To measure the proximate composition of fisheries products and to evaluate their nutritional value, we collected individuals from 101 species from the east (Pohang), west (Gunsan), and south (Tongyeong) coasts of Korea: 51 fish species, 32 species of molluscan shellfish (Gastropoda and Bivalvia), 6 species of Cephalopoda, 8 species of Crustacea, and 4 other species. The proximate composition of fish was $75.3{\pm}5.0%\;moisture,\;19.1{\pm}2.7%\;protein,\;3.8{\pm}4.1%\;lipids,\;0.4{\pm}0.3%$ carbohydrates, and $1.4{\pm}0.3%$ ash. The proximate composition of molluscan shellfish was $79.1{\pm}3.2%\;moisture,\;14.2{\pm}3.2%\;protein,\;0.7{\pm}0.6%\;lipids,\;3.9{\pm}1.9%$ carbohydrates, and $2.1{\pm}0.4%$ ash. We observed clear regional variation in the lipid content of some fish species. Specifically, the lipid content of gizzard shad (Clupanodon punctatus) was highest in the autumn, while the lipid contents of red seabream (Pagrus major) and purple pike conger (Muraenesox cinereus) were highest in the winter. The daily average intake of the proximate composition through fisheries products consisted of 11.7 g of protein, 1.9 g of lipids, 1.1 g of carbohydrates, and 1.1 g of ash. The respective intakes of protein, lipids, and carbohydrates from fisheries products were about 19.3, 3.6, and 0.3% of the nutrient reference values set by the Korean Food & Drug Administration. Therefore, fisheries products playa very important role as a source of protein.
Flying fish Cypselurus agoo roe is a popular food ingredient due to its abundant nutrition, unique texture, and flavor. It contains high levels of polyunsaturated fatty acids, protein, and minerals such as calcium, phosphorus, potassium, and vitamins (A, B1, B2, B6, and niacin), making it a highly utilized food ingredient. Additionally, it is widely used as a raw material for food and cooking in several countries. After harvesting, flying fish roe is dried and transported to processing plants, where it performed a re-moisturizing process. However, the conventional re-moisturizing process is time-consuming and results in some loss of quality. Thus, this study investigates the conditions required for the re-moisturization of flying fish roe including the composition of the immersion solution, immersion time, and conditions that could minimize damage to the roe. The results suggest a reasonable composition of immersion solution to minimize damage to flying fish roe and the most appropriate immersion time for re-moisturization. These results may provide valuable insights for the industry to enhance the quality of re-moisturized flying fish roe, leading to an increase in its market value and demand.
들기름 및 미강유를 베이스로 개발한 혼합 식용유는 오메가-3 지방산인 리놀렌산 함량이 약 20% 정도로 매우 높다. 이는 기존의 일반 식용유 중 오메가-3 지방 함량이 매우 높은 콩기름과 카놀라유의 리놀렌산 함량이 각각 6% 및 10% 내외인 점을 감안하면, 이들 식용유에 비하여 새로 들기름과 미강유를 혼합한 식용유는 2~3배 높은 비율로 오메가-3 지방산을 제공할 수 있어서, 오메가-3 지방산 섭취가 부족한 현대인의 식단에서 중요한 오메가-3 지방산 급원으로서의 역할을 할 수 있을 것이다. 뿐만 아니라, 토코페롤 함량도 약 46.77 mg/100 g oil 정도인데, 가장 주목할 일은 토코페롤 동족류 중 비타민 E의 활성이 가장 강한 알파-토코페롤(31.71 mg/100 g oil)이 가장 많이 존재하여, 총 토코페롤의 64%를 차지하고 있어서 비타민 E로서의 기능이 높다. 혈중 콜레스테롤 함량을 낮추는 기능성이 알려진 파이토스테롤 함량이 들기름과 미강유를 혼합한 식용유에 약 7,200 ppm 함유되어 있어, 일반적인 식용유의 3,000 ppm의 약 2.3배에 달한다. 본 연구에서 개발한 들기름과 미강유를 혼합한 식용유는 일반적인 식용유인 콩기름과 거의 유사한 산화안정성을 갖는 것으로 확인되어, 일반 들기름에 비하여 현저히 높은 산화안정성이 확보되었다.
