["쇄미록(鎖尾錄)"]을 통해본 16세기 동물성 식품의 소비 현황 (The Consumption Patterns of Animal Foods in the Sixteenth Century as Observed through Shamirok)

  • The purpose of this study were to analyze the consumption patterns of animal foods during the sixteenth century through Shamirok. There were eleven animal foods : beef, pork, chicken, pheasant, deer, roe, lamb, bear, fox, sparrow, and horse. The most frequently consumed were in the order of pheasant, doe, and chicken. There were 44 fish consumed, including flatfish, hairtail, mackerel, flounder, kumlin fish, bass, null fish, codfish, and red snapper, as well as four mollusks and six shellfish. Eggs and fish egg were also consumed. These foods were cooked as Tang(湯), Gui(灸), Po(脯), Hoe(膾), and Sookyook(熟肉), or processed after being dried or salted. The animal foods were mostly consumed as Po and Tang in daily eating and for formal dishes. Fish were mostly consumed as Jockgal or Shikhae. The foods were primarily acquired by donation from local officials or relatives ; secondly by independent poultry farming, fishing, or hunting, along with the production of grain and thirdly through barter with rice and textiles. Food were sometimes traded for profit, but such acts of trading while living ; as wartime refugees was a meager means for living.

Intake of Freshwater Fish and Associated Fatty Acids and Risk of Breast Cancer

  • To investigate the association between intake of freshwater fish and their fatty acids and the risk of breast cancer in Chinese women, we conducted a case-control study with 669 cases and 682 population-based controls in Jiangsu Province of China. A structured questionnaire was used to elicit detailed information. Unconditional logistic regression analysis was performed to calculate odds ratios (ORs) and 95% confidence intervals (CIs). Total freshwater fish intake was linked to decrease in the adjusted OR for breast cancer, but without dose-dependence. Analyses by freshwater fish species showed that consumption of black carp and silver carp was inversely related to breast cancer risk, with adjusted-ORs for the highest intake category of black carp (${\geq}500g/month$) of 0.54 (95%CI=0.33-0.92; $P_{trend}$ <0.002) and for silver carp (${\geq}1000g/month$) of 0.19 (95%CI=0.11-0.33; $P_{trend}$ <0.001). In contrast, consumption of crucian carp was positively related to breast cancer risk, with an adjusted OR for the highest intake category (${\geq}1000g/month$) of 6.09 (95%CI=3.04-12.2; $P_{trend}$ <0.001). Moderate intakes of SFA, PUFA, n3-PUFA and n6-PUFA from freshwater fish may decrease the risk of breast cancer among premenopausal women. The findings of this study suggest that intake of freshwater fish and their fatty acids may modify risk of breast cancer, and that different species of freshwater fish could have a different actions on breast cancer risk. Future epidemiologic studies are needed to know the effects of freshwater fish intake on breast cancer risk and the cause of these effects.

디젤기관에서의 어유의 연소특성과 기관성능에 관한 연구 (A Study on the Engine Performance and Combustion Characteristics of Fish Oil in a Diesel Engine)

  • The engine performance and combustion characteristics of diesel oil and fish oil blended with diesel oils were investigated at various blending rate of fish oil in a diesel engine. The maximum pressure showed no significant difference among test fuels at low load, but it was higher as the blending rate of fish oil increases at high load. Increasing the blending rate of fish oil, the rate of heat release and burned fraction were higher than those of diesel oil. The ignition delay became longer than that of diesel oil as the blending rate of fish oil increases, and its differences were larger at different loads. The combustion duration and density of smoke were shorter and lower as the blending rate of fish oil increases. The rate of fuel consumption showed no significant difference between diesel oil and fish blended with diesel oils.

  • China is the world's largest producer of aquatic products and its fishery sector is comprised primarily of aquaculture facilities, both fresh and seawater, and a much smaller wild catch component. The expansion of the aquaculture sector continues to boost China's aquatic output. The increase is attributable to several factors. Among them rapidly growing domestic demand is no doubt one of the most important reasons. Rapid economic growth and rising disposable income are influencing domestic consumption and the economic recovery of major import markets is further stimulating consumption of China's aquatic products. This paper tries to examine the status, trend and reasons of consumption of aquatic products in China. Based on the analysis on the consumption of aquatic products and its change, this paper utilizes panel regression model to estimate the affecting factors of aquatic products consumption in China. By using panel data between 1997 and 2010, the results indicate that income, urbanization, aging and dummy variable have positive effects and fish price index has negative effect on China's aquatic products consumption as predicted. However, effects of meat consumption and education on fishery consumption are totally opposite with our predictions. In other words, it turns out that meat consumption has positive effect on fish consumption while education turns out to have negative effect. Finally the member of household does not show any significant effect on consumption of aquatic products in China.

