일시다획성 적색육어류를 이용한 중간식품소재 개발에 관한 연구 1. 정어리 연육의 가공 (Processing of Ready-to-Cook Food Materials with Dark Fleshed Fish 1, Processing of Ready-to-Cook Sardine Meat "Surimi")

  • 정어리육을 원료로 한 대중적 소비성향의 대량 소비를 할 수 있는 식품의 중간 소재를 개발할 목적으로 정어리의 연육가공방법과 연육의 성상과 이를 소재로 한 제품의 물성에 관여하는 원료의 선도, 세척방법, 첨가물, 저장조건 등 여러가지 가공조건의 최적화를 검토하였다. 그 결과는 다음과 같이 요약된다. 1. 정어리육의 단백질은 저온에 저장하여 선도를 유지하여도 급격히 불용화하여 제품의 탄력과 물성도 매우 저하하였다. 원료정어리의 저장온도가 $5^{\circ}C$인 경우는 3일이내에 $-20^{\circ}C$의 경우는 20일 이내에 연육의 탄력형성능이 한계에 도달하였다. 2. 연육의 세척에 의한 수용성단백질의 제거와 염용성단백질의 안정화 효과는 세척회수($3{\sim}6$회)에 따른 큰 차는 없이 $3{\sim}4$회의 세척으로 충분하였는데 세칙방법별로는 수세, 알카리세척 및 산용액 세척의 경우 수용성단백질의 제거가 각각 $32\%,\;80\%,\;75\%$로 알카리세척이 보다 효과적이였고 제품의 물성도 좋았으며 지방의 제거는 세가지 경우 모두 $50{\sim}60\%$였다. 3. 정어리연육 저장중의 단백질 안정화와 연육의 탄력형성능의 보존을 위하여 중합인산염과 sorbitol의 첨가효과를 검토하였는데 연육을 $-30^{\circ}C$ 저장하였을 경우 이들의 첨가비에 따라 즉 인산염과 sorbitol이 $0.3\%$$3\%$일 때 35일, $0.6\%$$3\%$일 때 28일, $0.6\%$$6\%$일 때 21일, sorbitol 단독 $3\%$와 인산염 단독 $0.3\%$일 때는 각각 14일, 무첨가의 대조시료는 7일 이내에 탄력형성 굴곡시험 A에 도달하였고, 연제품의 물성도 저하하셨다. 이때 연육의 탄력형성의 한계와 염용성단백질의 함량간에는 밀접한 관계가 있어 염용성단백질소 함량 8.0mg/g가 경계였다. 4. 세척과정에서 유실된 지방을 보충하여 지방함량 $5\%,\;7\%$ 되도록 하였을 때, 연제품의 탄력성과 물성에는 큰 변화가 없었다.

쌀가루의 제분형태 및 첨가방법이 연제품의 물리적 및 관능적 특성에 미치는 영향 (Effects of Rice Flour Milling Types and Addition Methods on Rheological and Sensory Properties of Surimi Products)

  • Surimi products are among the most prominent seafoods in Korea. Together with fish meat, wheat flour is a major ingredient in the preparation of surimi products. Rice flour, however, can be an effective ingredient in enhancing the rheological characteristics of surimi products. In this study, we evaluated the potential of rice flour as an agent to replace wheat flour in surimi products. The effects of rice flour milling types and addition methods on the rheological and sensory properties of surimi products were investigated. Among different addition methods, the surimi product containing non-treated rice flour showed better gel strength and sensory properties than products containing paste (1:1.3 rice flour/water, w/v) and steamed paste (steamed at $100^{\circ}C$ for 30 min). According to the gel strength results for surimi products with added roll-mill (40 mesh) and jet-mill (180 mesh) rice flours, the roll-mill rice flour shows good potential as a replacement for wheat flour. When considering gel strength and sensory properties, an effective amount of rice flour to add was 10-15% (w/w). In conclusion, the rheological and sensory properties of surimi products containing rice flour were comparable with those of a premium commercial surimi product. Therefore, rice flour might be an effective alternative to wheat flour for premium surimi products.

