  • This is a study about Jangs presented in the Cheminyosul. Scattered yeast and purified salts are used as ingredients of Jangs. Hwangeui, Hwangjeung and Eol are scattered yeast, and Sangmanyom, Hwayom and Inyom are purified salts. According to their main ingredient, Jang can be classified Kokjang, Yukjang and Eojang. Kokjang was made from soybean and/or wheat, Yukjang made from meat, and Eojang made from fish and crustacea. Eojang is similar to Korean fish sauce, Jeot. Three kinds of Kokjang, four kinds of Yukjang and seven kinds of Eojang are described in the Cheminyosul. Generally, Jangs were fermented and ripened for one day to one hundred days. Also, most of Jangs were made in cold season except Keonjeeojang and Janghae.

In situ analysis of the bacterial community associated with the Korean salty fermented seafood jeotgal

  • Jeotgal is a salty and fermented traditional Korean fish sauce. Unlike most other previous studies that investigated samples purchased from retail markets, this study focused on samples of jeotgal with traceable history to Yeonggwang, a timehonored fishing village in Korea. Three jeotgal samples, which were made from small yellow croakers, largehead hairtail, and miscellaneous fish, were selected based on information obtained from interviews with local craftsmen and literature reviews. Bacterial community profiles of the three jeotgal samples were investigated to identify indicator (and potentially core) bacteria for jeotgal ripening. The 16S rRNA gene-based metagenomic analysis revealed that the dominant phyla and classes, (Gammaproteobacteria, Betaproteobacteria, Bacilli, and Clostridia) of the three different jeotgal were identical, albeit with different composition ratios. Diversification was evident beginning at the order level. Interestingly, each dominant order was mainly comprised of single members even at the genus level. The dominant genera included Halomonas, Tetragenococcus, Halanaerobium, Pseudomonas, Massilia, and Lentibacillus. This observed genus-level heterogeneity suggests that there are diverse bacterial signatures in jeotgal and that these can be used as indicators for jeotgal ripening and/or as starters to increase its sensory quality and functionality.

붕장어(Conger myriaster) 시즈닝을 활용한 조미김(Pyropia yezoensis)의 제조공정 최적화 (Processing Optimization of Seasoned Laver Pyropia yezoensis Using Seasoning Sauce with Conger Eel Conger myriaster)

  • This study was conducted to optimize the processing conditions of seasoned laver Pyropia yezoensis with conger eel Conger myriaster seasoning sauce (CES) using response surface methodology (RSM). The RSM program results for bonesoftness showed that the optimum independent variables based on the dependent variables (Y1, lipid removal rate; Y2, texture; and Y3, sensory fish odor score) were 431.0% for X1 (water amount), 115.6℃ for X2 (retort-operated temperature), and 50.1 min for X3 (retort-operated time). The RSM program results for the CES blend showed that the optimum independent variables (X1, amount of bone-softened conger eel by-products; X2, mixed sauce amount; and X3, starch amount) based on the dependent variables (Y1, amino-N; Y2, Hunter redness; and Y3, drying time) were 44.8% for A (pre-treated conger eel by-product), 36.0% for B (mixed sauce), and 19.2% for C (starch). The RSM program results for seasoned laver with CES showed that the optimum independent variables based on the dependent variables (Y1, water activity; Y2, Hunter yellowness; and Y3, overall acceptance) were 5.0% for X1, (CES amount), 313.8℃ for X2 (roasting temperature), and 6.0 s for X3 (roasting time). The seasoned laver with CES prepared under the optimum conditions was superior to commercial seasoned laver in terms of overall acceptance.

17세기 이전 조선시대 찬물류(饌物類)의 문헌적 고찰 (An Investigation of Side-dishes found in Korean Literatures before the 17th Century)

