  • The purpose of this study was to compare the anthropometry and nutrition knowledge, food behaviour and lifestyle of women college students with different obesity indexes. The subjects were 251 women college students who were randomly selected from Kunsan National University. The height, body weight, soft/lean mass, fat mass, percentage of body fat, and fat distribution were measured, and health-related lifestyle habits were evaluated based on questionnaires. The subjects were assigned to one of the following groups based on their Body Mass Index (BMI) : underweight, normal weight and overweight. The results were as follows. Their body weight, soft/lean mass, fat mass, percentage of body fat, and fat distribution were significantly higher in the overweight subjects when compared to the underweight or normal weight subjects. Standard of living, self-recognition of health status and duration of exercise were significantly correlated with their BMIs. Self-satisfaction with body weight decreased as the BMI increased. Most subjects had poor habits such as skipping meals and lack of exercises. The overweight and the underweight groups skipped meals more frequently than the normal weight group. There were no significant differences in the scores on the nutritional knowledge and the dietary behaviour of the subjects with different BMIs. Therefore, proper nutritional education on regular meals and intervention are required if women college students are to have normal weights and healthy lifestyles. • Recognition thresholds for NaCl, sucrose, citric acid, and caffeine, as well as the pleasant concentration of NaCl were assessed in 176 males and 312 females aged 50-88 years. Furthermore, relationships among taste sensitivities, taste preferences, and lifestyles were examined. The taste solutions were presented one after the other in ascending order using the sip-and-spit method. For the recognition thresholds of the 4 basic tastes, women perceived significantly lower concentrations than the men. However, the pleasant concentration of NaCl did not show a gender difference. Sensitivities for the 4 basic tastes did not decrease with age in the men, but they did significantly decrease with age for the women, especially for those above 70 years. For men, regular exercise was positively correlated with sensitivities for sour taste and bitter taste, and physical activity was negatively correlated with the pleasant concentrations of NaCl. For women, who had more physical activity, sensitivities for sweet taste and sour taste were lower compared to the others. This study indicates that the sensitivities for 4 basic tastes in water diminished with age, but pleasant salt concentration did not change with age. Further research on pleasant NaCl concentration is required to determine factors affecting salt preference, in order to decrease salt intake in the elderly.

  • Purpose - The purpose of the study was to seek to find out what factors having differences between paid membership customers (Costco membership) and general customers in retail industry. Since Costco operates differently from other conventional retailers, which is expected to have a substantial impact on consumers' preference of retail stores. Research design, data, and methodology - The survey conducted covered 1,000 adults in their 30s~50s living in Goyang and Gwangmyeong where Costco runs stores to determine the effects of Costco's local market-entry from consumer perspectives. 500 respondents were surveyed in each region and those working in the retail sector were excluded to ensure the objectivity of the answers. Results - Costco members in Goyang considered the price, bulk purchasing, and membership benefits as important criteria when choosing their retail store. On the other hand, as for Gwangmyeong, the non-member group's prominent characteristic was that they considered accessibility including travel distance and location and in-store amenities including food court services as important criteria for decision-making. Conclusion - Unique business model of Costco shows a statistically significant difference in terms of consumer awareness. the feature of Costco served as an critical criteria for consumers in their purchasing decision. Moreover, Bulk packaging purchases at Costco results in a strong supplementary relationship with neighborhood supermarkets.

  • With an aim to evaluate dye decolorization by white rot fungus on natural living conditions, reproducing by solid-state fermentation, the process of triphenylmethane dyes decolorization using the white rot fungus P. ostreatus BP, cultivated on rice straw solid-state medium, has been demonstrated. Three typical dyes, including malachite green, bromophenol blue, and crystal violet, were almost completely decolorized by the fungus after 9 days of incubation. During the process of dye decolorization, the activities of enzyme secreted by the fungus, and the contents of soluble components, such as phenolic compounds, protein, and sugar, changed regularly. The fungus could produce ligninolytic, cellulolytic, and hemicellulolytic enzymes and laccase was the most dominant enzyme in solid-state medium. Laccase, laccase isoenzyme, and the laccase mediator could explain the decolorization of malachite green, bromophenol blue, and crystal violet by the fungus in solid-state medium, respectively. It is worth noting that the presence of the water-soluble phenolic compounds could stimulate the growth of fungus, enhance the production of laccase, and accelerate dye decolorization.

  • A method of detecting lead was developed using square wave anodic stripping voltammetry (SWASV) with DNA-carbon nanotube paste electrode (CNTPE). The results indicated a sensitive oxidation peak current of lead on the DNA-CNTPE. The curves were obtained within a concentration range of 50 $ngL^{-1}-20mgL^{-1}$ with preconcentration time of 100, 200, and 400 sec at the concentration of $mgL^{-1}$, ${\mu}gL^{-1}$, and $ngL^{-1}$, respectively. The observed relative standard deviation was 0.101% (n = 12) in the lead concentration of 30.0 ${\mu}gL^{-1}$ under optimum conditions. The low detection limit (S/N) was pegged at 8 $ngL^{-1}$ ($2.6{\times}10^{-8}M$). Results showed that the developed method can be used in real-time assay in vivo without requiring any pretreatment and pharmaceutical samples, and food samples, as well as other materials requiring water source contamination analyses.

