홍게 가공회수 단백질의 거품 형성력 및 안정성 (Foaming Capacity and Foaming Stability of Protein Recovered from Red Crab Processing Water)

  • Foaming capacity (FC) and stability (FS) of protein recovered from red crab (Chitinonecetes opilio) processing in water and soybean protein isolate were determined at pH 2.0~10.0 in water and NaCl solution. The FC values for both proteins showed the lowest values at the isoelectric point (pH 4.0) and increased nth an increase in pH above the isoelectric point. FC of RCP was higher than that of SPI at pH 10.0 in water and both NaCl solutions. FC of SPI increased with an increase in NaCl concentration at pH 4.0 and 6.0, but FC of RCP was not affected. The highest FS values for both proteins were obtained at pH 4.0 in water. At pH 2.0, FC of RCP decreased with NaCl concentration increase, but FS increased. NaCl concentration had little effect on FS of RCP at pH 4.0 and 6.0, but the FS decreased at pH 10.0. FS of SPI was similar to that of RCP at pH 2.0 and increased with NaCl concentration Increase from 0.1 to 0.5M NaCl at pH 10.0.

난백 거품형성능력 및 안정성 평가를 위한 간편 측정방법과 실용성 검증 (Convenient Method for the Determination of Foaming Properties of Egg White and Its Verification)

  • 본 연구에서는 난백의 거품형성능력 및 안정성을 간편하게 평가하기 위한 표준방법을 제시하고자 시료의 양, whipping 속도 및 시간이 거품형성에 미치는 영향을 조사하고 적합한 거품형성조건을 선정하였다. 선정된 조건(시료량 70g, 1,200rpm, 2분)으로 난백의 거품형성능력 및 안정성을 20회 반복 측정하여 평가한 결과 높은 재현성을 나타내었으며 시료의 변화(신선한 난백, 동결건조 난백분말, 상업용 난백분말) 및 계란의 저장기간에 따른 거품형성능력 및 안정성의 유의적 차이를 효과적으로 구별할 수 있었다.

  • Induction heating process is one of the most efficient heating process in terms of temperature control accuracy and heating time saving. In the past study, fabrication process of cellular 6061 alloys by powder metallurgical route and induction heating process was studied. To supplement the framing conditions that studied in past study, effect of induction heating capacity and holding time at foaming temperature were investigated. Under the achieved framing conditions, teamed 6061 alloys were fabricated for variation of foaming temperature, and porosities(%)-foaming temperature curves were obtained by try-error experimental method. Uniaxial compression tests were performed to investigate the relationship between porosities(%) and stress-strain curves of framed 6061 alloy. Also, energy absorption capacity and efficiency were calculated from stress-strain curves to investigated. Moreover, dependence of plateau stress on strain rate was investigated in case of cellular 6061 alloy with low porosities(%)

분리 녹두 단백질과 이를 화학적으로 수식화한 단백질간의 식품학적 기능성 비교 (A Comparison Study on Functional Properties of Mungbean Protein and Chemically Modified Mungbean Protein)

  • This study was carried out in order to investigate the change of protein functionalities such as foaming and emulsifying properties by succinylation of protein isolates. Succinylated and unsuccinylated munghean protein isolates were tested for finding out the effects of pH, heat treatment and sodium chloride concentration on the solubility, emulsion capacity, emulsion stability, foaming capacity, and foam stability. The results are summarized as follows: 1. Succinylation enhanced the solubility of MPI except at pH 4.5. When heated, succinylation greatly increased the solubility of succinylated MPI above $60^{\circ}C$. With the addition of NaCl, succinylation increased the solubility of MPI at acidic condition. 2. Emulsion capacity of succinylated MPI showed the lowest value at pH 7 and higher values at acidic and alkaine condition. when succinylated MPI was heated, emulsion capacity showed the highest at $80^{\circ}C$. With NaCl was added, emulsion capacity of succinylated MPI lincreased at pH 7, 9 or 11 decreased at pH 3 except addition of 1.0M NaCl. 3. Emulsion stability of MPI and succinylated MPI showed the highest at pH 4.5. Succinylation enhanced the emulsion stability of MPI at acidic condition. 4. The foaming capacity of MPI was increased at pH 3, 7 or 9 by succinylation. 5. When heated, foam stability of MPI and succinylated MPI showed the highest at pH 4.5 and at pH 11, respectively. When heated, both proteins showed the highest stability at $100^{\circ}C$.

