The purposes of this study are to generate sensory profile, measure consumer acceptance, and determine liking and disliking factors of aseptic-packaged rice porridges (APRP). Five APRPs made by five different rice cultivars were used for this study. Twenty-one attributes were generated by trained panelists. Finally, 16 attributes were determined as descriptive terms for APRP. Each cultivar showed a different descriptive sensory profile. In a consumer acceptance test, there was no statistical difference (P>0.05) in the acceptances of the overall, appearance, taste, texture, viscosity, and rice particle texture among the 5 APRPs. SW52 showed the highest acceptance ratings in the overall, appearance, taste and texture, followed by SR. A total of 52% of consumers showed preference toward SW52 and SR. SW63 showed the lowest ratings and no consumer preference pattern. Consumers were divided into two groups by a cluster analysis; one was the consumers (C1) who liked APRP, and the other was the consumers (C2) who had a neutral stand in general. By correlating the results from descriptive analysis and consumer ratings from C1, liking and disliking factors for consumer acceptance were determined. The disliking factors were bitterness, feeling of surface, stickiness, metallic flavor, roasted aroma, and thickness. The liking factors were old cooked rice aroma/flavor. The disliking factors dominated in the determination of acceptability of APRP. Selecting rice cultivars that had low intensities of disliking factors is the key for APRP development.
The purpose of this study was to investigate the eating patterns of children with cerebral palsy having motor disturbances as well as stiffness. The food habits, nutritional status, and snack intakes of 1 to 7 year-old children with cerebral palsy were examined. The subjects were grouped into three categories according to their table-utensil handling skills: superior, normal, and inferior. The children in the superior group were significantly taller and heavier compared to children in the other two groups. The %EARs of folic acid and total calorie intake were insufficient in all three groups; however, their %EARs of other nutrients were fully sufficient. When comparing the children's intake frequencies and preferences for snacks, the superior group showed a greater likelihood to consume various kinds of snacks than the inferior group. And the inferior group disliked more kinds of snacks than the other two groups. It was also shown that the inferior group had a significantly higher tendency for problems in chewing and swallowing. These results indicate that the development of table utensil-handling skills is very important for the food intake and growth of children with cerebral palsy, and the better their table utensil-handling skills the greater their physical development. Thus, considering their preference and intake frequency, it seems necessary that children in the inferior group be provided a greater variety of snacks and foods to receive more calories.
The aim of this study was to investigate health-related and eating-related behaviors as part of self-recognized health status. The survey was conducted among 304 elderly people in Chunchon city in 1999. Fifty two percent(52%) of the respondents recognized they were healthy, 32% felt so-so and 16% thought themselves unhealthy. When they felt healthy, they engaged in more social work and regular exercise, had better appetites, lower conflict scores with their children, lower depression, higher satisfaction in life, better physical condition(eye, ear, tooth, mentality and walking), and higher ability of ADL(activities of daily living) and IAD(instrumental activities of daily living). Also, the self-recognized group consumed each food groups (meats, green, yellow and white vegetables, fruits, milks, seaweeds, beans) more often and showed a higher preference of food. The results of this study indicate that self-recognized health status affects every pattern of life among the elderly. As a result, comprehensive education(such as nutrition, health, physical and psychological education) should be offered to the elderly.
