세균의 의사 소통(Quorum-Sensing) 기구와 그 잠재적 응용성 (Quorum-Sensing Mechanisms in Bacterial Communities and Their Potential Applications)

  • Although microorganisms are, in fact, the most diverse and abundant type of organism on Earth, the ecological functions of microbial populations remains poorly understood. A variety of bacteria including marine Vibrios encounter numerous ecological challenges, such as UV light, predation, competition, and seasonal variations in seawater including pH, salinity, nutrient levels, temperature and so forth. In order to survive and proliferate under variable conditions, they have to develop elaborate means of communication to meet the challenges to which they are exposed. In bacteria, a range of biological functions have recently been found to be regulated by a population density-dependent cell-cell signaling mechanism known as quorum-sensing (QS). In other words, bacterial cells sense population density by monitoring the presence of self-produced extracellular autoinducers (AI). N-acylhomoserine lactone (AHL)-dependent quorum-sensing was first discovered in two luminescent marine bacteria, Vibrio fischeri and Vibrio harveyi. The LuxI/R system of V. fischeriis the paradigm of Gram-negative quorum-sensing systems. At high population density, the accumulated signalstrigger the expression of target genes and thereby initiate a new set of biological activities. Several QS systems have been identified so far. Among them, an AHL-dependent QS system has been found to control biofilm formation in several bacterial species, including Pseudomonas aeruginosa, Aeromonas hydrophila, Burkholderia cepacia, and Serratia liquefaciens. Bacterial biofilm is a structured community of bacterial cells enclosed in a self-produced polymeric matrix that adheres to an inert or living surface. Extracellular signal molecules have been implicated in biofilm formation. Agrobacterium tumefaciens strain NT1(traR, tra::lacZ749) and Chromobacterium violaceum strain CV026 are used as biosensors to detect AHL signals. Quorum sensing in lactic acid bacteria involves peptides that are directly sensed by membrane-located histidine kinases, after which the signal is transmitted to an intracellular regulator. In the nisin autoregulation process in Lactococcus lactis, the NisK protein acts as the sensor for nisin, and NisR protein as the response regulator activatingthe transcription of target genes. For control over growth and survival in bacterial communities, various strategies need to be developed by which receptors of the signal molecules are interfered with or the synthesis and release of the molecules is controlled. However, much is still unknown about the metabolic processes involved in such signal transduction and whether or not various foods and food ingredients may affect communication between spoilage or pathogenic bacteria. In five to ten years, we will be able to discover new signal molecules, some of which may have applications in food preservation to inhibit the growth of pathogens on foods.

데침조건에 따른 참취의 생리활성성분 및 품질특성 변화 (Changes of Biologically Functional Compounds and Quality Properties of Aster scaber( Chamchwi) by Blanching Conditions)

  • 본 연구에서는 예로부터 나물로 많이 애용되어 오던 산체중의 하나인 참취를 데침시간별로 1, 3, 5분과 데침액에 첨가한 소금농도를 0, 1, 2%로 달리하여 처리한 다음 vitamin C, carotene, chlorophyll, flavonoid와 polyphenol, 무기질 그리고 데침액의 이화학적 특성을 측정하였으며 그 결과는 다음과 같다. 1. 데침조건에 따른 참취의 vitamin C 함량은 차이가 없었으며, ${\beta}-carotene$은 데침시간에 따른 영향은 받지 않은 반면 데침액의 소금농도가 증가함에 따라 보유량이 증가했다. 2. Chlorophyll a의 함량은 무첨가시에만 데침시간이 증가함에 따라 증가하였으나 소금을 1%, 2%로 첨가했을 때는 데침시간에 따른 유의적인 차이가 나타나지 않았다. 반면 chlorophyll b는 데침시간과 소금농도에 따른 영향을 받지 않았다. 3. Flavonoid와 polyphenol 함량는 데침시간과 데침액의 소금농도에 의한 영향을 모두 받았는데, 데침시간이 경과함에 따라 유의적으로 감소하였으나 데침액의 소금농도가 증가할수록 손실이 억제되었다. 4. 무기질 성분 중 Na함량은 소금, 데침시간, 그리고 두 요인의 상호작용에 의한 영향을 받았다. 또한 K와 Mg함량은 데침시간에 의해서만 영향을 받았으나 소금농도의 증가에 따른 함량변화는 없었다. Fe은 데침조건에 의한 영향을 받지 않았다. 5. 데친 잎의 색도와 색차는 데침시간의 영향을 받았으나 소금농도에 의한 변화는 나타나지 않았으며, 데침액은 적색도와 황색도 그리고 색차가 데침시간이 경과함에 따라 증가했으며 소금첨가농도가 증가함에 따라 무첨가시에 비해 색차의 변화가 적었다. 이상의 결과로부터 참취를 데침조건을 달리하여 처리할 때 생리활성성분인 flavonoid와 polyphenol함량이 데침시간과 소금농도에 의해 가장 영향을 많이 받았으며 이는 데침액의 색도변화와도 일치하는 경향이었다. 그러므로 데침액에 용출되는 양은 데침조건에 의해 많은 영향을 받으며 데침시간이 짧고 소금농도가 높을수록 억제됨을 알 수 있었다.

