Effect of Dietary Fiber Extracted from Algelica keiskei Koidz on the Quality Characteristics of Chicken Patties

  • In this study, we evaluated the effects of dietary fiber extracted from Algelica keiskei Koidz on the chemical composition, cooking characteristics, and sensory properties of chicken patties. The chicken patties with Algelica keiskei Koidz dietary fiber had significantly higher moisture and ash content, and yellowness than the control sample (p<0.05). Energy value, cooking loss, reduction in diameter, reduction in thickness, lightness, redness, hardness, cohesiveness, gumminess, and chewiness of the control samples was significantly higher than chicken patties with Algelica keiskei Koidz dietary fiber (p<0.05). The sensory evaluation indicated that the greatest overall acceptability in chicken patties was achieved at Algelica keiskei Koidz dietary fiber levels of 1% and 2%. Chicken patties supplemented with 2% Algelica keiskei Koidz dietary fiber had improved quality characteristics.

  • Electro-micromechanical techniques were applied using four-probe method for carbon nanotube (CNT) or nanofiber (CNF)/epoxy composites with their content. Carbon black (CB) was used to compare with CNT and CNF. The fracture of carbon fiber was detected by nondestructive acoustic emission (AE) relating to electrical resistivity for double-matrix composites test. Sensing for fiber tension was performed by electro-pullout test under uniform cyclic strain. The sensitivity for fiber damage such as fiber fracture and fiber tension was the highest for CNT/epoxy composites, and in CB case they were the lowest compared with CNT and CNF. Reinforcing effect of CNT obtained from apparent modulus measurement was the highest in the same content. The results obtained from sensing fiber damage were correlated with the morphological observation of nano-scale structure using FE-SEM. The information on fiber damage and matrix deformation and reinforcing effect of carbon nanocomposites could be obtained from electrical resistivity measurement as a new concept of nondestructive evaluation.

  • The kenaf is quickly developing as a renewable resource. Kenaf can be grown under a wide range of weather conditions. Modification of kenaf fiber by graft polymerization provides a significant route to alter the chemical properties, including surface hydrophilicity or hydrophobicity. In this study, kenaf fiber surfaces were grafted with acrylic acid as a hydrophilic group using electron beam irradiation. The grafting rate increased with an increase in grafting time. The FT-IR results confirmed that acrylic acid was successfully grafted onto the kenaf fibers. The wettability of the kenaf fiber was increased, accompanied by acylic acid grafting on the fiber surface. According to the permeability test result, it was found that acrylic acid grafted kenaf fiber reinforced cement composite was more reduced than non-grafted kenaf fiber reinforced cement composite.

CONTAINMENT PERFORMANCE EVALUATION OF PRESTRESSED CONCRETE CONTAINMENT VESSELS WITH FIBER REINFORCEMENT

  • Background: Fibers in concrete resist the growth of cracks and enhance the postcracking behavior of structures. The addition of fibers into a conventional reinforced concrete can improve the structural and functional performance of safety-related concrete structures in nuclear power plants. Methods: The influence of fibers on the ultimate internal pressure capacity of a prestressed concrete containment vessel (PCCV) was investigated through a comparison of the ultimate pressure capacities between conventional and fiber-reinforced PCCVs. Steel and polyamide fibers were used. The tension behaviors of conventional concrete and fiber-reinforced concrete specimens were investigated through uniaxial tension tests and their tension-stiffening models were obtained. Results: For a PCCV reinforced with 1% volume hooked-end steel fiber, the ultimate pressure capacity increased by approximately 12% in comparison with that for a conventional PCCV. For a PCCV reinforced with 1.5% volume polyamide fiber, an increase of approximately 3% was estimated for the ultimate pressure capacity. Conclusion: The ultimate pressure capacity can be greatly improved by introducing steel and polyamide fibers in a conventional reinforced concrete. Steel fibers are more effective at enhancing the containment performance of a PCCV than polyamide fibers. The fiber reinforcementwas shown to bemore effective at a high pressure loading and a lowprestress level.

