was replaced with Aster yomena powder at 0, 0.5, 1.0, 1.5, or 2.0%. Bread containing any amount of Aster yomena powder did not differ significantly from the control in terms of appearance, aroma, taste, texture, and overall preference. In addition, higher levels of added Aster yomena powder were associated with greater 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity indicating the potential for production of highly functional bread and noodle products using this material.

Characteristics of Quality for Sulgidduk with Momordica charantia L. Powder (여주분말을 첨가한 설기떡의 품질 특성 연구)

  • This study was performed to examine the characteristics of Sulgidduk with different amounts of Momordica charantia powder (0%, 2.5%, 5%, 7.5%, and 10%). The pH of Sulgidduk was dose-dependently decreased with the addition of Momordica charantia powder (p<0.001). The lightness (L-values) of Sulgidduk was significantly decreased with the addition of Momordica charantia powder, but the redness (a-values) and yellowness (b-values) were significantly increased (p<0.001). In addition, hardness, cohesiveness, and chewiness were significantly decreased, and the springiness and gumminess were significantly decreased with the addition of Momordica charantia powder in Sulgidduk. The Sulgidduk with Momordica charantia powder presented significant DPPH radical scavenging activities in a dose-dependent manner. In sensory evaluation, the color, flavor, bitterness, sweetness, softness, and mastication of Sulgidduk were dose-dependently increased with the addition of Momordica charantia powder (p<0.001). The ranking of overall preference was 5%> 2.5%> 7.5%> 10%> 0%. Through this study, it was considered that the Momordica charantia powder can be used to make functional Sulgidduk.

Quality Characteristics and Antioxidant Activities of Yaksik Containing Various Amount of Turmeric (Curcuma longa L.) Powder (강황 분말을 첨가하여 제조한 약식의 품질 특성 및 항산화 활성)

  • The objective of this study was to determine the quality characteristics and antioxidant activities of Yaksik prepared with different amounts of turmeric powder. Turmeric powder was incorporated into Yaksik at different levels containing 1.7, 2.8, and 3.9% based on the total weight of ingredients. Moisture contents of Yaksik were 41.45~44.93% and increased with higher amount of turmeric powder. Ash and crude lipid contents did not show any significant differences between control and samples. The control group showed higher sweetness and lower pH than the other groups, and sweetness decreased and pH increased upon addition of turmeric powder. In the chromaticity determination, L value decreased while a and b values increased as turmeric powder increased. The total polyphenol and flavonoid contents proportionally increased with levels of turmeric powder. The antioxidant activities measured by DPPH and ABTS radical scavenging activities as well as reducing power were significantly higher than those of the control and proportionally increased as turmeric powder increased. In the sensory evaluation, control and Yaksik made with 1.7% addition of turmeric powder showed the highest preference in terms of color, taste, texture, and overall acceptance. These results suggest that turmeric powder may be a useful ingredient in Yaksik to improve quality and sensory properties.

Quality Stability of a Softened, Sea Tangle Paste by Various Hydrocolloids during Storage (Hydrocolloid를 첨가한 연화 다시마 Paste의 품질 안정성)

  • This study was carried out to examine softening stability, exponent of Avrami equation, color change, sensory characteristcs during storage when hydrocolloid was added to the sea tangle paste treated with acetic acid and heat treatment. Rate constant of solidification showed the least value of 0.05 in Avrami equation. In addition hardness of the softened sea tangle paste was not changed after two days of storage in case of carrageenan. Rate of hardness in the softened sea tangle paste formulated with carrageenan exhibited the lowest value of 0.28 kg/mm/day. Heat melting spreadability of the softened sea tangle paste showed the highest value in case of carrageenan and its fluid behavior was rheopectic. Viscosity change in the sea tangle paste formulated with carrageenan was the least during storage and its significant difference at the level of p < 0.05 was exhibited. Change of L, a and b value of softened sea tangle formulated with carrageenan during storage was significantly different at level of p<0.05. Color preference, odor, cohesiveness, softerness, process compatibility and overall acceptance of softened sea tangle were revealed to be in best when carrageenan was added. When hydrocolloid was added to the softened sea tangle paste, it showed the positive result in quality and storage stability of softened sea tangle paste. It was extremely effective on softening stability when carrageenan was added to the softened sea tangle paste.