한국 남자 대학생의 Sodium 과 Potassium 평형에 관한 연구 (A Study on the Intkae-Balance of Sodium and Potassium of College Men of Korea)

  • 본 연구는 20~26세의 남자 대학생 8명을 대상으로 4주간 평상시와 같은 생활양식과 적정체중을 유지시키면서 각 대상자들이 섭취한 모든 음식과 배설한 대변 및 소변을 모두 수거하여 분석하므로서 sodium 및 potassium의 1인 1일당 섭취량과 배설량을 측정하였다. Sodium 및 potassium 섭취량은 원자흡광광도계로 측정한 실측치(measured)와, 식품분석표에 의거하여 얻은 환산치(conversed)와의 관계를 비교 검토하였다. 1일 1인당 환산한 sodium 섭취량은 $2.36{\pm}0.03g$으로 실측한 섭취량 $6.36{\pm}0.13g$에 비하여 약 63%나 낮았다. 1일 1인당 환산한 potassium 섭취량은 $1.71{\pm}0.03g$으로 실측한 섭취량 $1.87{\pm}0.05g$과 큰 차이가 없었다. 1일 1인당 소변으로의 sodium 배설량은 $5.49{\pm}0.19g$으로 이는 총 sodium 섭취량의 86%이었고, 대변으로의 sodium 배설량은 $0.24{\pm}0.02g$으로 이는 총 sodium 섭취량의 3.7%이었다. 1일 1인당 소변으로의 potassium 배설량은 $1.33{\pm}0.08g$으로 이는 총 potassium 섭취량의 71%이었고, 대변으로의 potassium 배설량은 $0.45{\pm}0.03g$으로 이는 총 potassium 섭취량의 24%이었다. 뇨중 Na/K 배설 비율은 $4.3{\pm}0.1$이었다.

The Ability to Identify the Imported Foods among Housewives in Cheongju Area

  • The purpose of the study was to get some information about the educational program for consumers in the community. For this, the author investigated the ability to identify the imported foods and the educational contents to be taught. The subjects for this study were 183 housewives living in Cheongju city, and the research was conducted from March 1 to March 15, 2003. A survey questionnaire was distributed, asking general matters regarding the subject, attitude when purchasing foods, the ability to identify the imported foods, educational contents to be taught, and the identification ability between the domestic and the imported foods. The data was analyzed for percentage, mean, standard deviations using SAS program, and was also examined with Chi-square or ANOVA. $92.3\%$ of housewives checked the label to distinguish between the domestic food and the imported one, among which $99.5\%$ preferred to buy the domestic brand. For major reasons of this preference, $46.3\%$ of them reported that the imported foods had many harmful substances. $66.1\%$ of the subjects, however, replied that they did not have the ability to discern the differences between the two. The identification information was received from 'TV or radio program', which $61.7\%$ of the subjects reported as such. $61.5\%$ of the subjects were inclined to receive education about the imported foods. For the educational contents, $75.4\%$ wanted to learn 'the method to identify the imported foods'. According to the identification test on the imported foods, they got 13.6 points on the average out of 40 points, which was quite low. The highest correct answer was for pteridium aquilinum ($63.7\%$), sesame ($49.2\%$), and yellow croaker ($45.6\%$), while the highest incorrect answer was for red pepper powder ($40.4\%$), chestnut ($40.6\%$), and dried pepper ($32.2\%$). The results suggested that most of the respondents had negative attitudes towards the imported agricultural products, but their identification ability was quite poor. Therefore, it is necessary to provide education and publicity work in relation to the identification methods for the imported foods so that consumers may have less risk from the imported agricultural products.