  • In this study, we investigated e kinds and names of side dishes along with their recipes and ingredients occuring in Korean cookbooks published before the 17th century. The side dishes were classified 79 kinds of Guk, 23 kinds of Jjim and Seon, 15 kinds of Gui, 3 kinds of Jeon, 7 kinds of Nureumi, 3 kinds of Bokkeum, 30 kinds of Chae, 11 kinds of Hoe, 7 kinds of Jwaban, 6 kinds of Mareunchan, 12 kinds of Pyeonyuk and 5 kinds of Jeonyak, Jokpyeon and Sundae. The earliest records were found on Guk, Jjim, Jwaban, Po and Pyeonyuk Gui, Namul and Hoe were recorded after the 1500's and Nureumi, Jeon, Jeonyak, Jokpyeon and Sundae were developed relatively late in the late 17th century. As to the kinds of side dishes, Guk was the most common. Guks cooked before the 17th century used different recipes and more types of ingredients than today, including some that are not used today. For Jjim, various seasonings were added to main ingredients such as poultry, meat, seafood and vegetable. Most of the records found for Jjim used chicken as the main ingredient. Gui was recorded as Jeok or Gui and there weren't many ingredients for Gui before the 17th century. Gui was usually seasoned with salt or soy bean sauce and broiled after applying oil. Vegetables were broiled after a applying flour-based sauce. The Jeon cooked at that time was different from the one that is cooked today in that cow organs or sparrows were soaked in oily soy bean sauce before being stewed. Nureumi, which was popular in the 17th century, but rarely made today, was a recipe consisting of adding a flour or starch-based sauce to stewed or broiled main ingredients. Chae was a side dish prepared with edible plants, tree sprouts or leaves. Chaes like Donga and Doraji were colored with Mandrami or Muroo. Hoe was a boiled Hoe and served after boiling seafood. Jwaban was cooked by applying oil to and then broiling sparrows, dudeok, and mushrooms that had been seasoned and dried. For dried Chans, beef or fish was thin-sliced, seasoned and dried or sea tangle was broiled with pine nuts juice. There are some recipes from the 17th century whose names are gone or the recipes or ingredients have changed. Thus we must to try to rebuild three recipes and develop recipes using our own foods of today.

부재료가 김치의 품질 특성에 미치는 영향 (Effects of Ingredients on the Its Quality Characteristics during Kimchi Fermentation)

  • 중심합성계획(central composite design)과 반응표면 분석법(response surface analysis)을 이용하여 절임 배추 100g 당 부재료인 마늘(0∼2%), 파(0∼4%), 생강(0∼1.4%) 및 젓갈류(0∼2%)를 독립 변수로 하여 pH, 적정산도, 젖산균 수, 색도 및 관능적 특성을 조사한 후 상품 김치의 품질 특성에 영향을 주는 요인을 분석하였다. 그 결과 본 연구에 이용한 김치 부재료의 첨가량이 발효 단계별로 pH, 적정산도, 젖산균 수 등의 변화에 있어서 전통적인 김치 발효 형태를 보였다. 김치 부재료를 독립변수(independent variables)로 하고, 각각의 품질 특성을 종속변수(dependent variables)로 하여 분석한 결과, 독립 변수 마늘(X$_1$)-생강(X$_2$) 조합구는 발효 전반에 거쳐 pH,적정산도 및 관능 특성 중 색도, 전체적인 기호도와 상관성이 높은 반면, 마늘(X$_1$)-파(X$_3$),또는 생강(X$_2$)-파(X$_3$) 조합구는 각각의 품질 특성 항목과 상관성이 낮게 나타났다. 반면에 젓갈류의 경우 관능검사의 텍스쳐 항목을 제외하고는 상관 계수 0.8이상이었다. 한편 젓갈의 결과를 반응표면 분석에 의하여 회귀분석 하여 도시한 결과, 발효 단계 별로 차이는 있지만, 전반적으로 젓갈류 첨가량이 많을수록 적정 산도, 젖산균 수, 붉은색과 황색을 나타내는 a, b값이 높았다 전체적인 기호도는 김치 제조 직후에는 젓갈 첨가량이 증가할수록 높게 평가하였으나, 발효가 진행됨에 따라 젓갈 함량 1.0%에서 가장 높은 점수로 평가하였다

전남 구례와 곡성 장수지역의 80세 이상 고령인의 음식문화 특성 연구 (Study on Food Culture of Koreans over 80-Years-Old Living in Goorye and Gokseong)

  • This study examined the food culture of Koreans aged over 80-years-old living in the areas of Goorye and Gokseong. The research method was based on examination of individual cases through in-depth interviews. The total number of survey subjects was 38; males constituted 34 percent of the subjects while females constituted 66 percent of the subjects. Average age of male subjects was 85.3 years while average age of females was 84.8 years. The results were summarized in the following properties of the typical and traditional Korean table, which was the most common food life's property in the longevity area of was centered around rice, watery soup, vegetables, and fish. The first, as the supply step's property of food ingredients, various spices and ingredients such as piperitum, tumeric, ginger, garlic, chili pepper, and salted fish were used. Senior persons also supplied fresh vegetables at the kitchen garden, and they led a nature-friendly food life. The second, as the production of food and cooking of food step's property, there were multigrain rice and fermented foods such as soybean paste, kimchi, red pepper paste, salted fish, vegetables picked in soy sauce, etc. The recipe was cookery intermediated with water, soup, steamed vegetables, seasonings, etc., and it was characterized by a deep and rich taste due to the various spices and rich ingredients. The third, as the consumption of food step's property, senior persons regularly ate a balanced diet three times a day. They also had active personal relationships with their neighbors by sharing food, which increased their sense of belonging and improved their life satisfaction.

