Response surface methodology (RSM) is a useful set of statistical techniques for modeling and optimizing responses in research studies of food science. In the analysis of response surface data, a second-order polynomial regression model is usually used. However, sometimes we encounter situations where the fit of the second-order model is poor. If the model fitted to the data has a poor fit including a lack of fit, the modeling and optimization results might not be accurate. In such a case, using a fullest balanced model, which has no lack of fit, can fix such problem, enhancing the accuracy of the response surface modeling and optimization. This article presents how to develop and use such a model for the better modeling and optimizing of the response through an illustrative re-analysis of a dataset in Park et al. (2014) published in the Korean Journal for Food Science of Animal Resources.
The principal objective of this study was to assess the effects of food involvement moderating the relationship between food choice motives, including health concerns, weight control and ethical concern, and fruit consumption. A total of 290 questionnaires were completed. Moderated regression analysis was utilized to assess the relationships among variables. The results of the study showed that the results of data analysis also indicated good model fit. The direct effects of health concerns on fruit consumption were statistically significant in Models 1 and 2. However, the direct effects of ethical concern on fruit consumption were statistically significant in Model 3. As had been expected, the interaction of ethical concerns and food involvement exerted a significant effect on fruit consumption in Model 3. However, the interaction of health concern and food involvement, as well as weight control and food involvement exerted no significant effects on fruit consumption. Moreover, ethical concerns about fruit consumption exerted a significant negative effect at the low level and a positive effect at the high level of food involvement, except in cases in which the level of food involvement was medium. The results of this study revealed that fruit marketers should attach importance to the interaction effect of food involvement in order to better understand the elements of market demand and customer loyalty.

The objective of this study was to develop a model for predicting Korean adult consumers who frequently eat food-away-from-home. A total of 7,032 adults aged 19 years and older from the 2001 National Health and Nutrition Survey in Korea were used as subjects. The data were analyzed using a data mining procedure including logistic regression and decile analysis. The model developed in the study was proven to be valid in predicting the consumers who frequently eat food-away-from home(once a day or more often). This model showed that consumers eating food-away-from-home frequently tend to be younger men, living in a big city, working full time, receiving more stress and eating snacks and fried food more frequently. The model could be used to identify targets for nutrition and related education and consumer segments for the marketing of restaurant businesses.
Purpose: This study focuses on developing a structural equation model of variables influencing loyalty to buying and selling food products through e-marketplaces in Thailand. The variables investigated comprised food attributes, online system attributes, marketing innovations, attitudes, and satisfaction. Research design, data and methodology: An online questionnaire was used to collect data from a sample group (200 buyers and 200 sellers) using quota sampling. The data were analyzed using the structural equation model. Results: The developed structural equation model was consistent with the empirical data. Factors in the model could explain 40.1% of the variance in loyalty to buying and selling food products through e-marketplaces. Food attributes and online system attributes influenced satisfaction directly. Online system attributes, market innovation, and attitudes directly influenced loyalty. The developed model had no variation between groups of buyers and sellers. Conclusions: This research demonstrated the causal factors leading to consumer loyalty to buying and selling food products through e-marketplaces. The research findings help e-marketplace providers manage factors of buying and selling to comply with the needs of buyers and sellers, which will increase the number of buyers and sellers, help generate long-term profits for service providers, and increase the country's financial value.
This paper proposes a method to predict the number of foodborne disease outbreaks by microbes. The weekly data of food poisoning occurrences by microbes in Korea contain many zero-valued observations and have dependency between outbreaks. In order to model both phenomena, the number of food poisonings is predicted by an autoregressive model and the probabilities of food poisoning occurrences by microbes (given the total of food poisonings) are estimated by the baseline category logit model. The predicted number of foodborne disease outbreaks by a microbe is obtained by multiplying the predicted number of foodborne disease outbreaks and the estimated probability of the food poisoning by the corresponding microbe. The mean squared error and the mean absolute value error are evaluated to compare the performances of the proposed method and the zero-inflated model.