In order to study on the riboflavin content of common foods for Korean and the rates of destruction of riboflavin during cooking 26 kinds of the foods were selected and 3 kinds of menu were cooked by standardized method. For each food item and menu riboflavin content was measured by AOAC method. The experimental values of 13 kinds of food such as rice oak mushroom carrot squarsh tangle dried large anchovy apple(Fuji) dried laver ramyun pork soybean curd fried soybean curd and danmugi were almost consistent with food compo-sition values. Whereas those of 12 kinds of foods such as cabbage onion potato kimchi beef sausage dried medium anchovy hair tail soybean paste and egg were considerably different from food composition table values, up to now Alaskan pollack maize loaf bread hamburger bread etc have not been analyzed in food composition table, The rates of retention of riboflavin in menu 1, 2, and 3 cooked by standardized method were 24% 69% 46% respectively. The overally retention rate was in inverse proportion to the time of sunlight exposure during cooking.
This research is the first known to introduce and analyze food-related content among the records left by George Clayton Foulk (1856-1893), a naval attache dispatched as part of a U.S. delegation to Korea during the Joseon dynasty in the 19th century. Sketches and memos by Foulk provide important clues in understanding the food culture during the late Joseon dynasty. By analyzing the types of foods, table composition, and intervals between serving the nine rounds of food from the rural government office, which Foulk ate during his local trip, he was able to confirm that there was a starter ('preliminary table' or 'hors d'œuvre') before the main table and that it was served before the main dish.
Objectives: The objective of this study was to revise the target pattern in food guidance system for adolescents' balanced menu planning. Methods: The food groups in the target pattern were divided into detailed food items, and intake number were assigned to each food items based on the revised standard food composition table. The validity of revised target pattern was examined. Menu planning according to the revised target pattern was made available to 305 male and female middle school students and the nutritional assessment of the menu plan were carried out using SPSS WIN 12.0. Results: The energy contents, energy contribution ratios of carbohydrate, fat, and protein, and 4 minerals' and 6 vitamins' contents of the revised target pattern were adequate. The average energy contents of the menu planned according to revised target pattern were 400~500 kcal higher than that of the revised target pattern when the revised standard food composition was applied. The energy contribution ratios of fat were 28.9%, close to maximum of acceptable macronutrient distribution range (AMDR) (30%), and that of carbohydrate were 54.5%, lower than minimum of AMDR (55%). The nutrient adequacy ratios (NARs) of calcium and vitamin C were less than 1.0. According to index of nutritional quality (INQ) of food items, kimchi, milk dairy products, and soybean curd were energy efficient source for calcium, kimchi, fruit, vegetable and seaweed were energy efficient source for vitamin C, with INQ of food items were higher or close to 2.0. Kimchi was the best energy efficient source of calcium and vitamin C. Conclusions: Revised target pattern based on the adolescent's foods intake was not good enough for balanced menu planning by adolescents, because what they ate and what they wanted to eat were very much different. Detailed guidance for food selection is necessary in each food items.

