72종 어류의 일반성분조성과 콜레스테롤 및 $\alpha$-토코페롤함량 (Proximate Composition, Cholesterol and $\alpha$-Tocopherol Content in 72 Species of Korean Fish)

  • 통영 연안해역 및 경남 내륙지방에서 어획된 72종 (해산어 59종, 담수어 13종)의 어류에 대한 식품영양학적 기초자료를 얻기 위하여, 그들의 일반성분조성과 CHOL 및 $\alpha$-Toc 함량의 분석결과를 요약하면 다음과 같다. 지질 함량은 표 중층 회유어 (평균 $6.09\%$) > 담수어(평균 $4.40\%$) > 연안 암초어 (평균 $3.41\%$) > 저서어(평균 $2.21\%$) 순으로 많았으며, 수분 함량과는 역상관관계 (p<0.001)를 나타냈다. 단백질은 전 어류에서 평균 약 $17\~18\%$를 함유하였으나, 수분 함량과의 상관성은 저서어를 제외한 다른 어류에서는 인정되지 않았고, 회분 함량은 전 어류에서 $1\~2\%$로 거의 일정하였다. CHOL 함량은 6.7(꼼치)$\~$249mg(뱀장어)/100g muscle의 범위로 어종에 따라 큰 차이를 보였으며, 지질함량과 정의 상관관계를 보였다. $\alpha-Toc$ 함량은 뱀장어 (4.1 mg/100 g muscle)를 제외한 나머지 어종에서는 흔적 또는 3mg/100g 이하였으며, 지질 함량과 대체로 비례하는 경향을 나타냈다.

Apparent digestibility coefficients of the extruded pellet diets containing various fish meals for olive flounder, Paralichthys olivaceus

  • Apparent digestibility coefficients (ADCs) of dry matter, crude protein, crude lipid, energy, essential amino acids, and fatty acids in extruded pellets containing various fish meals were determined for olive flounder (Paralichthys olivaceus). Eight extruded pellet diets were prepared to contain different fish meals (herring fish meal, anchovy fish meal, mackerel fish meal, sardine fish meal-A, sardine fish meal-B, tuna fish meal, pollock fish meal-A, and pollock fish meal-B) designated as HM, AM, MM, SM-A, SM-B, TM, PM-A, and PM-B, respectively. Chromic oxide ($Cr_2O_3$) was used as an inert indicator at a concentration of 0.5 % in the diet. Feces were collected from triplicate groups of fish ($151{\pm}4.0g$) using a fecal collection column attached to the fish rearing tank for 4 weeks. Dry matter ADCs of the MM, SM-A, SM-B, and PM-A diets were higher than those of all the other dietary groups, and the lowest digestibility of dry matter was observed in the PM-B diet. Fish fed the MM, SM-A, and PM-A diets showed significantly higher ADC of protein than those fed the AM, SM-B, TM, and PM-B diets. Lipid ADC of PM-B was significantly lower than that of the other diets. Energy ADCs of fish fed the MM, SM-A, and PM-A diets were significantly higher than those of the other diets. The availability of essential amino acids in the MM, SM-A, and PM-A diets were generally higher than that of the other fish meal diets, while TM showed the lowest values among all the experimental diets. ADCs of fatty acids in the AM, MM, SM-A, and PM-A diets were generally higher than those of fatty acids in the other diets, and the lowest values were recorded for the PM-B diet. These results provide information on the bioavailability of nutrients and energy in various fish meals which can be used to properly formulate practical extruded feeds for olive flounder.

부상사료의 사료조성, 공급율 및 공급횟수가 넙치의 성장 및 체조성에 미치는 영향 (Effects of Dietary Composition, Feeding Satiation Rate and Feeding Frequency of Extruded Pellets on Growth and Body Composition of Flounder Paralichthys olivaceus)