This experiment was conducted to obtain basic information on the natural spice of Elsholtzia splendens, which is one of the native Korean aromatic plants for aromatic, medicinal and ornamental uses. The overall acceptability and the masking effects on the fetid smell of beef were investigated with Elsholtzia splendens-flavored oils by sensory evaluation. The ability of an electronic nose with six metal oxide sensors to classify Elsholtzia splendens flavored oils based on their odors was studied. The response by electronic nose was analyzed by principal component analysis (PCA). Fetid smell of beef was not changed by the addition of 4 types of Elsholtzia splendens-flavored oil during storage. This study was attempted to investigate the effect of family environment on the dietary quality of adolescence. The subjected were 390 girls aged from 13 to 19 and their mothers in Chung-Nam province area. The survey was conducted from Febril 6 to 16, 1985. The results can be summarized as follows ; 1) The mean dietary score of nutrient adequacy of subjects was 11.85 out of possible 17, which showed that all nutrients intake might be lower than the R.D.A. 2) According to resident place, dietary quality was tended to be better in order of rural place, small city and medium city 9P<0.01). 3) In smaller numbers of family members, dietary quality was tended to be better (P<0.01). 4) Family pattern did not affect the dietary quality. 5) According to socioeconomic status, dietary quality was tended to be better at the upper class(P<0.05). 6) Dietary quality was tended to be better according to the increase of PCEF(per capita expenditure for food). 7) Mother's employment was likely to improve the dietary quality (P<0.01). 8) Dietary quality was tended to be better according to mother's favored attitude toward nutrition(P<0.01). 9) Mother's attitude toward taste affected the dietary quality, but this effect was not constant(P<0.01). 10) Mother's attitude toward family's food preference affected the dietary quality adversely (P<0.01). 11) Mother's score of nutrition knowledge was likely to affect the dietary quality. 12) Dietary quality was positively correlated to health status of subjects. And there was a significantly negative correlation between dietary quality and menarcheal age (P<0.01).

The purpose of this study was to investigate the sweets preference, food frequency, dietary habits, and nutrition knowledge of middle school students who like sweets. A survey instrument consisted of a self-administered questionnaire, a food frequency questionnaire, and anthropometric measurements. Three hundreds thirty five students aged 13 to 15 years old were divided into two groups, Sweets Liking Group (SLG) and a control group based on the subjects' scores for dietary habits, sweets preference, and food frequency. For dietary habits, the score for meal regularity was significantly lower in the SLG group compared to the control (p<0.001). In addition, the SLG group was more likely to skip breakfast (p<0.001), eat inadequate amount of meals (p<0.001), and consume yellow-green vegetables less frequently (p<0.001) than the control. The subjects' nutrition knowledge was assessed using 20 questions representing five categories, including functions of nutrients, nutrition and health, food pyramid and food groups, healthful snacking and the right dietary attitude. The total scores for nutrition knowledge indicated that the SLG had a poorer nutrition knowledge for all five categories than the control (boys p<0.05, girls p<0.01). For food frequency, the SLG consumed more sweets but less grains, cereals, fishes, beans, vegetables, and milk and milk products than the control (p<0.001). Strong positive correlations appeared between sweets preference, sweets frequency, and sweets-related dietary habits; and all were negatively correlated to nutrition knowledge. Sweets frequency was negatively related to meal regularity, breakfast consumption, meal adequacy, and balanced meals. The findings suggest that nutrition education is necessary to improve the dietary pattern, especially sweets consumption, of Korean young adolescents.
Objectives: This study compared the dietary behaviors of single-person households when eating alone according to the employment pattern and age. Methods: A total of 566 people aged 20~59 years old were collected from the status of workers and classified into three groups according to their employment pattern (regular, non-regular workers and business owner). The subjects were collected by purposive quota sampling on a Gallup panel from June to November in 2017. The dietary behavior and perception of eating alone of the subjects were surveyed via online and self-reported questionnaires. Results: The frequency of eating alone was significantly higher in the regular group than the non-regular group and business group (p<0.01). The place of eating alone was significantly higher in the regular and non-regular group in the convenience store, and business group in the office (p<0.001). Ramen, the menu when eating alone, was significantly higher in the non-regular group than the other groups (p<0.01). The preference for eating alone was lower in the older age group (p<0.05). The young aged group (aged 20~30) ate more fast food and felt more convenience than the older aged group aged 40~50 years (p<0.05). Conclusions: Single-person households with a non-regular job have poorer dietary behavior in eating alone than those who had regular employment. In a situation of an increasing number of non-regular workers aged in their 20s and 30s, there is a high likelihood of social problems, such as health and poverty. This study highlights the need for a healthy food selection environment to improve the dietary life of single-person households with non-regular jobs for the diverse types of single-person households.