대전의 대표음식 발전 방향 모색을 위한 대전시가 선정한 ‘육미’에 대한 인지 및 수용성 조사 (Public Recognition and Acceptance of Yookmee (‘6 dishes’) Designated by Daejeon Metropolitan City as the Foods Representative of the Daejeon Area)

  • This study was conducted to devise a scheme for the development of foods designated as Yookmee (“6 dishes), which are representative food of Daejeon area. The Yookmee consist of Seolleongtang(ox bone soup and boiled rice), Samgyetang (chicken stew stuffed with glutinous rice and ginseng), Dolsotbap (boiled rice mixed with vegetables), Goojeukmook (acorn jelly), Sootgol-naengmyeon (cold buckwheat noodles with broth) and Daecheongho minmulgogi-maeuntang (spicy hot freshwater fish soup). A questionnaire was developed and administered by means of an interview regarding the subjects' recognition of and preference for the six dishes, their usual eating places and eating frequencies, the need for some standardization of recipes and for nutrition labeling including serving sizes and nutrient content. The total number of subjects who participated in this study were 328 (male 112, female 216) living in Daejeon. The subjects who were aware of the presence of Yookmee were more in their thirties or older (15%) compared to those in their twenties (9.6%) The percentages of the subjects who recognized the Yookmee as the representative foods were twice among those in their thirties (over 60%), as compared to 31.5% in their twenties (p<0.001). Samgyetang was one of the favorite foods of all the Yookmee among those in their twenties and Goojeukmook was the favorite for all the other age groups. The incidence of those eating one of Yookmee more than once a month was 51.5% in all the age groups, but the intake frequency was lower among those in their twenties (43.8%). The percentage of those who recommended Yookmee as a food for guests was the highest among those in their fifties (54.7%). The first reason why the subjects do not recommend these foods was because they were unfamiliar with Yookmee; among those in their thirties and forties the 2nd reason was because it is not much enough in quality or quantity to be served as a food for guests. Over 60% of the subjects felt the need for standardization of Yookmee, recipes for especially those in their fifties did feel the needs (92.5%). Furthemore, regarding labeling of sowing sizes and nutrients contents, over 80% of the subjects wanted these, and this desire tended to increase with age. From these results, it seems reasonable to accept Yookmee as the representative foods of Daejeon, despite the fact that many people do not yet currently do so. Since most of the subjects (85.4%) partake Yookmee outside of their homes, it is recommended that efforts need to be expanded on enhancing the nutritional quality, the taste and the quality control of Yookmee by standardizing the recipes, labeling the serving sizes and nutrient contents, and providing educational and publicity programs.

비만아동의 영양섭취와 혈청 지질농도 및 철분영양지표 (Dietary Intakes and Serum Lipids and Iron Indices in Obese Children)

  • This study was performed to compare nutrient intakes, diet quality and serum indices (TG, Total cholesterol, LDL-cholesterol, HDL-cholesterol, RBC, Hb, Hct, Serum iron, ferritin, MCV) of obese and normal weight children. The subjects were 149 children living in the Seoul and Gyeonggi areas. Each subject was assigned to one of such as normal weight group ($15th{\le}BMI$ percentile < 85th, n = 82) or obese children ($85th{\le}BMI$ percentile, n = 67) according to their percentile of BMI by The Korean Pediatric Society. Data on dietary intakes, body composition and serum indices were obtained. Differences of all the above variables were assessed. Energy, carbohydrate, fat, cholesterol, total fatty acid, SFA, MUFA, PUFA, phosphate, potassium, zinc, vitamin $B_1$ and vitamin $B_6$ intakes of girls in the obese group were higher than those of the normal weight group (p<0.05). The intake of fiber was as insufficient as below 50% of KDRIs in both groups. Nutrient adequacy ratio of calcium, iron, phosphate, zinc and folate in obese boys were lower than those of normal weight boys (p<0.05). Energy intakes of grain and milk and dairy food in the obese girl group ($905.9{\pm}344.5kcal,\;210.9{\pm}166.4kcal$) were higher than those of normal weight girls ($671.2{\pm}360.7kcal,\;184.0{\pm}103.5kcal$) (p<0.05). HDL-cholesterol level of obese boys ($52.7{\pm}6.3mg/dL$) was significantly lower than that of normal weight boys ($65.3{\pm}15.6mg/dL$). Serum iron level of obese boys and girls (boys: $79.4{\pm}32.6mg/dL$, girls: $98.3{\pm}16.2mg/dL$) was significantly lower than those of normal weight children (boys: $104.8{\pm}38.6mg/dL$, girls: $106.7{\pm}28.9mg/dL$) (p<0.05). These results suggest that there should be sensible food selection and more intakes of fruit and vegetable are needed to improve the nutritional status in obese children.

