Two lactic acid bacteria (LAB) designated J02 and J13 were recovered from fermented vegetables based on their ability to suppress soft rot disease caused by Pectobacterium carotovorum subsp. carotovorum (Pcc) on radish. J02 and J13 were identified as Lactobacillus pentosus and Leuconostoc fallax, respectively. The ability of J02 and J13 to suppress plant diseases is highly dependent on chitosan. LAB alone has no effect and chitosan alone has only a moderate effect on disease reduction. However, J02 or J13 broth cultures plus chitosan display a strong inhibitory effect against plant pathogens and significantly reduces disease severity. LAB strains after being cultured in fish surimi (agricultural waste) and glycerol or sucrose-containing medium and mixed with chitosan, reduce three cruciferous vegetable diseases, including cabbage black spot caused by Alternaria brassicicola, black rot caused by Xanthomonas campestris pv. campestris, and soft rot caused by Pcc. Experimental trials reveal that multiple applications are more effective than a single application. In-vitro assays also reveal the J02/chitosan mixture is antagonistic against Colletotrichum higginsianum, Sclerotium rolfsii, and Fusarium oxysporum f. sp. rapae, indicating a broad-spectrum activity of LAB/chitosan. Overall, our results indicate that a synergistic combination of LAB and chitosan offers a promising approach to biocontrol.
This study was performed to investigate the influence of seafood education on students' preferences and perceptions towards seafood menu items provided by school foodservice. The 62 representative menu items were selected from the complete menus provided by 10 high schools located in the Daegu Kyungpook area. Five hundred students were surveyed and 484 questionnaires were analyzed. The preference ($3.25{\pm}0.92$) of seafood menu items was not sufficiently high. The preference order of seafood menu items was rice > noodle > deep fry > grill> stir fry > seasoned dish > soup/stew > steam > pan fry > braise > fermented fish. Conversely, the most frequently provided menu items were soup/stew (31.34%), braise (18.06%), stir fry (15.61%), and seasoned dish (14.83%); the results showed no significant correlation between students' preference and the frequency with which the items were provided. Seafood education positively influenced the students' preference (p<0.001) and perceptions of the seafood acceptability (p<0.01), nutritional value (p<0.05), menu variety (p<0.05), diversity of cooking methods (p<0.001), cleanliness (p<0.001), and leftover amounts (p<0.01). However, more than half the students participating in this study have never received any type of education on seafood. Therefore, a practical program for seafood education should be developed to promote seafood consumption among young students.
The purpose of this study was to develop a seasoned Hwangseoke-jeot(a kind of salted and fermented fish) with chitosan having less fishy smell and salty taste. In order to decrease the fishy smell and increase the palatable taste effectively, four types of seasoning were developed, in which minced ginger, garlic and onion were included. In order to improve the color and flavor of seasoned Hwangseoke-jeot, high-quality powdered hot red pepper was also added in all the seasonings. Seasoned Hwangseoke-jeot type 1 had the oil and roasted powder of sesame, which are known to decrease fishy smell and palatable taste, and was the basis of other seasoned Hwangseoke-jeot. Type 2 had the oil and roasted powder of perilla, which also were known to decrease fishy smell and to increase palatable taste effectively. Type 3 had roasted soybean powder and laver to increase savory and palatable taste. It was developed especially for old and young people who like savory taste. Type 4, containing citron syrup, was for the young and children. All the developed seasoned Hwangseoke-jeot samples had better red color and other sensory properies than the control (S-company's seasoned Hwangseoke-jeot), as tested by colorimetry and sensory evaluation. More than 1% (w/v) of chitosan gave an astringent taste to seasoning, so it is recommended not to exceed 1% (w/v) in the seasoning. The developed functional seasonings of jeot would be applicable to other kinds of jeot.