The purpose of this study was to investigate pattern of consumption of Korean fermented foods. The questionnaires have been collected from 290 housewives in Taejon. Kimchi was the most frequently selected for meal preparation among Korean fermented foods. Ninety seven percentage of housewives used Kimchi over once a day and 87%, every meal. Chin-ganjang, Kuk-ganjang, Kochujang and Doenjang have been consumed over once a day by 47%, 46%, 31% and 27% of housewives respectively, which indicated that those jangs were still essential seasonings for preperation of Korean foods. The percentage of housewives, who did not use Chonggukjang, Jot-kal and Jangatchi, were 18%, 19% and 22% respectively, With the educational level increasing and age decreasing, the frequency of consumption Kimchi, Jangat-chi, Doenjang, Kochujang, Jot-kal and Chonggukjang became lower. Extended family often used Doenjang more than nuclear family. Working housewives utilized more Jot-kal than full time housewives. Seventy four percentage of housewives replied that the consumption of Korean fermented foods came to reduce. The reasons were that the kinds of foods increased(54%), food preference of children was changed (27%), side dishes were increased(10%), and food preference of adults was changed(9%). Kimchi has been made by housewives themselves(86%) and by relatives(11%). It means that most housewives prefer home-made Kimchi. Half of housewives used jangs made by themselves. The younger and the higher in educational level use the less Hey have made of Kimchi and jangs.
The purpose of this study was to find out the common characteristics of eating behaviors of the long-lived elderly in order to offer the basic data for establishing dietary guidelines for a long and healthy life for the general population. The subjects were three-hundred elderly people over age 85 living in Kyungpook Sung-ju who have no problems in daily living. The general characteristics, nutrition knowledge and attitudes, meal patterns, and food preferences of the subjects were surveyed by individual intervies. The levels of the nutrition knowledge of the subjects were very low(average score ; 4.3) and the correlation coefficient between their nutrition knowledge and attitude score was also low(r=0.323, p=0.000). Most of the subjects(93%) had a regular meal pattern consuming three meals a day. The major staple food was rice mixed with other grains(75%) and the number of side dishes was mostly under four(99%). A majority(73%) had no habit of overeating and 51% of the subjects were taking snacks besides regular meals. Thirty one percent of the subjects had drinking habits and 80% of the drinking subjects had over 40 years of drinking history. The most common frequencies for intakes of various food groups were ; more than once a day(95%) for vegetables ; 2∼3 times a week(74%) for green and orange color vegetables ; 2∼3 times a week(72%) for fruits ; once a day(70%) for fish, eggs and legumes ; 2∼3 times a week(49%) for milk ; 2∼3 times a week(72%) for fruits ; once a day(70%) for fish, eggs and legumes ; 2-3 times a week(49%) for milk ; 2-3 times a week(85%) for seaweeds and 2-3 times a week(81%) for foods cooked with oil. The most preferred foods by the subjects were white rice(staple foods), soybean paste soup(soups), beef and eggs(meats and eggs), yellow croaker and hair tail(fish and shellfish), yoghurt(milk and milk products), all vegetables except carrot(vegetables), and watermelon(fruits). The popular food preparation methods included mixing with seasonings and the most preferred taste was sweet. The results showed that the eating pattern of long-lived elderly was characterized by regularity, simplicity, and no overeating.

A computerized dietary prescription and nutritional counseling system for patients having hyperlipidemia has been developed using a personal computer. This system is composed of three programs. The first program is designed to investigate dietary history of patient, such as a dietary habit and a preference of food, to find out his incorrect dietary behavior and to give him some suggestions to correct dietary behavior. The second one is developed to analyze the energy and nutrients intake using 24-hour dietary recall method and also evaluate the status of dietary intake, especially the status of dietary fat. With these data, patient can replan pattern of his food intake including in-between-meal snack as well as regular meals. The third one is the diet and menu Planning program made using food exchange table. It provides the patient with a meal pattern suitable in his weight, activity and the other status of the body. Practicing these programs, patient with hyperlipidemia can help himself very conveniently in organizing his meal plan and in improving his dietary behavior.
