추출방법에 따른 잎담배 종류별 휘발성 향기성분 특성비교 (Comparison of the volatile flavor compounds in different tobacco types by different extraction methods)

  • Traditional simultaneous distillation extraction(SDE) and solid-phase micro extraction(SPME) methods using GC/MS were compared for their effectiveness in the extraction of volatile flavor compounds from different tobacco leaves types(flue-cured, burley, oriental). The major volatile flavor compounds of flue-cured and burley tobacco were similar such as neophytadiene, solanone, megastigmatrienone isomers, ${\beta}$-damascenone and ${\beta}$-ionone. On the other hand, volatile flavor compounds such as norambreinolide, sclareolide were specifically identified in oriental tobacco. Each method was used to evaluate the responses of some analytes from real samples and standards in order to provide sensitivity comparisons between two techniques. Among three types of SPME fibers such as PDMS(Polydimethylsiloxane), PA(Polyacrylate) and PDMS/DVB (Polydimethylsiloxane/Divinylbenzene) which were investigated to determine the selectivity and adsorption efficiency, PDMS/DVB fiber was selected for the extractions of the volatile flavor compounds due to its effectiveness. The qualitative analysis showed that the total amount of volatile flavor compounds in SDE method(130 species) was much more than that in SPME method(85 species). SPME method was more efficient for all the highly volatile compounds than SDE method, but on the other hand, low-volatile compounds such as fatty acids or high-molecular hydrocabons were detected in SDE method. SPME method based on a short-time sampling can be adjusted to favor a selected group compounds in tobacco. Furthermore this results could be used to estimate the aroma characteristics of cigarette blending by using a different type of tobacco with more effectiveness and convenience.

Effects of cooking conditions on the physicochemical and sensory characteristics of dry- and wet-aged beef

  • Objective: This study aimed to elucidate the effects of cooking conditions on the physicochemical and sensory characteristics of dry- and wet-aged beef strip loins. Methods: Dry- and wet-aged beef aged for 28 days were cooked using different cooking methods (grilling or oven roasting)×cooking temperatures (150℃ or 230℃), and their pH, 2-thiobarbituric acid reactive substances (TBARS), volatile compounds, and color were measured. Results: Cooking conditions did not affect pH; however, grilling resulted in lower TBARS but higher cooking doneness at the dry-aged beef surface compared to oven roasting (p<0.05). In descriptive sensory analysis, the roasted flavor of dry-aged beef was significantly stronger when grill-cooked compared to oven roasting. Dry-aged beef grill-cooked at 150℃ presented a higher intensity of cheesy flavor, and that grilled at 230℃ showed a greater intensity of roasted flavor compared to wet-aged beef at the same condition, respectively. Conclusion: Grilling may be effective for enhancing the unique flavor in dry-aged beef.

Flavor Components Comparison between the Neck Meat of Donkey, Swine, Bovine, and Sheep

  • Donkey in China is well known for its draft purpose and transportation; however, donkey meat has attracted more and more consumers in recent years, yet it lacks sufficient information on its flavor components compared to other main meats. Therefore, in this study, volatile flavor compounds in neck meat of donkey, swine, bovine, and sheep were classified by electronic nose, then confirmed and quantified by gas chromatography-mass spectrometry. High-performance liquid chromatography (HPLC) and gas chromatography were used to quantify free fatty acid, amino acid, and flavor nucleotide. A total of 73 volatile compounds were identified, and aldehydes were identified as the characteristic flavor compounds in neck meat of donkey, bovine, swine and sheep in proportion of 76.39%, 46.62%, 31.64%, and 35.83%, respectively. Particularly, hexanal was the most abundant volatile flavor. Compared with other neck meat, much higher unsaturated free fatty acids were present in donkeys. Furthermore, neck meat of donkeys showed essential amino acid with highest content. Thus, special flavor and nutrition in donkey neck meat make it probably a candidate for consumers in other regions besides Asia.

아로니아 와인의 품질 특성 및 휘발성 향기성분 (Quality Characteristics and Volatile Flavor Components of Aronia Wine)

  • This study investigated the quality characteristics and volatile flavor components of aronia wine (Aronia melanocarpa (0~100%)). After 12 days of fermentation, the alcohol contents of aronia wines ranged between 9.0~12.0%. The pH level and total acidity of aronia wines were 3.20~3.68 and 0.57~0.76 g/100 mL, respectively. The organic acid analysis of wine containing 100% aronia, revealed malic acid content at 3.70 mg/mL, followed by tartaric acid, lactic acid, and citric acid. As the aronia content increased, both the total polyphenol content and the antioxidant activity (the DPPH radical scavenging activity) also significantly increased. The total polyphenol content was the highest in the wine with 100% aronia (461.33 mg%), and the antioxidant activity showed the highest values in the wine with 100% aronia (91.91%). Volatile flavor component analysis of aronia wines identified 8 alcohols, 12 esters, 4 ketones, and 7 other compounds. In the sensory evaluation, the color, flavor, and taste of wine with 20% aronia showed higher values than other aronia wines. Based on the results of the present study, we suggest that 20% aronia is most beneficial in improving the quality as well as sensory characteristics of the wine.

