Effect of Deoxygenizer on the Suppression of Lipid Deterioration of Boiled and Dried-Anchovy Engraulis japonica

  • The effects of deoxygenizer (Deoxy) and sodium-erythorbate (Na-ery) on the changes in fatty acid compositions were investigated to prevent the loss of n-3 polyunsaturated fatty acids in lipid of bolied and dried-anchovy during storage. After storage for 5 months, docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) of total lipid (TL) in Deoxy group decreased only $3.0\%\;and\;0.5\%$, respectively, compared to those of before storage. However, those in Control group decreased 9.5\%\;and\;2.3\%,$ respectively. In the case of Na­ery group, the percentages of DHA and EPA decreased were lower than those of Control. Most of DHA and EPA in n was lost in the early stage of storage. Total DHA remained in phospholipid (PL), triglyceride (TG), and free fatty acid (FFA) fractions after storage for 5 months were $98\%,\;66\%\;and\;62\%$ in Deoxy, Na-ery and Control group, respectively, and total EPA remained was slightly high level compared with those of DHA. The loss of DHA was more in PL than in TG. Consequently, deoxygenizer was recognized as a good material to prevent the loss of DHA and EPA of the boiled and dried-anchovy during storage.

  • This study was conducted to investigate the contents of dietary fiber (DF), compositions of fatty acids in lipid fraction and amino acids in salt-soluble protein from the functional food source such as Platycodi radix, perilla seed, evening primrose seed and aloe vera. The contents of dietary fiber, neutral detergent fiber (N.D.F) , acid detergent fiber( A.D.F) . kignin, hemicellulose an dcellulose in evening primorse seed were higher than those of other samples, except the content of cellulose .The ration of polyunsaturated /saturated (P/S) fatty acid in total lipids was 6.31 in perilla seed, which was higher than those of other samples. The content of linolenic acid (n-3) in perilla seed was 55.47%. The content of linoleic acid (n-6) in evening primrose seed was 71.88% , which was higher than those of other samples. The fatty acid composition in neutral lipids were the same as those of total lipids. The PUFA contents of fatty acid in glycolipids were 61.76% in perilla seed. And also, the ratio of n-6/n-3 in evening primrose seed was 15.19. The fatty acid compositions in phospholipids were the sameas those of glycolipids. The contents of PUFA in Platycodi radix were 62.96% . The essential amino acid contents of salt-soluble protein were 47 mole % in Platycodi radix , which was slightly higher than those other samples. The ration of essential amino acid /nonessential amino acid (E/N) was 0.9 and 0.66 in Platycodi radix and aloe vera, respectively.

Contents of Total Lipids and Their Composition in Colored and Aromatic Rices Cultivars (유색미와 향미 품종의 지방질함량 및 지방질의 조성)

  • The contents of total lipids and their components of brown rice grain were studied for 5 colored rice cultivars, 1 aromatic rice cultivar and 1 normal rice cultivar grown in Korea. The total lipid contents ranged 2.04 to 4.69% based on total dry weight. The Tohoku #149 showed the highest content which was followed by Hansanheukmi and Sanghaehyang-hyeolna. The lowest content were observed in three cultivars, Heuknambyeo, Hyangnambyo and Dongjinbyeo which showed no difference among cultivars. The main classes of the total lipid were triglyceride, diglyceride, free sterol, free fatty acid and sterol esters in all cultivars examined. The ratio of triglyceride in total lipid was high in colored rice and aromatic rice compared to Dongjinbyeo which is normal rice cultivars, but the ratio of diglyceride was high in Dongjinbyeo. The major fatty acid compositions in the cultivars examined were linoleic acid, oleic acid and palmitic acid. There was a varietal difference in fatty acid composition, for example, erucic acid was detected in aromatic and colored rices cultivars, while none of this compound was found in Dongjinbyeo.

  • The compositions of lipid class and fatty acid of free lipids as non-starch lipid and bound lipids(extraction either at low or high temperature) as starch-lipid extracted from starch in mung bean(phaseolus radiatus L) was investigated. The contents of neutral lipids glycolipids and phospholipids in free lipids were 98.2% 1.7% and 0.1%, whereas those found in bound lipids were 84.3-85.7% 10.5-11.0%, and 5.2-3.3% respectively The major components of neutral lipid fraction in the bound lipids were triglyceride and esterified sterol and those were composed of 0% of total neutral lipids. Monogalactosyl idiglyceride and esteryl steryl glycoside were observed as main glycolipids components in both free and bound lipids. Among the phospholipids in the bound lipids phosphatidylinositol phosphatidyl serine and phosphati-dyl ethanolamine were identified an major constituents. The free lipids contained palmitic(50.2%) stearic(20.6%) oleic(8.5%) and behenic(7.4%) acids and bound lipids had more palmi-tic and linoleic acids but less stearic acid compared to thosed in the free lipids.