외식기업의 상품 개발 시 고객 참여 전략에 따른 시장지향성과 고객 만족도 차이분석 (An Analysis of the Differences in Market Directivity and Customer Satisfaction Based on Customer Participation Strategies in Developing Food Service Products)

  • 최근 생활 수준이 높아지고 건강과 웰빙에 대한 관심이 증가함으로써 고객들은 더욱 더 큰 역할을 기대하고 있다. 그러므로 고객들은 외식상품 개발에 적극적으로 참여하기를 희망한다. 이 연구의 목적은 외식상품 개발 시 고객 참여 전략에 대한 판별분석을 실시하였다. 통계기법은 신뢰성분석, 차이분석, 판별분석을 이용하였다. 조사는 2008년 7월 1일부터 7월 31일까지 서울과 광주 소재 외식산업체를 대상으로 350부 설문지를 배포하였으며, 이 중 정확하게 작성된 설문지 300부를 SPSS 12.0 패키지 프로그램을 사용하였다. 분석결과 외식상품 개발 시 적극적인 산업체와 소극적인 산업체 간에 시장지향성과 고객 만족에 유의한 차이가 나타났으며, 판별분석결과를 보면 고객 참여 전략을 소극적으로 실행하고 있는 외식기업은 고객만족 보다 시장지향성적인 경영 목표를 두고 있다. 또한 고객 참여 전략을 적극적으로 실행하고 있는 외식기업은 시장지향성 보다는 고객 만족에 경영 목표를 두고 있다. 그러므로 서비스 업종인 외식기업은 고객 만족이라는 경영 목표가 최우선이라면 고객 참여 전략을 적극적으로 도입해야 할 것이다.

한국 청소년의 에너지 소비량에 관한 연구 (A Study on Energy Expenditure in Korean Adolescent)

  • 본 연구는 $16{\sim}18$세의 남자 고등학생 7명을 대상으로 4주간 평상시와 같은 생활양식과 적정 체중을 유지시키면서 에너지 섭취량(GE)과 체내 에너지 보류량(BE)의 변동을 측정하므로서 (에너지 평형법) 에너지 소비량(EE)을 산출하였다. 에너지 섭취량과 대변으로의 에너지 손실량(FE)은 열량계로 측정하였고 소변의 것 (UE)은 질소 배설량으로부터 환산하였다. 지방 조직량(FM)은 피부두께를 측정하여 산출한 신체 밀도법에 의하였다 1) 총 에너지 섭취량에 대한 당질, 단백질 및 지방질의 구성비는 각각 $73.7{\pm}0.3%,\;13.5{\pm}0.3%$$12.9{\pm}0.5%$이었다. 2) 총 에너지 섭취량에 대한 대변으로의 에너지 손실율은 2.4% 이었다. 3)대변과 소변으로의 에너지 손실량을 감하여 산출한 1일1인당 평균 대사에너지량(ME)은 $2582{\pm}61kcal$이었다. 4) 28일동안의 체성분 변동량으로부터 산출한 체내 총 에너지 변동량(BE)은 평균 $4309{\pm}1837kcal$가 감소되었다. 5) 1일1인당 평균 에너지 소비량은 $2736{\pm}59kcal$로서 체중 kg당 $46{\pm}1kcal$이었다.