We sought to extend the shelf-life of Alaska pollack Theragra chalcogramma sikhae while maintaining quality. We compared the chemical, microbiological, and organoleptic characteristics of sikhae prepared under four different conditions. Control fish were fermented at ambient temperature ($21{\pm}2^{\circ}C$); other samples were stored at $5^{\circ}C$ after fermentation at ambient temperature for 36 h (A1), 60 h (A2), and 84 h (A3). Volatile basic nitrogen and amino-nitrogen levels, and total acidity increased with fermentation time in all samples, but the pH fell, attaining a relatively lower level in the control than in other samples. Over 90% of all viable cells were lactic acid-producing bacteria; this proportion did not change significantly during fermentation. In terms of texture, only hardness was affected by fermentation. The hardness of the control fell more rapidly than did that of the other samples. In terms of sensory evaluation (the acceptance test and quantitative descriptive analysis [QDA]), A2 was superior to other samples after fermentation for different times; A2 maintained limited salability (6 points on the relevant index) for up to 17 days of storage.
The origines of the Western roasting culture and East Asian boiling culture were studied and the importance of primitive pottery culture (8000-5000 BCE) in the Korea Strait coastal region was discussed. The primitive pottery culture probably initiated the Jjigae (stew) culture and the production of salt. It can be also postulated that fish fermentation, kimchi fermentation, and cereal alcohol fermentation originated during this period. Soybean culture emerged ca. 2,000 BCE in South Manchuria and the Korean Peninsula. This paper focuses on the role of Korean foodways in the food science and technology development for the sustainable and resilient food systems. We are facing a global food crisis caused by population growth, climate change, and high animal food consumption. Studies on the meat analog and cultured meat are the new trend in Food Science and Technology. 액젓의 객관적인 품질평가 기준을 설정하기 위하여, 전통적인 방법에 따라 발효 숙성시킨 멸치 액젓과 시판 멸치 액젓의 일반성분, 총질소량, 아미노산 함량, SDS-PAG전기영동을 통한 특정 펩티드의 면적을 측정하였고, 아울러 액젓 원료어의 판정을 위해 등전점 전기영동을 시도하였다. 멸치 액젓의 수분 함량은 대조구가 가장 낮은 $60.5\%$였으며, 시판 제품은 $65.5\%\~69.2\%$로 큰 차이가 없었으나, 총질소 함량은 시판 제품간에 비교적 큰 차이를 보이고 있었다. 액젓에 잔존하는 단백질의 함량은 Y사의 제품이 비교적 높은 $0.353mg/m{\ell}$ 였으며, 나머지 시판 제품은 $0.093mg/m{\ell}\~0.293mg/m{\ell}$의 범위였다 한편 SDS-PAG 전기영동상에서는 J사를 제외한 모든 액젓 제품에서 분자량 55,600 및 46,900 dalton의 band가 검출되었으며, 전기영동상에 나타난 단백질 band는 제조회사에 관계없이 거의 비슷한 형태를 나타내고 있었다. 그리고 등전점 전기영동에서 멸치 액젓은 등전점 5.6에 해당하는 펩티드가 공통적으로 존재하며, 특징적인 band임을 확인하였다. 따라서 아미노산 및 저분자 질소 화합물의 첨가 여부가 정량적인 값에 영향을 미치지 않는 전기영동 상의 특정 band의 면적비를 측정함으로서 인위적인 질소화합물의 첨가, 액젓 희석 여부 판정이 가능 할 것으로 판단되었다. 그리고 전 질소 함량, 아미노산 함량 및 SDS-PAG 전기영동 상에 있는 특징적인 55,600 dalton에 해당하는 펩티드 면적비의 상관관계는 멸치 액젓의 품질판정을 위한 기준으로 활용 가능함을 제시하고 있다.
가다랭이 통조림 제조시 부산물로 대량 생산되는 내장을 유효하게 이용할 목적으로 유산균을 이용한 방법과 산첨가 방법에 따라 silage를 제조하고, 저장기간 중 성분변화를 검토한 결과, 산첨가 silage는 수분, 조지방, 조단백질 및 무기질의 함량이 유산균 발효 silage보다 높은 반면에, 탄수화물 및 다가불포화지방산 함량은 낮았다. 특히 저장기간의 경과에 따라 유산균 발효 silage의 n-3 지방산 함량의 증가가 두드러졌다. 산첨가 및 유산균 발효 silage의 주요 아미노산은 Glu, Asp, Leu, Gly 및 Ala 이었다. 산첨가 silage는 필수아미노산인 트립토판의 함량이 원료 내장에 비하여 $30\%$ 감소하였으나, 유산균 발효 silage는 $5\%$ 감소하였다. 또한 저장 기간의 경과에 따라 유산균 발효 silage의 비타민 $B_1$ 및 $B_2$ 의 함량은 증가하였으나, 산첨가 silage는 $B_1$ 함량만 미미하게 증가하였고, $B_2$는 감소하는 경향을 나타내었다. 산첨가 silage는 회갈색을 띄고 비린내 및 젓갈냄새가 났으나, 유산균 발효 silage는 다갈색을 띄고 생성된 유기산에 의하여 산미를 나타내었다.