비정질강섬유 보강 고강도 콘크리트의 온도별 잔존 역학적 특성 평가 (The residual mechanical properties evaluation according to temperature of the amorphous metallic fiber reinforced high strength concrete)

  • This study is aim to assess mechanical properties which is highly related to structural safe and durability of 100MPa high strength concrete mixed with amorphous metallic fiber. All specimens were heated with low velocity heating rate(1℃/min.), residual compressive strength and residual flexural strength was evaluated. The specimens were cooled down to room temperature after heating. As a result, in the case of 100MPa high-strength concrete, the residual compressive strength enhancing effect of amorphous metallic fiber has showed with the mix proportion of fiber. In addition, residual flexural strength showed more regular pattern before 300℃ then residual compressive strength, but simillar decreasing behavior was shown after 300℃ like residual compressive strength. Further study about fiber pull-out behavior and fiber mechanical, chemical property change due to temperature is needed.

  • 최근 사회기반시설물의 구조물 유지관리 분야의 관심이 높아짐에 따라 새로운 유지관리 공법 및 신소재에 관한 연구가 활발히 진행되어지고 있다. 그중에서도 유지관리의 주요 대상인 교량 유지관리에는 탄소섬유를 이용한 공법이 주목을 받고 있다. 탄소섬유시트(Carbon Fiber Sheet, 이하 CFS)는 이미 여러 연구자들이 국내에서도 재료시험 및 보강공법에 관한 연구를 진행하여 연구결과가 보고되고 있지만, 탄소섬유 스트랜드 시트(Carbon Fiber Strand Sheet, 이하 CFSS)는 최근 새롭게 개발된 재료로써 아직까지 국내에는 연구 성과가 없는 실정이다. 따라서, 본 연구에서는 CFSS를 RC 상판 공시체에 접착보강하여 내피로성을 평가하였다. 그 결과, 무보강 RC 상판 공시체에 비해 약 25.3배의 보강 효과가 확인되었고, CFS 접착보강 RC 상판 공시체에 비교하여 약 1.2배의 보강 효과가 확인되었다.

밀 식이섬유(Wheat Fiber)를 첨가한 치킨너겟 개발 (Development of Chicken Nuggets Added with Wheat Fiber)

  • 본 연구는 밀 식이섬유 첨가가 닭고기 너겟의 품질 특성에 미치는 영향을 조사하였다. 처리구별로 밀 식이섬유를 0%(control), 1%, 2%, 3%를 첨가하여 제조하였다. 수분 함량은 밀 식이섬유의 첨가량이 증가할수록 유의적으로 증가하였으나(P<0.05), 단백질은 감소하는 경향을 보였다. 지방함량은 밀 식이섬유의 첨가량이 증가할수록 유의적으로 낮아지는 경향을 보였으며(P<0.05), 회분 함량은 밀 식이섬유를 첨가하지 않은 닭고기 너겟이 유의적으로 낮은 값을 보였다. 닭고기 너겟의 pH는 6.48~6.50의 범위로 유의적 차이는 나타내지 않았다. 명도는 밀 식이섬유를 첨가하지 않은 대조구가 처리구보다 높은 값을 나타내었으며(P<0.05), 적색도와 황색도는 밀 식이섬유의 첨가량이 증가할수록 증가하는 경향을 보였다. 튀김 수율과 경도는 식이섬유 함량이 증가함에 따라 증가하였으며, 관능평가 항목에서 처리구들 간의 유의적 차이는 나타내지 않았다. 이러한 결과로 보아 닭고기 너겟에 밀 식이섬유 첨가 시 품질 특성을 증진하는 것으로 나타나 향후 다양한 튀김제품에 기능성 소재로 활용할 가능성이 있을 것으로 생각된다.