  • Limited studies are available concerning the effect of heavy metal exposure on cardiovascular diseases. As environmental pollution increases, food contamination, including heavy metal contamination of fish, also increases. However, researches based on the intake of heavy metals, cardiovascular disease, and fish intakes are inconclusive. We assessed an association of heavy metal exposure with cardiovascular disease and fish intake in a nationally representative group of general Korean adults. We used data from the combined 2008-2010 Korean National Health and Nutrition Examination Survey (KNHANES), and analyzed the data of 5,139 Koreans who participated in KNHANES. All participants were older than 20 years, and were diagnosed with stroke, ischemic heart disease, or hypertension. The mean blood cadmium, lead concentration, and mercury concentration of subjects were $1.07{\pm}0.01{\mu}g/L$, $2.49{\pm}0.02{\mu}g/dL$, and $5.19{\pm}0.08{\mu}g/L$, respectively. We used the survey logistic regression model to account for the complex sample design of the cardiovascular disease risk in order to estimate the odds ratios (OR). After adjusting for age, education, income, alcohol, smoking, and BMI, the increase of serum cadmium in blood was associated with the increase in the prevalence of hypertension. Further, the increase in blood cadmium concentration was associated with the increase of both systolic blood pressure (SBP) and diastolic blood pressure (DBP). Although higher fish intakes were significantly associated with higher blood mercury concentration (p for trend < 0.0001), fish intakes did not affect either blood cadmium or lead concentration. Comparing the highest fish intake group with the lowest intake group, the OR of hypertension was 0.31 (95% CI: 0.19-0.59) in the crude model for total fish. However, these associations were no longer significant after the adjustment for potential confounding factors. In conclusion, cadmium in blood was associated with an increased risk of hypertension in the general Korean adult population. However, we found no evidence of a clear relationship between cardiovascular disease and frequency of fish consumption.

WCDMA 기반의 저전력 정치망 어군 정보전송 모듈 개발 (Development of a low-power remote monitoring module for set-net fish school based on WCDMA)

  • Fish school monitoring technology is utilized for various purposes, such as boat fishing and resource surveys. With advancements in information and communication technology, this technology has expanded its application to remote areas. Its significance has grown in fishing sites, particularly for improving the efficiency and cost-effectiveness of set-net fishing. Set-net fishing gears are not limited to coastal areas, but are also installed in inland and remote sea regions. Consequently, fishermen require technology that allows them to quickly transmit information about approaching fish schools and enables them to perform long-term monitoring. The development of remote monitoring technology for set-net fish schools must consider crucial design factors such as communication range, transmission speed, power consumption of information modules, and operational expenses. In this study, we developed a low-power remote monitoring module for set-net fish school based on WCDMA. The module was specifically designed to minimize power consumption, allowing for communication over long distances and extended operation times in set-net fishing applications. Furthermore, we developed a web server software application that enables remote access to fish schools and provides real-time weather information. The performance of the developed module was evaluated through set-net fishing site application and experiments with moving ships on the sea. The experimental results demonstrated that the remote monitoring system, consisting of the developed low-power remote monitoring module for set-net fish school based on WCDMA and a fish finder, had an average power consumption of 4.6 W, a maximum communication range of 22.84 km, and a data transmission and reception rate of 98.79%. The maximum fish school information transmission and reception rate was 97.26%

Association between fish and shellfish, and omega-3 PUFAs intake and CVD risk factors in middle-aged female patients with type 2 diabetes

  • BACKGROUND/OBJECTIVES: This study was performed to investigate the association between the dietary intake of fish and shellfish, and omega-3 polyunsaturated fatty acids (PUFAs) and cardiovascular disease (CVD) risk factors in the middle-aged Korean female patients with Type 2 diabetes (T2D). SUBJECTS/METHODS: A cross-sectional analysis was performed with 356 female patients (means age: 55.5 years), who were recruited from the Huh's Diabetes Clinic in Seoul, Korea between 2005 and 2011. The dietary intake was assessed by a validated semi-quantitative food frequency questionnaire and analyzed using the Computer Aided Nutritional Analysis program (CAN-Pro) version 4.0 software. RESULTS: In a multiple regression analysis after the adjustment for confounding factors such as age, BMI, duration of diagnosed T2D, alcohol consumption, fiber intake, sodium intake, and total energy intake, fish and shellfish intake of the subjects was negatively associated with triglyceride and pulse wave velocity (PWV). Omega-3 PUFAs intake was negatively associated with triglyceride, systolic blood pressures, diastolic blood pressures, and PWV. The multiple logistic regression analysis with the covariates showed a significant inverse relationship between the omega-3 PUFAs consumption and prevalence of hypertriglyceridemia [OR (95% CI) for greater than the median compared to less than the median: 0.395 (0.207-0.753)]. CONCLUSIONS: These results suggest that the consumption of fish and shellfish, good sources of omega-3 PUFAs, may reduce the risk factors for CVD in the middle-aged female patients with T2D.