수산물 가공시 부산물로 얻어지는 어피(魚皮)를 보다 효율적으로 이용하기 위하여 효소로 대구피를 가수분해할 때 가수분해조건을 구명하였으며 그 가수분해물을 이용한 천연조미료(모조간장 및 복합조미료)의 개발을 시도하였다. pH-drop법으로 대구피분해에 있어서의 collagenase, trypsin 및 pronase의 활성을 비교해 본 결과 pronase가 가장 활성이 높았으며 이 pronase의 $K_m$ 및 $V_{max}$값은 각각 1.82 mgN/ml, 0.06 mgN/mL/min였다. Pronase에 의한 대구피 가수분해조건은 반응온도 $50^{\circ}C$, 반응시간 3시간, pH6, 효소농도 0.03%였으며, 이 조건하에서의 가수분해도는 78.8%였다. 그러나 대구피를 collagenase로 1시간 분해시킨 후 pronase로 처리할 경우 가수분해도는 90.83%였다. 이때 가수분해물의 분자량은 8,000 dalton이었다. 아미노산 조성은 glycine(27.95%), glutamic acid(10.94%), proline(10.48%), aspartic acid(7.47%), serine(7.39%)이 전체 아미노산의 64.23%였으나 쓴맛을 내는 valine, methionine, isoleucine, leucine, phenylalanine, histidine 등은 13.05%에 불과하였다. 가수분해물과 기타 부원료로 제조한 모조간장원액과 시판 100% 양조간장을 8:2(v/v)로 혼합한 모조간장은 시판대두간장에 비해 최소유의차 검정 결과 맛, 색 및 종합평가면에서 5% 유의수준내에서 유의차가 없었다. 가수분해물 31.7% 함유한 복합조미료도 시판 복합조미료와 관능적으로 비교해 본 결과 복합조미료로서의 손색이 없는 제품이었다.
The sacrificial foods using at 88 villages in Andong area where the village sacrificial rituals are performed, were investigated in 1994. The finding are as follows; 1. Since the village sacrificial rituals keep ancientry, white Baeksulki without any ingredients is used as Ddock (a steamed rice cake) in 74 villages, and in 5 villages the Baeksulki was served just in Siru (a tool used to prepare Ddock). The type of meat serving in rituals has been changing from large animal to small animal and the type of light from bowl-light to candle. 2. Though the ritual observes Confucianism style, memorial address was offered in 34 villages and only in 8 villages, liquor was served 3 times and the address was offered. In 60 villages, liquor was served only once, and calling village god, bowing twice, and burning memorial address paper were performed in order. Burning paper has been meaningful in rituals. 3. Tang (a stew) was served in 21 villages, and in 18 villages even Gook (a soup) was not used. The numbers of village which do not use cooked rice and Ddock are 14, respectively. 4. Fruits are essential in rituals foods. In 63 villages, 3 kinds of fruits are served and this is contrasted with even number of fruits in Bul-Chun-Wi Rituals. 5. In 25 villages, fish and meat are not served. As meat, chicken in 19 village are served. Meat Sikhae (a fermented rice beverage) prepared with meats or fish are served in 5 villages. Slice of dried meat is served in 73 villages commonly. 6. In gender of god for village shrine, woman in 43 villages, couple in 17 villages, man in 9 villages, mountain god in 2 villages, villages tree, etc were enshrined. In 52 villages liquor is served in rituals (liquor is used in 58 villages including serving god), in 28 villages sweet liquor (Gamju) is served for god (sweet liquor is used in 46 villages), and liquor, water, or sweet liquor is just displayed on table but not served in 8 villages. Incensing is found to be not common in village ritual, only in two villages it is performed. The most appropriate rituals food is thought to be pig for mountain god. Home dishes can not be used in village ritual and spoon is not used and chopstick is prepared from wild plant. Meat and fish are used in the raw.