  • With globalization taking place at a rapid speed, more and more people move from one place to another and more people with diverse cultural backgrounds are now living together than ever before. As a result, more people go through the process of acculturation. Dietary acculturation, a part of overall acculturation, is a series of changes that occur in food and nutrient consumption and dietary behaviors. This paper examined dietary acculturation in Korean Americans through a critical literature review. The current diet quality of Korean Americans is fair, and the areas in need of improvement include sodium, calcium, and fiber intakes. Korean Americans had different diet profiles by acculturation status; however, whether dietary acculturation leads to a lower diet quality is not conclusive at this time. This paper also suggests areas that warrant consideration in future research: 1) acculturation measures, 2) dietary measures, 3) possible factors affecting dietary acculturation, 4) health consequences of dietary acculturation, and 5) study design issues. Studying dietary acculturation among immigrants and their offspring is important because it will provide useful insights for designing health and nutrition interventions in both original and new countries. Quality research in dietary acculturation requires collaborations among researchers from different nations because it deals with diverse cultures.

  • Since living environment has improved, waterfront space using and clear water demand have increased. Ministry of Environment (ME) designated polluted reservoir (worse than 4th grade) as a priority management reservoir to improve water quality (better than 3rd grade) accordingly. Minstry of Agriculture, Food and Rural Affairs (MAFRA) aims reservoir water quality 4th not 3rd grade. And water quality of agricultural reservoirs was not a great interest. For this reason, there are very few water quality monitoring data. However after designating as a priority management reservoir, reservoir manager should start water quality and flow monitoring of reservoirs and inflow streams. This process makes it possible setting complex model to accurate prediction of reservoir water quality and volume. Mulwang reservoir designated as a priority management reservoir in September 2014. In this study, BASINS/WinHSPF and EFDC-WASP were used to predict effect of water quality improvement countermeasures in Mulwang reservoir. To improve water quality of Mulwang reservoir, Siheung-si and Korea Rural Community Corporation (KRCC) established water quality improvement countermeasures. However result of simulation adapting these countermeasures cannot achieve 3rd grade. So 4 additional scenarios were adapted and the result satisfied 3rd grade. This study could help to establish water quality improvement countermeasure by using complex modeling.

  • Weight control diets induce reducing women' bone mineral density (BMD) that has a close relationship to risk in osteoporosis. This study was carried out to identify bone density risk factors affecting women's BMD, and to examine the relationship age, lifestyle and dietary habits for bone health by physical measurement and questonnaies. The subjects of this study were 194 women living on the Seoul area. When the subjects were divided into 4 age groups, BMI was the highest in the 50 years group (24.8) and the lowest in the 20 years group (21.63). Average T-score, which is BMD of forearm bone and calcaneus was the highest in the 40 years (-0.07) and the lowest in the 20 years (-0.59). The rate of eating breakfast was shown significantly higher in the 50 years group than that in the younger group. The frequencies of eating out, fried food intakes, and alcohol drinks were shown significantly different by age (p < 0.01). In conclusion, the risk rate of BMD was high in the 20syears and 50 years groups. It may due to the 20s' weight-control diet. Breakfast eating, exercise, intakes of anchovies, radishes, carrots, zucchinis and tomatoes were significantly important factors to prevent bone density risk.

  • This survey was conducted to investigate the dietary behavior and health status of Buddhist nuns. In this study, 100 Buddhist nuns in Seoul were selected. The dietary survey was focused on the diet in winter. The age distribution was as follows; 24% of the subjects were in their 20s, 45% in their 30s, 23% in their 40s, and 8% in their 50's and over, respectively. The percentage of the subjects living in temples close to the downtown area was 77% and the rest resided in areas remote to the downtown area. Over fifty percent of the subjects were satisfied with their diet at temple. And 59% of the subjects were eating a snack more than once a day. The snacks included fruits (60%), raditional tea (20%), coffee (9%), bread and cookies (4%), md rice cakes (3%), etc. Among food groups, the intake of green-vegetables and fruits were the highest and intake of milk and bean products were low which may cause calcium and protein deficiency. Most of the subjects believed that their health conditions were average or above average. About 50% of subjects didn't exercise at all. The frequencies of gastro-intestinal diseases and anemia were extremely high. About 50% of subjects took some form of medicine. To improve their health and nutritional status, it is required that they practice a good dietary behavior, maintain a balanced diet, and exercise regularly.