방사선 조사가 분리대두단백의 기능적, 구조적 특성에 미치는 영향 (Effects of gamma irradiation on the functional and structural characteristics of soy protein isolates)

  • The effects of irradiation on the functional and structural characteristics of soy protein isolates were studied. Soymilk was irradiated at 1, 5, and l0kGy, after which soy protein isolates were prepared. The functional properties of soy protein isolates were examined including solubility, emulsion capacity and stability, foam capacity and stability, structural properties as represented by SDS-PAGE pattern, and secondary and tertiary structures. The solubility and emulsion capacity were increased by radiation treatment at 1kGy however the values were adversely affected again as dosage was increased above 5kGy. As irradiation dosage increased, an increase of foaming capacity at 1kGy and a decreasing turnover afterwards were also noted in foaming capacity, although the differences were not statistically significant. The SDS-PAGE pattern showed fragmentation and aggregation of protein molecules as affected by irradiation in proportion to the dosage increase. The results of CD and fluorescence spectroscopy revealed increased aperiodic structure contents with the dosage increase. It was assumed that irradiation dosagefrom 5 to l0kGy could initiate minimal denaturation of protein in various foods compared to general heat treatment.

Acyl화에 의한 녹두 Whole Globulin의 특성에 관한 연구 (Properties of Acylated Mungbean Whole Globulin)

  • The objective of this study was to improved the limited functional characteristics of mungbean whole globulin. The mungbean whole globulin was acylated with succinic and acetic anhydride, and the functional properties of acylated protein were investigated, The results obtained ware as follows. 1. The UV-absorption spectra of acylated whole globulins with that of the succinylated 74% whole globulin as large blue shift of the absorption maximum and minimum wavelength from 275 nm to 269 nm, respectively. 2. The mobility of acylated whole globulin were increased on PAGE pattern, and degree of mobility was particularly remarkable in case of succinylation, 3. The water absorption capacity of whole globulin was increased by acylation. The most increased rate of whole globulin was 174,02% from succinylated 74%. The oil absorption capacity of whole globulin was increased by acylation The most increased rate of whole globulin was 165.41% from acetylated 81.77%. 4. The bulk density of whole globulin was decreased by acylation. and the greater the extent of acylation, the smaller the bulk density. 5. The foaming capacity and stability of whole globulin was increased by acylation, and remarkably high in 74% succinylated whole globulin. In contrast, however, the foaming capacity and stability of native and acylated whole globulin were decreased by heat treatment.

Analysis of the Foam Generated Using Surfactant Sodium Lauryl Sulfate

  • The performance evaluation of a sodium lauryl sulfate to qualify as a foaming agent is presented in this paper. When new surfactants are used a systematic study of production parameters on the foam characteristics needs to be undertaken unlike proprietary foaming agents and foam generator for which manufacturer has predefined the parameters. The relative influence of the foam parameters and optimization of factors were carried out through a systematic experiment design. The foam production parameters namely foam generation pressure and dilution ratio of foaming agents are observed to have significant effect on all foam characteristics with the exception of foam output rate on which only foam generation pressure has influence. The foam with good initial foam density need not necessarily be stable foam. The optimum levels of foam production parameters are determined for the surfactant Sodium lauryl sulfate which can be used to produce stable foam for foam concrete production.

Dimethylglutarylation에 의한 변형대두단백질의 기능적 특성 (Functional Properties of Modified Soybean Protein Isolate by Dimethylglutarylation)

  • This study was conducted to improve the functional properties of soybean protein isolate by dimethylglutarylation and acetylation. Amino acid composition and solubility of modified soybean protein by dimethylglutarylation were not changed, but lysine and trypsin inhibitor activity was decreased an isoelectric point was moved from pH5 to pH4 as a result of modification. Emulsification capacity and stability, foaming capacity and thermal stability were increased by the modification. In that 91% dimethylglutarylated protein did not coagulate when heating at $100^{\circ}C$ for 20 min. while its foaming stability was decreased. Whereas specific gravity was decreased by the modification of the soybean protein, relative viscosity and whiteness were improved. Generally, dimethylglutarylation produced more conformational changes in protein system than did in acetylation.