수삼중 휘발성 향기성분에 관한 연구 (Studies on the Volatile Flavor Components of Fresh Ginseng)

  • Volatile flavor components of fresh ginseng (Panax ginseng C.A. Meyer.) were studied. Steam distillate of fresh ginseng was extracted with ethyl ether and the extract was separated into four fraction: neutral, phenolic, acidic and basis fractions. The ethyl ether concentrates and neutral fraction were analyzed by a combination of SE-54 fused silica capillary gas chromatography and mass spectrometry. Major flavor components of fresh ginseng were predominantly mono(n +2) and sesquiterpenes(n +3) in over two hundred constituents. Of these, 28 were newly identified in volatile flavor components of fresh ginseng by GC-MS.

  • Flavor components of panax ginseng cultured with pine tree leaves mulch instead of traditional rice straw were examined. The growth of two year old ginsengs grown with two different kinds of mulchs no difference, however, the flavor components of ginseng with pine tree leaves mulch 84 constituents detected showed significantly enhanced contents than those of ginseng with rice straw mulch.

Maillard 반응 생성물을 이용한 천연 육류향의 제조 (Development of Natural Meat-like Flavor Based on Maillard Reaction Products)

  • 본 논문에서는 리보오스와 저염 및 저 Glu 소맥글루텐산 가수분해물을 기본 기질로 하여 기존의 시스테인, 메티오닌, 티아민 등의 전구체로 반응시킨 육류향과 이를 버섯분말 및 지질전구체 등으로 대체하여 반응시킨 육류향의 관능적 특성을 비교하여 천연 육류 향미제를 개발하고자 하였다. 기본 기질로 식물단백 가수분해물은 염농도에 따른 소맥글루텐 산 가수분해물과 저 Glu 소맥글루텐 산 가수분해물을 사용하였으며 향 특성을 검토하였을 때 염 7%의 저 Glu 소맥글루텐 산 가수분해물을 사용하는 것이 적합하였으며 황화물 채소로 마늘 분말을 기본 기질로 하였다. 기존의 synthetic meat flavor의 전구체를 omission test에 의해 검토하였을 때 시스테인은 육류향의 기여도가 컸으며 메티오닌과 티아민 및 레시틴은 영향이 적어 다른 소재로의 대체 가능성을 나타내었다. Natural meat flavor의 전구체로 효모 자가분해물 적용시 이취가 강하여 적합하지 않았으며 마늘 분말 대신 마늘 착즙 분말로 대체가 가능하였다. 버섯분말의 경우 표고버섯을 protease로 효소처리하여 건조시킨 분말이 육류향 생성에 적합하였으며 느타리버섯은 고유의 향긋한 향미가 감소되어 적합하지 않았다. 지질전구체의 경우 라드를 적용하였을 때 다른 지질에 비해 느끼한 향 특성이 적당하고 1%의 농도에서 육류향과 황내의 향 특성이 조화로웠다. 지질인 라드와 인지질인 레시틴을 첨가하여 비교하였을 때 레시틴 첨가와 라드와 레시틴의 혼합 첨가보다 1% 농도의 라드를 단독 첨가하는 것이 좋은 육류향을 생성하였다. 따라서 기본 기질로 소맥글루텐 산 가수분해물을 저염 및 저 Glu화 하였으며, 기존의 육류향 생성에 사용되었던 메티오닌 티아민 및 레시틴의 전구체를 마늘 착즙 분말과 버섯분말 및 라드로 대체하였을 때 상대적으로 전체적인 향의 강도는 낮았으나 느끼하고 짠향이 감소되어 부드러운 육류향을 생성할 수 있었다.