수입 어류의 국명 재검토 (A Review of the Korean Names for Imported Fish)

  • In Korea, the volume of imported fish for human consumption has been dramatically increasing every year. However, many Koreans are unable to distinguish imported fish from our domestic species. To reduce confusion and minimize the negative impacts on consumers, we reviewed the names of 100 imported fish species. We suggest new Korean names for 22 imported fish species. We also suggest altering the Korean names for three imported fish species. Finally, we suggest four novel ways to ensure the systematic and effective management of imported fish species.

강도다리 Platichthys stellatus의 산소 소비율에 미치는 수온과 체중의 영향 (Effect of Water Temperature and Body Weight on Oxygen Consumption Rate of Starry Flounder Platichthys stellatus)

  • 강도다리의 수온과 체중에 따른 대사 반응을 조사하기 위해 절식한 자어(습중량, $1.5{\pm}0.4g$, 540마리)와 대형어 ($37.4{\pm}2.3g$, 90마리)를 대상으로 여섯 가지 수온(4, 7, 10, 13, 16 그리고 $19^{\circ}C$)에 따라 유수식 형태의 호흡실을 이용하여 24시간 동안 5분 간격(3반복)으로 산소 소비율(oxygen consumption rate, OCR)을 측정하였다. 수온과 체중 그리고 두 인자의 상호작용 모두가 강도다리의 산소 소비율에 유의한 영향을 미쳤다(p<0.001). 수온 상승에 따라 강도다리 자어와 치어의 산소 소비율은 모두 유의적으로 증가하였다(p<0.001). 수온 4, 7, 10, 13, 16 그리고 $19^{\circ}C$에서의 시간당 평균 산소 소비율은 자어의 경우 각각 1386.0, 1601.7, 1741.0, 1799.2, 2239.1 그리고 $2520.3mg\;O_2\;kg\;fish^{-1}\;h^{-1}$이었고, 치어의 경우 각각 83.8, 111.4, 126.3, 147.1, 187.7 그리고 $221.3mg\;O_2\;kg\;fish^{-1}\;h^{-1}$이었다. 실험 수온 조건에서 체중 증가에 따라 산소 소비율은 유의하게 감소하였다(p<0.001). 강도다리의 산소 소비율에 미치는 수온(T)과 체중(W)의 상관관계는 OCR=1520.91+40.85T-49.22W ($r^2=0.95$, p<0.001)이었다. 대사 작용에 의한 에너지 손실은 수온 증가와 체중 감소에 따라 증가하였다(p<0.001). 수온 4, 7, 10, 13, 16 그리고 $19^{\circ}C$에서 일간 평균 에너지 손실은 자어의 경우 각각 907.9, 1046.5, 1141.6, 1177.0, 1467.3 그리고 $1650.1kJ\;kg\;fish^{-1}\;d^{-1}$이었고, 치어의 경우 각각 54.8, 73.0, 82.9, 96.2, 122.9 그리고 $144.6kJ\;kg\;fish^{-1}\;d^{-1}$이었다. $Q_{10}$ 값은 $4{\sim}7^{\circ}C$, $7{\sim}10^{\circ}C$, $10{\sim}13^{\circ}C$, $13{\sim}16^{\circ}C$ 그리고 $16{\sim}19^{\circ}C$ 구간에서 자어의 경우 각각 1.62, 1.32, 1.12, 2.07 그리고 1.48이었고, 치어의 경우 2.59, 1.52, 1.67, 2.25 그리고 1.73이었다.

인구 통계적 특성에 따른 수산물 외식 소비행태에 관한 연구 (A Study of the Seafood Dining Consumer Behavior by Demographic Characteristics)

  • The purpose of this paper is to analyze the difference of seafood dining consumer behavior by demographic characteristics (age, gender). This research surveyed 251 people in Busan, Korea. t-test, one-way ANOVA, and MDS were used to identify the difference of consumer behavior by demographics. The result of the research revealed the difference between demographic characteristics and seafood dining consumption. 20's showed to accept the trendy dining culture represented by salmon, sushi and shrimp, and 30's also have similar tendency. 40's have higher spending tendency to seafood dining like tuna restaurants. 50's and 60's showed conservative consumption propensity represented by grilled fish, braised fish and raw fish restaurants. In gender analysis, male have higher frequency than female about grilled eel. In the future, the seafood dining market would be reorganized with the expansion of sushi, salmon and shrimp dishes, which can be classified as a new dining market. In this research, we suggested fisheries supply and production strategies according to age and gender.