The purpose of this study was to evaluate effects of replacing soybean meal with perilla seed meal (PSM) on growth performance, proximate composition of meat, meat quality, and fatty acids composition of meat in broilers. A total of 60 one-day-old chicks of ROSS 308 (initial body weight of 44.8 ± 0.4 g) were randomly allotted to four treatment groups (15 replicate cages with 1 broilers per cage) in a period of 5 weeks. Dietary treatments included control (CON) basal diet (corn-soybean meal-based diets) and test diets in which PSM was included at 0.5% (T1), 1% (T2), or 2% (T3) to gradually replace soybean meal. At the end of experiment, all broilers were slaughtered for collecting breast and thigh meat. At 5 weeks, T2 and T3 treatment groups had higher (p < 0.05) body weights than CON and T1 treatment groups. Weight gain was increased (p < 0.05) in T2 and T3 treatment groups. Feed intake was decreased (p < 0.05) in T3 treatment group. Broilers in T2 treatment group had lower (p < 0.05) feed conversion ratio than those in other treatment groups. In proximate composition of breast meat, there was no significant (p > 0.05) difference in moisture and ash. Fat composition of breast meat was significantly (p < 0.05) increased in T2 and T3 treatment groups. Regarding meat quality, broilers fed T3 diet had higher (p < 0.05) water holding capacity than those fed other diets. Regarding fatty acids composition of thigh meat, broilers fed T3 diet had higher (p < 0.05) linolenic acid than those fed other diets. In conclusion, soybean meal replaced by 2% perilla seed meal in broiler diet can improve growth performance, meat quality, and fatty acids composition of thigh meat in broilers. Perilla seed meal can be a lot of potential alternatives feedstuff for soybean meal in this study.

Milk composition is an imperative aspect which influences the quality of dairy products. The objective of study was to compare the chemical composition, nitrogen fractions and amino acids profile of milk from buffalo, cow, sheep, goat, and camel. Sheep milk was found to be highest in fat ($6.82%{\pm}0.04%$), solid-not-fat ($11.24%{\pm}0.02%$), total solids ($18.05%{\pm}0.05%$), protein ($5.15%{\pm}0.06%$) and casein ($3.87%{\pm}0.04%$) contents followed by buffalo milk. Maximum whey proteins were observed in camel milk ($0.80%{\pm}0.03%$), buffalo ($0.68%{\pm}0.02%$) and sheep ($0.66%{\pm}0.02%$) milk. The non-protein-nitrogen contents varied from 0.33% to 0.62% among different milk species. The highest r-values were recorded for correlations between crude protein and casein in buffalo (r = 0.82), cow (r = 0.88), sheep (r = 0.86) and goat milk (r = 0.98). The caseins and whey proteins were also positively correlated with true proteins in all milk species. A favorable balance of branched-chain amino acids; leucine, isoleucine, and valine were found both in casein and whey proteins. Leucine content was highest in cow ($108{\pm}2.3mg/g$), camel ($96{\pm}2.2mg/g$) and buffalo ($90{\pm}2.4mg/g$) milk caseins. Maximum concentrations of isoleucine, phenylalanine, and histidine were noticed in goat milk caseins. Glutamic acid and proline were dominant among non-essential amino acids. Conclusively, current exploration is important for milk processors to design nutritious and consistent quality end products.

Snake tomato (Trichosanthes cucumerina) has been cultivated and used as a replacement for Lycopersicum esculentum in many Asian and African diets. Matured T. cucumerina fruits were harvested at different ripening stages and separated into coats and pulps for analyses to determine their suitability for use in culinary. They were analyzed for the nutritional composition and antioxidant potential using different biochemical assays [1,1-diphenyl-2-picrylhydrazyl, 2,2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activities, and ferric reducing antioxidant power] and antioxidative enzymes activities. The nutritional composition revealed that T. cucumerina contains over 80% water and is very rich in fiber, thus it can serve as a good natural laxative. The lycopene and ${\beta}$-carotene contents were especially high in the ripe pulp with values of $21.62{\pm}1.22$ and $3.96{\pm}0.14mg$/100 g, respectively. The ascorbic acid content was highest in the pulp of unripe fruit with a value of $56.58{\pm}1.08mg$/100 g and significantly (P<0.05) decreased as ripening progressed. The antioxidant potential of the fruits for the 3 assays showed that unripe pulp> ripe coat> ripe pulp> unripe coat. There were decreases in the antioxidant enzymes (superoxide dismutase, ascorbate peroxidase, and glutathione reductase) activities, with the exception of catalase, as ripening progressed in the fruits. These decreased activities may lead to the softening of the fruit during ripening. Harnessing the antioxidative potential of T. cucumerina in culinary through consumption of the coats and pulps will alleviate food insecurity and help maintain good health among many dwellers in sub-Saharan Africa and Southeast Asia.