Effects of Dietary Fat Levels on Lipid Parameters and Eicosanoids Production of Rats under Fixed N-6/N-3 and P/S Fatty Acid Ratios

  • The effects of dietary Int levels on lipid metabolism under fixed P/S (1.3) and n-6/n-3 (5.1) fatty acid ratios were examined in rats using palm oil, soybean oil and perilla oil. These ratios correspond to the recommended composition of dietary fat for humans. The range of dietary fat levels was 5-20% by weight (11.8-39.3% of total energy). The levels of dietary fat did not influence the concentrations of serum and liver cholesterol, whereas the level of triglycerides was gradually elevated with increasing levels of dietary fat, especially in the liver. The fatty acid composition of tissue phosphatidylcholine seemed to vary with the different levels of fat. The ratio of linoleic acid to arachidonic acid was increased more significantly in the heart than in the liver. In adipose tissue total lipids, the percentages of saturated and monounsaturated fatty acids decreased, whereas the percentage of polyunsaturated fatty acid increased, with increasing dietary Int levels. In addition, though the level of aortic prostacyclin was not uniformly affected by increasing dietary fat levels, thromboxane A2 production by platelets tended to increase with higher levels of dietary fat, suggesting an increased risk of thrombosis in this situation. Thus, even though dietary fat may have desirable compositions of fatty acids, these excessive consumption can produce unfavorable metabolic responses.

Studies on the Compositions of Mineral Components, Total Amino Acid, Free Amino Acid and Fatty Acid of Zizyphus jujuba Seed (대추씨(Zizyphus jujuba Seed)의 무기질, 구성 총 아미노산, 유리 아미노산 및 지질 구성 지방산조성에 관한 연구)

  • Chemical components of the physiological activity substance in Zizyphus jujuba seed were analyzed for the use as an functional processed products. The proximate compositions of Zizyphus jujuba seed were carbohydrate 89.40%, moisture 8.23%, crude protein 1.22%, crude fat 0.65% and crude ash 0.50%, respectively. the richest mineral contained in Zizyphus jujuba seed was Mg(198.3mg/100g), followed by Mn(113.0mg/100g), K(100.2mg/100g), Ca(25.3mg/100g), P(25.6mg/100g_, Fe(23.5mg/100g), Zn(18.7mg/100g), Cu(7.4mg/100g) and Na(5.3mg/100g). Total amino acid contents of Zizyphys jujuba seed were 1103.12mg/100g, and the major amino acids were proline(235.17mg%), aspartic acid(175.941mg%), gltamic acid(101.46mg%), leucine(50.27mg%), serine(47.71mg%), aspartic acid(47.27mg%), glycine(41.60mg%) and lysine (33.78mg%), respectively. The amount of free amino acids in the protein of Zizyphus jujuba seed were 178.62 mg/100g, and the major free amino acids were proline(121.30mg%), alanine(6.01mg%), valine(2.63mg%) and arginine(2.04mg%), respectively. The compositions of major total fatty acid in the lipid Zizyphus jujuba seed were C18:2(n5c) 28.72%, C18:1(n9t) 23.76%, C18:1(n9c) 13.45%, C16:0 13.45% and C20:5(n3) 1.77% in order, respectively.

Effects of Fish Oil and Some Seed Oils on Fatty Acid Compositions of Liver and Brain Tissue in Rats (어유 및 식물 종자유의 급이가 흰쥐가 간장, 뇌조직의 지방산 조성에 미치는 영향)

  • This study was designed to observe the effects of the fish oil and some seed oils on the improvement of the fatty acid compositions of liver and brain tissue in rats. In order to induce the hypertriglyceridemia in the rats of the Sprague-Dawley, 12% coconut oil and 3% each of olive oil, lard, fish oil, perilla oil, corn oil, red pepper seed oil and evening primrose oil were administered to the rats for 4 weeks. In the fatty acid composition of liver lipid, n-3 PUFA contents were most in the fish oil and perilla oil groups of phospholipid fraction, and n-6 PUFA contents were most in the corn oil, red pepper seed oil and evening primrose oil groups of triglyceride fractions. Fatty acid composition of liver lipid fractions were influenced from the fatty acid composition of the test lipids. In the fatty acid composition of brain phospholipid, n-3 PUFA contents (8.8~17.2%) were most in the fish oil group, and n-6 PUFA (34.6~38.2%), though it contains high percentage, showed little difference between groups.