우유의 진가와 한국인의 식생활 (The Value of Milk and Korean Dietary Life)

  • Milk and milk products, especially the cow's milk and cheese, have been used since the ancient time. Because they contains almost all kinds of nutrients that are necessary for human beings except for iron, n-3 fatty acid, and vitamin C. Milk is an excellent dietary source of protein, calcium and phosphorus. The biological value of milk protein is as high as those of red meat and eggs. So cheese, a food processed from concentrated milk protein, is highly recommended food for the patient of diabetes mellitus. Because the major form of milk lipids is n-6 fatty acid, milk and milk products may not be a good food for the patients of cardiovascular disease. But the nutritional quality of milk lipids cannot be inferior to those of margarine, fish oil, and vegetable oil. Milk has been produced commercially since 1936 in Korea. The most popular milk product is a drink milk now in Korea. But according to the change of dietary pattern the consumption of yoghurt and cheese has been enormously increased during the last 20 years. As the soy sauce, tofu, and soy been paste have been the fundamental seasoning and source of protein in Korea, milk and cheese have consisted the essential flavor of western cuisine. But the basic idea for the usage of protein, peptides, and amino acids are the same. We found that milk and milk products can be nicely added in many Korean dishes such as Juk, Mandoo, Jeon, and Bindeatuk for the diversity of traditional flavor.

동결온도에 따른 어육의 동결마쇄특성 (Cryo-grinding Characteristics of Frozen Fish Meat at Different Temperature)

  • 정어리, 명태 및 오징어육을 $-20^{\circ}C,\;-40^{\circ}C$$-80^{\circ}C$에서 동결하고 hammer mill에 의한 분쇄적성과 분쇄물의 mass colloider에 의한 마쇄 특성을 조사하였다. 정어리, 명태 및 오징어육은 $-40^{\circ}C$$-80^{\circ}C$로 동결할 경우 hammer mill에 의해 분쇄가 가능하였고 분쇄물은 mass colloider에 의해 마쇄가 가능한 것으로 나타났다. 어육별 동결분쇄물의 입도분포는 오징어, 정어리, 명태순으로 큰 입자의 비율이 높은 것으로 나타났다. 한편 동결분쇄물의 입자분포는 동결온도에 따라 차이를 보여 $-40^{\circ}C$ 보다는 $-80^{\circ}C$ 동결군의 입도가 작게 나타나는 경향을 보였다. 한편 동결온도가 다른 어육의 동결분쇄입자들에 대하여 image analysis를 행한 결과, $-40^{\circ}C$ 처리구는 짓이겨진 형태를 보인 반면 $-80^{\circ}C$ 처리구는 예리하게 끊어진 형태를 보였다. 또한 어종간의 조직특성이 관찰되어 어종 및 동결온도에 의해 동결분쇄물의 입도 분포 및 물성이 다를 수 있음이 시사되었다. 동결마쇄물의 수율은 정어리 $62.5\%$, 명태 $56.9\%$, 오징어 $52.5\%$로 나타났으며 오징어를 제외한 명태 및 정어리육의 마쇄물은 특히 뼈에서 유래되는 Ca의 함량비가 $6\~8$배 높은 특성을 보이고 있었다. 또한 동결마쇄물의 품질지표의 하나인 유화능을 측정한 결과, 대조군에 비해 다소 낮게 나타났으나 어육의 가공에는 충분히 적용가능할 것으로 평가되어 hammer mill과 mass colloider를 이용한 어육의 동결마쇄기법은 향후 관련분야에 이용성이 클 것으로 생각된다.

한.일 중학생의 식생활 비교연구 (A Comparative Study on Eating Habits Between Middle School Students of Korea and Japan)

  • The purpose of this study was to investigate eating habits. nutritional knowledge and the active use of information from the eating habits chapter of the textbook by middle school students of Korea and Japan. 9th grade students of 7 middle schools residing in Gyeongju and Hukuoka. Japan (592 Korean students. 546 Japanese students) participated in this study. Research data were collected by means of questionnaires and analyzed by such means as frequency, percentage. means. standard deviation. $\chi$$^2$-test, t-test, F-test and Pearson's correlation analysis employing SPSS Program. The results of this study were summarized as follows: 1. In terms of the physical features of middle school students, the height of Korean students tend to be taller than Japanese students. The weight of Korean students are on the average heavier than Japanese students. Research also proves that Japanese families have more family members. Korea has more full time housewives as well. Regarding their health. Korea has more people who consider themselves healthy than Japan does. 2. More students in Japan tend to eat breakfast and dinner everyday compared with Korea. Students eat snacks at night more in Korea than Japan. The average meal takes less than 20 minutes in Korea. It takes less than 30 minutes in Japan. Dinner is considered to be most important meal by the students of Korea and Japan. Meat. noodles. bread and cake are highly enjoyed by the students of both nations. 3. There was a little difference between Korean and Japanese students. concerning the necessity of nutrition education because they both study home economics. 4. The use of information from the textbook shows. most students eat green vegetable almost everyday but Korean students tested as eating more. Japanese students more often say they drink more than a cup of milk everyday The Japanese students have higher rates of using information from the textbooks. drink milk everyday. eat bean paste soup. eat a lot of meat and fish. 5. It turns out that students who have more nutritional knowledge have a low late of eating convenience food and student who utilize the chapter in the textbook in everyday life have low rates of eating convenience food.