당알콜과 효소의 종류가 대두아이스크림의 품질특성에 미치는 영향 (Influence of sugar alcohol and enzyme treatment on the quality characteristics of soy ice cream)

  • The effects of bromelain and $\alpha$-chymotrypsin treatments on the functional properties(foaming capacity, foaming stability, emulsifying capacity, and emulsifying stability) of soy protein isolate(SPI) and the addition of various sweeteners(sucrose, sorbitol, xylitol) on the quality attributes(viscosity, overrun ratio, melt-down property, and sensory characteristic) of soy ice cream were studied. SPI was more effectively hydrolyzed with $\alpha$-chymotrypsin than bromelain, resulting in a better foaming and emulsifying capacity. Adding xylitol could significantly improve the viscosity, overrun and melt-down property of soy ice creams while the effect was the lowest in the sucrose addition. Bromelain treatment caused a lower apparent viscosity of SPI suspension compared with $\alpha$-chymotrypsin treatment and untreated. The overrun ratios of the soy ice cream prepared with bromelain and $\alpha$-chymotrypsin treated SPI were 18.9∼25.9% and 24.9∼40.3%, respectively as a result of freezing with agitation for 20 min in an ice cream maker. Comparatively, untreated SPI could bring only 15.8∼21.4% overrun ratios after operating for 15 min. The bromelain treatment caused high melt-down tendency of the product while soy ice cream with untreated SPI showed an opposite trend. In sensory characteristics, no significant differences in the strength of beany flavor were noted among the samples. Sweetness, bitter taste, icy feel, and mouthfeel of the product were greatly affected by the enzyme-treatment of SPI. Soy ice cream added with xylitol after $\alpha$-chymotrypsin treatment was the most acceptable among all samples.

탈당(脫糖)된 육계와 돼지 혈장분(血漿粉)의 상온 저장에 따른 색깔, 단백질 함량, 용해도, 기포력과 pH 변화 (Changes in Color, Protein Content, Solubility, Foaming Capacity and pH of Desugarized Brolier and Porcine Plasma Powder During Storage at Room Temperature)

  • GOD (glucose oxidase)나 제빵용 효모를 사용하여 포도당이 제거된 육계와 돼지 혈장분의 상온 저장중 색깔, biuret 단백질 함량, 용해도, 기포력과 pH의 변화를 조사하였다. 혈장분의 종류와 혈당 제거 법과는 상관없이 실험기간 동안 혈당이 제거된 혈장분은 해당 대조구보다 "L" 값이 같거나 높았으며 "a" 값과 "b"값은 낮았다(P<0.05). 축종 또는 혈당 제거 방법과는 상관없이 탈당된 모든 시료의 단백질 함량과 용해도는 상온 저장중 해당 대조구보다 항상 높았고 저장 기간이 경과할수록 감소하는 경향을 보였다(P<0.05). 대체적으로 탈당된 육계와 돼지 혈장분 기포력은 해당 대조구와 비슷하거나 높았다. 그러나 돼지 혈장분의 기포력은 육계 혈장분과는 다르게 실험기간 동안 탈당된 돼지 혈장분과 상응하는 대조구는 큰 차이를 나타내지 않았다(P<0.05). 육계 대조구와 GOD로 혈장 포도당을 제거한 육계 혈장분의 pH는 저장기간이 지남에 따라 감소하였지만 효모로 포도당을 제거한 육계 혈장분과 모든 돼지 시료의 pH는 실험 기간중 증가하였다가 감소하였다. GOD로 포도당을 제거한 육계 혈장분이 해당 육계 시료 보다 낮은 pH값을 보인 반면 돼지 혈장분에서는 대조구가 상응하는 실험구보다 항상 낮은 pH 값을 나타내었다(P<0.05). 육계와 돼지 혈장의 포도당을 제거한 후 혈장을 건조시키면 혈장분의 색깔, biuret 단백질 함량, 용해도 그리고 기포력을 증진시킬 수 있었다.