문헌에 기록된 식해(食?)의 분석적 고찰 (A Bibliographical Study On the Shikke)

  • Korean Chochgal is a kind of salted, fermentive food mainly made of fish in our country. It has been a suitable side'dish for the diet of rice. It has made use of an accompaniment of wine, seasoning, food of ceremony and a folk remedy. There were various kinds of Chochgal and various way of for preparation. For a long time it has developed in how to cook and how to eat. Nowaday, it has lessened to use Chochgal. In this thesis, the kinds of Chochgal and the reference frequency to them, the material, the measuring unit of material, the making terms, and the cooking kitchen utensils are studied out of the 86 books published in Korea from 1200 to 1984. 1. It was classifed Choch, Sikhae, and Oyukchang as how to cook. 2. There were 147 kinds of Chochgal, 100 kinds of Choch, 40 kinds of Sikhae and 7 kinds of Oyukchang in our traditional documents. 3. Materials were classified into main material, sub-material, and seasonings. As main materials there were fish, internals of fish, spawn, flesh, salt and soy sauce. As sub-materials there were seasoning, flavor, vegetables and cereals. 4. There were 41 kinds of measuring units. Of them, 17 kinds are for volume, 9 kinds are for quantity, 3 kinds are for length, and 12 kinds are for the rest. 5. There were 52 kinds of cooking kitchen utensils. They used mainly a sieve and pebbles. To store Chochkal a kind of jar, a woodenware and a clay ware were used. To shelter it from the wind, they sealed it with leaves and oiled paper. But few of them are used nowaday. 6. There were 209 kinds of cooking terms. Of them, 35 kinds are for the washing process, 51 kinds are for the preparing process, 38 kinds are for the making process, 25 kinds are for the fermenting process, 24 kinds are for the keeping process, and 36 kinds are for the eating(using) process.

까나리 염장품 추출물 저장 중의 품질 변화 (Quality Changes of the Extracts of Salt-Fermented Ammodytes personatus during the Storage)

  • The quality changes of the extracts of salt-fermented Ammodytes personatus during the storage were examined at 1 month interval during 3 months fermentation period. To prepare the extracts of Ammodytes personatus, 17%, 20% and 25% salt were added respectively and then stored for 3 months at room temperature and then extracted with hot water. During the storage, moisture and lipid contents of the samples decreased, but the crude protein contents increased gradually. On the other hand, ash content and pH showed little changes during the fermentation storage. After 6 months fermentation, the extracts of salt-fermented Ammodytes personatus were rich in free amino acids, such as glutamic acid, alanine, lysine, leucine, isoleucine, valine and aspartic acid in the order. As the fermentation progressed, the fish odor, turbidity, salty taste, savory flavor and overall preferences were similar to those of Ammotlytes personatus sauce in the market. The total cell numbers were 450∼570 cfu/mL at 0 day, but there were none revealed during the fermentation.

『주식시의(酒食是儀)』에 기록된 조선후기 음식 (Food Culture of the late Chosun dynasty in 『Jusiksiui (酒食是儀)』)

  • In this study, the Korean cookbook, Jusiksiui, which was published in the late 1800s, was investigated. The results revealed that Jusiksiui contained more than 100 foods. Specifically, 12 staple foods were foods recorded including five types of porridge, three types of noodles, and four kinds of dumplings. Moreover, 49 side dishes were present, among which Jjim (steamed food) was most common, being recorded ten times. Additionally, seven types of Jeon (pancake) & Gui (roasted food) and Kimchi & Jangajji (pickled vegetables), four kinds of soup and Jeongol (stew), stir-fry, Sukyuk (boiled beef), and three types of Sukchae and Sashimi were found. Moreover, 14 recipes for rice cakes, two recipes for Korean cookies and three recipes for drinks were found. Seven recipes for wine, including plain rice wine, medicated wine and flavored wine, were also found. Finally, four different soy sauces Jibjang (a kind of soy sauce paste), hot pepper paste, Cheonggukjang (fast-fermented been paste), and Jeupjihi and roasting hot pepper paste were observed.

연령에 따른 대전 지역 소비자들의 깻잎 소비 형태 및 기호도 조사 (Consumption and Preference of Korean Perilla Leaves(Penilla frutescens var. japonica Hara) by Daejeon Area Consumers)

  • The study examined the preference and style of consumption of perilla leaves(Perilla frutescens var. japonica Hara), a popular food item in Korea, by consumers in the Daejeon area. Of the respondents 35.2% purchased perilla leaves in a large super-market limited to two to three bundles. Comsumer preferences were to consume the leaves raw or pickled with salt or soy sauce, or use as a fish soup ingredient. The majority of consumers aged 20~29-years-of age preferred to wrap sashimi with perilla leaves. As a side dish, regardless of age, consumers preferred to pan-fried perilla leaves with mincedmeat and perilla leaves.