고조리서와 종가의 무김치 비교 연구 (A Comparison Study on the Recipe of Radish Kimchi between Old Cookbooks of Head and Noble Family and Jong-ga)

  • The purpose of this research aims to reveal how radish kimchi (Jong-ga) differs in Jong-ga recipes and old cookbooks. To accomplish this, old cookbooks ("Soowoonjabbang", "Jusiksiui", "Eumsikbangmunnira", "Siuejunsuh", "Banchandeungsok", and "Buinpilji") were reviewed and 8 Jong-ga recipes (Seogye Park Se-dang from the Bannam Park clan Jong-ga, Myungsukgong from the Changnyeong Jo clan Jong-ga, Nampa Park Jae-gyu from the Milyang Park clan Jong-ga, Geunggudang Kim Joong-jeung from the Gwangsan Kim clan Jong-ga, Dongchundang Song Jun-gil from the Eunjin Song clan Jong-ga, Myeongjae Yun Jung from the Papyung Yun clan Jong-ga, Daeseunggong Ryu Cha-dal from the Munhwa Ryu clan Jong-ga, Inmukjae Son Sung-jeung from the Milseong Son clan Jong-ga) from five areas were reviewed. We classified the radish kimchi into five categories, radish kimchi, Dongchimi, kkakdugi, Seokbakji and Nabak kimchi and other kimchi. According to old cookbooks, most kimchi was made with radish, cabbage, cucumber, pear, yuju, fish meat, and salt. Modern Jong-ga is made of seasoned radish, sticky rice paste, seafood, sugar, powdered pepper, fish sauce and salt. This study helps to understand notable clans' cultures via their recipes for kimchi.

  • As a part of the studies on effective utilization of polyunsaturated lipids in sardine (Sardinops melanosticta) when the refined sardine oil was added to surimi-based product as a dietary supplement of biologically active fatty acids, eicosapentaenoic aicd and docosahexaenoic acid, storage stability and the effect to the qualify of the product was tested. Addition of the refined sardine oil up to $5\%$ to surimi did not affect the textural properties of the product. And the polyunsaturated fatty acids of the sardine oil was fairly stabilized when it stored for 1 month at room temperature and 43 days at $5^{\circ}C$. These results suggested the possibility that the refined sardine oil or other fish oils containing highly polyunsaturated fatty acids, especially EPA and DHA could be used as a food ingredient for dietary supply of the lipids.

장서각 소장 사찬발기를 통한 조선왕실의 사찬음식 연구 - 탄일, 출산, 가례, 상례를 중심으로 - (A Study on Joseon Royal Cuisine through Sachanbalgi of the Jangseogak Archives - Focusing on Royal Birthday, Child birth, Weddings and Funerals-)

  • This study investigated the Sachanbalgi, which record the royal feasts given by the royal family of the Joseon Dynasty of Korea. These records are contained within the Gungjung Balgi, which recorded the types and quantity of items used in royal court ceremonies. The Eumsikbalgi is the general name for the records of food found within this document. Using these Eumsikbalgi, and in particular the Sachanbalgi, this study investigated the food eaten and bestowed by the Joseon royal family. The Sachanbalgi describes four categories or occasions of feasts: royal birthdays, childbirth, royal weddings, and funerals. These records allow us to reconstruct who the attendees were and what the table settings and food were for instances not directly indicated in oral records, books, or other documents. The food at these Sachan (feasts) was diverse, being related to the specific event, and its contents varied based on the position of the person who was receiving the food. Usually, Bab (rice) was not found at a Sachanbalgi, and only on two occasions were meals with Bab observed. Specifically, it was served with Gwaktang (seaweed soup) at a childbirth feast. There were seven kinds of soups and stews that appeared in the Sachanbalgi: Gwaktang, Yeonpo (octopus soup), Japtang (mixed food stew), Chogyetang (chilled chicken soup), Sinseonro (royal hot pot), and Yukjang (beef and soybean paste). Nureumjeok (grilled brochette) and Saengchijeok (pheasant), and Ganjeonyueo (pan-fried cow liver fillet) and Saengseonjeonyueo (pan-fried fish fillet) were eaten. Yangjeonyueo, Haejeon, Tigakjeon (pan-fried kelp) and other dishes, known and unknown, were also recorded. Boiled meat slices appeared at high frequency (40 times) in the records; likewise, 22 kinds of rice cake and traditional sweets were frequently served at feasts. Five kinds of non-alcoholic beverages were provided. Seasonal fruits and nuts, such as fresh pear or fresh chestnut, are thought to have been served following the event. In addition, a variety of dishes including salted dry fish, boiled dish, kimchi, fruit preserved in honey, seasoned vegetables, mustard seeds, fish, porridge, fillet, steamed dishes, stir-fried dishes, vegetable wraps, fruit preserved in sugar, and jellied foods were given to guests, and noodles appear 16 times in the records. Courtiers were given Banhap, Tanghap, Myeonhap, wooden bowls, or lunchboxes. The types of food provided at royal events tracked the season. In addition, considering that for feasts food of the royal household was set out for receptions of guests, cooking instructions for the food in the lunchbox-type feasts followed the cooking instructions used in the royal kitchen at the given time. Previous studies on royal cuisine have dealt mostly with the Jineosang presented to the king, but in the Sachanbalgi, the food given by the royal family to its relatives, retainers, and attendants is recorded. The study of this document is important because it extends the knowledge regarding the food of the royal families of the Joseon Dynasty. The analysis of Sachanbalgi and the results of empirical research conducted to reconstruct the precise nature of that food will improve modern knowledge of royal cuisine.