한.중.일 세시풍속과 세시음식(歲時飮食)에 대한 비교 (Comparative Study on Seasonal Festival and Food Culture among the Korea, China and Japan)

  • We conducted a consensual, expansive, and successive study to compare cultural differences and similarities between Korean, Chinese and Japanese's Seasonal Festivals and Foods documentarily. It showed interesting results that the three countries had celebrated with similar meanings, and shared similar events and special foods. Seasonal Festivals happen throughout the year sequentially: the New Year Day, January $15^{th}$(first full moon festival), March $3^{rd}$(double three day), May $5^{th}$(double five day), July $7^{th}$(double seven day) and finally the Year Farewell Festival. While, the festival of a royal birthday of Buddha happens on April $8^{th}$ in both countries: Korea and Japan. There is also one of the big festivals called the harvest moon festival on August $15^{th}$, and this event celebrates with special foods both in Korea and China. On December $23^{th}$, it is a special day for both Chinese and Japanese, but they celebrate the day with different meanings to it. Three countries have a special seasonal event celebrated each other. Koreans have a special event called Sambok to overcome summer with special food during a middle of June to the beginning of July. Chinese have a special event for overcoming winter with soup on December $8^{th}$. Japanese have a special event with rice cake to safety on January $11^{th}$. On these seasonal festivals, it is different to note that two different kinds of calendars are used. The lunar calendar is used by Koreans and Chinese whereas the solar calendar is used by Japanese. Because of the similarity in Buddhism, and agricultural industry, and especially sharing Chinese Characters in words, these three countries have in common in many ways to celebrate Seasonal Festival, and it is very unique custom in the world. Nowadays; however, these traditional events and special foods are changing in more simplified version and almost disappearing in all three countries. Therefore, we suggest that the Seasonal Festivals and Foods should be more emphasized in flourishing and exchanging between Korea, China and Japan.

오디추출물 급여가 충남 일부지역에 거주하는 중년 남, 녀의 혈청 무기질 수준 및 항산화 관련 인자에 미친 영향 (The Effects of Mulberry Fruit Extract Supplementation on the Serum Mineral Contents and Oxidative Stress Markers of Middle-Aged Humans Living in Choongnam Area)

  • 최근 건강에 대한 관심이 증가하고 유리기 산소에 의한 산화 및 염증이 다양한 질환과 관련이 있다는 사실이 밝혀지면서 식품류는 의약품에 비해 장기간 섭취하여도 안전하고 친숙하게 접할 수 있는 장점 때문에 천연물이나 각종 식품류에서 항산화 및 항염증과 관련된 새로운 물질을 탐색하는 연구가 활발하게 진행중에 있다. 그 가운데 4배성 휘커스 오디품종 '대성뽕' [Morus Lhos(Ser.) Koids]의 주색소는 anthocyanins이며, cyanidin-3-glucoside형태로 0.794% DW가 함유되어 있어서, 다른 오디품종에 비해 많은 양이므로 항산화 활성도 비례하여 클 것으로 판단된다. 따라서 본 연구에서는 오디추출물의 중년 남, 녀의 혈청 무기질과 항산화 관련 물질에 대한 개선에 대한 효과를 알아보고자 4주간 오디추출물을 급여(100 mL/day)하여 섭취 전 후의 혈청 무기질 및 혈중 항산화 관련물질을 분석하여 비교하였다. 1차적으로는 오디추출물을 제조하여 무기질 함량과 항산화능을 측정한 결과 무기질 함량은 칼슘(80.66 mg), 마그네슘(12.26 mg), 철분(6.26 mg), 구리(0.05 mg), 아연(4.01 mg) 함량으로 나타나 칼슘, 철분, 아연 함량이 높게 나타났다. DPPH소거능에 따른 오디추출물의 항산화능을 보면 비타민 C를 기준(100%)으로 했을때 cyanidin-3-glucoside는 85%,오디추출물은 34%로 cyanidin 3-glucoside의 약 40%의 소거능력을 보였다. 2차적으로는 이러한 오디추출물 섭취 전과 후 대상자들의 혈청 중 무기질 수준을 조사해 보았을때 여자 대상자의 경우 혈청 철분, 구리 및 아연 함량이 유의적으로 증가되었고, 남자 대상자의 경우는 철분 함량만이 유의적인 증가를 보였다. 혈청 지질산화와 관련 있는 혈청의 TBARS와 FRAP수준의 변화를 조사한결과 오디추출물 급여 후 남자, 여자 대상자의 혈청 FRAP수준이 유의적으로 증가되었고, 평균 혈청 TBARS 수준은 남, 녀 모두 감소되는 경향은 보였다. 결과적으로 오디는 항산화성이 뛰어나고 무기질을 공급할 수 있는 새로운 과일로 가치가 있다고 판단된다.