The purpose of this study was to measure the tourists' preference for alternative restaurants with different combinations of 4 attribute levels: origin description, food type, price and service guarantee. A total of 210 questionnaires were completed from tourists who visited Kwangyang, Suncheon and Yeosu during Jan. 2 - Jan. 15, 2007. Conjoint experiment method was used to develop hypothetical restaurants. Ordinal probit model was used to measure the effects of attribute levels on the tourists' preference. Results of the study demonstrated that the ordinal probit model analysis result for the data indicated excellent model fit. The effects of attribute levels (origin description, traditional food, fusion food, price, service guarantee) on the tourists' preference were statistically significant. As expected, estimates of marginal willingness to pay for origin description(3.063), food type(2.349), and service guarantee(2.356) were statistically significant. Moreover, tourists were more willing to pay for origin description than other attribute levels. Tourists also considered the origin description as the very important attribute. In conclusion, based on conjoint analysis, a model was proposed of marginal willingness to pay of attribute levels. It should be noted that the original model was modified and should, preferably, be validated in future research.
Groundwater is used in many areas in food industry such as food manufacturing, food processing, cooking, and liquor industry etc. in Korea. As groundwater occupies a large portion of food industry, it is necessary to predict deterioration of water quality to ensure the safety of food water since using undrinkable groundwater has a ripple effect that can cause great harm or anxiety to food users. In this study, spatiotemporal data aggregation method was used in order to obtain spatially representative data, which enable prediction of groundwater quality change in a small watershed. In addition, a highly reliable predictive model was developed to estimate long-term changes in groundwater quality by applying a non-parametric segmented regression technique. Two pilot watersheds were selected where a large number of companies use groundwater for food water, and the appropriateness of the model was assessed by comparing the model-produced values with those obtained by actual measurements. The result of this study can contribute to establishing a customized food water management system utilizing big data that respond quickly, accurately, and preemptively to changes in groundwater quality and pollution. It is also expected to contribute to the improvement of food safety management.
Objectives: Materials coming into contact with food may result in the migration of chemical substances into the food. To protect consumers from exposure, Regulation (EU) No. 10/2011 specifies the use of standard migration tests. Polyethylene terephthalate (PET), widely used for food packaging materials, has drawn the attention of researchers because unwanted migration of PET into food might occur when consumers reuse packaging material. The aim of this study was to predict and develop a migration model for two components, acetaldehyde and butyraldehyde in PET, into food simulants under conditions of changing pH and solvents, such as those observed in fermented foods like kimchi or sauerkraut. Methods: Using a migration model based on Fick's second law of diffusion in one dimension, the migration of acetaldehyde and butyraldehyde from PET into a simulant of fermented food at $20^{\circ}C$ over 10 days was evaluated. The simulant for fermented food was modelled as 10% ethanol for three days, followed by 3% acetic acid for seven days. Results: The migration of acetaldehyde into the 10% ethanol was 0.36 times that of a simulated fermented food system, while that of butyraldehyde was 1.34 times greater. These results may have been influenced by the chemical interactions among the migrants, polymers and simulants, as well as by the solubilities of the migrants in polymers and simulants. Conclusion: Because food simulants have a limited capacity to mimic real food systems under the current migration model, an appropriate simulant and migration test should be considered in the case of increasing acidity. Furthermore, since the accuracy of the worst-case estimation of migration predicted by the current model is severely limited under changing food conditions, food simulants and their interactions should be further investigated with respect to conservative migration modelling.

We analyzed the major quality characteristics of red pepper powders from various regions and predicted these characteristics nondestructively using shortwave infrared hyperspectral imaging (HSI) technology. We conducted partial least squares regression analysis on 70% (n=71) of the acquired hyperspectral data of the red pepper powders to examine the major quality characteristics. Rc2 values of ≥0.8 were obtained for the ASTA color value (0.9263) and capsaicinoid content (0.8310). The developed quality prediction model was validated using the remaining 30% (n=35) of the hyperspectral data; the highest accuracy was achieved for the ASTA color value (Rp2=0.8488), and similar validity levels were achieved for the capsaicinoid and moisture contents. To increase the accuracy of the quality prediction model, we conducted spectrum preprocessing using SNV, MSC, SG-1, and SG-2, and the model's accuracy was verified. The results indicated that the accuracy of the model was most significantly improved by the MSC method, and the prediction accuracy for the ASTA color value was the highest for all the spectrum preprocessing methods. Our findings suggest that the quality characteristics of red pepper powders, even powders that do not conform to specific variables such as particle size and moisture content, can be predicted via HSI.