  • 본 연구는 지질과 단백질 함량이 다른 두 종류 부상사료의 적정 공급횟수와 공급율을 조사하기 위해 평균 체중 55.1 g의 넙치를 각 수조마다 20마리씩 3반복으로 수용하여 58일 동안 사육하였다. 사료공급휫수는 1일 3회, 1일 2회 및 1일 1회로 설정하였으며 사료 공급량은 만복 및 만복의 80%로 각각 설정하였다. 생존율은 모든 실험 구에서 82% 이상이였으며, 평균 증중량은 EP1의 1일 2회 만복 공급구가 가장 높은 증중량을 보였으며, EP1의 1일 2회 및 3회 제한 공급구와 EP2의 1일 2회 제한 공급구가 가장 낮았다. 일일사료섭취율은 EP1의 1일 2회와 1일 3회 만복 공급구가 가장 높았고, EP2의 1일 3회 만복 공급구와 유의한 차이가 없었다(P>0.05). 사료효율과 단백질효율은 사료 조성, 공급횟수 및 공급을 모두 영향을 받지 않았다(P>0.05). 사육실험 종료시, 근육의 수분 함량은 동일한 사료와 공급휫수에서 제한 공급구가 만복 공급구에 비해 높았다. 이상의 결과들로 보아 평균체중 $55{\sim}90g$인 넙치의 성장을 위해 EP1과 EP2를 1일 2회 만복으로 공급하는 것이 적합할 것으로 판단된다.

알칼리 처리하여 회수한 냉동깡치 어육 단백질의 Lysinoalanine 함량 (Lysinoalanine in Protein Recovered from Frozen Belanger's Croaker, Johnius grypotus, Using Alkaline Processing)

  • The formation of lysinoalanine (LAL) in protein recovered from the belanger's croaker, Johnius grypotus, using a pH shifting process was measured by amino acid analysis. The LAL peak was detected at 49.24 min, between phenylalanine and histidine peaks in the amino acid analyzer. LAL was not detected in the fish muscle or in protein recovered using the alkaline pH shifting process. LAL was not formed in protein recovered after storage for up to 9 hrs at pH 11, but was detected in the soluble protein fraction at pH 11, followed heating at $90\;^{\circ}C$. The myosin heavy chain decreased with storage time at pH 11. The results suggest that the alkaline shifting process for recovering fish muscle protein is safe, and that no LAL forms.

DHEA 투여로 인한 쥐 간 소포체분획에서의 PUFA/SFA 비율과 지질과산화의 감소 효과 (Effect of DHEA Administration on PUFA/SFA Ratio and Lipid Peroxide in Rat Liver Microsome)

  • It is known that dehydroepiandrosterone (DHEA) shows a dual effect, prooxidant or antioxidant, depending on the do-sage or physiological status of animals. The purpose of this study was to determine the effects of DHEA administration at low dose on lipid peroxidation, protein carbonylation and fatty acid composition in liver. Sprague Dawley male rats were fed either com oil diet containing $15\%$ com oil or fish oil diet containing $2\%$ corn oil + $13\%$ sardine oil, with or without $0.2\%$ DHEA for 9 weeks. Atherogenic index and hepatic triglyceride and cholesterol levels were significantly reduced by DHEA administration in rats fed with fish oil diet. Hepatic lipid peroxide product (TBARS) and protein carbonyl levels were significantly higher in rats fed with fish oil diet than in rats fed with corn oil diet. However, DHEA administration significantly reduced the hepatic thiobarbituric acid-reactive substance (TBARS) and conjugated diene levels in rats fed with fish oil diet. Contents of C16 : 0, C16 : 1, C20 : 5 and C22 : 6 in hepatic microsome were higher in rats fed with fish oil diet than in rats fed with corn oil diet, and contents of C18 : 2 and C20 : 4 were lower than in rats fed with com oil diet. DHEA administration significantly increased C16 : 0 and C18 : 3 contents and reduced C18 : 2 content in rats fed with com oil diet, while it increased C16 : 0 and C18 : 1 and reduced C20 : 5 and C22 : 6 in rats fed with fish oil diet. On overall, DHEA administration increased saturated fatty acid (SFA) and reduced polyunsaturated fatty acid (PUFA) in hepatic microsome, thereby PUFA/SFA ratio was significantly (p < 0.0001) reduced without the change of n-3/n-6 ratio. Taken together, low dose of DHEA administration lowered PUFA/SFA ratio in hepatic microsomal membranes and also showed antioxidative effect especially in fish oil-induced highly oxidative stress condition through blocking increases of C20 : 5 and C22 : 6 contents.