유산균 발효에 따른 무 발효물의 휘발성 향기 성분 변화 (Changes in volatile flavor compounds of radish fermented by lactic acid bacteria)

  • 무 발효물의 발효기간에 따른 휘발성 향기성분을 SPME를 이용하여 추출하고 GC-MS로 분석하였다. 총 46종의 휘발성 향기 성분이 검출되었으며, 이들 중 함황화합물의 함량이 가장 높았다. 발효 전(발효 0일차) 휘발성 향기성분의 조성 비율을 보면 함황화합물(95.85%)과 알데하이드(2.61%)가 대부분을 차지했고, 발효 후(발효 2일차) 휘발성 향기성분의 조성 비율은 함황화합물(75.53%), 산(11.12%), 알코올(8.44%) 및 알데하이드(1.48%)으로 구성되어 변화가 큼을 알 수 있었다. 발효 후 함황화합물의 총 함량은 18,074.7 ng/g에서 2,996.2 ng/g으로 가장 크게 감소하였고, 이 성분 중 원재료의 주 성분으로 알려져 있는 dimethyl disulfide, dimethyl trisulfide, diallyl sulfide, diallyl disulfide와 diallyl trisulfide의 함량이 발효 기간이 증가함에 따라 크게 감소하는 경향을 보였다. 또한 이 성분들은 자극적인 함황화합물 특유의 마늘향과 파향을 나타내는 휘발성 화합물로 발효 후 함량이 크게 감소하여 무 발효물의 발효 전후 향미특성에 크게 영향을 줄 것으로 생각된다. 반면 acetic acid는 발효 전 0 ng/g에서 발효 후 441.0 ng/g으로 크게 증가하였고, 알코올은 41.1 ng/g에서 334.9 ng/g으로 발효 기간이 경과함에 따라 크게 증가하는 것을 확인할 수 있었다. 발효 2일차에 증가된 acetic acid (441.0 ng/g)와 1-hexanol (139.3 ng/g)은 각각 톡 쏘는 신향, 과일향과 알코올향을 나타내 발효 전후 무 발효물의 향미특성에 영향을 미칠 것으로 생각된다.

Volatile Flavor Compounds in the Leaves of Fifteen Taxa of Korean Native Chrysanthemum Species

  • This study was conducted to compare the volatile flavor compounds found in the leaves of 15 taxa of Korean native Chrysanthemum species. The volatile flavor compounds from the taxa were collected using a simultaneous steam distillation and extraction technique and were analyzed using gas chromatography/mass selective detector (GC/MSD). A total of 45 volatile flavor compounds were identified with six functional groups: 14 alcohols, 4 ketones, 19 hydrocarbons, 5 esters, 2 acids, and 1 aldehyde. The main functional group in 15 taxa of Chrysanthemum species was alcohols, accounting for 28.7% of volatile flavor compounds, followed by ketones (21.2%) and hydrocarbons (13.2%). Camphor, which is known for its antimicrobial properties, was the most abundant volatile compound (30%) in C. zawadskii ssp. latilobum and var. leiophyllum. In particular, C. indicum subspecies and C. boreale contained ${\alpha}$-thujone, which has outstanding anti-bacterial, anti-cancer, anti-inflammatory, anti-ulcer, and anti-diabetic efficacies. C. indicum var. albescens could be used in perfumes, since it showed 21 times more camphene than C. indicum. In addition, C. indicum var. acuta contained a fairly high content of 1,8-cineole, which has an inhibitory effect on mutagenesis. C. lineare contained only pentadecanoic acid compounds, whereas other taxa hexadecanoic acids. Overall, the Korean native Chrysanthemum species had considerable variation in volatile flavor compounds in their leaves. This study provides a good indication of specific potential use for various applications.

Volatile Flavor Compounds of Saussurea lappa C.B. Clarke Root Oil by Hydro Distillation-GC and $GC/MS^+$

  • The volatile flavor compounds of Saussurea lappa C.B. Clarke, a perennial, aromatic and medicinal herbaceous plant of the Asteraceae family, were isolated by the hydro distillation extraction method using a Clevenger-type apparatus, and analyzed by gas chromatography (GC) and gas chromatography-mass spectrometry (GC/MS). The plant yielded a light yellow colored oil (0.02%, v/w). From S. lappa C.B. Clarke root oil, sixty-three volatile flavor compounds were tentatively identified, among which sesquiterpene was predominant (21.70%). The identified compounds of the root oil constituted 87.47% of the total peak area. From the constituents making up more than 5% of the volatile flavor components, a long-chain aldehyde, (7Z, 10Z, 13Z)-7, 10, 13-hexadecatrienal, was the most abundant volatile flavor compound (21.20%), followed by dehydrocostuslactone (10.30%) belonging to sesquiterpene lactone, valerenol (5.30%) and vulgarol B (5.06%).