Comparative Studies on the Lipid Content and Neutral Lipid Composition in Japonica and Indica Rice Bran Oils (일반계 및 다수계 미강유의 지방질 함량과 중성지방질 조성)

  • This study was carried out to determine the lipid content and neutral lipid compositions of Japonica and indica rice bran oils. The average content ratio of neutral lipids, g]ycolipids and phospholipids were 89.5 : 4.0 : 6.5 in japonica rice bran oil and 93.7 : 2.6 : 3.7 in Indica rice bran oils, respectively. It was seen that the neutral lipid content was significantly higher in JAponica rice bran oil, while the contents of glycolopods and phospholipids were significantly higher in japonica rice bran oils. The neutral lipids consisted of esterified sterol, triglyceride, free fatty acid, free sterol, diglyceride and monoglyceride. Triglyceride was the highest (48.7-49.7%) among the neutral lipids. Major fatty acids of rice bran oils were oleic (39.65-43.68f)), linoleic (32.62-39.42%) and palmitic acid (16.54-18.83%). The linoleic acid content was higher in Japonica rice bran oils than in indica rice bran oils.

The Relationship between Serum Cholesterol Levels and Dietary Fatty Acid Patterns, Plasma Fatty Acids, and Other Lipid Profile among Korean Adults (성인 남녀의 혈청 콜레스테롤의 수준과 지방산 섭취 양상, 혈중 지질 및 지방산 조성의 상관 관계 연구)

  • The purposes of this research were to assess dietary fatty acid patterns and to elucidate the relationship between the serum cholesterol levels and dietary fatty acid patterns, plasma fatty acid compositions, BMI (body mass index), and other lipid profile. The subjects were 151 adults aged 23 to 80 years, selected from the Outpatient Clinic and Cardiova-scular Department of the Seoul Municipal Hospital. Dietary data were obtained using three day food records. Sixteen dietary fatty acids were analyzed using Korean and US nutrient databases. The subjects were divided into three serum cholesterol levels: desirable (< 200 mg/dl, N = 44), borderline-risk ($\geq$ 200 - < 240 mg/dl, N = 35), and high-risk ($\geq$ 240 mg/dl, N = 72) groups. The high-risk group had higher BMI, waist, and waist to hip ratio (WHR) than the desirable and borderline-risk groups. Serum concentrations of triglyceride, LDL cholesterol and LDL/HDL cholesterol ratio were significantly higher in the high-risk group as compared to those in the other two groups. The serum cholesterol levels were highly correlated with BMI (r = 0.435), triglyceride (r = 0.425) and LDL/HDL cholesterol (r = 0.870) ratio. The highest fatty acid intake was from oleic acid (33 - 34% of total fatty acid intakes), which was followed by linoleic acid (27%), palmitic acid (19%), and stearic acid (7%). There was no correlation between the serum cholesterol levels and the dietary fatty acid intakes, polyunsaturateumonounsaturateusaturated fatty acids (P/M/S) and $\omega$6/$\omega$3 ratios. The correlation between plasma fatty acids such as myristic acid, oleic acid, linoleic acid, and docosahexaenoic acid and serum cholesterol levels was also weak.   • To evaluate the quality of lipids and their fatty acid compositions in diploid and triploid carps(Cyprinus carpio), we analyzed the compositions of neutral lipid, phospholipid and glycolipid, and fatty acid contents of each lipids in these carp muscles. Total lipid contents of diploid carps, nonspawning season and spawning season, and triploid carp were $2.5\~3.0\%,\;1.4\~1.9\%\;and\;2.4\~3.1\%$, respectively. Regardless of belly and dorsal muscles, diploid carp of nonspawning season and triploid one were higher in neutral lipid, but lower in glycolipid and phospholipid than those of diploid one of spawning season. The neutral lipid and phospholipid were mainly consisted of triglyceride($66.9\~86.1\%$), and phosphatidyl-choline($55.6\~62.9\%$), respectively. In fatty acid compositions of total lipid, triploid carp showed higher content in monoenes such as 16: 1, 18: 1, but lower in polyenes such as 22:6 than those of diploid carp. The major fatty acids in total lipid were 18:1, 16:9, 18:2, 18:3 and 16:1 in order. The fatty acid compositions of neutral lipids showed similar trend to those of total lipid, and the major fatty acids in phospholipid were 16:0, 18:1, 18:2 and 22:6, These fatty acid compositions of neutral lipid, glycolipid and phospholipid were slightly difference between dorsal and belly muscles in all the carps.