  • 어묵에 grapefruit 종자 추출물의 농도별로, 침지 처리한 후 저장기간에 따른 물리, 화학적 변화를 검토하여 다음과 같은 결과를 얻었다. 1. 저장 기간 중 어묵의 조단백함량 변화는 대조구에 비하여 GFSE 의 처리 농도가 높을수록 더 작았다. 2. Texture 는 저장기간이 경과함에 따라 감소하는 경향을 나타내었으나 GFSE 용액 처리구에서는 감소율이 낮았다. 3 어묵 단백질의 SDS-PAGE pattern 변화는 저장기간이 경과함에 따라 분자량, 30,000-32,000의 protein은 점차 가수분해되어 소멸되는 현상을 보였으며 특히 대조군의 경우 2일 경과 후부터 급격한 분해라 이루어져 단백질 major band의 손실율이 크게 증가한 것으로 나타난 반면, GFSE처리 시험구의 경우 4일 경과시에야 비로소 뚜렷한 손실반응을 보여 GFSE처리에 의하여 어묵단백질의 변패 발생 시기를 상당 기간 연장함을 확인할 수 있다.

배합사료 및 습사료 공급에 따른 넙치(Paralichthys olivaceus)의 성장 및 어체성분 비교 (Comparison of Extruded and Moist Pellets for Whole-body Proximate Composition and Growth Performance of Olive Flounder Paralichthys olivaceus)

  • Two consecutive feeding trials were conducted to evaluate the effects of extruded pellet (EP) and raw fish-based moist pellet (MP) in the juvenile (experiment I) and sub-adult (experiment II) stages of olive flounder, Paralichthys olivaceus. The fish were distributed randomly to three aquarium tanks, as a group of 1,200 fish (initial mean weight $13.5{\pm}1.76g$) in experiment I, and as a group of 390 fish (initial mean weight $385{\pm}15.3g$) in experiment II. In experiment I, the weight gain, specific growth rate, feed efficiency, protein efficiency ratio, and survival of fish fed EP were all significantly higher than those of fish fed MP. In experiment II, no significant differences were observed in weight gain, specific growth rate and survival between the EP and MP groups. However, the feed efficiency and protein efficiency ratios of fish fed EP were significantly higher than those of fish fed MP. The results of this study indicate that EP could be developed to replace MP for market size production of olive flounder without any adverse effects on the growth performance. The dietary formulation used in this study could be used as an appropriate feed for olive flounder.

넙치 실용배합사료 동해안 현장적용시험 (A commercial farm feeding trial to evaluate the laboratory formulated extruded pellet for olive flounder in the East Sea)

  • This study was conducted to evaluate the laboratory formulated extruded pellet (EP) for olive flounder Paralichthys olivaceus in the East Sea. Three replicate groups of 3,200 fish per each tank (initial weight of $28.1{\pm}0.2g$) were fed one of the two EPs (EP and CEP) and Moist pellet (MP) for 16 months in a commercial farm (Pohang, Korea). Survival was not significantly affected by experimental diets (P>0.05). Weight gain and specific growth rate of fish fed the EP were not significantly different from those of fish fed the MP, but that of fish fed CEP was significantly lower than that of fish fed EP and MP (P<0.05). Feed efficiency and protein efficiency ratio of fish fed the EP was significantly higher than those of fish fed MP (P<0.05), but not significantly different from those of fish fed CEP (P>0.05). The Contents of moisture, crude protein and crude lipid in the dorsal muscle were not significantly different among all groups (P>0.05). These results clearly indicated that the laboratory formulated extruded pellet used in this study can be developed to replace the moist pellet without affecting any growth performance of olive flounder in the commercial farm feeding trail.

  • This study examined the effects of the dietary inclusion of Porphyra and sea tangle Laminaria japonica on the growth, feed utilization, body composition, and plasma chemistry of juvenile Korean rockfish Sebastes schlegeli. Eight hundred and forty juvenile fish averaging 5.0 g were allocated 40 fish per tank to 21 180-L flow-through tanks. Seven experimental diets were prepared: control (Con) without additive, 0.5 and 1% Porphyra extract (PE), 3% Porphyra powder (PP), 0.5 and 1% sea tangle extract (STE) and 3% sea tangle powder (STP), referred to as PE-0.5, PE-1, PP-3, STE-0.5, STE-1, and STP-3, respectively. Each additive was included in the experimental diet at the expense of the same amount of wheat flour. Each experimental diet was fed to triplicate groups of fish. The experimental diets had no effect on the survival, weight gain or specific growth rate of the fish, feed consumption, feed efficiency ratio, protein efficiency ratio, protein retention, hepatosomatic index, condition factor, moisture or crude protein content of the entire body excluding the liver or moisture, crude protein or crude lipid content of the liver. None of the plasma parameters were affected by the experimental diets. Based on these results, the dietary inclusion of Porphyra and sea tangle did not affect the growth, feed utilization, body composition or plasma chemistry of juvenile Korean rockfish.