1600년대~1960년대 조리서에 수록된 잡채의 문헌고찰 (Review on Japchae in Cook Books Published during 1600s-1960s)

  • The changes in ingredients, seasonings and cooking methods of Japchae in Korean cook books published from the 1600s to the 1960s were investigated in this study. Japchae was a royal dish enjoyed by Kwanhaegun of Joseon Dynasty and interesting historical story is contained in it. Kwanghaegun Ilgi in 1608 showed that Japchae was Kwanghaegun's favorite dish. Therefore, it has been thought that Japchae was created in the 17th century. Wonhaengeulmyojeongrieugye in 1796 described bellflower Japchae and mungbean sprout Japchae. The traditional Japchae was made without glass noodle called dangmyeon. Eumsikdimibang in 1670 first introduced traditional Japchae, which was made with 20 different ingredients and then served with topping sauce made of pheasant broth, strained soybean paste and wheat flour. Japchae in Kyugonyoram(1896) was prepared by mixing mungbean sprout, watercress, gonjasoni, tripe and yukhwe with mustard. The current style Japchae with glass noodle first appeared in the 1920s and became popular in the 1950s because the traditional Japchae was described in cook books until the 1940s. There were two ways of preparing current style Japchae. Yijogungjeongyoritonggo in 1957 described Japchae was made by mixing the boiled glass noodle with other ingredients and seasonings together. On the other hand, Japchae in Urinaraeumsikmandeuneunbeob(1960) was prepared by seasoning first with other ingredients, and then mixing boiled glass noodle. A variety of ingredients - vegetables, mushrooms, meat, fish, pheasant, beef tong, sea cucumber, gonjasoni and pear - has been used to prepare Japchae. Japchae has been seasoned with ginger, soy sauce, black pepper, sesame salt, sesame oil, oil, leek, garlic, salt, sugar, vinegar and mustard. Egg strips, pine nut, thin strips of Shiitake and stone mushroom, red pepper threads, Chinese pepper(cheoncho), black pepper and ginger were used for garnishing.

냉동수리미의 등급에 따른 품질특성 (Quality Characteristics by Grade of Commercial Frozen Surimi)

  • We examined the quality characteristics of four kinds of Alaska pollack Theragra chalcogramma surimi (APS), five kinds of golden threadfin bream Nemipterus virgatus surimi (GTS), and two kinds of giant squid Ommastrephes bartrami surimi (GSS) used in Korea. The volatile basic nitrogen contents of APS, GTS, and GSS increased with decreasing grade to 6.8-9.8, 5.5-8.3, and 143.5-177.7 mg/100 g, respectively. The Ca2+-ATPase activities of APS and GTS decreased with decreasing grade to 0.63-0.83 and 0.60-0.80 pi μmole/min/mg, respectively. The Ca2+-ATPase activity of RA-grade GSS was 0.82-0.91 pi μmole/min/mg. The whiteness values of APS, GTS, and GSS heat-induced gels were 54.0-71.4, 53.9-71.0, and 52.2-70.3, respectively, and that of both APS and GTS decreased with decreasing grade. The gel strengths of APS and GTS heat-induced gels were 412.3-769.4 and 280.2-456.5 g·cm, respectively, and decreased with decreasing grade. The total amino acid contents of SA-grade APS, SSA-grade GTS, and RA-grade GSS were 17,328.1, 17,965.0, and 14,846.8 mg/100 g, respectively, and the major amino acids were glutamic acid, aspartic acid, arginine, leucine, lysine, proline, alanine, and phenylalanine. The primary minerals were sodium (136.6-164.9 mg/100 g), potassium (45.7-160.4 mg/100 g), phosphorus (35.0-73.5 mg/100 g), sulfur (22.8-56.4 mg/100 g), and calcium (18.0-203.4 mg/100 g).
